Grilled Cheddar Turkey Burger and Baked Fries

Dinner Tonight: Grilled Cheddar Turkey Burger and Baked Fries






A perfect Autumn day out today! It's in the low 60's and sunny. Went to the store early and then yard work. I got the 4 wheel mobility scooter out and helped Mom rake the leaves, do some final trimming, and put away some of the Summer lounge chairs. Love getting out like that and doing work, thankfully I have that scooter that lets me get out like that and help out! For dinner I was able to fire the grill up one more time, it will be retired after this use. Dinner tonight, a Grilled Cheddar Turkey Burger and Baked Fries.






I used Jennie – O Turkey Burger Patties (Lean). Only 180 calories and 9 g fat and already made into patties. I seasoned it with Sea Salt and Ground Black Pepper and grilled it about 17 minutes, flipping three times. I served the burger on an Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with a slice of Sargento Reduced Fat Sharp Cheddar. Anything tastes better grilled, now I just have to get a better grill to do it on. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert later a Jello Sugar Free Chocolate Pudding.

Cheddar Bacon Turkey Burger w/ Baked Fries

Dinner Tonight: Cheddar Bacon Turkey Burger w/ Baked Fries




Well they were right when they said it would be cooler! Rolled out to get the Morning Paper and the old unofficial Outdoor thermometer said 38 degrees and with the cool breeze that was blowing it felt a bit cooler than that. But I love this weather! It was a beautiful Autumn Day out, sunny and cool. For dinner tonight I prepared a Cheddar Bacon Turkey Burger w/ Baked Fries.





While at Mejier last week I had picked up some Jennie – O Turkey Burger Patties (Lean). I had had one for dinner last week and it was so good I decided to have it again for dinner tonight. Easy to prepare and only 180 calories and 9 g fat and already made into patties. Pan fried it in Canola Oil about 17 minutes, flipping three times. While the pattie was frying, in another skillet I fried up some Jennie -O Turkey Bacon, another low calorie and lean Jennie – O Turkey Product. The bacon is only 30 calories, 0 carbs and .05 g fat. I served the burger on an Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with a slice of Sargento Reduced Fat Sharp Cheddar and a slice of Turkey Bacon. Love these Burgers!





For a side with my burger I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Leftover Turkey Meatloaf Sandwich, YUM!

Last night's Turkey Meatloaf turned into toady's Lunch, Turkey Meatloaf Sandwich! I warmed up the
Meatloaf, served it up on a Aunt Millie's Light Whole Grain Bun and topped it with some JB's Chipotle BBQ Sauce. Heating up a bit with the Chipotle Sauce gave it that much more flavor! Love them leftovers!

BBQ Buffalo for Lunch!

Italian Style Chicken Breast Hoagie w/ Baked Crinkle Fries


Dinner Tonight:  Italian Style Chicken Breast Hoagie w/ Baked Crinkle Fries




Long day today doing one of my least favorite things to do, Shredding bills! It wouldn't be so bad if I would
do it every month or so but as usual I let them back up for months and months. So the biggest part of my day was shredding my bills and my parents. It would help also to have a better paper shredder, that didn't overheat and stop every few minutes. Finally got through it though! For dinner I prepared an Italian Style Chicken Breast Hoagie w/ Baked Crinkle Fries.




I used Perdue Perfect Portions Italian Style Skinless and Boneless Chicken Breasts. Love these, just grab one from the freezer and prepare it! Already marinated and cooks up super quick. They have a few different types but the Italian Style is the only one I've seen sold around here. I baked mine, at 350 degrees for about 26 minutes. The internal temp read 170 degrees. Seasoned almost perfect, added a shake of Sea Salt to it. Served it on a Aunt Millie's Deli Style Whole Grain Mini Sub Bun and topped it with a slice of Sargento Ultra Thin Provolone Cheese, sliced Black Olives, and Sauteed Baby Bella Mushrooms. For sides I had a few of the Dill Pickled Carrots and baked some Ore Ida Crinkle Fries with an Ice - Cold Diet Dr. Pepper to drink. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.




Perdue Perfect Portions Italian Style Chicken Breasts

PERDUE® PERFECT PORTIONS® Boneless, Skinless Chicken Breasts, Italian Style (1.5 lbs.)

Directions

Grilled Turkey Burger w/ Roasted Red Potatoes and Green Beans

The results from all my blood work came back negative! So they say it looks as though the high enzymes that showed up for my liver is being caused by a bit of fat on the liver, nothing that can't be taken care of. Woke up this morning and it was 40 degrees with a chilly wind! Only a high in the 50's, but sunny! For dinner I fired the grill up, grilling a couple of Angus Beef Burgers for Mom and Dad and myself a Turkey Burger along with a side of Roasted Red Potatoes and Green Beans.




The Parents are partial to Beef over Turkey so I grilled them a couple of Walmart Brand Angus Beef
Burgers. For myself I grilled a Jennie - O Lean Turkey Burger Pattie. They are 1/4 lb Burger Patties and are 180 calories and 0 carbs. They grilled up real nice, I grilled it about 15 minutes flipping 3 times. It's one juicy Burger, seasoned it with sea Salt and Ground Black Pepper. Served all the Burgers on Aunt Millie's Light Whole Grain Buns and topped my mine with a slice of Sargento Ultra Thin Colby/Jack Cheese.



For a side to with our Burgers I prepared another Of Meijer's New Steamable Frozen Products, Roasted Red Potatoes and Green Beans with Rosemary Butter Sauce. Just microwave it in it's steamable bag for 5 minutes and it's done! Another good one from Meijer, plus it's only 60 cal, 1g fat, 12 carbs. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt. Happy Memorial Day Weekend All!

It was back to the family Doctor this morning. He wanted to go over a few things from the blood work. He
took a bit more blood to check my Iron count and a few other things, still hoping it's nothing serious. It really upsets me and troubles me when something comes back from testing out of whack. With everything I've been through I just get real jittery. Got to stay positive though! For dinner another one of the J.T.M. Hoagies along with some baked Ore Ida Crinkle Fries.




I used the J.T.M. Beef Steak Hoagies I had used the other day. They come pre-cooked and frozen so all you have to do is warm them back up. You bake them pan fry them or grill them, I pan fried them this time. It took about 3– 4 minutes per side and they were ready. J.T.M. is one of the better tasting prepared Hoagies and they have a whole line of Hoagies, Hamburgers, and such. I served them on Aunt Millie’s Deli Style Whole Grain Mini Sub Buns. For toppings I Sauteed some Baby Bella Mushrooms, Ragu Original Pizza Sauce, and Sargento Ultra Thin Provolone Cheese. For a side to go with my  Hoagie I baked some Ore Ida Crinkle Cut Fries. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Chili Dogs!

We are already getting some humid weather, not bad just enough to make it a little uncomfortable. On top of that I'm battling my Spring sinus problems. Happens every Spring and Winter like clockwork! Passes in about a week after the sinuses adjust. Because of that I really didn't feel like putting a lot of effort into dinner so I made simple preparing a couple of Chili Dogs.



I used Ball Park White Smoked Turkey Franks that boiled. Just boiled in hot water for about 5 minutes and their done. Served them on Aunt Millie's Light Whole Grain Buns. I topped them with Hormel Turkey With Beans. Comes in a can just heat it up in a small sauce pan and it's ready. I also topped them with a bit of French's Yellow Mustard and Kraft 2% Shredded Sharp Cheddar Cheese. For dessert later a Jello sugar Free Double Chocolate Pudding topped with Cool Whip Free Topping.

Dinner Tonight: Smoked Cheddar and Mushroom Bison Burger w/ Baked Fries





I've never seen weather like were having this Spring! After a run of nice warm Spring days, today's high is
going to in the 50's and Sunday morning a freeze warning and struggle to see 50. Enough is enough, bring on the  permanent warm Spring days! Good news, My Dad was released from the rehab center this afternoon and is back home and resting comfortably. Mom prepared her Dad their meal and for myself a  Smoked Cheddar and Mushroom Bison Burger w/ Baked Fries.




I used my favorite Buffalo Meat, the Wild Idea Buffalo 1/4 lb. Bison Pattie. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I skillet fried it in Canola Oil about 3 1/2 minutes per side. Served it on a Aunt Millie’s Light Whole Grain Bun topped with a slice of Bordens Smoked Cheddar and Sauteed Baby Bella Mushrooms. I just love the taste of Buffalo, I don't miss Beef at all! To go with my Buffalo Burger I had Baked Ore Ida Crinkle Fries with a side of Hunt's Ketchup for dipping. For dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn. Did I mention how cool it was out today!

For Lunch: BBQ Pulled Buffalo Sandwich

With my Mom spending almost most of her time at the rehab center I spent the day catching up on all the
housework and laundry today. Outside another cloudy and rainy day! For dinner a  Pulled Buffalo  Sandwich w/ Mashed Potatoes and Green Beans.



The Pulled Buffalo was from Wild Idea Buffalo, of course. It was from my last order that I had ordered from them. First time I tried it and it was incredible! So delicious in fact that I as soon I update my Blog here I'm going to order 2 more 1 lb. packages. Originally I was going to make BBQ Sandwiches out of it but as I was heating it up I sampled it and I knew right away this didn't need anything else added to it, it was perfect! It comes in 1 lb. packages already braised and seasoned. According to the package ingredients list it was braised and seasoned with Organic Apple Cider, Organic Lime Juice, Organic Onion Powder, Organic Cumin, Sea Salt, Organic Black Pepper, Organic Chili Powder, Organic Oregano, and Organic Cayenne Pepper. It all comes together to make one delicious meal! As I said earlier I was going to add BBQ Sauce but none is needed here, maybe some other time as it would make a fantastic BBQ. I served it on a Aunt Millie's Light Whole Grain Bun.



To go with the Sandwich I made sides of Mashed Potatoes and Cut Green Beans. The Mashed Potatoes were Bob Evans Mashed Potatoes and were leftover from last night's meal. The Green Beans were Del Monte Cut Green Beans in a single serve can, just heat and serve. For dessert later a Skinny Cow Fudge Ice Cream Bar.

Baked Buffalo Chicken Breast Sandwich w/ Baked Potato


Dinner Tonight: Baked Buffalo Chicken Breast Sandwich w/ Baked Potato




It's been a cloudy and rainy day today but at least it's warm out! For dinner I prepared one of my favorite Chicken dishes; Baked Buffalo Chicken Breast Sandwich w/ Baked Potato. I love finishing the Chicken off in the oven and the flavor and heat of the Kroger Wing Sauce along with the Litehouse Light Bleu Cheese Dressing. If you want about 5 minutes before your Chicken is done you can add a slice of Swiss or Provolone Cheese to it and let it melt over the Chicken Breast



To prepare my Chicken I needed 3 (4 ounce) Boneless Skinless Chicken Breasts, 6 Tablespoons favorite Litehouse Lite Bleu Cheese Dressing/Dip, and Aunt Millie’s Light Whole Grain Buns . To start I Preheated the oven to 400°F. Then Sprayed large non-stick skillet and 8×8″ baking dish with Pam cooking spray. Added the chicken to skillet & cooked 4-5 minutes each side until browned. Placed the chicken in dish and poured Wing Sauce over chicken and baked (uncovered) 20 minutes. I served it on an Aunt Millie’s Light Whole Grain Bun and topped it with some Litehouse Light Bleu Cheese Dressing. I made 3 Chicken Breasts 2 for dinner for myself and Mom and 1 for lunch tomorrow.
Wing Sauce (I used Kroger Wing Sauce), and 1/2 Cup

To go with the Baked Buffalo Chicken Breasts I had a Baked Potato seasoned with Sea Salt and Ground Black Pepper and topped with I Can't Believe It's Not Butter and a dab of Daisy Reduced Fat Sour Cream. For dessert/snack later some slices of Kraft 2% Sharp Cheddar along with Ritz Whole Grain Crackers.





Baked Buffalo Chicken Breasts

Ingredients
3 (4 ounce) Boneless Skinless Chicken Breasts
Sea Salt and Black Pepper, to taste
4 Tablespoons favorite Wing Sauce (I used Kroger Wing Sauce)
Swiss or provolone Cheese (Optional)
1/2 Cup Lighthouse Lite Bleu Cheese Dressing/Dip
Aunt Millie’s Light Whole Grain Buns




Directions
* Preheat oven to 400°F.
* Spray large non-stick skillet and 8×8″ baking dish with cooking spray.
*Season Chicken and add chicken to skillet & cook 4-5 minutes each side until browned. Place chicken in dish and…
* Pour Wing Sauce over chicken and bake (uncovered) 25 minutes.
* If you add a slice of Swiss or Provolone Cheese, top the Chicken with a slice about 5 minutes before the Chicken is done.
* Serve with Bleu Cheese Dressing and Serve on Aunt Millie’s Light Whole Grain Bun.
