Crispy Chicken Strips w/ Scalloped Potato Casserole and Cut Italian Green Beans

Dinner Tonight: Crispy Chicken Strips w/ Mashed Potatoes and Cut Green Beans

Started my morning off by preparing some Simply Potatoes Shredded Hash Browns, 1 Egg Sunny
Side Up, 2 Jimmy Dean Turkey Breakfast Sausage links, toasted a couple of slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. One great Breakfast! From a high of 65 degrees 2 days ago to a high of 25 degrees with snow flurries! And yesterday evening we got about 1/2 inch of snow. Back to 60 degrees Sunday and Monday. After Lunch I went over to see Dad at rehab. They moved him to a private room finally. Which will be a lot quieter and a lot more privacy. Stopped by the bank and filled up with gas before coming home. For Dinner tonight I prepared Crispy Chicken Strips w/ Mashed Potatoes and Cut Green Beans.

I used the PERDUE® Crispy Chicken Strips, the families favorite Chicken. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious! Really enjoy these and so easy to prepare!

For one side I prepared a box of Idahoan Scalloped Potato Casserole. Another easy to prepare and
delicious Potato dish from Idahoan. A breeze to make just mix the ingredients and bake at 450 degrees for 25 minutes and you have some delicious Scalloped Potatoes. Plus their only 140 calories and 19 net carbs.

For another side I heated a can of Allens Cut Italian Green Beans, our family’s favorite Bean Side. To
prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans

Dinner Tonight: Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans

Started my Sunday morning off with a toasted Healthy Life Whole Grain English Muffin that I lightly buttered with I Can't Belive It's Not Butter. Also so had a cup of Bigelow Decaf Green Tea. After I had Breakfast I went to McDonald's and picked Mom and Dad's Breakfast up for them, they love McD's Breakfasts. Mom went on to Church and I stayed home with Dad. We can't leave him home by himself for very long anymore. So I did some heavy duty house cleaning. Everything done I got the cart out for an afternoon ride. Nice day out, mostly sunny and 72 degrees. Later on it was NFL Football for the day! For Dinner tonight it's Moms favorite, Crock Pot Pork Back Ribs. I prepared Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans.

i was planning to have a Bison Chopped Steak but Mom came in from going to the local Kroger and
had a slab of Pork Back Ribs. So the menu changed from Chopped Steak to Ribs! Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and then seasoned them with JB Fat Boy Premium All-Purpose Rub. Put each half in a Hefty Gallon Plastic Bag  and then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge.

Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and
sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time.

For side dishes I prepared some Idahoan Au Gratin Homestyle Casserole. I left the Idahoan Product
info and instructions at the end of the post. Then I heated up a can Del Monte Cut Green Beans and baked some Pillsbury Reduced Calorie Crescent Rolls. For dessert a bowl of Dole Sliced Peaches.

Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans

Dinner Tonight: Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans

Went out early this morning to get the morning paper and a large Doe Deer was coming across the
street and going on into woods behind us, beautiful site to start the day! Had a Simple Truth Breakfast Sandwich to start the day, really enjoy these. It wasn't humid out until the sun finally broke through the clouds and the humidity shot up. A lot of rain again overnight, now we are getting too much rain. There was an article in the paper talking about with all the rain its hampering Yard Care Businesses and local Farms. Usually we don't seem to get enough rain but not this year. For dinner tonight Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Green Beans.

Mom had been wanting some Ribs so what my Mom wants my Mom gets! So I picked up a package
at Kroger yesterday, they always have top quality Pork. And these were some Pork Back Ribs, 4 1/2 lbs. worth!  Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then seasoned them with Sea Salt and Black Pepper and then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and....

Dinner Tonight: Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Steam Crisp Sweet Corn Kernels

Another beautiful day out again, clouding up as the day went on though. Possible snow in the morning but with our recent run of sun and higher temps, it shouldn't stick or cause problems. Don't forget to move your clocks up an hour tonight before you go to bed, "Spring Forward". I don't like moving the clocks up, I'm an early riser so that means it will still be dark out when I get up. I received my order from Wild Idea Buffalo late yesterday afternoon and wasted no time on using one of the items right away! Tonight I prepared Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Steam Crisp Sweet Corn Kernels.

First time using the Wild Idea Buffalo - Buffalo Back Ribs. These were Monster size Ribs with plenty of meat! I used the recipe that I use when I make the Pork Back Ribs. Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge and the bags, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours.

Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After the 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. Ribs are incredible anytime, but the Wild Idea Buffalo Back Ribs take it to another level! Very meaty with that delicious Sweet and Wild Buffalo taste! I'll have to get some more and grill them later this Spring. As usual I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.

For one side I prepared Idahoan Applewood Smoked Bacon Homestyle Casserole. Second time I tried the Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. Then I also heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn. To me it's one of the best canned Corn there is. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Wild Idea Buffalo 2.5 lbs. BBQ Back Ribs

Buffalo back ribs are simple, delicious and great for the grill. 2 BBQ Racks / 2.5 lbs.

Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling). Remove from oven and let stand a few minutes before serving.
Baking Notes: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min.

Turkey Breast Steak w/ Au Gratin Potato Casserole, Cut Green Beans, and..

Dinner Tonight: Turkey Breast Steak w/ Au Gratin Potato Casserole, Cut Green Beans, and Fried Apples

Another cold and blustery day out again. It seems that's the norm around here anymore. But a very positive sign that was on yesterday was the Cincinnati Reds had their first Spring Training Game in Arizona, which they won 8-3 over Cleveland. Spring can't be too far away when "The Boys of Summer" start playing. For dinner tonight it's a Jennie - O Seasoned Turkey Breast Steak w/ Au Gratin Potato Casserole, Cut Green Beans, and Fried Apples.

I've been buying the Jennie - O Seasoned Turkey Breast Steak for a while now. Easy to prepare, comes seasoned, and always delicious! It serves up to 5, but a lot of times like tonight I'm cooking for 1. So I've got some great leftovers that's perfect for Sandwiches or Fajitas.

I had come across the Jennie – O Seasoned Turkey Breast Steak at Walmart a while back, and been using regular ever since! As I described earlier it comes Seasoned and it’s only 130 calories and 3 carbs per serving. You can prepare it several ways, I pan fried mine. To prepare it just preheat a large skillet over medium heat, spray it with nonstick spray. Cook the steaks, turning 2-3 times until meat thermometer inserted into thickest portion of meat reached 165°F, approximately 19-21 minutes. Covered with lid for the last 5 minutes of cooking. Remove from stove top, cover, and let rest for 5-10 minutes before slicing. As usual it’s another winner from Jennie – O! It was moist and well seasoned, I did add a couple of shakes of Sea Salt while it was cooking.

Fried Apples!

For one side dish I baked a Idahoan Homestyle Au Gratin Potato Casserole. Use these from time to time, another easy to prepare dish. Just mix all the box ingredients with water, milk, and butter and bake. Bakes up a delicious Au Gratin Potato Casserole! Then I heated up a small can of Del Monte Cut Green Beans. I also had a slice of Klosterman Wheat Bread. Then for dessert a bowl of my Mom's Fried Apples. She makes them with Splenda and they just melt in your mouth!

Jennie – O Seasoned Turkey Breast Steak

Walnut-Crusted Salmon w/ Cut Green Beans and Applewood Smoked Bacon Mashed Potatoes

Dinner Tonight: Walnut-Crusted Salmon w/ Cut Green Beans and Applewood Smoked Bacon Mashed Potatoes

Beautiful day out and it hit 38 degrees! It melted some of the snow but we have another 2-3 inches on the way for overnight and tomorrow and below 0 and single digit temps coming too. I hadn't been to the store in a while so I took advantage of the beautiful day and started at Walmart for most of my groceries and finished at Kroger for some Atlantic Salmon, they had on sale, and produce. While at Kroger I took the time and went over my receipt, item by item, to compare items. I knew Kroger would be higher but once again I couldn't believe how much higher! I spent a total of $98.32 at Walmart, the same items at Kroger totaled $132. A $34 difference. Add that up over a course of a year and look at the money you save by smart shopping. What kills me is at Kroger you'll see their signs on items "New Low Price". It still amazes me! Well for dinner a new recipe Walnut-Crusted Salmon. I prepared Walnut-Crusted Salmon w/ Cut Green Beans and Applewood Smoked Bacon Mashed Potatoes.

I came across the Walnut-Crusted Salmon recipe from the latest issue of Taste of Home Magazine. Kroger had the Atlantic Salmon on sale so I loaded up on it. I cut the Salmon Fillet down into several smaller pieces, I used some for the recipe and froze the rest. To prepare the Salmon I needed; salmon fillets, Dijon mustard, honey, whole wheat bread (torn into pieces), finely chopped walnuts, canola oil, and dried thyme. Then I preheated the oven to 400°. Placed the Salmon on a baking sheet coated with cooking spray. Mixed the mustard and honey and brushed it over the salmon. Placed the bread in a food processor and pulsed until coarse crumbs form. Transferred to a small bowl. Stirred in the walnuts, oil and thyme and pressed it onto the salmon. Baked 12 minutes until the topping was lightly browned and the fish just begins to flake easily with a fork. I've left the original recipe along with the web link at the bottom of the post. If your a Salmon lover you have to try this recipe! i love regular Baked Salmon but with the combo of all the ingredients it just makes the Salmon pop with flavor. A keeper recipe for sure! I may have to try this on a Pork Chop sometime, I think it would work well with Pork also.

For one side I heated up my favorite Vegetable Green Beans, I heated up a small can of Del Monte Green Beans. Then I tried a new Idahoan Mashed Potato, Applewood Smoked Bacon Mashed Potatoes. Easy to prepare, using the microwave, and very tasty. It had a nice Smoked Bacon taste to it. I also had a slice of Klosterman Wheat Bread. For dessert/snack later some slices of Cracker Barrel 2% Sharp Cheddar Cheese along with Ritz Whole Grain Crackers.

Walnut-Crusted Salmon Recipe

Ingredients
4 salmon fillets (4 ounces each)
  4 teaspoons Dijon mustard
  4 teaspoons honey
2 slices whole wheat bread, torn into pieces
  3 tablespoons finely chopped walnuts
  2 teaspoons canola oil
  1/2 teaspoon dried thyme

Directions
Preheat oven to 400°. Place salmon on a baking sheet coated with cooking spray. Mix mustard and honey; brush over salmon. Place bread in a food processor; pulse until coarse crumbs form. Transfer to a small bowl. Stir in walnuts, oil and thyme; press onto salmon.
Bake 12-15 minutes or topping is lightly browned and fish just begins to flake easily with a fork. Yield: 4 servings.

Fried Walleye w/ Au Gratin Potato Casserole, Green Beans, and...

Dinner Tonight: Fried Walleye w/ Au Gratin Potato Casserole, Green Beans, and Whole Grain Bread.

Long night and day, dealing with a sinus infection. Every time there's a shift in the weather my sinuses let me know! High of only in the 20's coming this weekend they say. Our new microwave came in, just waiting to have it installed above the stove. For dinner tonight I prepared Fried Walleye w/ Au Gratin Potato Casserole, Green Beans, and Whole Grain Bread

I had bought a couple of large Walleye Fillets while at Costco yesterday. I cut one up and froze it and cut the other one into smaller Fillets and prepared them for dinner. After cutting it up into smaller Fillets I rinsed them off in cold water and patted dry with paper towel. Seasoned them with Sea Salt and Ground Black Pepper. Put them in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till all fillets were well coated. I then fried them in Canola Oil on medium heat, about 3 to 4 minutes per side till golden brown! love Walleye, as I do most Fish. With Crappie their my favorite Fresh Water Fish to eat. Everyone agreed that was some of the freshest tasting Walleye I had ever purchased, so good job Costco!

Then for one side dish I baked a Idahoan Homestyle Au Gratin Potato Casserole. Hard to beat the Idahoan Potato Casseroles, easy to prepare and all come out delicious! I also heated up a can of Del Monte Low Sodium Cut Green Beans and a couple of slices of buttered Klosterman Wheat Bread. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Crock Pot Pork Back Ribs w/ Parmesan and Herb Red Potatoes and Green Beans

Dinner Tonight: Crock Pot Pork Back Ribs w/  Parmesan and Herb Red Potatoes and Green Beans

Not much going on at all today! Did come cleaning and that is it. For dinner tonight I prepared Crock Pot Pork Back Ribs w/  Parmesan and Herb Red Potatoes and Green Beans.

I purchased the Ribs from Kroger. They always have top quality Pork, too bad their Beef isn't as good! Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low,e. for about 8 hours. The Ribs are incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.

For one side dish I prepared Idahoan Premium Parmesan and Herb Red Potatoes. As all the Idahoan Potato Products the Parmesan and Herb Red Potatoes are easy to fix and a delicious Potato Dish. The box contains the Potatoes, Sauce, and Topping. I added 2 Tbsp. of Butter, 1/2 cup 2% Milk, and Water. Just mix all the ingredients, pre-heat the oven to 450 degrees, and bake uncovered for about 25 minutes. Let it set for 5 minutes before serving, that lets the Sauce thicken up. I also heated up some Del Monte Cut Green Beans and I baked a loaf of Pillsbury Simply French Bread for Mom and Dad, I passed on the Bread to save on the carbs and calories. One fine meal that everyone enjoyed! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Crock Pot Pork Back Ribs w/ Scalloped Red Potatoes and Green Beans

Dinner Tonight: Crock Pot Pork Back Ribs w/ Scalloped Red Potatoes and Green Beans

Sunday afternoon and Football is back! Opening week of the NFL and it was couch potato heaven! College football started last week and now the big boys have fired it up. Nice relaxing day of football most of the day. For dinner tonight my Mom bought some Ribs yesterday so today it was Ribs! I prepared Crock Pot Pork Back Ribs w/ Scalloped Red Potatoes and Green Beans. I also baked a loaf of Sourdough Bread for Mom and Dad.

The ribs came from Kroger, they always have top quality Pork. Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then covered the Ribs in JB’s Fat Boy Hawg Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low,e. for about 8 hours. Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.

For one side dish I prepared Idahoan Premium Steakhouse Scalloped Red Potatoes. As all the Idahoan Potato Products the Scalloped Red Potatoes are easy to fix and a delicious Potato Dish. The box contains the Potatoes, Sauce, and Crunchy Onion Topping. I also heated up some Del Monte Cut Green Beans and I baked a loaf of Sour Dough Bread for Mom and Dad, I passed on the Bread to save on the carbs and calories. One fine meal that everyone enjoyed! For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Broiled Sea Bass with Herbed Lemon Butter w/ Au Gratin Potatoes, Sugar Snap Peas,...

Dinner Tonight: Broiled Sea Bass with Herbed Lemon Butter w/ Au Gratin Potatoes, Sugar Snap Peas, and
Whole Grain Bread

Another Spring type day in July, it was about 50 degrees this morning and then a high of 77 degrees today. I hear more normal Summer weather is on the way though, but it's been very enjoyable while it lasted! For dinner tonight I prepared a Broiled Sea Bass with Herbed Lemon Butter w/ Au Gratin Potatoes, Sugar Snap Peas, and Whole Grain Bread.

I normally don't purchase Sea Bass due to the price by our local Kroger had it on sale so I purchased a small 1/2 fillet. To prepare it I needed; 2 Tablespoons melted Blue Bonnet Light Stick Butter, 1/2 tablespoon Lemon Juice, 1/2 tablespoon chopped Parsley, 1/8 Teaspoon Dill, rosemary or marjoram, crumbled and Sea Salt and Ground Pepper, to taste. Then line a broiled pan with foil and place the fillets on the rack. Sprinkle lightly with salt and pepper. Combine remaining ingredients and use to baste the fish. Place the broiler pan 4 inches from heat and broil, allowing 10 minutes cooking time per inch of thickness. Do not turn the fish. Baste several times during cooking. First time I had New Zealand Wild Caught Sea Bass and I really enjoyed it! The Sea Bass was a mild tasting Fish and with the Herbed Lemon Butter it was delicious! This Lemon Butter would go good on Flounder or Walleye also.

For sides it was leftovers. I reheated the Idahoan Au Gratin Potato Casserole and also the remainder of the Sugar Snap Peas. I also had a couple of slices of Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with a dab of Cool Whip free.

Pork Chops w/ Pork Stuffing, Au Gratin Casserole, Sugar Snap Peas

Today's Menu: Pork Chops w/ Pork Stuffing, Au Gratin Casserole, and Sugar Snap Peas

Busy day of canning 14 qts. of Half Runner Green Beans! Nothing better than fresh canned beans and with 14 qts. that should last a while (Hopefully). I'll have pictures and instructions on how we canned the beans tomorrow. Having 2 stoves on day like this would be nice as the canner took up half the stove top area, the last batch of beans weren't  done after 7:00 pm. It made dinner prep cramped but still was able to cook. Mom was real tired so her and my Dad went out to eat as for me I prepared a Fried Pork Chop w/ Pork Stuffing, Au Gratin Casserole, and Sugar Snap Peas.

To prepare my Chop I seasoned it with Sea Salt and Ground Black Pepper and then dusted it with a bit of flour, to give it a slight crust. I pan fried it in Canola Oil about    minutes per side. Comes out browned and moist.

For side dishes I prepared a box of Stove Top Dressing (Pork). I wasn't a big fan of any stuffing until last week when I made some Stove Top Stuffing  for dinner last week and I couldn't get enough of it! That was the Chicken Stove Top so I thought I would give the Pork a try and it was just as delicious! I am a fan of Stuffing, at least Stove Top Stuffing, now. I also baked a Idahoan Au Gratin Homestyle Casserole. A breeze to prepare and always a perfect Potato dish. I also microwaved a bag of Walmart Marketside Sugar Snap Peas. A perfect meal to end a productive day! For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Seasoned Breaded Fried Haddock w/ Au Gratin Potatoes, Boiled Sliced Carrots, and...

Dinner Tonight: Seasoned Breaded Fried Haddock w/ Au Gratin Potatoes, Boiled Sliced Carrots, and Baked Sour Dough Bread

Warming up out there today, 85 degrees for today and the rest of the week. First a Deer earlier this week
and now I spotted a family of Raccoons, Mama and 3 little ones roaming around the edge of the woods. For dinner tonight I prepared a Seasoned Breaded Fried Haddock w/ Au Gratin Potatoes, Boiled Carrots, and Baked Sour Dough Bread.

Layed out a Haddock Fillet in the fridge overnight to thaw. Rinsed it off, patted it dry, and seasoned it with Sea Salt and Ground Black Pepper. Sliced the fillet into smaller pieces and put them in a Hefty Zip Plastic Bag and added Zatarain's Lemon Pepper Breading Mix, shook till the pieces were all well covered. I pan fried them in Canola Oil, fried skin side down about 4 minutes and turned them over and fried for another 3 minutes. i love using the Zatarain's Breading Mix, all are seasoned just right and make a perfect crust.

For side dishes I reheated some Idahoan Au Gratin Potatoes that were leftover from the other night, heated up a small can of Del Monte Sliced Carrots, and baked the other half of the Goldminer California Sour Dough Bread. I could make a meal of baked bread! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

8 oz. Buffalo Top Sirloin Steak w/ Au Gratin Potatoes, Cut Green Beans, and...

Dinner Tonight: 8 oz. Buffalo Top Sirloin Steak w/ Au Gratin Potatoes, Cut Green Beans, and Baked Sour Dough Bread

Nice day out overall, a bit cloudy and bit more humid out. We've been laughing, my mom had put a
Hummingbird Feeder in a tree in our front yard. In the feeder is a a sweet nectar solution that is supposed to attract the Hummingbirds. Instead it's created the biggest Yellow Jacket attraction in the neighborhood! It's getting to the point you can hardly get around the tree, No Hummingbirds and the feeders days might be numbered. For dinner one of my favorite Wild Idea Buffalo Steaks, the 8 oz. top Sirloin. For dinner I prepared a 8 oz. Buffalo Top Sirloin Steak w/ Au Gratin Potatoes, Cut Green Beans, and Baked Sour Dough Bread.

As I said I used a Wild Idea Buffalo 8 oz. Top Sirloin Steak. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it in Canola Oil on medium heat about 4 minutes on one side and 3 1/2 minutes on the other side. Came out just as I like it, medium rare. As always you just can't find a better tasting Buffalo Steak anywhere than the Wild Idea Buffalo Steaks. they say it's all in how they are raised, all I know is they are doing something right!

For sides I prepared a box of Idahoan Au Gratin Potatoes Homestyle Casserole. Idahoan Potato Products has many Potato products and all very easy to prepare and all are very good Potato dishes. I also heated up a can of Del Monte Cut Green Beans, which I have quite often. Love Green Beans! I also baked a loaf of Goldminer California Sour Dough Loaf Bread. For dessert/snack later some BBQ Turkey Lil Smokies  Sausages. Another favorite snack of mine made by Hillshire Farms, only 80 calories and 2 carbs per serving (8 Sausages). I heated them up in Jack Daniel's Honey Smokehouse BBQ Sauce.

What is Grass-fed
By: Henry Palmer (Wild Idea Buffalo)

The term “grass-fed” is being used more and more often now days when discussing how certain animals are raised. Unfortunately, there is a lot of ambiguity with the use of this term and what it actually means for consumers. In addition to loose official standards around the use of the term, many ranchers also have different opinions as well on how it should be used as well.

Grass-fed: Traditionally – grass-fed means: an animal that has been raised their entire life feeding strictly on a diet of natural grass and forage. However, this is not currently the standard use of the term grass-fed and as a result has created a fair bit of confusion for consumers. Many producers use the term grass-fed, but then go on to “finish” them on grain in order to increase the animals overall weight.

Finishing: the concept of “finishing” an animal is when a producer raises their animals on a particular diet until a certain date at which point the animals are finished on grain for the last few months to help fatten them for slaughter. This has led to the use of terms such as grass-finished vs. grain-finished. An animal that is grass-finished feeds on a diet grass and forage right up until slaughter and is not fed grain during that time.

Grass-fed Buffalo
100% Grass-fed: A few producers, including Wild Idea Buffalo, choose to use the phrase 100% Grass-fed. This phrase is used to help distinguish animals that are 100% Grass-fed, because they feed exclusively on, natural grasses and forage. While 100% Grass-fed is not a universally adopted term, it is meant to help clarify exactly what the animal has consumed during its life up until the date of slaughter.

Animals that are raised strictly on a natural all grass and forage diet not only live a healthier and more humane life, but also pass on significant health benefits to the consumer. For more information about the benefits of a grass-fed diet please refer to the following article discussing the impacts in our buffalo: Wild Idea Grass-fed Buffalo vs Feedlot Buffalo.

Pork Loin Boneless Roast w/ Green Beans and Bacon and Ranch Red Potatoes

Dinner Tonight: Pork Loin Boneless Roast w/ Green Beans and Bacon and Ranch Red Potatoes

Well this is the coolest Memorial day weekend that I can remember in quite sometime. It was in the low 40's this morning with high of in the low 60's but with a real cool breeze, but mostly sunny! Started the Holiday off with a delicious dinner, a Seasoned Rubbed Pork Loin Boneless Roast w/ Green Beans and Bacon and Ranch Red Potatoes.

I purchased another of the Pork Loin Boneless Roast with a JB’s Fat Boy Premium Rub already on it from JB's fat Boy BBQ Sauce to it, rubbed it in real good, and rolled it back up. I placed the roast in a shallow pan and roast in a 350 degrees F. oven for 1 hour (about 20 minutes per pound), until internal temperature on a thermometer reads 145 degrees F. Removed it from oven; let rest about 10 minutes before slicing to served. It will serve about 6-7, with leftovers! The Roast came out moist and delicious, the JB’s Fat Boy Rub along with the Sauce gave it a fantastic flavor. The juice and drippings from the Roast were incredible! I also had a side of the JB’s Fat Boy Haugwaush Sauce on the side for dipping but used very little because I kept readding the juices and drippings to the Roast and it needed no other flavor or seasoning.
Kroger yesterday. The last one was incredible!! To prepare it I laid the Roast out for about 20 minutes to get it to room temperature. I then opened the Roast up and applied about 3/4 cup of

I made a couple of sides to go with the Pork Roast, Idahoan Steakhouse Bacon and Ranch Red Potatoes and Cut Green Beans. I prepared the new one from Idahoan; Idahoan Steakhouse Bacon and Ranch Red Potatoes. I really love using these Idahoan Products, they’re all delicious and so easy to prepare and this new one is no different. Great seasoning and taste and love the added Bacon and Ranch to it. Another great option from Idahoan. the Green Beans were Del Monte Cut Green Beans. I also baked a loaf of La Brea Artisan Multi Grain Loaf Bread. For dessert my favorite treat, Jif Reduced Fat Creamy Peanut Butter! I had Peanut Butter on Ritz Whole Grain Crackers.

Dinner Tonight: Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf

They confirmed today my Dad is coming home Saturday from the rehab center! He's been gone for a while now it's going to be nice to have him home. So for dinner tonight while at Kroger yesterday I purchased some Bay Scallops, which I haven't had in years! For Dinner; Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf.

To prepare it I'll need; 1 pound of Bay Sea Scallops, 2 teaspoons Cajun Seasoning, 2 teaspoons Extra Zatarain's Cajun Seasoning, 2 teaspoons olive oil, salt, and pepper. Refrigerate for about 1 hour. Heat the 1 tablespoon olive oil and 2 teaspoons of butter in a large skillet over high heat. With tongs, arrange the scallops in the hot fat and cook for about 2 to 3 minutes on each side, or until nicely browned and your done! The Zatarain's Cajun Seasoning is fantastic on the Scallops, nice heat and seasoning but not overpowering where you can't enjoy the flavor of the Bay Scallops.
Virgin Olive Oil, 1/2 teaspoon Sea Salt, Dash freshly Ground Peppercorn, 1 tablespoon Extra Virgin Olive Oil, and 2 teaspoons unsalted Butter. To prepare them is quick and easy first in a food storage bag, toss the scallops gently with the

I also prepared some more of the Idahoan Parmesan and Herb Red Potatoes. Second time I've had these and love them! I also baked up some more of the La Brea Bakery Take and Bake Artisan Multi Grain Loaf. I'll have to have the Bay Scallops more often! The Scallops paired with the Parm Red Potatoes and Brown Rice is perfect! For dessert later a Jello Sugar Free Double Chocolate Pudding.

Grilled 8 oz. Buffalo Top Sirloin w/ Sauteed Mushrooms, Baked Steakhouse Scalloped Red Potatoes...

Dinner Tonight: Grilled 8 oz. Buffalo Top Sirloin w/ Sauteed Mushrooms, Baked Steakhouse Scalloped Red Potatoes, and Italian Pasta Salad

My Dad's in a rehab center that's on the opposite side of the County where we live and the drive is starting
to get to the both of us. We're going to try to have moved to a closer rehab center, if we can find one that's has an opening. It's incredible how many people are in these centers in the area. Hopefully we can find one soon. For dinner Mom stayed and had dinner with Dad at the center and I had a Grilled 8 oz. Buffalo Top Sirloin w/ Sauteed Mushrooms, Baked Steakhouse Scalloped Red Potatoes, and a side of Italian Pasta Salad.

I used my last Wild Idea Buffalo Top Sirloin Steak, time to order more! I rubbed a little Extra Virgin Olive Oil on it, helps it not to stick to grill grate, and seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I set the timer for 4 minutes and then flipped it over for another 3 1/2 minutes for a beautiful and delicious medium rare. As I've said many times,  "This is the best tasting Steak, Buffalo or Beef, there is!" It's all on how their raised, free range and grass fed. I topped it with Sauteed Baby Bella Mushrooms.

For side dishes I reheated the Baked Steakhouse Scalloped Red Potatoes I had leftover from the other night, another new favorite! Along with a small side of Italian Pasta Salad that I prepared last night. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Fried Haddock w/ Baked Steakhouse Scalloped Red Potatoes, Green Beans, and...

Dinner Tonight: Fried Haddock w/  Baked Steakhouse Scalloped Red Potatoes, Green Beans, and Whole Grain Bread

Spent the afternoon at the rehab center with my Dad. Yesterday was a rough day for him, he just wasn't
feeling up to par. Today was a much better day for him. He felt good and we were able to get him outside a bit, which always helps! I had some more of the Haddock frozen and I had it thawing in the fridge overnight. So for dinner tonight I prepared;  Baked Steakhouse Scalloped Red Potatoes, Green Beans, along with sliced Whole Grain Bread.

I used the Zatarain’s Fish Fri Lemon Pepper Seafood Breading Mix again. I love this breading it's quickly became my favorite Fish breading. I had the fillet cut into two smaller pieces and rinsed off with water already. I then poured some of the breading mix into a Hefty Zipper Bag and added the Fish shaking it in the bag until it was well covered. I skillet fried it in about a 1/2 inch of Canola Oil until it was golden brown. With this breading the Fish comes out perfect. The crust and the seasoning is meant for Fish!

For side dishes I prepared a new one from Idahoan; Idahoan Steakhouse Scalloped Red Potatoes. I really love using the Idahoan Products, their all delicious and so easy to prepare and this new one is no different. Great seasoning and taste and love the added Bacon and Ranch to it. Another great option from Idahoan. I also had a slice of Healthy Life Whole Grain Bread. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice cream topped with fresh Mango slices.

Grilled BBQ Pork Chop w/ Mashed Potatoes, Green Beans, and Whole Grain Bread

Dinner Tonight: Grilled BBQ Pork Chop w/ Mashed Potatoes, Green Beans, and Whole Grain Bread

Well my Dad was moved this afternoon from the hospital to a rehab center, at least 2 weeks or more till he
regains his strength. The weather, it's a sunny but cool day again. Where is our warm Spring weather? I found time this afternoon to work on the gas grill. Cleaned the burner and gas line, and got it going again! I think it's about worn out, hopefully I'll get another Summer out of it. For dinner tonight; a Grilled BBQ Pork Chop w/ Mashed Potatoes, Green Beans, and Whole Grain Bread. My first grilled Chop of the Spring!

I used a Costco Center Cut Pork Loin Chop. I love Costco's Meats. If you've never tried them you should. After warming up the grill I seasoned my Chop with McCormick Grinder Sea Salt and Black Peppercorn. It was a fairly thick cut Chop so I had to keep it on the grill a little longer than normal. When the Chop was done I immediately brushed both sides with my favorite BBQ Sauce, JB 's Fatboy Haugwaush Sauce. I just love all the JB 's Fatboy BBQ Sauces and Rubs but the Haugwaush Sauce is my favorite! It's a flavorful thick Sauce with a perfect blend of spices and ingredients. Another must try if you haven't. The Chop was juicy and full of flavor! Love that Grill!

For sides I warmed up some Idahoan Homestyle Mashed Potatoes. I used the single serve microwavable one. I also warmed a single serve can of Del Monte Cut Green Beans and had Healthy Life Whole Grain Bread topped with a bit of I Can't Believe It's Not Butter. For dessert later a Healthy Life Chocolate Swirl Frozen Yogurt.
