Crock Pot Pork Back Ribs w/ Potatoes Au Gratin, Green Beans, and Whole Grain Bread

Dinner Tonight: Crock Pot Pork Back Ribs w/ Potatoes Au Gratin, Green Beans, and Whole Grain Bread

Rain and more rain has started here, for the next 5 days! Started the morning off with some Turkey Goetta, 1 Egg Sunnyside Up, and some lightly buttered Whole Wheat Toast. Then for lunch a Salmon Burger on a Whole grain Bun and for diner Ribs! My Mom purchased the Ribs yesterday at Kroger. She said it had been quite a while since I made any for her so as I always say, "What Mom wants Mom gets!" So I prepared Crock Pot Pork Back Ribs w/ Potatoes Au Gratin, Green Beans, and Whole Grain Bread.

I love fixing these Ribs! The night before I cut the rack in half so they fits in the Crock Pot. I then rub in JB’s Fat Boy Haugwaush BBQ Sauce and place them in Hefty Zip Lock Bag, then into the fridge to marinate all night. JB’s Fat Boy has several sauces and rubs for all meats. I’ve use them all and purchase them at a local Kroger. So back to the ribs. Next day I line my Crock Pot with a Reynolds Crock Pot Bag. Another fantastic invention! No scrubbing the Crock Pot with these after using just throw the bag away and wipe out the Crock Pot of any moisture, clean up done! I spray the bag with Pam Spray and add my ribs to the Crock Pot. I just tighten the lid, turn it on low, and I’m done. I cook them anywhere from 7 – 8 hours, I cooked these for dinner tonight for 8 hours. After about 5 hours I poured about a half bottle of the BBQ Sauce over top the ribs. The aroma through out the day is amazing! The only hard part is trying to get the ribs out whole, they’re so tender they fall apart. No knives needed, the bones just pull out. Fantastic flavor, moist and tender, and very easy to prepare.

For side dishes my Mom prepared some more of the fresh Green Beans, or a Mess of Beans as she says, she had purchased from Jungle Jim's Market and i prepared some Idahoan Au Gratin Homestyle Casserole, along with Aunt Millie's Light Whole Grain Bread. I left the Idahoan Product info and instructions at the end of the post. For dessert a slice of baked Pillsbury Nut Quick Bread with 2 scoops of Breyer's Carb Smart Vanilla Ice Cream.

Baked Pork Chop w/ Green Beans, Au Gratin Potatoes, and...

Dinner Tonight: Baked Pork Chop w/ Green Beans, Au Gratin Potatoes, and French Bread

For dinner tonight I had a large Center Cut Pork Loin Chop that I marinated it in J B’s Fat Boy’s Haugwash Barbcue Sauce and refrigerated it for 2 hours. I removed the chop from the fridge and shook off any excess of the sauce and then seasoned it with McCormick Grinder Sea Salt and Grinder Black Peppercorn and then applied a light rub of McCormick Grillmate’s Applewood Rub. I then pan fried the Chops browning both sides then baked the Chops at 350 degrees for 30 minutes and then flipping the Chops over and baking another 30 minutes or until temperature reads 165 degrees. I love these Big Chops moist and tender with some great leftovers!

The sides were the Au Gratin Potatoes I had leftover from last night, Green Beans, and Pillsbury Rustic French Bread. For dessert later tonight a slice of Nut Quick Bread topped with Cool Whip Free.

Fried Walleye Fillet w/ Au Gratin Potatoes, Grilled Asparagus, and..

Dinner Tonight: Fried Walleye Fillet w/ Au Gratin Potatoes, Grilled Asparagus, and Whole Grain Bread

I had one the best tasting Walleye fillets I've had in a long time. I purchased it from Meijer the other day along with a couple of Rainbow Trout fillets. I rolled the fillet in a Whole Wheat Flour and Italian Bread Crumb mix. I seasoned it with McCormick Grinder Sea Salt and Grinder Black Peppercorn. I fried it on Medium Low heat in a 1/2 tablespoon of Extra Virgin Olive Oil about 4 minutes per side and it turned out golden brown and delicious!

As sides I had Grilled Asparagus Spears and Idahoan Potatoes Au Gratin.I love Idahoan Potatoes Au Gratin! They are a breeze to fix and turn out perfect! The box contains your Potatoes and Sauce. You just add Water, 3/4 Cup 2% Milk and 1 1/2 Tablespoon of I Can’t Believe It’s Not Butter. You can either bake it or cook it on stove top. I baked mine to give it a Golden Browning. Baked it for 25 minutes at 450 degrees. They are 160 Calories and 20 carbs as fixed by the directions but I substituted the Milk for 2% Milk and Butter with the I Can’t Believe It’s Not Butter to cut back on both the calories and carbs. Along with the Asparagus and Potatoes I had Healthy Life Whole Grain Bread. For dessert later a Yoplait Delight 100 Calorie Parfait.

Mahi Mahi w/ Au Gratin Potatoes, Brown Rice, and...

Tonight's Dinner : Mahi Mahi w/ Au Gratin Potatoes, Brown Rice, and Whole Grain Bread

I used the seasoning/marinade I used the other night for my Fish Tacos on my Mahi Mahi tonight. I'll leave the recipe at the end of the post. This seasoning works really well with the Mahi Mahi also. After brushing both sides of the fillet with the seasoning I let it marinate for about 30 minutes before frying. Seasoned both sides of the fillet with Sea Salt and Ground Black Pepper. I used a half a tablespoon of Extra Virgin Olive Oil for frying and fried each side about 3 minutes per side. The fillets came out perfect! Flaky and moist with a whole lot of great flavor.

As sides I had Idahoan Au Gratin Potatoes, which have became my new favorite, Uncle Ben's Whole Grain Brown Rice, and Healthy Life Whole Grain Bread. For dessert later Jello Sugar Free Chocolate Pudding topped with a tablespoon of Cool Whip Free.
