Turkey Tacos and Refried Beans
Dinner Tonight: Turkey Tacos and Refried Beans
To start my day off I had a Jimmy Dean Simple Scramble Cup - Crumbled Turkey Sausage, Egg
White, Cheddar Cheese. Another cold day out there, 13 this morning and a high of 25 degrees. After Breakfast I went to McDonald's to pick up Breakfast for Mom. I was sort of slow today my Sinuses are really bothering me today, very bad headaches. Lot of rest and that was about it. I have to fast tonight until I go to the Family Doctor in the morning for my Blood Sugar, Cholesterol, etc. For Dinner tonight I prepared Turkey Tacos and Refried Beans.
We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!
For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Turkey Tacos and Refried Beans
Dinner Tonight: Turkey Tacos and Refried Beans
For Breakfast this morning I Scrambled a Couple of Eggs, toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, and had my morning cup of Bigelow Decaf Green Tea. Cloudy and 54
degrees, rain moved in toward evening. I was out a couple of items for tonight's Dinner so I went to Meijer and picked them up. Stopped by the Post Office, ATM, and McDonald's to pick up Breakfast for Mom before heading home. Got the leaf blower out and cleaned off the deck and driveway areas. Then it was taking down and storing the Christmas Decorations. For Dinner tonight it’s Turkey Tacos and Refried Beans.

One of America's Favorites - Club Sandwich
![]() |
| Club sandwich |
A club sandwich, also called a clubhouse sandwich, is a sandwich of bread (occasionally toasted), sliced cooked poultry, or fried bacon, lettuce, tomato, and mayonnaise. It is often cut into quarters or halves and held together by cocktail sticks. Modern versions frequently have two layers which are separated by an additional slice of bread.
The club sandwich may have originated at the Union Club of New York City. The earliest known reference to the sandwich, an article that appeared in The Evening World on November 18, 1889, is also an early recipe; "Have you tried a Union Club sandwich yet? Two toasted pieces of Graham bread, with a layer of turkey or chicken and ham between them, served warm."Several other early references also credit the chef of the Union Club with creating the sandwich.
Other sources, however, find the origin of the club sandwich to be up for debate. Another theory is that the club sandwich was invented in an exclusive Saratoga Springs, New York, gambling club in the late 19th century.
The sandwich is known to have appeared on U.S. restaurant menus as far back as 1899. The earliest reference to the sandwich in published fiction is from Conversations of a Chorus Girl, a 1903 book by Ray Cardell. Historically, club sandwiches featured slices of chicken, but with time, turkey has become increasingly common.
As with a BLT, toasted white bread is standard, along with iceberg lettuce, bacon, and tomatoes. The sandwich is traditionally dressed with mayonnaise. Variations, however, on the traditional club sandwich abound. Some vary the protein, for example, a "breakfast club" that includes eggs or a

The sandwich is commonly served with an accompaniment of either coleslaw, or potato salad, and often garnished with a pickle. The coleslaw or potato salad is often reduced to a "garnish" portion, when the primary accompaniment is an order of french fries or potato chips. Due to high fat and carb content from the bread, bacon and dressing, club sandwiches have sometimes been criticized as unhealthy. In 2000, Burger King came under fire for its chicken club, which contained 700 calories, 44 grams of fat (nine of them saturated), and 1,300 milligrams of sodium, as well as the trans fat from the fryer shortening.

Turkey Tacos and Refried Beans
Dinner Tonight: Turkey Tacos and Refried Beans
Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. I headed out this morning to Jungle Jim's International Market. They finally got some 1/2 Runner Green Beans in. We bought
enough to can 14 jars! The Beans were some of the fullest and biggest Green Beans we had found in quite some time. So back home I gave Mom a hand in getting the first 7 quarts ready and made. We'll do the rest tomorrow. Mom loves Beets, I can't stand them, so she's going back to Jungle Jim's tomorrow to get Beets to can. My leg seems to be doing better it's not as red and the spot is somewhat smaller. Hopefully it's just an infection. For Dinner tonight it's Turkey Tacos.
Making it an official Taco Tuesday here at the house!
For my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, sliced Green
Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Turkey Tacos and Refried Beans
Dinner Tonight: Turkey Tacos and Refried Beans
For Breakfast this morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, and had a cup of Bigelow Decaf Green Tea. 88 degrees, humid, and scattered showers out today. Turkey Tacos and Refried Beans
Today’s Menu: Turkey Tacos and Refried Beans
To start my morning off I toasted a Healthy Life Whole Grain English Muffin and topped it with
Smucker's Sugar Free Blackberry Jam and heated up a couple of Johnsonville Turkey Breakfast
Sausage Links. I also had a cup of Bigelow Decaf Green Tea. Outside its a beautiful day! 82 degrees, sunny, and the humidity wasn't too bad. Well we agreed to terms with a land scape service to redo the front flower bed. We're doing away the what's left of the Roses and replacing it all will different Bushes. It should look good when done. They can't start until August, booked solid. I was driving around a bit and I don't think I've ever seen so many places wanting people to work! It seemed every business had signs out wanting to hire people. Sure wish I was able to get back in the job market. There's a lot of money to be made out there! So for Dinner tonight, It’s a Taco Night! I prepared Turkey Tacos and a side of Refried Beans.

As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!
For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green
Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. Enough Leftovers to get a couple of Lunches out of it. We made a big plate of it for Dad and took it it to the Center for him for his Dinner. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Kitchen Hint of the Day!
To crisp cut up greens like lettuce, cilantro, or anything else that wilts, soak them in ice water for 15-20 minutes. This also works for limp asparagus and carrots.

Turkey Tacos and Refried Beans
Dinner Tonight: Turkey Tacos and Refried Beans
To start my morning off I toasted a Healthy Life Whole Grain English Muffin and topped it with I Can't Believe It's Not Butter. I also had a cup of Bigelow Decaf Green Tea. Partly Cloudy and 70
degrees outside today. After Breakfast i headed up to the local Kroger for a few things for me and Mom. On the way back I stopped at McDonald's to pick up Breakfast for Mom and stopped and got gas. Later on I did some light clean up of the house and then went outside to work on getting our shed in shape. I've been clearing it out of old tools, boxes, fishing gear, and kitchen items. Things that haven't been used in 10 years or more. So for Dinner tonight, It’s a Taco Night! I prepared Turkey Tacos and a side of Refried Beans.
I love Turkey Tacos, great Comfort food for me! When making Turkey Tacos I use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie

Turkey Tacos and Refried Beans
Dinner Tonight: Turkey Tacos and Refried Beans
To start my morning off I Scrambled a couple of Eggs, toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Wow, we have had so much rain ,
and more coming! Today we had a high of 60 and dry in the morning but rain moving in for the evening. Anyway after Breakfast I went grocery shopping at Meijer. It's getting tougher and tougher to keep your grocery bill down, stuff just keeps going up! Really have to do some smart shopping and coupons. On the way back in I stopped and picked up Breakfast for Mom at McDonald's. Dad seems to be adjusting to his new home at the assisted living center. Still wish he was home with us. But as they say "Life goes on", and we will but its tough. For Dinner tonight, It's a Taco Night! I prepared Turkey Tacos and a side of Refried Beans.
We had Tacos last week and they were so good, we're having them again. When making Turkey
Tacos I love using Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb.
