Chicken Enchiladas

Dinner Tonight: Chicken Enchiladas



Long morning, I finally got in to see the Dermatologist about the lump on my finger. No Melanoma, basically it’s type of cyst that should go away with time. Glad that is over and not Melanoma! After the doctor visit we stopped by Kroger for a few items and home. Not much going on, just relaxed. For dinner tonight Mom wanted Chicken Enchiladas. So tight I prepared Chicken Enchiladas.






Then to prepare them I preheated the oven to 350 degrees F. I used Mission Carb Friendly Tortillas, first time I used them and we loved them! One at a time, held the Tortillas over the stove top burner (heated to medium heat) to brown slightly, about 20 seconds per side. Set the warmed Tortillas aside. In a bowl, mix together the Cumin, Chili Powder, Cajun Spice, salt and pepper. Sprinkled both sides of the Chicken Breasts with the Spice Mix. Heat the oil in a skillet over medium heat and cook the Chicken on both sides until done in the middle and the juices run clear, 4 to 5 minutes per side. Set aside on a plate to cool, then shred finely with a fork. Threw the Onions into the same skillet, stir them around and cook until deep golden brown and caramelized, 4 to 5 minutes; set them aside on a plate. Pour the Enchilada Sauce into the skillet and reduce the heat to low, allowing it to warm through.





To make the enchiladas: Pour 2 cups of the Sauce (Old El Paso Enchilada Sauce) into a 9-by-13-inch
Casserole Dish and leave the rest in the skillet. Dip a Tortilla into the Sauce in the skillet, then lay it on a baking sheet or plate. Sprinkle some Cheese down the middle, followed by some Chicken and finally, some of the Caramelized Onions. Roll it up tightly, then place it seam-side down in the Casserole Dish. Repeat with the rest of the Tortillas. Pour the rest of the Sauce over the Enchiladas, then sprinkle on the rest of the Cheese. Give it a final sprinkling of Chili Powder. Bake until hot and bubbly, 30 minutes. Let it sit for 15 to 20 minutes before serving.





Serve the enchiladas topped with a dollop of sour cream, a sprinkling of cilantro and a wedge of lime. And time to enjoy these Enchiladas! Hot, Cheesy, Flavorful, with nice Heat, not to over use the saying but it’s a “Winner, Winner Chicken Dinner!” Another Keeper Recipe courtesy of Ree Drummond. Chicken Enchiladas

Ingredients
10 to 12 corn tortillas
2 tablespoons cumin
2 tablespoons chili powder, plus more for sprinkling
2 tablespoons Cajun spice
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 boneless, skinless chicken breasts
1/4 cup vegetable oil
1 large onion, diced
Three 15-ounce cans green enchilada sauce (or use red if preferred!)
3 cups grated Cheddar-Jack cheese, plus more if needed
Sour cream, for serving
Diced tomatoes, for serving
Chopped fresh cilantro, for serving
Lime wedges, for serving


Directions
Preheat the oven to 350 degrees F.

One at a time, hold the tortillas over the stove top burner (heated to medium heat) to brown slightly, about 30 seconds per side. Set the warmed tortillas aside.

In a bowl, mix together the cumin, chili powder, Cajun spice, salt and pepper. Sprinkle both sides of the chicken breasts with the spice mix.

Heat the oil in a skillet over medium heat and cook the chicken on both sides until done in the middle and the juices run clear, 4 to 5 minutes per side. Set aside on a plate to cool, then shred finely with a fork.

Throw the onions into the same skillet, stir them around and cook until deep golden brown and caramelized, 4 to 5 minutes; set them aside on a plate. Pour the enchilada sauce into the skillet and reduce the heat to low, allowing it to warm through.

To assemble the enchiladas: Pour 2 cups of the sauce into a 9-by-13-inch casserole dish and leave the rest in the skillet. Turkey Burritos

Dinner Tonight: Turkey Burritos






Nothing but Winter around here, bitter cold last night! Plenty of sunshine today but still freezing. Started the day off by warming up the leftover Jalapeno Cheddar Fried Potatoes along with frying up a couple of Jennie - O Turkey Lean Breakfast Turkey Sausage Links. Also had a slice of Klosterman Wheat Bread ans a hot cup of Bigelow Decaf Green Tea.Good start to a Winter's Day!



Yesterday late afternoon Fed Ex dropped off a package for me and it was from Jennie - O Turkey. The box had free Jennie - O Turkey Products, 1 - 1 lb. Package of Jennie - O Lean Ground Turkey, 1 - 1 lb. Roll of Jennie - O Lean Ground Turkey Breakfast Sausage, and a Sun-Dried Tomato Premium Portion Turkey Breast! The free samples Jennie - O Turkey sends me from time to time is from being part of their Switch Club. In return I give reviews of the products after I try them and pass those reviews and any recipes along to everyone, and since all their products are healthy and delicious it's easy to review. It's amazing the products they've sent me over the past year, so a Big Thank You to Jennie - O Turkey! For dinner tonight I prepared Turkey Burritos.




I used my free sample of Jennie - O Lean Ground Turkey for my Burritos tonight. along with the Ground Turkey I'll need; 1 Package Old El Paso Less Sodium Taco Seasoning Mix, Sliced Green and Black Olives, 1 Can Bush's Low Sodium Black Beans (Optional), Daisy Reduced Sour Cream, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Old El Paso Fat Free Refried Beans (Optional), Chopped Tomatoes (Optional), and OLE High Fiber Low Carb Tortilla Wraps, (10-inch), warmed.






 To prepare it; I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco! To make the Burrito; Spoon the Turkey mixture into Tortillas. Add your toppings. Fold over bottom and sides of each tortilla and they're ready! I love these! Easy to make and just flat-out delicious and filling. For dessert later a Del Monte No Sugar Added Peach Chunks Cup.







Turkey Burritos

Ingredients
Serves: 8
1 pound Jennie - O Lean Ground Turkey
1 Package Old El Paso Less Sodium Taco Seasoning Mix
Sliced Green and Black Olives
1 Can Bush's Low Sodium Black Beans (Optional)
Old El Paso Taco Sauce
Daisy Reduced Sour Cream
Sargento Reduced Fat Shredded Sharp Cheddar Cheese
Old El Paso Fat Free Refried Beans (Optional)
Chopped Tomatoes (Optional)
OLE High Fiber Low Carb Tortilla Wraps, (10-inch), warmed


Directions

1 - Brown meat in large skillet on medium-high heat. Drain fat.
2 - Stir in Seasoning Mix, water and beans, if desired.
3 - Bring to boil. Reduce heat to low; simmer 5 to 10 minutes or until liquid is absorbed, stirring occasionally. Spoon into tortillas. Add desired toppings. Fold over bottom and sides of each tortilla to serve.

Chicken Fajitas w/ Refried Beans

Dinner Tonight: Chicken Fajitas w/ Refried Beans







Not much going on today, very laid back. Did a small load of laundry and ran the sweeper. It's so much easier to vacuum since I bought the Hoover Cordless Lightweight Vacuum! It only weighs about 10 lbs., Cordless, and has as much power as a normal size vacuum. Great investment! Had everything done early so it's Couch Potato, Remote, and Football for the day. For dinner tonight it's Chicken Fajitas w/ Refried Beans.







The other night I had Shrimp Fajitas and they were just so delicious I decided to have Chicken Fajitas for dinner tonight. I used Ortega Fajita Skillet Sauce for my Fajita Sauce Base, I love using the Ortega Sauces. To prepare I'll need the following; the Ortega Fajita Skillet Sauce, a bag of Simple Truth Chicken Fajita Strips, Delallo Tri-Color Pepperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, Daisy Reduced Fat Sour Cream, fresh Shredded Sargento Asiago Cheese, and Mission Flour Tortillas. Same ingredients as the other night except a different Ortega Sauce and I'm using Chicken instead of Shrimp.







First time using the Simple Truth Chicken Fajita Strips. This is a fantastic item to have in the fridge or freezer. They're 99% Fat Free, already Seasoned, and cook up in 6-8 minutes. They came out well seasoned and the strips are nice and meaty.







I heated up a tablespoon of Extra Virgin Olive Oil in a medium size skillet over medium heat. I started by slicing the Sweet Peppers into strips and adding them to the skillet, stirring them and cooking until tender (about 4 minutes). Stirred in the Chicken Strips and sliced Jalapenos, stirred this for about 6 minutes. Then added the Ortega Fajita Skillet Sauce, cooking another 3 minutes till everything was heated through. Heated up the tortillas in the microwave for 20 seconds and topped them with a dab of the Daisy Reduced Fat Sour Cream and the Chicken  Fajita Mixture. I also topped it some fresh grated Asiago Cheese, and served. I keep packets of the Ortega Skillet Sauces in stock, it makes on delicious Fajita! Had a nice heat to it but not overpowering and the taste of the Ortega Sauce is incredible!Served with a side of Old El Paso Fat Free Refried Beans. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Pulled Buffalo Chuck Roast Fajitas

Beautiful morning out today! It heated up though as the day went on, mid 80's. Had the cart out early doing some minor repair work on it and then rode around most of the morning. Went to Walmart and picked up a few items and purchased some eave drain pipe extension hoses for some of the drain pipes and back home for the day. For dinner tonight Pulled Buffalo Chuck Roast Fajitas.




Leftovers from Dinner 2 nights ago turns into tonight's dinner! I'm using  the Wild Idea Buffalo Pulled Buffalo Chuck Roast that I made a Sandwich out of and using it for Pulled Buffalo Chuck Roast Fajitas tonight! To make my Fajita I'll be using; Wild Idea Buffalo Pulled Buffalo Chuck Roast, Ole Fajita Flour Tortillas, Wholly Guacamole, Daisy Light Sour Cream, Fresh Cilantro, Diced Red Onion, and Sliced Sweet Peppers.



I think you could use the Wild Idea Buffalo Pulled Buffalo Chuck Roast for any dish and it would be delicious! It comes marinated in Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. So with all that you know it's going to be good! For dessert later tonight a bowl of Breyer's Carb Smart Vanilla Bean Ice Cream topped with some fresh sliced Georgia Peaches that I picked up earlier. Too Good!

Jennie O Baked Turkey Rigatoni

Dreary and rain on and off all day. Stopped by Walmart to pick up a couple of items and stopped by the bank, then back home. For dinner tonight I tried a new recipe from Jennie - O,  Baked Turkey Rigatoni.








It's a Winner, Winner, Turkey Dinner Tonight! A while back I was invited to join the Jennie-O Switch Circle, an online network of influential bloggers who will receive sneak peaks of all things Jennie-O. As a member I'm sent coupons and recipes, which is where the Baked Turkey Rigatoni Recipe that I'm preparing tonight comes from. But I'm going to lighten this recipe up, cutting the calories and carbs. I'll be using Jennie - O Extra Lean Ground Turkey Breast, Ronzoni Healthy Harvest Whole Grain Rigatoni Pasta, Sargento Ultra Thin Provolone Sliced Cheese, Daisy Reduced Fat Sour Cream, Sargento Reduced Fat Shredded Mozzarella Cheese, and Kraft Reduced Fat Grated Parmesan Cheese. I also added some sliced Mushrooms and Dried Oregano. Fewer calories, less carbs, same great taste as the original recipe! I also only made a half order of this, using half of the ingredients. I've left the original recipe along with the Jennie - O Turkey web site link at the end of the post.









To prepare it start by heating the oven to 350°F. Bring large pot of lightly salted water to boil. Add pasta and cook 12 minutes or until al dente; drain. Return to same pan. In a large skillet, cook the ground turkey as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Add onion and sauce; simmer 15 minutes or until sauce is thickened and onion is soft. Then mist a 9 x 13-inch baking dish with cooking spray. Add turkey mixture and mushrooms to pasta. Stir to combine. Layer half of turkey mixture in dish. Top with Provolone cheese. Spread with sour cream. Top with remaining turkey mixture. Sprinkle with Mozzarella and Parmesan cheese and Oregano. Bake 30 minutes or until cheese is melted and browned. Garnish with additional Parmesan cheese, if desired.








You looking for a delicious and healthy dish, look no further! This came out flat-out delicious. The Jennie - O Turkey, Pasta Sauce and Mushrooms combined just right and then along with the trio of  Provolone, Mozzarella, and Parmesan Cheese it's one delicious and hearty meal! For dessert later a bowl of Del Monte No Sugar Peach Chunks.









Jennie O Baked Turkey Rigatoni

Baked Turkey Rigatoni


Ingredients
1 (16-ounce) package rigatoni pasta
1 (20-ounce) package JENNIE-O® Lean Ground Turkey
1 cup diced onion
2 (26-ounce) jars spaghetti sauce
6 slices Provolone cheese
1 cup fat-free sour cream
1 cup shredded mozzarella cheese
2 tablespoons finely grated Parmesan cheese


Directions
Heat oven to 350°F. Bring large pot of lightly salted water to boil. Add pasta and cook 12 minutes or until al dente; drain. Return to same pan.

Incredible weather, even for Ohio! It was 80 degrees and sunny Sunday and now it's going to be a high of 36 degrees and we got about 1/4" of snow this morning. Wow, enough is enough! Even colder in the morning, low of 22 degrees. That's going to kill a lot plants and trees that has started coming out.The winter was so rough it looks as though it killed everyone's Rose plants and it took out half of huge Vine we had growing on the carport fence. Kroger got some Veal Shoulder in so I went and picked up a 3.7 lb. one for our Easter dinner, more on that Sunday. For dinner tonight, one of my favorites, it's Taco Night! Black Bean and Jennie – O Turkey Tacos with the Ortega Fiesta Flats.








As usual when I make Turkey Tacos it’s with Jennie -O Ground Turkey Breast! Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos, added flavor and protein. Mixed well until everything was coated and then simmered another 5 minutes until heated through. As i said the Black Bean and Ground Turkey mix is a perfect one for Tacos, they complement each other very well.







For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Diced Tomatoes, Dean’s Guacamole Dip, Old El Paso Taco Sauce, and all in a Ortega Fiesta Flats. I love Taco Nights! You can have so many different types of Tacos with so many different toppings, just endless options for dinner. The New Ortega Fiesta Flats have quickly become one of our favorite Taco Shells. They make a nice option to the regular Taco Shell. Their 150 calories and 17 net carbs per serving, 2 Shells make a serving. They’re nice size, so you can load them up with healthy toppings. Another plus is they hold their shapes, even after you add toppings and after a couple of bites. We keep box of these in the pantry. For dessert later a bowl of Del Monte No Sugar Added Mango Chunks.

Today's Menu: Toasted Turkey & Swiss Sandwich w/ Creamy Tomato Soup





Still using up some of those great leftovers from the Thanksgiving Day Feast! I used slices of the Thanksgiving Bird and pan fried them just to warm them up and brown them up a bit. I served it on toasted Healthy Life Whole Grain Bread with a little bit of Kraft Reduced Fat Mayo w/ Olive Oil and a slice of Sargento Ultra Thin Swiss Cheese.

For my Soup I used Amy's Organic Light in Sodium – Cream of Tomato Soup. This might be the creamiest and best tasting can Tomato Soup there is! Plus it's only 110 calories, 2.5 grams fat, and 19 carbs. I served with a dab of Daisy Light Sour Cream. For dessert later a slice of my Mom's Splenda made Apple Pie!

Grilled Chipotle London Broil Wrap

Dinner Tonight: Grilled Chipotle London Broil Wrap



I used the leftover London Broil from the other day and I had the begining of some fantastic Wraps! I sliced the remaining London Broil into thin slices and wrapped them in paper towels and warmed them up in the microwave. For the Wrap I used Flatout Light Italian Flat bread. Love these they are 100% Whole Wheat , High Fiber, and only 90 calories and 16 carbs, I left the info and web link at the end of the post. I topped the Steak with JB’s Fat Boy Chipotle Sauce, sliced Deli Jalapenos, sliced Black Olives, Lettuce, Daisy Reduced Fat Sour Cream, fresh Grated Havarti Cheese and fresh grated Smoked Dutch Gouda. After assembling the wrap and folding it I put it in the microwave for 35 seconds. The lean and delicious Steak along with heat of the Jalapenos, Chipotle Sauce, and the fresh and creaminess of the Smoked Gouda Cheese and Havarti Cheese just makes an unbelievable Wrap!
