For my Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and Scrambled 2
medium size Eggs. Also had a cup of Bigelow Decaf Green Tea. Very good way to start off this cold Friday Morning. Rolled out to get the morning papers and it was cold out, 21 degrees and a wind chill near 15 degrees! And we had our first snow of the year, not much but traces on the grass and rooftops. For the day mostly cloudy and only a high of 29 degrees. Cleaned the house this afternoon, run the vacuum, dusted, and such. Back to bed afterward, still not feeling real good. For Dinner tonight its a Seasoned Gulf Coast Grouper Sandwich w/ Baked Fingerling Potato Wedges.






I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends bring me up from Florida! I had a fillet in the freezer so I sat it in the fridge to thaw overnight. To prepare the fillet I
seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until it was well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a 1/2 tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillet, frying about 3 minutes per side until golden brown. The fillet came out Golden Brown and Delicious! I served it on a Healthy Life Whole Grain Hamburger Bun.




To go with the Fish Sandwich I baked some Fingerling Potato Wedges. I purchased these at Jungle
Jim’s last week and prepared what was left of them. To start I first washed the Potatoes off in cold water and patted dry with a paper towel. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. I love Fingerling Potatoes! I had a Peach Diet Snapple to drink with the meal. For dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.





Grouper - Firm texture, white meat with large flake and a mild flavor. Extra lean fish.

“Not So Sloppy” Buffalo Joe's w/ Baked Crinkle Fries

Dinner Tonight: “Not So Sloppy” Buffalo Joe's w/ Baked Crinkle Fries





Started my morning off by making a Breakfast Sandwich. Toasted a Healthy Life Whole Grain
English Muffin and as that toasted I fried up some Boar's Head Deluxe Ham and as that was finishing I took a slice of Sargento Swiss Cheese and layered that on to top of the Ham while in in the skillet. Love these English Muffin Breakfast Sandwiches! Heat, humidity, and showers throughout the day,seems to a holding pattern.  We got a whole lot of rain overnight and into today. Helped out Mom on a couple of loads of laundry. Then had to do some minor repair on the Hoveround. For Dinner tonight I prepared some “Not So Sloppy” Buffalo Joe's w/ Baked Crinkle Fries.
   




It’s Sloppy Joe Night tonight for dinner! A delicious and a super easy meal to make. To make the Sloppy Joe's I used a 1 lb. package of Wild Idea Buffalo Premium Ground Buffalo, 1 jar of Hormel Not So Sloppy Joe Sauce, and Healthy Life Whole Grain Hamburger Buns. Using Buffalo, or Bison, instead of Beef will give your Sloppy Joe's a deeper and richer flavor.








Using a large skillet to brown the Buffalo in I seasoned it with McCormick Grinder Sea Salt and
Peppercorn Medley. After the Buffalo was browned and no longer pink I added the jar of Not So Sloppy Joe Sauce stirring and making sure the Sauce and Buffalo was well mixed. Simmer until it’s warm, and served. I love the Hormel Not So Sloppy Joe Sauce. It’s a good thick sauce well seasoned with Spices, Onions, Green Peppers among other ingredients (70 calories and 15 carbs per serving). I served them on the Healthy Life Bun. Another delicious dish using Wild Idea Buffalo. For a side I baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for the Fries. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Ground Pork Burger w/ Baked Fries

Dinner Tonight: Ground Pork Burger w/ Baked Fries





A break from the snow today and not real cold today. But it looks as though we are in for a week of cold weather, below zero a few mornings and below freezing all week. Did a few chores indoor and then outside clearing the driveway, again! Got most of slush and snow off and salted it . I wanted to get all I could off before the big freeze tomorrow. After that settled in for a day of NASCAR and College Basketball. For dinner tonight it's a Ground Pork Burger w/ Baked Fries.






I bought a 1 lb. package of Kroger Ground Pork at Kroger the other day and made 5 Pork Burgers out of it, freezing 4 of them and having one for my dinner tonight. I seasoned it McCormick Grinder Sea salt and Black Peppercorn. Then pan fried it in a small skillet in Extra Virgin Olive Oil, 4 1/2 minutes per side. Served it on a Healthy Life Whole Grain Bun and topped it with a slice of Simple Truth Muenster Cheese. The Ground Pork is always so moist and flavorful, again Kroger has some of the best Pork Products around. I also baked some Ore Ida Steak Fries, served with a side of Hunt's Ketchup. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Turkey Bacon and Muenster Cheese Turkey Burger w/ Baked Fries

Today's Menu: Turkey Bacon and Muenster Cheese Turkey Burger w/ Baked Fries







A beautiful Autumn Day outside today! Sunny and a high of about 61 degrees. Started off with a couple of Jennie - O Turkey Sausage Links, a Golden All Natural Potato Cake, a slice of Toast, and hot cup of Bigelow Decaf Green Tea. A very good start to the day! Did some laundry and got the cart out and spent most of the afternoon riding around and enjoying the day. For dinner tonight it's a Turkey Bacon and Muenster Cheese Turkey Burger w/ Baked Fries.






I’m using the Jennie – O Turkey Burger Patties. Their already pre-made Patties and come fresh or frozen so all I did was season it with Sea Salt and Ground Black Pepper and fry! I fried them in Canola Oil about 8 minutes per side. I served the Burgers on Healthy life Whole Grain Bun and topped the Burger with Jennie - O Turkey Bacon and Kroger Private Selection Muenster Cheese. Love these Burgers!



Then for a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Dinner Tonight: Extra Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries






Had some overnight and early morning showers but a sunny afternoon. A bit warmer and more humid out, ready for the Fall weather to return. Laundry and house cleaning and then NFL Football for the rest of the day! For dinner tonight it’s an Extra Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries.








I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers.Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 1/2 minutes per side, and done! I topped it with a fresh slice of Borden Extra Sharp Cheddar and Sauteed Mushrooms, served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. Hard to beat these Wild Idea Buffalo Burgers, juicy and delicious!








Then for a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

If you read my earlier post you know how I started my day. Pancakes, Jennie O Turkey Bacon, and a cup of Bigelow Decaf Green Tea! Man those Pancakes were good! Not much going on today, did some laundry and that was about it. Caught up on some sleep, had a case of the Phantom Pains last night that kept me up. Those always make for a long night. For dinner tonight it's Jennie – O Bun Length Uncured Turkey Franks w/ Pringle's Fat Free Chips and Trop-A-Rocka Diet Snapple.





I used Jennie – O Bun Length Uncured Turkey Franks. My last package of my free samples of Jennie – O Turkey Franks. I love grilling but I’m a huge fan of boiling Franks and Dogs also. So I boiled these for dinner. These are some beautiful looking plump Turkey Franks, when boiled. Fantastic taste and as they say, they’re Bun Length. I topped it with some French's Yellow Mustard and served them on a Healthy Life Whole Grain Hot Dog Bun. Thank you Jennie – O! For a side I had some Pringle's Reduced Fat Chips and an ice cold bottle of Trop-A-Rocka Diet Snapple! For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Jennie - O Uncured Turkey Franks and...

Another beautiful day out today, sunny and a high of 75! Started the day with a Turkey Goetta and Hash Brown Hash for Breakfast. Caught up on some household chores and then out on the cart enjoying the beautiful day. For dinner I prepared some Jennie - O Uncured Turkey Franks and warmed a bowl of some leftover Green Beans from last night's dinner.








I used the Jennie - O Uncured Turkey Franks that I received from Jennie - O, as free samples to try. I had them frozen and let them thaw in the fridge overnight. We were low on Propane Gas for the grill so I boiled them in water. These are nice plump, great tasting Turkey Franks! Actually some of the best Turkey Franks I've ever tried. I've got one package left in the freezer, unfortunately I've yet to find a store in this are that sells these. I've requested them at a few stores but no go so far! They cooked up in only 5 minutes. i served it on a Healthy Life Whole Grain Hot Dog Bun and topped it with French's Yellow Mustard. For a side dish I reheated a bowl of the Green Beans we had for dinner last night. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries


Not quite as hot or humid out, bit of break. Went to the Kroger up the road and picked up a couple of items for myself and also a few items for Mom. Came home to find a gift box from Jennie - O Turkey as part of the  Jennie – O Switch Club that I am a member of. It contained 3 different of the Turkey Franks, Coupon, and a Meat Thermometer. You can read more on this in a previous post I posted earlier today. They came and measured for our new Kitchen Floor that will be installed later. So for dinner tonight it's Panko Crusted Cod Fish Sandwich w/ Baked Fries.









To prepare the Cod I rinsed the fillets off with cold water and patted dry. Then seasoned them with Sea Salt and Pepper. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip the floured fillet into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Place fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heat canola oil in a skillet and place the fillets in and saute 3 minutes each side, or until fillets are heated through and Panko Crust has browned. Served the fillet on a Healthy Choice Whole Grain Hamburger Bun. Panko and Fish are perfect together! Mom and dad both said it was one of the best Fish Sandwiches that they had ever had.








For a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Weight Watcher's Snack Size Dutch Chocolate Ice Cream Sandwich.







Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs (Shake and Bake Seasoned Panko)
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Canola Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.

The high humidity continued today outside, a couple of showers and in the high 80's. Went to my Family Doctor today for a check-up, blood work for sugar, cholesterol, and such. I was in my wheelchair heading in to the examination area and as I was going in the door the front wheel came flying off throwing me forward onto the floor. A nut on the axle had come off causing the wheel to come off. Luckily nothing was broke, but my right wrist has a slight sprain and my knee has a bruise. Could have been worse I guess. Came home and repaired the wheel, I need a new one but just don't have the money right now. Enough excitement on to dinner! Tonight it's Jennie – O Turkey Frank Cincinnati Style Cheese Coneys.







I used the Jennie – O Turkey Franks. I boiled them, it took about 5 minutes and they were ready. I opened up a can of Skyline Original Chili and heated that up for my Chili Topping. I served everything on a Healthy Life Whole Grain Hot Dog Bun. Then for my toppings I used the Skyline Chili, French’s Yellow Mustard, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Put it altogether and you have a prime example of the World Famous  Cincinnati Style Cheese Coney! Had a small side of some Marinated Olives along with a Diet Dr. Pepper that I had let chill in the freezer for about 15 minutes. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Another gorgeous Fall like day around the neighborhood today! 39 degrees this morning and a high around 68 with sunshine and blue skies above! Out riding the four wheel for a while and doing some outside cleaning. For dinner tonight a Pulled Buffalo BBQ Sandwich w/ Green Leaf Lettuce and Radish Salad.





A light and healthy dinner tonight. I used Wild Idea Buffalo Pulled Buffalo, a 1 lb. package. A great item to have in the freezer, just thaw and heat it up! After heating it up I served it on a Healthy Life Whole Grain Bun and topped it with JB's Fat Boy Chipotle BBQ Sauce. I love BBQ Sandwiches but using Pulled Buffalo makes that much more delicious! The Pulled Buffalo is so moist and flavorful, not to mention healthier than Beef.





For a side to go with my Sandwich I went this morning and bought some fresh Green Lettuce and Radishes. I made a Green Lettuce and Radish Salad, adding a sprinkle of fresh grated Parmesan Cheese, sliced Pepadews, J and D's Bacon Croutons, and topped with Ken's Light Options Sweet Vandalia Onion Dressing. It's been a while since I've had a Salad. For some reason it's hard for me to digest green vegetables and later will give me an upset stomach. But I miss having a Salad so it was worth it. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Buffalo Cheese Burger w/ Baked Fries

Late afternoon a friend of mine meet me over at a place here in West Chester, Union Square. They had the The Union Centre Food Truck Rally going on all day there. It was a fund raiser for the Boys and Girls Clubs here in Butler County. Seemed to be a good turnout as the vendors we talked to said it had been steady all day. There was about 11 Food Trucks and a few vendors that were cooking from a tent. Didn't stay long though, just too humid out. A passing shower made it worse. For dinner tonight a simple but one of my all-time dinner classics,  Buffalo Cheese Burger w/ Baked Fries!





I used my favorite Buffalo Burger, Wild Idea Buffalo 1/4 Buffalo Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Sargento Ultra Thin Sharp Cheddar Cheese and served it on a Healthy Life Whole Grain Bun.





For a side with my Cheese Burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Tried these for the first time earlier and really like them. Served these with a side of Hunt's Ketchup for dipping. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

My voice has come back somewhat but still not full strength from the Laryngitis. Had the 4 Wheel Mobility Scooter out enjoying the day! They say the August Hot and Humid weather is on it's way all next week. For dinner tonight I prepared a Mushroom and Provolone Cheese Grilled Turkey Burger w/ Antipasto Salad and Garlic and Herb Hashbrowns.





I grilled a Jennie - O All White Meat Turkey Burger. A great tasting Turkey Burger and it's a pre-made pattie and only 180 calories. I grilled a total of 10 minutes, 5 minutes each side. Came out moist and juicy with a bit of char, it's hard to beat a grilled burger! I topped it with a slice of Sargento Reduced Fat Provolone and Sauteed Baby Bella Mushrooms , served it on a Healthy Life Whole Grain Bun.





For sides I had an appetizer of Antipasto Salad, purchased this from Jungle Jim's Market Deli Department. I also had Simply Potatoes Garlic and Herb Hashbrowns. First time I've tried the Garlic and Herb Hashbrowns, I eat the plain Hashbrowns all the time. These are just as good with more flavor. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice cream topped with Dole Mango Slices.

I spent some of the day with little and lovely ladies, Jaden and Aria. Their my cousin's two little gals and I love spending time with them. I took them out for lunch and they wanted to go to Sonics, so Sonics it was! The oldest one is going to be in third grade and the other a first grader this year. Hopefully next week I'm going to have them over for a picnic before school starts back up, starting early this year. For dinner I prepared a Sauteed Mushroom Buffalo Burger w/ Baked Crinkle Fries.





We ll the grill died again so I had to pan fry the Burger. I used Great Range Ground Bison to make my Burger.I made my pattie and seasoned it with Sea Salt and Ground Black Pepper. I pan fried it in Canola Oil and fried it about 4 minutes per side, a good medium rare with a char on the outside and a little pink in the center. Made a delicious juicy burger! I served it on a Healthy Life Whole Grain Bun and topped with Sauteed Baby Bella Mushrooms.





To go with my Burger I had Baked Ore Ida Crinkle Fries with a side of Daisy Reduced Fat Sour Cream. Made a perfect and healthier Burger and Fries. Healthier by using Bison over Beef, by using a Whole Grain Bun, and by Baking the Fries instead of a deep fry. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Spent the day fishing again and again didn't catch anything that was very big. But did catch about 10 small Bass and Blue Gill. Love being out with the peace and quiet. The weather was beautiful again. It was 50 degrees when I got up and it reached a high of only 77 with no humidity. Hard to beat for July weather! For dinner I prepared a Pulled Smoked Pork Barbecue Sandwich w/ Baked Crab Cakes.




I had planned on a Pulled Smoked Pork Barbecue Sandwich with some BBQ Beans or some type of a Potato Dish but I had a small container of Crab Meat that I had to use and decided to make Crab Cakes. I used Montgomery Inn Pulled Pork w/ Barbecue Sauce. This may well be the best BBQ in the land! At least Bob Hope thought so when he was alive. Mr Hope would order this straight from Montgomery Inn back then and have it shipped to wherever he was at the time. Around here it hasn't few rivals. This comes in a 2 LB. container and I just get the amount I want and freeze the rest. Incredible taste in an  excellent BBQ Sauce. Served it on a Healthy Life Whole Grain Bun, toooo good!





To go with my BBQ Sandwich I prepared some Baked Crab Cakes. I watched Bobby Deen make these
last weekend on the Cooking Channel and they looked delicious. So I thought I would give them a try. The recipe makes 12 Crab Cakes but I only had a 1/2 LB. of Crab Claw Meat so I only made 6. The recipe also called for Jumbo Crab Meat and 1 Egg, which I substituted with Egg Beater's. They turned out very good so I'm looking forward to preparing a full batch of the them using Jumbo Crab Meat instead of the Claw Meat. I served them with Louisiana Remoulade Dressing, which is perfect for any Seafood. Good Baked Crab Cake recipe to keep. Montgomery Inn Pulled Smoked Pork Barbecue

Directions

Baked Crab Cakes


INGREDIENTS

2 slices whole grain bread
1/4 cup skim milk
1 tablespoon light mayonnaise
1 teaspoon Dijon mustard
1 teaspoon Cajun seasoning
1 egg, beaten
Zest and juice of 1 lemon, plus lemon wedges for serving
1 pound jumbo lump crab meat, picked free of shells
1 tablespoon chopped fresh chives



DIRECTIONS

Preheat the oven to 375 degrees F.

Place the bread in a small bowl and pour over the milk. Combine the mayonnaise, mustard, Cajun seasoning, egg and lemon zest and juice in a large bowl and whisk together. Add the milk-soaked bread and whisk together again. Fold in the crab and chives.

Form the crab mixture into 12 equal cakes and place on a baking sheet. Bake for 8 to 10 minutes. Serve with lemon wedges.

Busy afternoon as I went for my 6 month check-up at my Oncologist. I'm very lucky to have found not only one the finest Oncologist but one of the friendliest and with a super staff! I've been seeing him since November of 1998. He's helped through some really difficult times with not only Melanoma Cancer but a variety of aches and illnesses, proud to call him a friend. Anyway he read my scan reports and everything was negative on the Cancer front! This month almost to the very day marks my Anniversary of being Cancer Free also, 9 years! It's been a struggle but I'm still here! For dinner, a very light dinner. I prepared a Oven Roasted Rosemary Ham Sandwich w/ Creamy Tomato Soup.





I used Kroger Brand Sliced Oven Roasted Rosemary Ham. I had never tried this Ham until last week, sorry it took me so long to try it! It's sliced really thin and the Ham just melts in your mouth. Nice flavor and it's only 70 calories 0 carbs per serving. I served it on a Healthy Life Whole Grain Hamburger Bun and topped it with a slice of Sargento Ultra Thin Swiss Cheese, which is only 40 calories and 0 carbs. So the Sandwich is a total of only 190 calories and 16 carbs.





I also heated up a can of my favorite Tomato Soup, Amy's Organic Creamy Tomato Soup. I've been using this a couple of years now. Creamy with a fantastic flavor and it's 110 calories and 19 carbs. I added a half serving of Skyline Oyster Crackers, what's Tomato Soup without Crackers! A light, low calorie, low carb, delicious dinner. For dessert a bowl of Del Monte No Sugar Added Peach Chunks.

Another dreary day out today, a lot of rain. Not much of an appetite today so I went with a Soup and Sandwich. Dinner tonight, Hot Ham and Cheese Sandwich w/ Creamy Tomato Soup.



For the Sandwich I used Kroger Brand private Selection Smokehouse Hickory Ham, Sargento Ultra Thin Swiss Cheese, and Healthy Life Whole Grain Bun. I just heated the Ham up a bit in a skillet and it was ready. I used Amy's Organic Creamy Tomato Soup, one of my favorites! Ric and creamy Soup and it's only 110 calories and 19 carbs per serving. There's 2 servings per can so I always have my lunch the next day when I fix this. Served it with a side of Skyline Oyster Crackers. For dessert later a bowl of Breyer's carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

For dinner one of my favorites a Smoked Cheddar and Mushroom Bison Burger w/ Baked Crinkle Fries! Just love that Bison or Buffalo. I used another of the Buffalo Gal 1/3 Bison Patties. Their a really good looking plump Burger. I pan fried it on medium heat in Canola Oil about 4 minutes per side. The Burger came out moist and juicy with that fantastic Bison taste, excellent Bison Burger! I served it on a Healthy Life Whole Grain Bun topped with Sauteed Mushrooms and a slice of Borden Smoked Cheddar. I left the Buffalo Gal product info and web site link at the bottom of the post. For a side I had a serving of Baked Ore Ida Crinkle Fries. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Suggested Cooking Tips:
Bison burger is lean (ranging from 93-96% lean) so when grilling or pan frying the burger – place it on medium heat – COVER. Allow the burger to do its cooking on one side. Don’t poke, smash or continually flip the burger because you want to maintain all of the moisture and fat in the meat. When burger appears mostly cooked – flip one time and in 30-45 seconds it should be ready to serve. You might find that using a meat thermometer is helpful when first cooking the burger. It should reach 160 degrees internal temp.

In a span 24 hours here in the Ohio Valley it Thundered, Rained, Sleeted, Freezing Rain, and now it's Snowing. We have about 2" on the ground and they said we could expect anywhere from 6" to 8" with more coming over the weekend. Welcome to Ohio!

I had tried the Bison Top Sirloin about a week ago and tonight I'm trying the Buffalo Gal 1/3 Buffalo Patties. Their a really good looking plump Burger. I pan fried it on medium heat in Canola Oil about 4 minutes per side. The Burger came out moist and juicy with that fantastic Bison taste. I'll give it two thumbs up, excellent Bison Burger! I served it on a Healthy Life Whole Grain Bun topped with Sauteed Mushrooms and a slice of Borden Smoked Cheddar.


For a side I had a serving of Baked Ore Ida Crinkle Fries. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Suggested Cooking Tips:
Bison burger is lean (ranging from 93-96% lean) so when grilling or pan frying the burger - place it on medium heat - COVER. Allow the burger to do its cooking on one side. Don't poke, smash or continually flip the burger because you want to maintain all of the moisture and fat in the meat. When burger appears mostly cooked - flip one time and in 30-45 seconds it should be ready to serve. You might find that using a meat thermometer is helpful when first cooking the burger. It should reach 160 degrees internal temp.

Dinner Tonight: Mushroom & Smoked Cheddar Bison Burger w/ Crinkle Fries





Really enjoyed the day, out spreading Christmas Cheer! I was out delivering Christmas cards and Gifts this afternoon. I love giving friends and family gifts, It's my favorite part of Christmas! I dropped off Candy and Gift Cards to my Family Doctor and his staff and cards and candy to my long time Oncologist along with his staff. Also while at my Oncologist, as I always do every month, I dropped off a huge box of Snacks - Doritos, Lay's Potato Chips, Cheese Crackers, and such the treatment center in his office. It's so sad, they enlarged their in office treatment center for cancer patients and it's still not large enough to treat all the patients fighting cancer. I received treatment there myself once and I hold a very soft spot in my heart for all those fighting the various forms of cancer. So I make sure I drop off snacks for the patients to snack on while receiving their treatments.  I finished up my gift deliveries by dropping a few cards off to my neighbors. I've got some great neighbors, they are always there to help and assist me with what ever help I need. Being in a wheelchair having good neighbors like I do is a blessing!

Well for dinner I prepared Mushroom & Smoked Cheddar Bison Burgers w/ Crinkle Fries. yes I've got my Mom eating a Bison Burger, she's coming around! I used Great Range Ground Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning and pan fried them about 3 - 4 minutes per side, 3 minutes for mine I like medium rare. I served them on a Healthy Life Whole Grain Bun and topped them with Sauteed Baby Bella Mushrooms and a slice of Bordon Smoked Cheddar Cheese.

For a side I baked some Alexia Crinkle Fries with a dipping side of Hunt's Ketchup. For a dessert/snack later I prepared some BBQ Pineapple Turkey Meatballs. 3 ingredients; 1 package Honeysuckle White Turkey Meatballs, 1 bottle BBQ Sauce (I used Montgomery Inn Sauce), and 1 small can Dole Pineapple Tid Bits. Just add all ingredients to a medium size sauce pan set it on low and let it simmer till warmed through out. Makes a great little quick snack or appetizer.
