Red Beans and Rice w/ Hardwood Smoked Turkey Sausage and Cornbread

Dinner Tonight: Red Beans and Rice w/ Hardwood Smoked Turkey Sausage and Cornbread

Wow, had to turn the heat on this morning it was a bit chilly. I think it was about 32 degrees and still a cold wind all day but sunny. Breakfast, workout, and a shower and out the door. ran an errand for Mom and I was close to a nearby Meijer so I stopped in there to grab a few of their sale items and back home for the day. Day 5 of the "Freezer Meals Week". Tonight I'm using Butterball Hardwood Smoked Turkey Sausage I had in the freezer and I laid it in the fridge to thaw overnight. Tonight it's Red Beans and Rice w/ Hardwood Smoked Turkey Sausage and Cornbread.

I started by preparing the Turkey Sausage. I used Butterball Hardwood Smoked Turkey Sausage. I took one of the Sausages and cut it in to bite size pieces. Using a medium size skillet that I sprayed it with Pam cooking Spray, also added a 1/2 tablespoon of Extra Virgin Olive Oil, and heated it on medium. When the skillet was heated up I added the Turkey Sausage pieces. I cooked them about 12 minutes, stirring them frequently. When done removed the skillet from the heat and set aside, I'll be using the same skillet for my Grandma Maud’s Red Beans and Rice.

I prepared some of Grandma Maud’s Red Beans and Rice, first time in a while since I’ve prepared this. Just follow the easy instructions on the package and you have some great Red Beans and Rice! It had a good Cajun Seasoning to it and was only 100 calories and 16 net carbs. As the Red Bean's and Rice was finishing I added the Smoked Turkey Sausage slices, stirring in till well mixed. The Smoked Turkey Sausage paired with Red Beans and Rice is a perfect pairing! Nice heat, Smokey Flavor, and just flat-out delicious! Full instructions and site link for Grandma Maud’s Red Beans and Rice is at the end of the post.

I also made a small Cast iron Skillet of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For dessert later a bowl of Breyer's Carb Smart Vanilla Bean Ice Cream.

Shrimp and Andouille Sausage Gumbo w/ Cornbread Ears

Dinner Tonight: Shrimp and  Andouille Sausage Gumbo w/ Cornbread Ears

Beautiful day out today, started off cloudy but the sun came out and about 52 degrees. Went to Meijer early this morning, they had  some good sales going on. I loaded up on Jennie - O Turkey Products and Seafood. I also grabbed a Tide Liquid Detergent for Mom and noticed something, the amount of Detergent in the bottle. It used to contain 100 ounces, now it's 92 ounces. Same bottle size, same price, but less for your money! Just another Product disappearing act. For dinner tonight I prepared Shrimp and  Andouille Sausage Gumbo w/ Cornbread Ears.

I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base. It uses Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet, sliced Johnsonville Andouille Sausage and a few shakes of Frank’s Red Hot Sauce for 10-15 minutes. Then I added Extra Large Shrimp and simmered another 5-10 minutes. Said and done the Gumbo is ready to serve and It turned out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish.

I also made some Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a few Honeycrisp Apple Slices and a Dole Mini Banana.

Shrimp and Andouille Sausage w/ Grandma Maud's Premium Black Beans and Rice and Cornbread

Today's Menu: Shrimp and Andouille Sausage w/ Grandma Maud's Premium Black Beans and Rice and Cornbread

It's been a cool and cloudy day out today. I took Mom and Dad over to a med Center Store, Dad needed a new walker and a couple of items and then back home. Been sort of a long day. My best friend, who's more like a brother to me, is awaiting the results of blood work. It looks as though he may have Cancer. I'm hoping and praying for the best, we've been through a lot together. For dinner tonight I prepared Shrimp and Andouille Sausage w/ Grandma Maud's Premium Black Beans and Rice and Cornbread.

Shrimp, Andouille Sausage, and Red Beans and Rice - You know it has to be one of those lip smacking delicious dishes! I had a bag of Grandma Maud's Premium Black Beans and Rice Bean Meal in the pantry and as I was looking around for something for dinner that just sounded right! I also used a bag of Kroger Jumbo Shrimp and Johnsonville Andouille Sausage. I started by slicing the Andouille Sausage into 1" slices. Then in a medium skillet I cooked the Sausage till it was browned on both sides and sat aside till a bit later. As my Sausage was getting done I boiled some water for my Shrimp. I didn't boil the Shrimp until it was time to add to the Black Beans and Rice.

To prepare the Black Beans and Rice just boil your water, add your mix, boil and simmer for about 30 minutes and your done, stirring often. After 20 minutes of cook time I added the Andouille Sausage, then after 25 minutes of cook time I added my Shrimp. Oh the aroma, that alone makes your mouth water! To serve it I used a bowl, sprinkled some Cilantro on it and a few shakes of the Frank's Red Hot Sauce. Then Enjoy! So, So, Good. I love the Grandma Products, so easily prepared and just flat-out delicious. Not to mention the addition of the Shrimp and Sausage. I also made a small Cast iron Skillet of Cornbread. As always I used Martha White Corn Meal Mix. For dessert later a bowl of Breyer's Carb Smart Chocolate Ice Cream.

Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears

Dinner Tonight: Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears

It was one foggy morning out this morning! Looking out the window you could barely see our next door neighbor's house. Went to Kroger this morning as the fog was breaking to pick up some items for tonight's dinner and back home. Was able to get some yard work done before it got to hot and humid. It's a pain trying to get stuff done in a wheelchair or motorized cart, but you have to do what you have to do to get things done. Then later I went and picked my Dad's Birthday Cake up for his Birthday party tomorrow at the rehab center. He'll be 93! I was watching a Cooking Show last night and they were making Gumbo and it looked too good! So  for dinner tonight I made some Shrimp and Smoked Turkey Sausage Gumbo w/ Cornbread Ears.

I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base. First time used this with the Pasta instead of Rice. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet, Jalapeno Slices, sliced Butterball Hardwood Smoked Turkey Sausage, and a few shakes of the Frank’s Red Hot Sauce for 15 minutes. I also made some Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Shrimp and Smoked Turkey Sausage Gumbo with Rice w/ Cornbread Ears

Dinner Tonight: Shrimp and Smoked Turkey Sausage Gumbo with Rice w/ Cornbread Ears

Oh another bout of snow and another bout of the Phantom Pains throughout the night, I'd rather deal with the snow instead of Phantom Pains! We got another 2-3 inches over the night, this one was a powdery snow unlike the last one which was a wet and heavier snow. Dealt with the phantom pains throughout the night again last night, not real bad ones just enough to annoy me! One of the neighbors had brought my morning paper up and laid it by the door for me, thank you! Brewed a cup of hot Green Tea, Bigelow Decaf Green Tea. I had some Turkey Chili leftover from dinner the other night and made a Chili and Cheese Omelet with some toast for breakfast, and a good start to the day! For dinner tonight it was Shrimp and Smoked Turkey Sausage Gumbo with Rice w/ Cornbread Ears.

I used a box of Zatarain's Gumbo Mix with Rice for the Gumbo base. I think I had used this once before. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet, Jalapeno Slices, sliced Butterball Hardwood Smoked Turkey Sausage, and a few shakes of the Frank's Red Hot Sauce for 15 minutes. Then I added the Extra Large Shrimp and simmered another 10 minutes. Said and done the Gumbo is ready! It turned out fantastic! Nice flavor and plenty of Rice, makes a nice hearty dinner. I also made some Cornbread Ears. It's normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a Jello Sugar Free Chocolate Pudding.

Zatarain's Gumbo Mix with Rice
Gumbo is a savory Cajun or Creole stew served with or over rice. Just add one pound of seafood (shrimp, crabs, or craw fish) or meat (chicken and sausage are very popular) for nine cups of delicious gumbo in about 30 minutes with one pot preparation.

Directions
Easy Stove Top: Gumbo can be prepared with your choice of 1 pound of chicken (pre-cooked), smoked sausage or seafood cut into bite-size pieces. 1. In a 3 quart saucepan, combine 6 cups water, meat and Zatarain's Gumbo Mix. Stir and bring to a boil. 2. Stir, reduce heat, cover and simmer over Low heat for 25 minutes. For Seafood Gumbo: Combine 6 cups water and Zatarain's Gumbo Mix, bring to a boil. Add seafood after 10 minutes of cooking time, return to boil and cook 15 minutes.

Microwave: 1. In a 3 quart microwave-safe bowl, combine 6 cups of cold water and Zatarain's Gumbo Mix. 2. For Chicken or Sausage Gumbo: Add 1 pound meat, cover and cook on High for 30 minutes (cook time may differ on the power of the microwave oven.), stirring occasionally. For Seafood Gumbo: Cover and cook on High for 20 minutes (cook time may differ on the power of the microwave oven.). 3. Let stand covered for 5 minutes before serving. Serving Suggestions: Sausage and chicken make an excellent, popular gumbo. Seafood gumbo is best with shrimp, oysters and crab. Okra, corn or celery make excellent vegetable additions.

3 Bean Buffalo Chili w/ Johnny Cakes

Dinner Tonight: 3 Bean Buffalo Chili w/ Johnny Cakes

Another beautiful day out, but they say that's coming too an end. The highs will be in the 90's and the humidity almost unbearable. The heat index will be very high starting Sunday. All good days must end, I guess. Earlier today I went fishing here at our community lake. Only caught a few small Blue Gills not much biting but a real relaxing morning. For dinner tonight I didn't want anything too heavy or filling but still wanted a hot and hearty meal. So I got in the freezer and grabbed the Crock Pot 3 Bean Buffalo Chili I froze from the last time I prepared some. I prepared the Crock Pot 3 Bean Buffalo Chili along with some Johnny Cakes.

The Chili has Ground Buffalo, Kidney Beans, Chili Beans, Great Northern White Beans, and ton of great Spices! Just put it in the Crock Pot, on low, for about 8 hours and you got you some mighty tasty Chili! I left the full recipe at the bottom of the post. That's the last of my Chili in the freezer so I'll have to make another batch soon.

As the Chili was heating up I made some Johnny Cakes. To prepare these all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Virgin Olive Oil, 1 3/4 cups Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. To serve I placed mine on a plate and topped it with my 3 Bean Buffalo Chili and Shredded Cheese. And now it's  Comfort Food Heaven! The Chili is a perfect pairing with Cornbread no matter how you prepare your Cornbread. At the bottom of the post I left a little history on the “Johnny Cakes”. There are various ways to fix Johnny Cakes, I make mine using the Martha White Corn Meal Mix.

Johnnycakes – Pouring a batter similar to that of skillet-fried cornbread, but slightly thinner, into hot grease atop a griddle or a skillet produces a pancake-like bread called a johnnycake. This type of cornbread is prevalent in New England, particularly in Rhode Island, and also in the American Midwest and the American South. It is reminiscent of the term hoecake, used in the American South for fried cornbread pancakes, which may date back to stories about some people on the frontier making cornbread patties on the blade of a hoe.

Johnny Cakes (My way)

Ingredients:

Pam w/ Olive Oil Non – Stick Spray
1/4 cup Extra Virgin Olive Oil
1 3/4 cups Buttermilk
2 cups Martha White Self Rising Enriched White Corn Meal Mix

Directions:

Just mix all your ingredients in a large bowl.
Spray your Pam on a Flat Griddle or large Skillet and preheat on medium low, I use the Flat Griddle.
When the Griddle is heated add your batter. You can make the Cakes any size you want from half dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. Serve while warm and enjoy!

BBQ Baked Pork Chop w/ Sliced New Potatoes, Seasoned Blackeye Peas, and...

Dinner Tonight: BBQ Baked Pork Chop w/ Sliced New Potatoes, Seasoned Blackeye Peas, and Whole Grain Bread

Not much going on around here today and outside it's gloomy, cold, and snow flurries, BLAH! For dinner I prepared a  BBQ Baked Pork Chop w/ Sliced New Potatoes, Seasoned Blackeye Peas, and Whole Grain Bread.

I had a Center Cut Pork Loin Chop in the freezer that I set out over night in the fridge to thaw. About noon today I marinated it in JB's Fat Boy HaugWaush BBQ Sauce until I was ready to bake it. To prepare I baked it a small broiler pan that has a rack in it. After I preheated the oven to 400 degrees I baked the Chop for    minutes, until the temperature reached 165 degrees. The Chop came out moist and flavorful. The JB's Fat Boy Sauces are the best, whether it's Pork, Chicken, or Beef their sauces are hard to beat.

For  side dishes I had Del Monte Sliced New Potatoes, Margaret Holmes Seasoned Blackeye Peas, and a baked small castiron skillet of Martha White Cornbread. For the Potatoes and Blackeye Peas just empty the cans into a small sauce pan and heat and serve. The Cornbread was made with Martha White Brand Corn Meal. For dessert later a Jello Sugarless Dark Chocolate Pudding.
