One of America's Favorites - Hamburger Helper

Cheeseburger Macaroni Hamburger Helper

Hamburger Helper is a packaged food product from General Mills and is sold as a part of the Betty Crocker brand. It consists of boxed pasta bundled with packets of powdered sauce and seasonings.

The contents of each box are combined with browned ground beef, water, and occasionally milk to create a complete dish. There are also variations using other meats, such as tuna and chicken, named "Tuna Helper" and "Chicken Helper". The product line also features products with other starches, such as rice or potatoes.

The pasta brand "Hamburger Helper" was first introduced in 1971. In 2005, Food Network rated Hamburger Helper third on its list of "Top Five Fad Foods of 1970".

In 2013, the company shortened the brand's name to "Helper".

The Hamburger Helper mascot is the "Helping Hand" or "Lefty": a four-fingered, left-hand white glove, with a face on it and red spherical nose. It often appears in the product's television commercials and on their packaged products.

Prepared beef Hamburger Helper
The basic and most popular version of Hamburger Helper is a box of dried pasta with seasoning, to be cooked with ground beef. Hamburger Helper offers a variety of flavors that include Lasagna, Cheeseburger Macaroni, Bacon Cheeseburger, Philly Cheesesteak, and others. There are also variations using other foods, such as tuna and chicken, named "Tuna Helper" and "Chicken Helper".

* Tuna Helper was the second variety to appear on the market, in 1972.
* Fruit Helper was introduced in 1973. These were dessert products made with canned or fresh fruit.
Tuna Helper Creamy Pasta
The Fruit Helper line has since been discontinued.
* Chicken Helper was first introduced in 1984 in response to the wide availability of inexpensive boneless and skinless chicken breasts.
* Asian Helper is a selection of four main Asian-American-style dishes, three made with chicken and one with beef.
* Whole Grain Helper options include Lemon & Herb Chicken, Honey Mustard Chicken, Cheeseburger Mac, and beef Stroganoff flavors made with whole-wheat pasta.
* Pork Helper was introduced in 2003. Varieties included pork fried rice and pork chops with stuffing. The product was discontinued shortly after its introduction.
* Hamburger Helper Microwave Singles were introduced in 2006. This product requires water and brief cooking in the microwave to produce a single serving portion of some of the most popular flavors. Chicken Helper flavors were added in 2007 despite the brand being discontinued shortly thereafter. It returned in 2013 as Chicken and Chili Helper.

Squash-Stuffed Roasted Poblano Peppers
When fresh, poblanos have a wonderful, somewhat sweet heat that makes a terrific vessel for rich-tasting butternut squash stuffing. Look for dark green poblanos about 5 inches long, with broad shoulders at the stem, tapering to a pointy tip. Wash your hands thoroughly after removing the seeds or wear rubber gloves; most of the chile oils are found in the seeds and connective membranes....................

Grilled Fish Tacos

Make sure the fillets are no more than 1/2 to 3/4 inch thick so they cook quickly. Sometimes flipping fish on the grill can be tricky since the fish can stick to the grill or fall apart. The solution is to invest in a grill basket that easily holds 4 to 6 fish fillets and secures the fish in the basket for easy flipping. If you don't have a grilling basket, make sure the grill is hot and well oiled before adding the fish.............

Lunch Meat of the Week - Pastrami

Pastrami is a meat product usually made from beef, and sometimes from pork, mutton, or turkey. The raw meat is brined, partially dried, seasoned with herbs and spices, then smoked and steamed. Beef plate is the traditional cut of meat for making pastrami, although it is now common in the United States to see it made from beef brisket, beef round, and turkey. Like corned beef, pastrami was originally created as a way to preserve meat before refrigeration.

The name pastrami comes from Romanian pastramă, a declination of the Romanian verb păstra
Pastrami sandwich at the Carnegie Deli in New York City.
meaning "to conserve food, to keep something for a long duration" whose etymology is linked to the Bulgarian pastrija or to the Greek Ļ€Ī±ĻƒĻ„ĻĪ±Ī¼Ī¬Ļ‚/Ļ€Ī±ĻƒĻ„ĪæĻ…ĻĪ¼Ī¬Ļ‚, itself borrowed from Turkish pastırma, short for Turkish: bastırma et "pressed meat." Wind-dried beef had been made in Anatolia for centuries, and Byzantine dried meat is thought by some to be "one of the forerunners of the pastirma of modern Turkey".

Early references in English used the spelling "pastrama", closer to the Romanian pastramă. Pastrami was introduced to the United States in a wave of Jewish immigration from Bessarabia and Romania in the second half of the 19th century. The modified "pastrami" spelling was probably introduced in imitation of the American English salami. Romanian Jews emigrated to New York as early as 1872. Among Jewish Romanians, goose breasts were commonly made into pastrami because they were inexpensive. Beef navel was cheaper than goose meat in America, so the Romanian Jews in America adapted their recipe and began to make the cheaper-alternative beef pastrami.

New York's Sussman Volk is generally credited with producing the first pastrami sandwich in the United States in 1887. Volk, a kosher butcher and New York immigrant from Lithuania, claimed he got the recipe from a Romanian friend in exchange for storing the friend's luggage while the friend returned to Romania. According to his descendant, Patricia Volk, he prepared pastrami according to the recipe and served it on sandwiches out of his butcher shop. The sandwich was so popular that Volk converted the butcher shop into a restaurant to sell pastrami sandwiches.

New York pastrami is generally made from the navel end of the brisket. It is cured in brine, coated
Pastrami pizza
with a mix of spices such as garlic, coriander, black pepper, paprika, cloves, allspice, and mustard seed, and then smoked. Finally, the meat is steamed until the connective tissues within the meat break down into gelatin.

Greek immigrants to Salt Lake City in the early 1960s introduced a cheeseburger topped with pastrami and a special sauce. The pastrami cheeseburger has since remained a staple of local burger chains in Utah.

Baked Ham/Swiss and Turkey /Cheddar Sliders w/ Thanksgiving Leftovers

Dinner Tonight: Baked Ham/Swiss and Turkey /Cheddar Sliders w/ Thanksgiving Leftovers

For Breakfast this morning I heated up the leftover Diced Potatoes and Diced Ham that I had prepared yesterday. Not a bad day out today, 54 degrees and mostly cloudy. After Lunch I took Mom's car up to have it washed and then I cleaned all of the inside windows and vacuumed it out for her. Later on I entered a Scrabble Tournament online. I love Scrabble! For Dinner tonight I used the Leftovers from Thanksgiving. I prepared Baked Ham/Swiss and Turkey /Cheddar Sliders w/ Thanksgiving Side Leftovers.

For Dinner its Baked Ham and Swiss Sliders along with Turkey and Vermont Cheddar Sliders. To make them I’ll need; King's Hawaiian Sweet Rolls (Cut in half), leftover Ham, leftover Turkey Breast, Sargento Swiss Cheese, Boar's Head Vermont Yellow Cheddar, Blue Bonnet Light Butter – 4 Tbsp (original recipe called for 8), 2 tsp. Dried Onion Powder, 1 1/2 tsp. Worchestershire Sauce, 1 1/2 tsp. Ken’s Light Poppyseed Dressing, and 1/2 tsp. French’s Yellow Mustard.

Next I made my Bun Topping Sauce. I grabbed a medium size bowl to mix my ingredients in. I then mixed the Butter, Onion Powder, Worchestershire Sauce, Ken’s Light Poppyseed Dressing, and French’s Yellow Mustard together. Stirred until well mixed and sit it aside until ready to use it.

Then to prepare the Sliders; preheat your oven to 350 degrees. Then I got an 11 x 14 baking pan that I
lined with foil and sprayed with Pam Non-Stick Cooking Spray. I placed the bottom half of the Slider Buns in the bottom of the baking pan. Next I placed the Sweet Sliced Ham and Sliced Turkey Breast on top of each Bun. You can put as much of the Ham or Turkey you want on each. I then placed a 1/2 a slice of the Swiss on the Ham and Cheddar cheese on top of the Turkey. Then added the the top 1/2 of each bun to each Slider. Then topped all the Sliders with Topping Sauce Mixture. Covered the baking pan with foil and baked at 350 degrees for 15 minutes. Removed the foil and baked an additional 15 minutes to allow the rolls to crisp. Remove from oven to cool and serve.

These Baked Ham Sliders are incredible! The Ham, Turkey, Cheese, and Buns are all great but the Topping Sauce makes the Dish. The Sauce gives it such great flavor, love these Sliders! Plus a great way to use those Thanksgiving Leftovers!

Then I also heated the leftover Mashed Potatoes and Green Beans. Those Canned Green Beans are so delicious! We had canned these during Summer and broke out the first jar for Thanksgiving, so good! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Kitchen Hint of the Day!

Rest and Relax..........

To lock in juices, tent your turkey with foil and let it rest for at least 15 to 20 minutes before carving. Be sure you don't cover the turkey too tightly as you don't want the bird to steam under the foil.

One of America's Favorites - Turkey

Turkey meat, commonly referred to as just turkey, is the meat from turkeys, typically domesticated turkeys. It is a popular poultry product, especially in North America where it is traditionally consumed as part of culturally significant events such as Thanksgiving and Christmas as well as in standard cuisine.

A roast turkey prepared for a traditional U.S. Thanksgiving meal.

Turkeys are sold sliced and ground, as well as "whole" in a manner similar to chicken with the head, feet, and feathers removed. Frozen whole turkeys remain popular. Sliced turkey is frequently used as a sandwich meat or served as cold cuts; in some cases where recipes call for chicken it can be used as a substitute. Ground turkey is sold, and frequently marketed as a healthy alternative to ground beef. Without careful preparation, cooked turkey is usually considered to end up less moist than other poultry meats such as chicken or duck.

Wild turkeys, while technically the same species as domesticated turkeys, have a very different taste from farm-raised turkeys. Almost all of the meat is "dark" (including the breast) with a more intense flavor. The flavor can also vary seasonally with changes in available forage, often leaving wild turkey meat with a gamier flavor in late summer, due to the greater number of insects in its diet over the preceding months. Wild turkey that has fed predominantly on grass and grain has a milder flavor. Older heritage breeds also differ in flavor.

A large amount of turkey meat is processed. It can be smoked and as such is sometimes sold as turkey ham or turkey bacon, which is widely considered to be far healthier than pork-based bacon. Twisted helices of deep fried turkey meat, sold as "turkey twizzlers", came to prominence in the UK in 2004 when chef Jamie Oliver campaigned to have them and similar foods removed from school dinners.

Unlike chicken eggs, turkey eggs are not commonly sold as food due to the high demand for whole turkeys and lower output of eggs as compared with other fowl (not only chickens, but even ducks or quail). The value of a single turkey egg is estimated to be about $3.50 on the open market, substantially more than an entire carton of one dozen chicken eggs.

Turkeys are traditionally eaten as the main course of Thanksgiving dinner in the United States and Canada, and at Christmas feasts in much of the rest of the world (often as stuffed turkey).

Turkey meat has been eaten by indigenous peoples from Mexico, Central America and the southern tier of the United States since antiquity. In the 15th century, Spanish Conquistadors took Aztec turkeys back to Europe.

Turkey was eaten as such as early as the 16th century in England. Before the 20th century, pork ribs were the most common food for the North American holidays, as the animals were usually slaughtered in November. Turkeys were once so abundant in the wild that they were eaten throughout the year, the food considered commonplace, whereas pork ribs were rarely available outside of the Thanksgiving-New Year season. While the tradition of turkey at Christmas spread throughout Britain in the 17th century, among the working classes it became common to serve goose, which remained the predominant roast until the Victorian era.

In the UK in 2009, 7,734,000 turkeys were consumed on Christmas Day.

Turkey with mole sauce is regarded as Mexico's "national dish".

Both fresh and frozen turkeys are used for cooking; as with most foods, fresh turkeys are generally
Roast turkey
preferred, although they cost more. Around holiday seasons, high demand for fresh turkeys often makes them difficult to purchase without ordering in advance. For the frozen variety, the large size of the turkeys typically used for consumption makes defrosting them a major endeavor: a typically sized turkey will take several days to properly defrost.

Turkeys are usually baked or roasted in an oven for several hours, often while the cook prepares the remainder of the meal. Sometimes, a turkey is brined before roasting to enhance flavor and moisture content. This is done because the dark meat requires a higher temperature to denature all of the myoglobin pigment than the white meat (very low in myoglobin), so that fully cooking the dark meat tends to dry out the breast. Brining makes it possible to fully cook the dark meat without drying the breast meat. Turkeys are sometimes decorated with turkey frills, paper frills or "booties" that are placed on the end of drumsticks or bones of other cutlets.

In some areas, particularly the American South, they may also be deep fried in hot oil (often peanut oil) for 30 to 45 minutes by using a turkey fryer. Deep frying turkey has become something of a fad, with hazardous consequences for those unprepared to safely handle the large quantities of hot oil required.

For Thanksgiving in the United States, turkey is typically served stuffed or with dressing (on the

side), with cranberry sauce and gravy. Common complementary dishes include mashed potatoes, corn on the cob, green beans, squash, and sweet potatoes. Pie is the usual dessert, especially those made from pumpkins, apples, or pecans.

When eaten at Christmas in the United Kingdom, turkey is traditionally served with winter vegetables including roast potatoes, Brussels sprouts and parsnips. Cranberry sauce is the traditional condiment in the northern rural areas of the United Kingdom where wild cranberries grow. In the south and in urban areas, where cranberries until recently were difficult to obtain, bread sauce was used in its place, but the availability of commercial cranberry sauce has seen a rise in its popularity in these areas too. Sometimes sausage meat, cocktail sausages or liver wrapped in bacon is also served (known as bacon rolls or "pigs in blankets").

Especially during holiday seasons, stuffing, also known as dressing, is traditionally served with turkey. There are many varieties: oatmeal, chestnut, sage and onion (flavored bread), cornbread, and sausage are the most traditional. Stuffing may either be used to stuff the turkey (as the name implies), or may be cooked separately and served as a side dish.
