Busy day around the house today. We are having a new roof put on the house and our shed today.
Which also means a whole lot of noise. Another beautiful Fall day out again, we are on a roll weather wise. Sunny and a high in the 70's. Did a load of laundry for Mom and cleaned up around the house. Didn't get to go see Dad today, I had to stick around the house while the repairs are going on. For dinner tonight I prepared a Seasoned Haddock w/ Multi - Grain Medley and 3 Bean Salad.
 





Well they finally had Haddock back in stock at the Kroger I go to. They told me a couple of weeks ago they were no longer going to carry it, they just weren't selling enough of it. But Monday when I was there they said they had brought it back due to so many complaints. Anyway I purchased 3 nice size fillets that I've already cleaned and cut into smaller fillets and put in the freezer. I did keep some out for my dinner tonight.  I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.






So to prepare it I had cut the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. Love Haddock!





For one side dish I prepared some Minute Multi Grain Medley. I love the Minute Multi Grain, It has Brown Rice, Thai Red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! Plus it’s only 160 calories and 31 net carbs per serving.







I also had some Read’s 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these chilled. For dessert later a Healthy Choice Vanilla Bean Frozen Greek Yogurt.

Directions
1 -Do NOT use the bag for cooking. COMBINE water and contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water.
2 – BRING to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed.
3 – REMOVE from heat. Fluff with fork.

Went out to get the morning papers and it's one cold morning out there, about 8 degrees with a wind chill at minus 3. Plenty of sunshine but the temperature didn't go up a lot today. Tomorrow being garbage day, it's always clean the fridge out of leftovers also. I got that done and on to laundry. The effort of cleaning and salting the driveway and curb yesterday paid off, as everything froze last night. Those that let theirs go have one frozen mess today. For dinner tonight I prepared a couple of new favorites, Sweet Italian Chicken Sausage with Red Bell Peppers w/ Cool Bean Salad.




Came across the Thin ‘n Trim All Natural Sweet Italian Chicken Sausage with Red Bell Peppers at Kroger last week. I had prepared one for my lunch the other day and it was so good I thought I would have them for my dinner tonight. They are pre-cooked, so all you have to do is heat them up and they’re ready to serve. I heated mine up in the microwave and served it on a Healthy Life Whole Grain Bun and topped with French’s Spicy Golden Mustard. It’s a great tasting, meaty Sausage with excellent flavor. The Red Bell Peppers with the Chicken Sausage is perfect, and so easy to prepare. They have different varieties so I’ll be trying the others also.






I had prepared a Cool Bean Salad a couple of nights ago and having the leftovers tonight. Another easily prepared item using a can of Read 3 Bean salad as the main ingredient. Makes a tasty and refreshing side dish. I left the complete recipe at the end of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Cool Bean Salad

Ingredients
1 can(s) 15 oz can of Read 3 Bean Salad (drained)Read 3 Bean 2
1 c chopped small Red Pepper
1 c chopped small Red Onion
1/2 c White Vinegar
1/3 c Sugar or use Splenda
1/4 tsp ground Black Pepper
Chopped Parsley

Directions
1. Heat together vinegar, sugar & onions. Cool and then add the oil.
2. After cooled pour over the rest of the ingredients then add black pepper and parsley.
3. Chill for several hours or overnight and serve.

Catfish Nuggets w/ Hash Browns and Cool Bean Salad

Dinner Tonight: Catfish Nuggets w/ Hash Browns and Cool Bean Salad



We got hit with snow again, around 7-8 inches of the white stuff! But not near as cold today, around 30 degrees. So me and the neighbor cleared, or tried clearing, the driveway again. Wish I could do it all myself but my Hoveround Mobility Chair doesn't do good in snow, especially our driveway which is a hill on the bottom half. We've got neighbors though that's always lending a hand. For dinner tonight a favorite, Catfish Nuggets! I prepared Catfish Nuggets w/ Hash Browns and Cool Bean Salad.






Picked up the Catfish Nuggets at Kroger yesterday. Rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Virgin Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat frying Catfish. I love using all the Zatarain’s Products!




For one side I prepared some Simply Potatoes Hash Browns, which I always use when making hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I also made a Cool Bean Salad. I left the full recipe at the end of the post. You'll love this, fresh and bursts with fantastic flavor. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.











Cool Bean Salad

Ingredients
1 can(s) 15 oz can of Read 3 Bean Salad (drained)
1 c chopped small Red Pepper
1 c chopped small Red  Onion
1/2 c White Vinegar
1/3 c Sugar or ue Splenda
1/4 tsp ground Black Pepper
Chopped Parsley


Directions

Cast Iron Skillet Baked Pork Chop w/ Sliced New Potatoes, 3 Bean Salad, and...

Dinner Tonight:  Cast Iron Skillet Baked Pork Chop w/  Sliced New Potatoes, 3 Bean Salad, and Whole Grain Bread.






I had a Pork Chop stored in the freezer that I put in the fridge to thaw overnight. Next day I marinated the Chop in JB’s Fat Boy Haug Waush BBQ Sauce for 4 hours in the fridge. To prepare it I used a Cast Iron Skillet, just something about the Cast Iron Skillets that I love using them. Added about 1/2 tablespoon of Canola Oil to the Skillet and browned both sides I then moved to the oven, which I had preheated on 400 degrees. I then baked it for about 22 minutes. I pulled it out when it hit 155 degrees (internal temperature) and let it set for 5 minutes to let it finish cooking. I love Chops marinated in JB's BBQ Sauce, and this one was delicious! The JB’s BBQ Sauce is the perfect marinade for any Pork.






For one side dish I heated up a can of Del Monte Sliced New Potatoes, boiled until heated and seasoned with Sea Salt, Ground Black Pepper, and Parsley Flakes. I also prepared a can of Read 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these cold. I also had a slice of Klosterman Wheat Bread that I buttered with I Can't Believe It's Not Butter. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Italian Pasta & 3 Bean Salad w/ Whole Grain Chicken Breast Strips

My parents was out on a Church function so I spent the day catching up on all the housework, cleaning and the laundry! Then went to store real quick to pick a couple of items up and done for the day. Feels a lot more like August Weather today, HUMID! For dinner a new one, Italian Pasta & 3 Bean Salad w/ Whole Grain Chicken Breast Strips.







First time making the Italian Pasta & 3 Bean Salad. Came across several recipes for this so I took a few ideas from them and added my own touches to it and it came one delicious recipe! I used Ronzoni Garden Delight Trio Italiano Pasta, Mezzetta Pesto Sauce, Peppadews, 1 Can Read 3 Bean Pasta, 3 thinly sliced Mini Sweet Peppers, 7 Marinated Ciligine Balls (cut in half), fresh Shredded Cave Aged Gruyere, and 1 California Sour Dough Boule. To prepare I just cooked Pasta according to package directions (boiled 11 minutes); drained and rinsed under cold running water. Then in a bowl, combined Pesto with Pasta and folded until it was well coated. Then combined Pasta with Bean Salad, discarding liquid. Stirred in Peppadews, sliced Sweet Mini Peppers and Ciligine; and refrigerated. To serve, sprinkled Cheese (Gruyere), over top. If you like Pasta Salads you'll love this version! This is the second time I've had the Peppadews and I am in love with these things, you have to try them! I served the Pasta in a hollowed out California Sour Dough Boule. Some other ingredients that you could add to this would be perhaps some toasted Walnuts, Pine Nuts or Sardines.





I also baked a couple of Perdue Whole Grain Chicken Breast Strips which I sliced up and added to my Pasta Salad. Another must try are these Perdue Whole Grain Chicken Breast Strips. I think possibly the best premade Chicken Strip I've ever had! They come breaded and just bake them for 12 minutes, flipping them over after 6 minutes. Great for salads, sandwiches, or just by their selves. Good item to have in the fridge or frozen. For dessert later a Healthy Choice Chocolate Swirl frozen Yogurt.
