Chicken Sausage Breakfast Sandwich w/ Hash Browns

Dinner Tonight: Chicken Sausage Breakfast Sandwich w/ Hash Browns

For Breakfast this morning I heated up the leftover Buffalo Gal Tenderloin, Scrambled an Egg, toasted a slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. I
got some sleep early but around 4:00 this morning I started having the Phantom Pains. It wasn't a bad case, it let up around 10:00 this morning. Left me very tired though. Cloudy and 35 degrees out, good day to stay in and get caught up on sleep. For Dinner tonight its a Chicken Sausage Breakfast Sandwich w/ Hash Browns.

I wanted a hot meal but one easy to prepare. So I I made a little Breakfast.  I prepared a Thomas
Light 100% Multigrain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Along with Simply Potatoes Shredded Hash Browns.

To prepare the Chicken Sausage Patty; The Patties are fully cooked so all you have to do is reheat them. I used a small skillet, sprayed it with Pam Non Stick Cooking Spray, and heated it on medium heat. Added the Patty to the heated skillet and cooked it for 6 minutes a side. Easy to prepare and delicious! These have such a good taste to them. They’re seasoned with Sage and Thyme. They also have some that are Maple Flavored but these are my favorites!

As the Sausage was cooking I toasted the Thomas English Muffin. I love using these, Breakfast Sandwiches, Muffin Pizzas, and much more! They’re 100 calories and 16 net carbs per Muffin. I served the Chicken Sausage Patty on the Muffin and topped it with a 1/2 slice of Cheese.

To go with my Dinner/Breakfast Sandwich I prepared some Simply Potatoes Shredded Hash Browns. To prepare these I took a small skillet, sprayed it with Pam Cooking Spray, added a tablespoon of
Extra Light Olive Oil, and heated the skillet. Add potatoes to skillet; Cook 6-7 minutes, or until golden brown on the bottom. Drizzle with an additional 1/4 tbsp Extra Light Olive Oil. Turn potatoes over with a spatula. Continue to cook 6-8 minutes, and done! I sprinkled some Sargeto Reduced Fat Shredded Sharp Cheese over top of them to serve. Really enjoy these Breakfast/Dinners! For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Coke Zero to drink.

Roasted Cumin Spiced Turkey Tenderloins w/ Jalapeno Cheddar Fried Potatoes

Dinner Tonight: Roasted Cumin Spiced Turkey Tenderloins w/ Jalapeno Cheddar Fried Potatoes and Sliced Carrots

It wasn't too bad out this morning, 25 degrees and no wind. That quickly changed as the temperature started dropping and the wind started blowing by this afternoon it was 10 degrees with a wind chill of -5. Went to Kroger around 8 am this morning and stopped by the bank and back home. Just as I got back the repair shop called and they had my car ready, nothing serious thankfully! We went and picked that up and back home for the day. Tonight for Dinner I prepared a Roasted Cumin Spiced Turkey Tenderloins w/ Jalapeno Cheddar Fried Potatoes.

For the Turkey Tenderloins I used Jennie – O Extra Lean Boneless Turkey Breast Tenderloins. So to prep the Turkey Tenderloins I’ll need; 2 Tbsp of Extra Virgin Olive Oil, 1/2 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I love using the Cumin Spiced Rub on Pork and Chicken Dishes. To prepare it preheat my oven to 350°. Combine all the ingredients; rub it all over the Turkey Tenderloins. Let stand 10 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add Turkey to pan; cook 4 minutes, browning on both sides. Bake at 350° for 15 minutes or until a thermometer registers 165°, turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Turkey Tenderloin! Fantastic combo of Spices, which made one incredible Crust on the Turkey with the inside being tender and moist! I’ve used the Cumin Spice Rub on different meats now and it works well with all of them, gives it a nice crust and great flavor.

For a side dish for the Sliders I prepared Jalapeno Cheddar Fried Potatoes. I had come across this a while back in an issue of Cuisine at Home Magazine. Made some changes from the original recipe. I used Simply Potatoes Steakhouse Seasoned Diced Potatoes, Canola Oil instead of Peanut Oil, Scallions, 1 Jalapeno (sliced), Sea Salt and Ground Pepper, Sargento Reduced Fat Mexican Style Shredded Cheese, and I also added some diced Red Onion. To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese. And another keeper Potato Dish! This has turned out to be one of my favorite Potato Side Dishes. I also heated up a can of Del Monte Sliced Carrots. For dessert later a Del Monte No Sugar Added Mango Chunk Cup.

Jalapeno Cheddar Fried Potatoes

2 Tbsp. Canola Oil
1/4 cup chopped Scallions

Directions:

To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Add the Potatoes and prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Fried Walleye w/ Steakhouse Seasoned Diced Potatoes, Sliced Carrots, and..

Dinner Tonight: Fried Walleye w/ Steakhouse Seasoned Diced Potatoes, Sliced Carrots, and French Bread

Well their saying we could get our first measurable snow fall of the season! Yes, they said that magic four letter word "Snow"! Myself I enjoy it and go on as normal but with a lot of the people in this area it puts them in panic mode! A friend of mine that works at Kroger already called me earlier and said that panic has already set in. There's been lines all day at the check-outs, he said that people were buying items like they were going to stranded for weeks! This area is so funny! Anyway I prepared Fried Walleye w/ Steakhouse Seasoned Diced Potatoes, Sliced Carrots, and French Bread.

I had a couple of Walleye Fillets in the freezer that I laid in the fridge to thaw overnight. I had purchased them from Costco a couple of weeks back. We had some already and they were incredible! I rinsed them off in cold water and patted dry with paper towel. Seasoned them with Sea Salt and Ground Black Pepper. Put them in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till all fillets were well coated. I then fried them in Canola Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Along with Crappie their my favorite Fresh Water Fish to eat.

For one side dish I prepared some of Simply Potatoes Steakhouse Seasoned Diced Potatoes. These are a perfect Potato Dish for any Seafood. They come Seasoned, just heat in a skillet about 10-12 minutes until heated through. I also heated up a can of Walmart Brand Sliced Carrots along with a slice of Pillsbury Rustic French Bread. For dessert later tonight a bowl of Del Monte No Sugar Added Peach Chunks.

Simply Potatoes Steakhouse Seasoned Diced Potatoes

We peel and dice fresh potatoes and add just enough delicate onion, red bell pepper and garlic to make our Simply Potatoes Steakhouse Seasoned Diced Potatoes. They make the perfect side dish to go from skillet to table. We’ve already done all the washing, peeling, dicing and spicing so you don’t have to.

Fried Okeechobee Crappie w/ Hash Browns and Collard Greens

Dinner Tonight: Fried Okeechobee Crappie w/ Hash Browns and Collard Greens

A dreary and cloudy day out today. Had to run my parents to Cincinnati for my Dad to get a new portable Fairfield, you can read about both in two earlier posts. For dinner tonight, Fried Okeechobee Crappie w/  Hash Browns and Collard Greens.
breather. He's had a home oxygen for a while now but he's going to have to keep a portable air with him when he's out. A lot going on locally with Operation Pumpkin in Hamilton and Jungle Jim's Ring of Fire Weekend in

It's always a sad day when I use my last bags of the Lake Okeechobee Crappie, or as the locals there call them "Specks". My cousin always brings me a batch when they go down for the winter at Lake Okeechobee, Florida. I try to make them last as long as I can but the time has come to break that last bag out of the freezer. I love all fish but these are my favorite fresh water fish by far! Love the taste and just how they fry up so good and brown. I laid the last bag out last night to thaw in the fridge. I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. As usual with Crappie they came out Golden Brown and delicious!

For side dishes I prepared  Hash Browns and Collard Greens. I used Simply Potatoes Hash Browns, my favorite Potato side dishes. Fried in Canola Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. Also, for the first time, I prepared Collard Greens. They were canned and Walmart Store Brand. Just heated them in a small sauce pan on medium high for 5 minutes, drained, and season with Sea Salt. I think I had Collard Greens 1 other time. They came out very good, a good change of pace for a side dish! For dessert later tonight a bowl of Del Monte No Sugar Added Peach Chunks.

38 Degrees Outside, Hot Breakfast Inside!

When I went out to get the morning papers it was 38 degrees! Our first morning in the 30's in quite some time, and you no what it felt good! It may have been 38 outside but I started the day off with healthy and hot Breakfast inside. I had some Simply Potatoes Garlic and Herb Hashbrowns, Jennie - O Lean Ground Turkey Breakfast Sausage (made into patties), 2 slices of Healthy Life Whole Grain Bread (toasted and spread with I Can't Believe It's Not Butter), a cup of Bigelow Decaf Green Tea, and the morning papers. Dinner Tonight: Mushroom and Provolone Cheese Grilled Turkey Burger w/ Antipasto Salad and Garlic andHashbrowns
Herb

My voice has come back somewhat but still not full strength from the Laryngitis. Had the 4 Wheel Mobility Scooter out enjoying the day! They say the August Hot and Humid weather is on it's way all next week. For dinner tonight I prepared a Mushroom and Provolone Cheese Grilled Turkey Burger w/ Antipasto Salad and Garlic and Herb Hashbrowns.

I grilled a Jennie - O All White Meat Turkey Burger. A great tasting Turkey Burger and it's a pre-made pattie and only 180 calories. I grilled a total of 10 minutes, 5 minutes each side. Came out moist and juicy with a bit of char, it's hard to beat a grilled burger! I topped it with a slice of Sargento Reduced Fat Provolone and Sauteed Baby Bella Mushrooms , served it on a Healthy Life Whole Grain Bun.

For sides I had an appetizer of Antipasto Salad, purchased this from Jungle Jim's Market Deli Department. I also had Simply Potatoes Garlic and Herb Hashbrowns. First time I've tried the Garlic and Herb Hashbrowns, I eat the plain Hashbrowns all the time. These are just as good with more flavor. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice cream topped with Dole Mango Slices.

Dinner Tonight:Seasoned Breaded Yellow Lake Perch w/ Cut Green Beans, Hash Browns, and Whole Grain Bread

After a few perfect days out the rain has set in. It's rained most of the day, heavy at times, and continue through most of tomorrow. We need the rain though and the weekend is supposed to be beautiful. I had laid a 3 small Yellow Lake Perch fillets out in the fridge overnight to thaw. So for dinner tonight I prepared Season Breaded Yellow Lake Perch w/ Cut Green Beans, Hash Browns, and Whole Grain Bread.

I rinsed the fillets off and patted dry with a paper towel. I then seasoned them with Sea Salt and Black Ground Pepper and then rolled them in Zatarain's Garlic Seasoning Breading Mix. Sprayed a  medium size skillet with Pam Spray and added 1 tablespoon of Canola Oil, then preheated on medium heat. I added the fillets to the pan, skin side down, and fried it a total of about 2 1/2 minutes per side. The fillets came out just like I like them, Golden Brown and with a incredible taste! I love using the Zatarain's Breading mix on Fish, it's perfect!

For sides I heated a 1 serving can of Del Monte Cut Green Beans. I also fried some Simply Potatoes Has Browns, seasoned them with Sea Salt, Ground Black Pepper, and Parsley. And had Healthy Life Whole Grain Bread. For dessert tonight a Jello Sugarless Double Chocolate Pudding topped with Cool Whip Free.

Yellow lake perch

The yellow perch (Perca flavescens), commonly referred to as perch, is a freshwater perciform fish native to much of North America. The yellow perch was described in 1814 by Samuel Latham Mitchill from New York. Yellow perch are closely related, and morphologically similar to the European perch (Perca fluviatilis); however, the two are recognized as independent species based on anatomical and genetic differences. Other common names for yellow perch include American perch, coontail, lake perch, raccoon perch, ring-tail perch, ringed perch, and striped perch.
Latitudinal variability in age, growth rates, and size have been observed among populations of yellow perch, likely resulting from differences in day-length and annual water temperatures. Typically, northern populations of yellow perch live longer and grow to larger sizes. However, southern populations of yellow perch generally grow much faster. In many populations, yellow perch often live from 9-10 years, with adults generally ranging from 4-10 inches in length.
The world record yellow perch (18 in., 4 lb. 3 oz.)was caught in 1865 from New Jersey, and is the longest standing record for freshwater fish in North America. Anglers often refer to large yellow perch as "jumbo perch" or "jack perch".

Fried Crappie w/ Hash Browns, Green Beans, and Baked Garlic Knot Rolls

Dinner Tonight: Fried Crappie w/ Hash Browns, Green Beans, and Baked Garlic Knot Rolls

One long night last night! I was dealing with some very bad and strong Phantom Pains. They were the worst I've had to deal with in quite some time. Phantom pains are exactly that, they are pains that amputees sometimes experience in the area of their missing limb. Mine being my left leg that was amputated back in 2001. There's no known cure or treatments that work to ease the pain so I just have to ride it out. This started sometime during the early morning hours and I've had it ever since, hopefully it will quit soon! Mom stayed and had dinner with my Dad at the rehab center so it's just me tonight. I prepared Fried Crappie w/ Hash Browns, Green Beans, and Baked Garlic Knot Rolls. it had been a while since I broke out one of the frozen Crappie bags and prepared them and it time tonight!

I normally just season the Crappie with Sea Salt and Ground Pepper and rolled in Bread Crumbs but tonight I rolled the fillets in  Zatarain’s Fish Fri Lemon Pepper Seafood Breading Mix. After washing the Crappie and patting them dry on a paper towel I then poured some of the breading mix into a Hefty Zipper Bag and added the Fish shaking it in the bag until it was well covered. I skillet fried it in Canola Oil until it was golden brown. With this breading the Fish comes out perfect. The crust and the seasoning is meant for Fish! Crappie is delicious anyway you fix it but this breading makes it even more mouth watering!

To go with the Crappie I prepared some Hash Browns, Simply Potatoes has Browns. You can't beat Simply Potatoes brand Has Browns. Just season and fry to how done and brown you want them. Quick, easy, and delicious. Makes a great side for any meal. I also heated up a single serve can of Del Monte Cut Green Beans and I baked some Walmart Bakery Savory Garlic Knot Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Dinner Tonight: Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes

Typical March weather here today. Woke up with the ground covered with new snow, then the sun came out and melted the snow, then it started to snow so hard you couldn't see anything out, and now more sunshine, and so on and so for March weather! For dinner tonight, Cheddar Bacon Chicken Breasts w/ Kicked Up Chili Beans and Seasoned Diced Potatoes.

I think the original recipe for Chicken called for Chicken Tenders but I used Then Cut Chicken Breasts instead and they came delicious! Placed chicken on cookie sheet and baked for 20 to 25 minutes, turning once, until chicken is no longer pink in center and bread crumbs are golden brown. I served them with a side of Litehouse Bleu Cheese Dressing/Dip. The Chicken came out moist, tender, and very flavorful! And Bleu Cheese with Chicken anytime!

For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, Splenda Brown Sugar, and a few dashes of Frank’s Red Hot Sauce. Fried Walleye Fillet w/ Steakhouse Seasoned Diced Potatoes, Green Beans, and...

Dinner Tonight : Fried Walleye Fillet w/ Steakhouse Seasoned Diced Potatoes, Green Beans, and Whole Grain Bread

I hit the stores early this morning and loaded up on Fish and Produce. Found some great buys on Walleye and Lake Perch at a local Meijer along with some Mini Bananas, honey Crisp Apples, and sliced Celery and Carrots for some healthy snacking. For dinner, Fried Walleye Fillet w/ Steakhouse Seasoned Diced Potatoes, Green Beans, and Whole Grain Bread.

I think Walleye overall is the family favorite, my Moms not a huge Fish eater but really enjoys Walleye. After rinsing the fillets off I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn and then rolled them in a mix of Flour and Progresso Italian Bread Crumbs. I fried the fillets about 4 minutes per side, until golden brown, in Canola Oil. The taste of Walleye is just incredible! Their mild tasting and so fresh. The Flour and Bread Crumbs provide a perfect crust.

To go with the Walleye I prepared some Simply Potatoes Steakhouse Seasoned Diced Potatoes, Green Beans for myself and the Potatoes and Macaroni and Cheese for my parents. Simply Potatoes has various Potato products and all of them make great side dishes, all are fresh too. The Green Beans were a Del Monte single serving can that I warmed up and the Mac and Cheese was a box of Kraft Mac and Cheese. I also had Aunt Millie's Whole Grain Light Bread. For dessert/snack tonight Celery and Carrot slices with Litehouse Light Ranch Vegetable Dip.

Turkey Goetta, Diced Potatoes, and Egg Breakfast Skillet

Breakfast Menu: Turkey Goetta, Diced Potatoes, and Egg Breakfast Skillet w/ Toast

Couldn't wait to try something new with the Glier's Turkey Goetta! I prepared a Turkey Goetta, Diced Potatoes, and Egg Breakfast Skillet w/ Whole Grain Toast. I knew after frying up the Goetta for Breakfast yesterday it would go great in a Skillet Breakfast or Hash. I was right the Breakfast Skillet turned out as one great Breakfast Dish!

I used Glier's Turkey Goetta, Simply Potatoes Seasoned Diced Potatoes, fresh grated Dutch Gouda Cheese, and 1 Egg (per person). I used a large skillet that I sprayed with Pam and used Canola Oil (1 Tbs) as my Oil and cooked on medium heat. I first added the Diced Potatoes to the skillet, they take the longest to cook. While they were beginning to cook in a separate small skillet I started to brown my Turkey Goetta. I cooked it till it just started to brown and turned the skillet off as it would finish cooking when I added to the Diced Potatoes. When the Potatoes were almost ready I added the Goetta and shredded Gouda Cheese. After adding everything together I gently folded everything twice. I didn't want to stir it because I didn't want to break down the Potatoes or Goetta too much. After plating I topped it with a fried Egg, a Poached Egg would go great with this also. I also had a side of toasted Aunt Millie's Whole Grain Light Bread. It came out delicious! The combination of Diced Potatoes and Turkey Goetta is a good one. I love how the Goetta browns up and gets crispy. I'm glad I finally got around to joining that Goetta Nation!

Keeping it warm and cozy on the inside with a delicious Baked Fish Dinner, Lemon-Baked Cod w/ Red Potato Wedges, Seasoned Blackeye Peas, and Whole Grain Bread.

This is the first time I've prepared the Lemon Baked Cod and it's a keeper recipe! Dip fish into Butter mixture; coat Fish with Flour mixture. Then place Cod in ungreased square baking dish, 8x8x2 inches and pour remaining Butter mixture over Fish; sprinkle with Paprika. I am a Member of the Goetta Nation!!

I've got my member card and as of 7:20 am this morning I am a proud Member of the Goetta Nation! I had been wanting to try Goetta for quite sometime so while shopping the other morning I came across Glier's Turkey Goetta and i grabbed a couple of loaves of it, and am I glad I did!

I sliced some up into sausage like patties and pan fried them in Canola Oil. They fried up fantastic, crispy and delicious. Much like Sausage Patties but they fry up a bit more crispy and the seasoning and Steel Oats in them. But they are delicious and will be part of my Breakfast menus from now on! These would make a fantastic Hash!

For Breakfast I had 2 Goetta Turkey Patties, a serving of Hash Browns and buttered Toast. For my parents I prepared Eggs Sunnyside Up, Turkey Goetta Patties, Hash Browns, and Buttered Toast. My Dad had tried Goetta years ago but my Mom had never tried either. She is now a Goetta lover also! Love that Glier's Turkey Goetta!

Bison Sirloin & Sauteed Mushrooms w/ Green Beans, Skillet Fried Red Potato Wedges,...

Today's Menu: Bison Sirloin & Sauteed Mushrooms w/ Green Beans, Skillet Fried Red Potato Wedges, and Baked Garlic Knot Bread

It's a beautiful and Sunny day out but really cold! But the days are getting longer so the change of season's is getting closer. For dinner i prepared Bison Sirloin & Sauteed Mushrooms w/ Green Beans, Skillet Fried Red Potato Wedges, and Baked Garlic Knot Bread. I was using my last Bison Sirloin that I had in the freezer and like clock work I received my order from Wild Idea Buffalo!

The Bison Sirloin was Great Range Brand Bison meat.I seasoned the Sirloin with McCormick Grinder Steakhouse Seasoning and pan fried it in Canola Oil, about 3 1/2 minutes per side to medium rare. It was a thinner Steak so it didn't take long to fry. I topped it with some Sauteed Baby Bella Mushrooms. I can eat saute Mushrooms with every meal, I love Mushrooms!

For sides with my Bison I prepared Green Beans, Red Potato Wedges, and garlic Knot Bread. The Green Beans were Del Monte Single Serving. First time I prepared the Red Potatoes, they were Simply Potatoes brand. They come packaged, cut, and seasoned. Just prepare them how you like, bake or fry, or in Potato Dishes. I'll have to get more of these they turned out delicious! I also baked some more of the Walmart Bakery Garlic Knot Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

A Perfect Breakfast for Dinner

Today's Menu: One Egg Sunnyside Up, Turkey Breakfast Patties, Hash Browns, and Toast

I had skimped on Breakfast the last few mornings, in hurry to get a few things done early. So I was really wanting a good Breakfast so what better time than Dinner Time! I prepared  One Egg Sunnyside Up, Turkey Breakfast Patties, Hash Browns, and Toast. This sounds good enough for any meal!

I prepared the Egg and Turkey Patties on a griddle and the Hash Browns in a small skillet. I really like using the griddle when possible. All you have to do is give it a light spray of Pam and your ready to cook. No Oil needed which means less fat and calories. Scrambled Eggs and Sunnyside Up are my favorite ways to prepare Eggs, I went with Sunnyside Up. I used Jennie - O Lean Turkey Breakfast Sausage. Comes in a roll, just slice and form the size of Patties you want. For my Hash Browns I used Simply Potatoes Shredded Hash Browns. Then to top everything off I toasted 2 slices of Healthy Life Whole Grain Bread topped with I Can't Believe It's Not Butter. To drink a nice cold glass of 2% Milk. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Crock Pot Baby Back Ribs w/ Mashed Potatoes, Green Beans, and…

Dinner Tonight: Crock Pot BBQ Baby Back Ribs w/ Mashed Potatoes, Green Beans, and Whole Grain Bread

My Mom requested Ribs so Ribs it was, Crock Pot Ribs for dinner!  We purchased some Pork Baby Back Ribs from a local Kroger and used J B‘s Fat Boy Haugwaush Barbecue Sauce on the ribs. Last night I cut the Ribs in half so they would fit the Crock Pot and then used a half bottle of the JB’s Fat Boy Haugwaush Bar B Cue Sauce, rubbing it by hand on to the Ribs. I put the Ribs in a Hefty Zip Plastic Bag and let them marinate over night. The next morning put the Ribs in the Crock Pot and cooked them on low  for 8 hours. After 5 hours I applied the other half a bottle of Haugwaush to the Ribs.  The ribs came out perfect! Tender fall off the bone delicious. No knife needed as the bones could be removed by just pulling on them.  The hardest part of this is getting the Ribs out of the Crock Pot without them falling apart. At the end of the post I left the J B’s Sauce description and web site link.

For sides we had Bob Evan’s Mashed Potatoes, Green Beans, and Whole Grain Bread. For dessert I grabbed a mini loaf of Pillsbury Nut Quick Bread out of the freezer and let it thaw. Then had a slice of Nut Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

A Simple and Delicious Start of the Day!

Got in that extra hour of sleep this morning with the clock's being turned back for an hour. Woke up starving this morning and prepared just what sounded good. I had Hash Browns, Turkey Sausage, English Muffins, and Glazed Apples! I used; Simply Potatoes Hash Browns pan fried in 1 tablespoon of Extra Virgin Olive Oil, Bob Evans Turkey Sausage (my favorite Turkey Sausage Breakfast Links), Healthy Life Whole Grain Muffins (my usual choice of breads), and to top off and provide some fantastic flavor 1 1/2 tablespoons of Bob Evans Glazed Apples (love these Apples). You can prepare all this in about 20 minutes and you have one delicious and healthy breakfast! i added a cup of hot brewed Green tea and the Sunday Paper to make it complete.

Full House Breakfast!

Woke up starving this morning! Nothing better than a Full House Breakfast to stop that hunger. I prepared some Simply Potatoes Hash Browns. I always like mine golden brown but not crisp or burnt. I then topped them with some fresh grated Smoked Dutch Gouda, I love Gouda on anything!  While the Hash Browns were cooking in another skillet I fried 3 slices of Jennie - O Turkey Bacon. I switched over to Jennie - O Turkey Bacon from Oscar Mayer a while back. Jennie -O fries up a lot crisper and 15 less calories for 3 slices. Finally as the hash Browns and Bacon was done I used the Hash Brown skillet to fry an Egg Sunny side Up. Seasoned with Sea Salt and Ground Black Pepper, I also poured just a bit of Extra Virgin Olive Oil on top of the Yolk. The Olive Oil assures that the Yolk gets done also and provides a great added flavor. While the Egg was finishing I toasted 2 slices of Healthy Life Whole Grain Bread topped with I Can't Believe It's Not Butter. Breakfast, Morning Paper, Green Tea, ready for the day!

Fried Catfish Nuggets w/ Hash Browns and Velveeta Shells and Cheese

Today’s Menu: Fried Catfish Nuggets w/ Hash Browns and Velveeta Shells and Cheese

I had Catfish Nuggets a couple of weeks ago and they turned out so good I'm having them for dinner tonight. I used 2 bowls to prepare the nuggets filling one with EggBeater’s seasoned with Paprika and in the other Italian Style Bread Crumbs. I seasoned the Catfish with McCormick Grinder Sea Salt and Black Peppercorn and then dipped each one in the Egg Beater’s, making sure each was well coated. Shaking off the excess Egg Beater I then rolled them in the Progresso Italian Style Bread Crumbs. I fried them in Extra Virgin Olive Oil on medium heat about 4 – 5 minutes, turning once. They came up golden brown and delicious! Catfish fries up so good. Baking Fish is a lot healthier but Catfish is a Fish that tastes better fried.

For sides I had Simply Potatoes Hash Browns and I also prepared an individual serving of Velveeta 2% Shells and Cheese. Easy to prepare, microwave 3 1/2 minutes, and just as good as fixing it from a box. For dessert later a bowl of Blue Bunny Frozen Chocolate/Vanilla Swirl Ice Cream.
