Pulled Chicken, Black Bean, and Corn Soft Tacos

Dinner Tonight: Pulled Chicken, Black Bean, and Corn Soft Tacos

For Breakfast this morning I had something a little different, Grilled Cheese and Egg Spam
Sandwich. Came across this recipe on Spam's Facebook page. The Sandwich turned out fantastic! Very good combination of ingredients and easily prepared. Your using; 2 slices Turkey SPAM® , 2 slices Healthy Life Whole Grain Bread, 1 slice Sargento Ultra Thin Sharp Cheddar Cheese, and 1 large Egg. Mom even had one and loved it, so its Parent Approved! I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I headed over to the rehab center to see Dad. I went with him for his morning therapy. He did real good today, proud of him! Still up in the air whether or not he can back home, hope so! Back home did a few things around the house. Outside its mostly cloudy, windy, and a high of 53 degrees. For Dinner tonight I prepared Pulled Chicken, Black Bean, and Corn Soft Tacos.

I wanted something light and delicious so what better than some Soft Tacos, haven't had any in a
while and it sounded good. To make these I’ll need the following; Old El Paso Flour Tortillas, 1 Rotisserie Chicken (Pulled Chicken), various Spices (to season the Chicken), 1 can Bush’s Chili Beans (Black Beans in Mild Chili Sauce), 1 can Green Giant Steam Crisp Nibblets (Whole Kernel Sweet Corn, sliced Black Olives, chopped Lettuce, Daisy Light Sour Cream, and Old El Paso Taco Sauce (Smoky Chipotle). The makings of something good!

I had purchased the Rotisserie Whole Chicken from Kroger yesterday afternoon. After getting it
home I pulled all the meat and stored it in a plastic container in the fridge until today when it was time to make the Tacos. I put the Chicken in a skillet and reheated it on medium heat. As the Chicken was heating I seasoned it with Ground Cumin, Dried Cilantro, Chili Seasoning, McCormick Grinder Sea Salt and McCormick Grinder Peppercorn Medley.

As the Chicken was heating I got my other ingredients ready. I opened up a can of Early California Whole Large Black Olives (Reduced Salt) and sliced them up. Then I got 2 small sauce pans; 1 for the Chili Beans and 1 for the Corn. Heated both until heated through.

With all the ingredients heated and ready I got the Soft Tortillas ready. I wrapped the Tortillas in
paper towels and microwaved them for 40 seconds. Now to make the Soft Tacos. I first layered in the Chicken, followed by the Taco Sauce, Chili Beans, Corn Kernels, Taco Sauce, Lettuce, and topped with a dab of Light Sour Cream. Loaded and ready to eat! Love these Soft Tacos. All the ingredients just come together to make one flavorful meal. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Simple Grilled Cheese and Egg SPAM® Sandwich

This SPAM® sandwich recipe calls for eggs. But we're not going to use all kinds of silly made-up egg words to describe it. Like, for example, we could say the taste is "eggscellent" or "eggstraordinary." And that it'll fill you with "eggscitement." But that just feels too "eggspected" and there's no "eggspletive" way we're going to go there.
http://www.spam.com/recipes

Ingredients

2 slices SPAM® Single Classic
2 slices bread
1 slice cheese
1 large egg
Directions

1.In small skillet, fry SPAM® Singles over medium-high heat, turning once, about 15 minute's.
2.In separate small skillet, cook egg to desired doneness.
3.Spread 1 side of each slice bread with butter. Place in skillet, butter-side-down; top 1 slice with cheese. Cook until cheese starts to melt and bread is toasted. Top cheese with SPAM® and egg. Cover with top slice bread.

Graveyard Dip

A perfectly Ghoulish Halloween Recipe, Graveyard Dip. There's different versions of this but I'm going with the one on the CooksRecipes website. The Cooks site has a great selection for all Holidays, tastes, and cuisines so be sure to check them out. Enjoy and....BOO!  http://www.cooksrecipes.com/index.html

Graveyard Dip

Dig into this spooky graveyard — if you dare! Venture into this Halloween appetizer and you'll discover a tasty taco dip. Layers of refried beans, lettuce, and black olives mimic dirt and grass. Eerie shapes cut from tortilla shells complete the spooky Halloween landscape.

Recipe Ingredients:

1 (16-ounce) can refried beans with green chiles
1/4 cup bottled salsa
2/3 cup bottled ranch salad dressing
2 teaspoons taco seasoning
1 1/2 cups finely chopped cooked chicken
1 (7-ounce) pouch refrigerated guacamole
1/2 of a (2 1/4-ounce) can chopped pitted ripe olives, drained
Shredded lettuce

Tombstone Graveyard Characters:
10-inch flour tortillas (any flavor)

Cooking Directions:

1 - In a small bowl, combine refried beans and salsa. Spread refried bean mixture in a 2-quart rectangular dish. In a small bowl, combine ranch salad dressing and taco seasoning; stir in chicken.
2 - Spoon on top of the beans in an even layer. Spoon guacamole in small mounds on top of the chicken mixture. Carefully spread to an even layer.
3 - Cover and chill at least 30 minutes or up to 6 hours before serving. Just before serving, place Graveyard Characters into dip. Sprinkle the graves with chopped olives and shredded lettuce. Serve with tortilla chips.
4 - For Tortilla Graveyard Characters: Using cookie cutters or a knife, cut tortillas into gravestones, cats, owls, bats, fence rails, and a tree. Bake in a 350°F (175°C) oven for 5 to 7 minutes or until firm and crisp. Cool on rack.
Makes ? servings.

Pulled Chicken, Black Bean, and Corn Soft Tacos

Dinner Tonight: Pulled Chicken, Black Bean, and Corn Soft Tacos

For Breakfast this morning I got the Egg Poacher out and made a Poached Egg. I served it on a
toasted Healthy Life Whole Grain English Muffin also had my morning cup of Bigelow Decaf Green Tea. It's another beautiful Fall Day out there, Sunny and 81 degrees. Finally got all the yard work done yesterday so today we gathered all the tables and chairs off the deck and driveway and stored them all in the shed. Our Fall Outside Cleaning is done! Took the cart out for a spin and picked up the mail. Tuckered out, rested up before Dinner. And for Dinner tonight I prepared Popcorn Shrimp w/ Mac and Cheese.

I wanted something light and delicious so what better than some Soft Tacos. To make these I’ll need
the following; Old El Paso Flour Tortillas, 1 Rotisserie Chicken (Pulled Chicken), various Spices (to season the Chicken), 1 can Bush’s Chili Beans (Black Beans in Mild Chili Sauce), 1 can Green Giant Steam Crisp Niblets (Whole Kernel Sweet Corn, sliced Black Olives, chopped Lettuce, Daisy Light Sour Cream, and Old El Paso Taco Sauce (Smoky Chipotle). Pulled Chicken, Black Bean, and Corn Soft Tacos

Dinner Tonight: Pulled Chicken, Black Bean, and Corn Soft Tacos

For Breakfast I made some hash Browns and a slice of Toast. I used Simply Potatoes Hash Browns and for the Toast I used Healthy Life Whole Grain Bread. Did a few things around the house and then I was off to the hospital. My best friend was going to have surgery this morning. I went up to be with his sister and we waited together. He's going to be fine as everything went well. It seems like I've been at this hospital way too much of late, 2 friends of mine and my dad all have been up here the last few weeks. So often that the Parking Valets know me by name. Back at home I laid down for a bit for a short nap and to relax a bit. For dinner tonight it's Pulled Chicken, Black Bean, and Corn Soft Tacos.

Chili and Cheese Nachos!

Dinner Tonight: Chili and Cheese Nachos

Another night and another round of not a lot of sleep, fighting with Phantom Pains for a second night in a row. I sure wish the medical world would come up with a treatment or drug that could control these. Well the weather finally broke, we actually have some sunshine! Beautiful sunny but cold Winter's Day. Breakfast, a quick workout, and a load of laundry and my day was done. The afternoon will be the remote and my easy chair watching Football! Not a lot of sleep again last night so I wanted to prepare something that didn't require a lot of effort, but still a hot meal. So tonight it's one of my favorites, Chili and Cheese Nachos.

Just add the Cheese and Bake!

I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape real good. For my toppings I used 1 can of Mario Sliced Black Olives. Before I go any further a bit about these Olives, anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab! About time. For my other toppings I used some Sliced Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella.

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added a about 6 shakes of Frank's Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then add the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or so until the Cheese had started to melt and everything heated. Nothing better on a cold Winter's Day than a big plate of Chili Cheese Nachos! Also had an ice-cold Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

French Pizza Bread

I had bought a lot of French Bread for Mom the other day. As they were leaving for Church this morning she asked me if I would fix her and Dad some baked French bread Pizza with it for when they return from Church for lunch. Well I don't mind cooking, especially when it's for Ma and Pa!

To prepare it I'll need the Loaf of French Bread, Ragu Pizza Sauce, Hormel Turkey Pepperoni, Sliced Black Olives, McCormick Italian Seasoning, Extra Virgin Olive Oil, Sargento Reduced Fat Shredded Mozzarella Cheese.

Preheated the oven to 400 degrees. To start I sliced the French Bread in half, then cut the halves in half, and then sliced those halves in half length wise. I then lightly brushed the pieces with Extra Virgin Olive Oil across the tops. Spread them out on a foil lined cookie sheet and put them in the oven for 4 minutes. Removed from the oven and topped them with the Ragu Pizza Sauce, Italian Seasoning, Hormel Turkey Pepperoni, Sliced Black Olives, Cheese, and seasoned agin with the Italian Seasoning. Put them back in the oven until the Cheese was melting and it was heated through. I was just taking them out of the oven when Mom and Dad were coming in the door, good timing! Turned out fantastic, I'll have to keep these in mind for dinner sometime soon.

Chili and Cheese Nachos!

Dinner Tonight: Chili and Cheese Nachos

Partly sunny and around 70 degrees today, not a bad day outside. We went and seen my Aunt today, she's in an assisted living center here locally. Then went to a Birthday Party for my cousin's twins, 3 years old today! They've come such a long way. They were preemie twins, about 2 months early. They weren't sure they would make it, but they have and doing great. The boy is larger than his sister who is very petite. The boy is sort of mellow but the girl is a wild one! Just think the world of them! Got back sort of late so I wanted something easy but still delicious. So I went with a can't miss dish, Chili and Cheese Nachos!

About time. For my other toppings I used Mezzetta Deli Sliced Tamed Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella.

Add Cheese and Bake!

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I start with a couple of tablespoons of Chili then I add my Scoops (Chips). I then add the Sliced Black Olives, the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese Blend. Then just pop it in the oven 10 minutes or so until the Cheese had started to melt and everything heated. For the Chili I warm it up in a sauce pan, adding a few shakes of Frank’s Red Hot Sauce, before I top the Scoops with it. Nothing better than a big plate of Chili Cheese Nachos! Also had an ice-cold Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Black Bean and Turkey Tacos with Fiesta Flats Tacos

Dinner Tonight: Black Bean and Turkey Tacos with Fiesta Flats Tacos

We missed the damaging part of the storm that moved through the region. Got a lot of heavy rain with some strong winds from time to time. The rain did get rid of most of our snow that was left though. I actually think it's more windy today than overnight. Went to Kroger to pick up a few items and was heading home on I-75 and it was struggle for everyone driving as the winds were very high. For dinner tonight, one of my favorites, Taco Night! Jennie - O Turkey Breast Tenderloin Fajitas

Dinner Tonight: Jennie - O Turkey Breast Tenderloin Fajitas

Windy all day but it was sunny and a high of 50 degrees! The sun and temps melted a lot of our snow today but still a lot left. They say 60 degrees tomorrow but heavy rain and strong winds coming in with it. Went to Meijer and picked up a few items then stopped by the bank and filled the car up with gas. Got home in time to watch Team U.S.A. Hockey Team win another one, going to the Medal Round! For dinner tonight another new one,Jennie - O  Turkey Breast Tenderloin Fajitas.

It was Fajitas tonight using Jennie - O Extra Lean Boneless Turkey Breast Tenderloins, Ortega Fajita Skillet Sauce, Delallo Tri-Color Sweet Peppers, fresh grated Dutch Gouda Cheese, Green Giant Summer Crisp Sweet Yellow and White Kernel Corn, and Ole Fajita Flour Tortillas. I had all the ingredients except for the Jennie O Turkey which I picked up at Meijer.

As usual if I'm using Turkey it's Jennie - O Turkey. To get started I heated some Canola Oil in a medium size skillet over medium high heat and adding my thin-sliced Turkey Tenderloins. I seasoned them with Sea Salt and a teaspoon of Roasted Ground Cumin. I cooked them until they were well-done, 165 degrees as measured by my meat thermometer. Came out a beautiful and moist golden brown and ready for the rest of the ingredients.

Removed the Turkey from the skillet and added the sliced Sweet Peppers and Sweet Corn Kernels, stirring often until both were tender. Then returned the Turkey to the skillet along with the packet of Ortega Fajita Skillet Sauce. Continued cooking for about 8 minutes until everything was heated through. Served the mix on an Ole Fajita Flour Tortilla, that I heated up in the microwave. Topped everything with some fresh grated Dutch Gouda and sliced Black Olives. What a meal! Love the Jennie - O Extra Lean Boneless Turkey Breast Tenderloins, always a winner! Also had a tablespoon of Daisy Reduced Fat Sour Cream on the side. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Turkey Sausage, Turkey Pepperoni 7" Thin Crust Pizza

Dinner Tonight: Turkey Sausage, Turkey Pepperoni 7" Thin Crust Pizza

A fairly nice day out today! Sunny and a high of 38 degrees, not bad. They say we have a snow coming tomorrow though, anywhere from 1 1/2" to 3". But after that, next week, they say a highs in the 50's! Went to Walmart early to pick up a few items for the computer, to the Bank, got my Car and then my Mom's car washed at a local Car Wash, and then home and worked on a snow and ice bank that has over taken part of driveway. But at least it's nice enough to be able to get out and do everything. Then for dinner it was Homemade Pizza Night! I made a Turkey Sausage, Turkey Pepperoni 7" Thin Crust Pizza.

To make the Pizza I used a Mama Mary's 7" Thin-Crust Pizza Crust. For toppings I used Jennie - O Ground Breakfast Sausage, Hormel Turkey Pepperoni, Reese Anchovies Fillets, Sliced Black Olives, Kraft 2% Shredded Mozzarella, and Ragu Homestyle Pizza Sauce.

To prepare it I first preheated the oven on 425 degrees. I lightly brushed the Crust with Extra Virgin Olive Oil and then added all the toppings and sauce. Baked it on a greased Cookie Sheet for about 9 minutes. It came out perfect! Nicely browned and Cheese melted with the hint of the Anchovies and other ingredients made it a great tasting Pizza! For the Whole Pizza it was under 500 calories. For dessert later a Healthy Choice Vanilla Swirl Frozen Yogurt.

Mama Mary's 7" Thin & Crispy Gourmet Crusts

Mama Mary's Thin & Crispy 3 Pack Crusts are the start of great tasting, healthy pizzas and snacks every time.

Black Bean and Turkey Tacos w/ Refried Beans

Dinner Tonight: Black Bean and Turkey Tacos w/ Refried Beans

Not to bad out this morning, in the low 20's! A beautiful Winter's Day out today, high around 31 and sunny all day. We just missed a good snow overnight though. We usually are the area that gets hit but this one went just south and east. They got 6" or more in some areas. We'll wait and see what happens with the next storm coming through Tuesday Night into Wednesday. I'll have to stock up on some products this week, some nice sales going on at Meijer and Kroger this week. For dinner tonight I prepared Black Bean and Turkey Tacos, also adding some of my new favorite ingredients the Delallo Tri-Color Pepperazzi Spicy Sweet Peppers.

I used Jennie – O Extra Lean Ground Turkey Breast. Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos, added flavor and protein. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

For my other toppings I used 1 small can of Mario Sliced Black Olives, Sliced Pepperazi Spicy Sweet Peppers, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Ortega Whole Grain Corn Taco Shells. Got to have the Ortega Whole Grain Corn Taco Shells, lower in carbs and calories than most other brands and seem to stay fresher than others also. I love Taco Nights! You can have so many different types of Tacos with so many different toppings, just endless options for dinner. For dessert tonight a Del Monte No Sugar Added Peach Chunks Cup.

Turkey and Black Bean Pita Bread Tacos!

Dinner Tonight: Turkey and Black Bean Pita Bread Tacos

Went out about 7 am this morning to get the morning paper and it was C-O-L-D, how COLD minus 6 degrees. Thankfully there was no wind blowing so there wasn't a wind chill factor for a change. I had already had my breakfast, work out, and shower by the time my parents were up and having their breakfast. So while they were eating I thought I would go ahead and clean the pots and pans Mom had used to make their breakfast. When I cook I try to eat healthy by using the right oils, food, and watching the serving portion sizes. But as I started to clean up for Mom it was amazing how much cooking oil she uses. I poured out enough cooking oil to fix my meals for a week, she uses Vegetable Oil where I use Canola Oil and Extra Virgin Olive Oil. But she cooks as she was taught by her Mom, my Grandmother. I've been cooking and eating healthier ever since 2001, when I lost my leg to cancer. Just different styles of cooking, I don't think I could ever go back to not eating healthy. For dinner tonight It's Taco Night! I prepared Turkey and Black Bean Pita Bread Tacos.

I used my usual and favorite Ground Turkey, Jennie-O Extra Lean Ground Turkey Breast. The Jennie-O Extra Lean Ground Turkey Breast is 120 calories, 1.5g of Fat, and 0 carbs and comes out perfect every time! To prepare the Turkey I fried it in a medium size skillet in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.

For my other Taco toppings I used 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Joseph Flax, Oat Bran and Whole Wheat Pita Bread. I love these Pita Breads! 50 Calories, 1g Fat and only 4 Net Carbs! I use them instead of Bread when I can. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.
