Soups are a healthy and easy lunch to make ahead and reheat while at work. Our easy soup recipes for lunch, including lentil soup recipes, bean soup recipes, chicken soup recipes and more, are delicious ideas for a satisfying lunch. Make a big pot of soup over the weekend, and you’ll have lunch made for the week! Try our Curried Red Lentil Soup for a zesty, low-calorie soup recipe or Chilly Dilly Cucumber Soup for a cold soup for the warmer months.

Chilly Dilly Cucumber Soup
This cold cucumber-dill soup has a surprisingly seductive taste. The secret is that both the broth and the yogurt garnish are loaded with fresh (never dried) dill and chives. Recipe by Nancy Baggett for EatingWell......
White Bean Soup (Fassoulatha)

Kitchen Hints of the Day!
Before long some of you will be packing school lunches for the kids. Here's some handy hints on packing........
* Stock ready-to-go snacks in the fridge, freezer and cupboard. Single servings of grapes, baby carrots, snap peas, crackers and pretzels can be prepared the night before, or even on Sunday for the whole week! Preparing the night before is not only a time-saver, but it leaves you with fewer decisions to make in the morning.
* Fill a thermos with boiling water to heat the core for a few minutes. Spill out the water just before you fill the thermos with soup or an entree. The thermos is now hot and ready for your hot food, and will stay that way longer.
* Freeze puddings, smoothies, drinks, etc: A lot of you freeze those items the night before and then add them to your lunch boxes in the morning. This idea doubles as a ice pack and turns into a cool, slushy/ice cream treat by the time lunch rolls around.
* Remove odors from a lunch box by placing inside a slice of bread that has been soaked in white distilled vinegar. Leave overnight.

One of America's Favorites - Egg Salad and Ham Salad
Egg Salad....
Egg salad is part of a tradition of salads involving protein mixed with seasonings in the form of herbs, spices, and other foods, and bound with mayonnaise. Its siblings include chicken salad, crab salad, ham salad, lobster salad, and tuna salad.
Egg salad is often used as a sandwich filling, typically made of chopped hard-boiled eggs, mayonnaise, mustard, minced celery and onion, salt, black pepper, and paprika. It is also often used as a topping on green salads.
Egg salad can be made creatively with any number of other cold foods added. Bacon, bell pepper, capers, cheese, cucumber, onions, lettuce, pickle relish, and pickles are common additional ingredients.
A closely related sandwich filler is egg mayonnaise, wherein chopped hard-boiled egg is mixed with mayonnaise only.
A popular variant in Russia and former Soviet states is the Salad Olivier.
Egg salad can spoil if not refrigerated. This results in illness if consumed.
Ham Salad....
Ham salad is a traditional Anglo-American salad. Ham salad resembles chicken salad, egg salad, and tuna salad (as well as starch-based salads like potato salad, macaroni salad, and pea salad): the primary ingredient, ham, is mixed with smaller amounts of chopped vegetables or relishes, and the whole is bound with liberal amounts of a mayonnaise, salad cream, or other similar style of salad dressing, such as Miracle Whip.
Ham salad generally includes cooked, cold ham which has been minced, cubed, or ground; the mayonnaise or other dressing; diced sour or sweet cucumber pickles or cucumber pickle relish; and perhaps chopped raw celery and onion. Raw cucumber, shredded carrot, pimento, sweet corn kernels, or tomato are sometimes used. Very often, the salad is mixed or garnished with generous quantities of chopped hard-boiled egg; less frequently, grated cheese may be used, or peas or boiled potato may be added to bulk out the dish. The salad is kept chilled until serving.
Like other mayonnaise-bound meat salads, the finished dish typically has a chunky, grainy, or pasty texture, and is frequently served as a spread upon crackers or upon bread in a sandwich.
Ham salad is still very popular in western Pennsylvania, and is also fairly popular in the Upper Midwest, Mid-Atlantic and Southeastern regions of the United States, which have long histories of pork and ham production.
As with other Anglo-American salads, the recipe for ham salad has many regional and family variations. Similar salads are made using chopped or ground bologna, Spam, and other cured or potted meats and sausages.

French Pizza Bread
I had bought a lot of French Bread for Mom the other day. As they were leaving for Church this morning she asked me if I would fix her and Dad some baked French bread Pizza with it for when they return from Church for lunch. Well I don't mind cooking, especially when it's for Ma and Pa!
To prepare it I'll need the Loaf of French Bread, Ragu Pizza Sauce, Hormel Turkey Pepperoni, Sliced Black Olives, McCormick Italian Seasoning, Extra Virgin Olive Oil, Sargento Reduced Fat Shredded Mozzarella Cheese.
Preheated the oven to 400 degrees. To start I sliced the French Bread in half, then cut the halves in half, and then sliced those halves in half length wise. I then lightly brushed the pieces with Extra Virgin Olive Oil across the tops. Spread them out on a foil lined cookie sheet and put them in the oven for 4 minutes. Removed from the oven and topped them with the Ragu Pizza Sauce, Italian Seasoning, Hormel Turkey Pepperoni, Sliced Black Olives, Cheese, and seasoned agin with the Italian Seasoning. Put them back in the oven until the Cheese was melting and it was heated through. I was just taking them out of the oven when Mom and Dad were coming in the door, good timing! Turned out fantastic, I'll have to keep these in mind for dinner sometime soon.

One of America's Favorites - Blue-Plate Special
![]() |
| A typical blue-plate special board |
* I love this one, "I'm a Foodie!"
Blue-plate special or blue plate special is a term used in the United States by restaurants, particularly (but not only) diners and cafes. It refers to a specially low-priced meal, usually changing daily. It typically consists of a "meat and three" (three vegetables), presented on a single plate, often a divided plate rather than on separate dishes. The term was very common from the 1920s through the 1950s. As of 2007, there are still a few restaurants and diners that offer blue-plate specials under that name, sometimes on blue plates, but it is a vanishing tradition. The phrase itself, however, is still a common American colloquial expression.
A web collection of 1930s prose gives this definition: "A Blue Plate Special is a low-priced daily diner special: a main course with all the fixins, a daily combo, a square for two bits."
![]() |
| A typical blue divided plate used for a blue-plate special |
The origin and explanation of the phrase are unclear. Kevin Reed says that "during the Depression, a manufacturer started making plates with separate sections for each part of a meal—like a frozen dinner tray—it seems that for whatever reason they were only available in the color blue." Michael Quinion cites a dictionary entry indicating that the blue plates were, more specifically, inexpensive divided plates that were decorated with a "blue willow" or similar blue pattern, such as those popularized by Spode and Wedgwood. One of his correspondents says that the first known use of the term is on an October 22, 1892 Fred Harvey Company restaurant menu, and implies that blue-plate specials were regular features at Harvey Houses.
The term became common starting in the late 1920s. A May 27, 1926 advertisement in The New York Times for "The Famous Old Sea Grill Lobster and Chop House" at 141 West 45th Street promises "A La Carte All Hours", "Moderate Prices", and "Blue Plate Specials". A December 2, 1928 article, lamenting the rise in prices that had made it difficult to "dine on a dime", praises an Ann Street establishment where you can still get "a steak-and-lots-of-onion sandwich for a dime and a "big blue-plate special, with meat course and three vegetables, is purchasable for a quarter, just as it has been for the last ten years." The first book publication of Damon Runyon's story, "Little Miss Marker," was in a 1934 collection entitled Damon Runyon's Blue Plate Special. A Hollywood columnist wrote in 1940, "Every time Spencer Tracy enters the Metro commissary, executives and minor geniuses look up from their blue plate specials to look at the actor and marvel." In the 1953 The Honeymooners episode "Suspense," Ralph, suspecting that Alice plans to murder him with a carving knife, says to Norton, "Did you hear that, pal? She wants to borrow a carving knife. I never thought I'd end up a blue-plate special."
"No substitutions" was a common policy on blue-plate specials. One 1947 Candid Microphone episode features Allen Funt ordering a blue-plate special and trying to talk the waiter into making various changes, such as replacing the vegetable soup with consommé, while the polite but increasingly annoyed waiter tries in vain to explain to Funt that "no substitutions" means what it says. Our Man in Havana (1958) by Graham Greene has the following exchange regarding an "American blue-plate lunch":
"Surely you know what a blue-plate is, man? They shove the whole meal at you under your nose, already dished up on your plate – roast turkey, cranberry sauce, sausages and carrots and French Fried. I can't bear French fried but there's no pick and choose with a blue-plate."
"No pick and choose?"
"You eat what you're given. That's democracy, man."

Road food experts Jane and Michael Stern titled their 2001 guidebook "Blue Plate Specials and Blue Ribbon Chefs: The Heart And Soul Of America's Great Roadside Restaurants".
In contemporary use, a "blue-plate special" can be any inexpensive full meal, any daily selection, or merely a whimsical phrasing. A travel columnist says that a Portland, Maine eatery offers "budget blue-plate specials along with more refined fare." The Turner South cable channel calls a daily movie selection, scheduled at lunchtime, its "blue-plate special". Mystery writer Abigail Padgett's second novel about amateur sleuth Blue McCarron is titled The Last Blue Plate Special; no meals here, the blue plates are part of the decor at a clinic where patients are dying mysteriously. A reviewer uses the headline "The Red, White and Blue Plate Special" for a review of a book on "Diners, Bowling Alleys, and Trailer Parks". Boston Children's Museum presents a participatory-theatre show, sponsored by health insurer Blue Cross, which teaches good nutrition; the show is called "Blue Plate Special".

Gator Tail Nuggets for Lunch!
It had been a while since I had bought any Alligator so I purchased a 5 lb. bag of Alligator Nuggets -
BREADED from Cajun Grocer on line. They have a great selection of anything Cajun you could want.
I pan fried the Nuggets to Golden Brown, about a total of 7-8 minutes. Love the Gator Meat, as they say"It tastes like Chicken!". It really does but it's a tad sweeter than Chicken Meat. I served it with the absolutely best tasting Remoulade Sauce I have ever tasted, Louisiana Fish Fry Products Remoulade Dressing. Man oh man this stuff is incredible. It has that hint of Horseradish and just a tad of heat. Perfect for any Cajun Seafood or any Fish. It was one delicious Lunch!
