Hash Brown Strata
A strata (Italian for 'layered') is an egg-and-bread casserole. In this extra-easy version, frozen hash browns make a time saving substitute for the bread.
Recipe Ingredients:
Nonstick cooking spray
2 cups loose-pack frozen diced hash brown potatoes with onion and peppers
1 cup broccoli florets
1/3 cup finely chopped turkey bacon or turkey ham (about 2-ounces)
1/3 cup evaporated fat-free milk
2 tablespoons all-purpose flour
2 (8-ounce) cartons refrigerated or frozen egg product, thawed
1/2 cup shredded reduced-fat cheddar cheese (2-ounces)
1 tablespoon snipped fresh basil or 1/2 teaspoon dried basil, crushed
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
Cooking Directions:
1 - Coat a 2-quart square baking dish with cooking spray. Arrange hash brown potatoes and broccoli in bottom of the prepared baking dish; top with turkey bacon. Set aside.
2 - In a medium bowl gradually stir milk into flour. Stir in egg product, half of the cheese, the basil, black pepper, and salt. Pour egg mixture over potato mixture.
3 - Bake in a 350°F (175°C) oven for 40 to 45 minutes or until a knife inserted near the center comes out clean. Sprinkle with the remaining cheese. Let stand for 5 minutes. If desired, garnish with additional fresh basil.
Makes 6 servings.
Make-Ahead Tip: Assemble strata as above but do not bake. Cover and chill for 4 to 24 hours. To serve, uncover and bake as above.

Panko Crusted Cod Fish Sandwich w/ Baked Potato
Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Potato
Around 6:00 this morning as I was waking up, there was loud explosion that went off. It didn't sound as if it was real close but you could hear the bang. Never heard anything on the news about it so not sure what happened. Outside it's another humid and hot day out there. I had a Doctor's appointment today, had to go and let the Doctor check me out to make sure I didn't grow another leg! I need work on my Hoveround Chair and for Hoveround to approve it I have to see the Doc to confirm I still need it! You would think they would know this since I've been an amputee since 2001. Another major flaw in this Obama Care stuff. So for dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato.

I purchased the Cod from Kroger yesterday,Wild Caught Cod Loin. To make the Cod I started my rinsing the Cod in cold water and patting dry with a paper towel. I'll need the following to make this; Cod Fillet, Panko Bread Crumbs, Sea Salt and Ground Black Pepper (to taste), Onion Powder, Garlic Powder, Smoked Paprika, Egg Beater’s, Flour, and Canola Oil. The original recipe is at the end of the post. I only used a 1/4 amount of the Ingredients, I just made 1 Fillet
To prepare the Cod I rinsed the fillets off with cold water and patted dry. Then seasoned it with Sea Salt and Pepper. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Place fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heat canola oil in a skillet and place the fillets in and saute 3 minutes each side, or until fillets are heated through and Panko Crust has browned. Served the fillet on a Kroger Lite Wheat Bun.
For a side I had a Baked Potato that I has seasoned with McCormick Grinder Sea salt and Peppercorn Medley. Topped it with I Can't Believe It's Not Butter. For dessert later a bowl of Del Monte Sliced Peaches.
Panko Crusted Cod Fish Sandwich
Ingredients:
(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Canola Oil
Directions:
* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Salmon Patties w/ Mac & Cheese and Wheat Bread
Dinner Tonight: Salmon Patties w/ Mac & Cheese and Wheat Bread
Another cold morning but no wind this morning so not quite as bad out. Still amazed with all the Robins around here. More this year than ever before and earlier. Went and dropped some letters off at the Post Office, then to the Bank, and stopped at a Drive-Thru and picked up a couple of Lottery Tickets. Felt good to get outside! For dinner tonight nothing but Salmon comfort food, Salmon Patties w/ Mac & Cheese and Wheat Bread
To make the Salmon Patties I used Kroger Low Fat Saltine Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved a total of 20 calories and 2 full grams of fat. Make cuts where you can, it all adds up!
I’m using a can of Kroger Brand Pink Salmon, Egg Beater’s, a couple of shakes of Frank’s Hot Sauce, Dried Parsley, and Kroger Low Fat Saltine Crackers. In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. I’m starting to have to have these more often, they came out golden brown and delicious!
For one side I heated up a Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. I also had a slice of Klosterman Wheat Bread. For dessert later a Del
Monte No Sugar Added Mango Chunks Cup.

Salmon Patties w/ Mac & Cheese and Sour Dough Mini Boule
Dinner Tonight: Salmon Patties w/ Mac & Cheese and Sour Dough Mini Boule
Well I'm playing doctor today, Mom and Dad both have the flu! I've not shown signs yet, hopefully I won't. They wanted McDonald's for Breakfast so I went there for them this morning. I also stopped by Kroger and picked up a couple of flu remedies and some Hall's Cough Drops for them. Caught up on some laundry and took care of the parents, long day! For dinner tonight I prepared Salmon Patties w/ Mac & Cheese and Sour Dough Mini Boule.
I haven't had Salmon Patties in quite some time. I used a can of Kroger Brand Salmon, Egg Beater's, a couple of shakes of Frank's Hot Sauce, Dried Parsley, and Zesta Saltine Crackers. In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Been way too long since I've had these, try to have them a bit more often!
For one side I heated up a Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. Then I baked the rest of the Sour Dough Bread Mini Boule. For dessert later a Del Monte Sugar Free Diced Peaches Cup. Hope everyone is ready for Thanksgiving, and have a Happy Thanksgiving!

Panko Crusted Cubed Pork Steak w/ Mashed Potatoes and Boiled Mini Carrots
Dinner Tonight: Panko Crusted Cubed Pork Steak with Peppered White Gravy w/ Mashed Potatoes and Boiled Mini Carrots
Wow, what a beautiful Indian Summer Day out today! Sunny and about 70 degrees. From what they say we'll have 1 more day of warm temps before it gets back to more seasonal weather. By Saturday morning the low could be around 29 degrees and only a high of 41 degrees, big difference! Anyway for dinner tonight I prepared Panko Crusted Cubed Pork Steak with Pioneer Peppered White Gravy w/ Mashed Potatoes and Boiled Mini Carrots.
I bought a couple of packages of Cubed Pork Steak at Kroger the other day, I froze one and having the other one tonight. So I got the big three out to bread it with; Flour, Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered. I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. Topped it with some Pioneer Peppered White Gravy. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. As you can tell in the picture, the Steak was huge so I cut in half and I’ll have the other half for Breakfast in the morning.
For side dishes I went with Bob Evan’s Mashed Potatoes topped with Pioneer Peppered White Gravy, my favorite Mashed Potatoes by far. Then I also boiled some Mini Carrots and had a slice of Klosterman Wheat Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries
Today’s Menu: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries
Our first big chill of the season, about 35 degrees this morning. Had to get up during the night and turn the heat on. Made a Breakfast Burrito this morning for Breakfast. Made of 1 Scrambled Egg, two diced Jennie - O Turkey Sausage links, a dab of Daisy Reduced Fat Sour Cream, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and a Low Carb Whole Grain Tortilla. Then it was an afternoon of NFL Football! For dinner tonight it’s a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.
I had the Orange Roughy in the freezer so I let it thaw in the fridge overnight. To prepare the Orange Roughy Fillet; start by rinsing the fillet off in cold water and pat dry with a paper towel. Then season it with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillet into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heat a tablespoon of Extra Virgin Olive Oil in skillet and place the fillets in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside! This breading will work well with most all Fish. I served it on a Healthy Life Whole Grain Bun.
To go with my Fish Sandwich I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Love Potatoes and love these fries! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes and Green Beans
Dinner Tonight: Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes and Green Beans
Had a light breakfast to start the day, Healthy Life Whole Grain English Muffin topped with Smucker's Sugar Free Blackberry Jam and a cup of hot brewed Bigelow Decaf Green Tea. Our streak of beautiful weather continued, low humidity and a high of 81 degrees! Cleaned the Pantry today, straightened stuff up and pitched a few items that expired. For dinner tonight it's a Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes and Green Beans.
I grabbed a Cubed Pork Steak out of the freezer and let it thaw overnight in the fridge. I used the big three to bread it with; Flour, Egg Beater’s, and Panko Bread Crumbs. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered. I heated up a medium size skillet, that I had drizzled with Canola Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes, till each side was golden brown. The Cubed Pork Steak comes out delicious preparing it this way! Moist and very tender with a good flavor from the Paprika. As always the Steak is so huge so I cut in half and I’ll have the other half for Breakfast in the morning. I like the Shake and Bake Seasoned Panko, a lot fewer calories than most. Once again it's hard to beat the quality of Kroger Pork.
For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it's ready. To top my Mashed Potatoes and Cubed Pork Steak I made some Pioneer Peppered White Gravy. Another quick and easy prep and comes out piping hot and delicious. I topped both my Mashed Potatoes and Cubed Steak with it. Then I also heated up a small can of Del Monte Cut Green Beans. One delicious Country Comfort Food Dinner tonight! For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Seasoned Haddock w/ Potato Pancakes and Cut Green Beans
Dinner Tonight: Seasoned Haddock w/ Potato Pancakes and Cut Green Beans
I had those Phantom Pains for almost 24 hours, WAY too long! I went to bed around midnight and they finally stopped sometime during the night. Fairly nice day out a bit more humid and about 84 degrees today. Went to Kroger for a few items for Mom and took it easy after that, the last 24 hours really wore me down. For dinner tonight I prepared Seasoned Haddock w/ Potato Pancakes and Cut Green Beans.
I picked up a fillet of Haddock while at Kroger this morning. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix is a perfect combo.
For a side dish I made some Potato Pancakes. I used Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). I also heated up a can of Del Monte Cut Green Beans. For dessert later a bowl of Breyer's Low Carb Vanilla Bean Ice Cream.

Panko Crusted Cubed Pork Steak w/ Spaetzle and Sugar Snap Peas
Dinner Tonight: Panko Crusted Cubed Pork Steak w/ Spaetzle and Sugar Snap Peas
A couple of showers today but a cool front moved through and finally got rid of the humidity. Laundry and cleaned up the pantry and that's been about it today. Dinner tonight it's Panko Crusted Cubed Pork Steak w/ Spaetzle and Sugar Snap Peas.
I grabbed a Cubed Pork Steak out of the freezer and let it thaw overnight in the fridge. Used the big three out to bread it with; Flour, Egg Beater’s, and Panko Bread Crumbs. I heated up a medium size skillet, that I had drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes, till each side was golden brown. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika. As you can tell in the picture, the Steak was huge so I cut in half and I’ll have the other half for Breakfast in the morning. I like the Shake and Bake Seasoned Panko, fewer calories than most.
For side dishes to go with my Cubed Pork I prepared some Spaetzle. Which is a German Potato Dumpling. At the end of the post I left a little history of Spaetzle and product info. I boiled it in hot water for about 25 minutes and seasoned it with Sea Salt and Ground Black Pepper, Rubbed Sage, and a pat of I Can't Believe It's Not Butter. Very tasty and goes very well with Veal or Pork. I also heated up a bag of Walmart Marketside Sugar Snap Peas, just microwave in the steamable bag for 2 minutes and done! For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.
Spaetzle
Spaetzle [SHPEHT-sluh; SHPEHT-sehl; SHPEHT-slee] Literally translated from German as “little sparrow,” spaetzle is a dish of tiny noodles or dumplings made with flour, eggs, water or milk, salt and sometimes nutmeg. The spaetzle dough can be firm enough to be rolled and cut into slivers or soft enough to be forced through a sieve, colander or spaetzle-maker with large holes. The small pieces of dough are usually boiled (poached) before being tossed with butter or added to soups or other dishes. In Germany, spaetzle is served as a side dish much like potatoes or rice, and is often accompanied by a sauce or gravy. The cooked spaetzle can also be pan-fried with a little butter and onions (usually a good left-over idea).

Panko Crusted Cubed Pork Steak w/ Mashed Potatoes and Boiled Mini Carrots
Dinner Tonight: Panko Crusted Cubed Pork Steak w/ Mashed Potatoes and Boiled Mini Carrots
It's been one laid back day today around the old homestead! A little humid out but sunny and it hit about 85 today. For lunch I had my favorite Spam, Turkey Spam with Ritz Whole Grain Crackers. Went and got Mom's car washed and cleaned on the inside for her and that was about it. Told you it was laid back. For dinner tonight I prepared Panko Crusted Cubed Pork Steak w/ Mashed Potatoes and Boiled Mini Carrots.
I bought a package of Cubed Pork Steak at Kroger the other day, they normally don't have the Cubed Pork. So I got the big three out to bread it with; Flour, Egg Beater's, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater's shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered.

The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika. As you can tell in the picture, the Steak was huge so I cut in half and I'll have the other half for Breakfast in the morning.
For side dishes I went with Bob Evan's Mashed Potatoes, my favorite Mashed Potatoes by far. Then I also boiled some Mini Carrots and had a slice of Klosterman Wheat Bread that I buttered with I Can't Believe It's Not Butter. For dessert later a bowl of Breyer's Carb Smart Chocolate Ice Cream.

Panko Crusted Veal Cutlet w/ Peppered White Gravy, Sugar Snap Peas, and Mashed Potatoes
Dinner Tonight: Panko Crusted Veal Cutlet w/ Peppered White Gravy, Sugar Snap Peas, and Mashed Potatoes
Well my favorite time of the year, Autumn, has come and quickly gone. Winter has moved in and in a big way!. We had a little cover of snow and cold yesterday, then this morning it was our lowest temperature in a while. I went out and got the morning paper and it was only 13 degrees, and it felt like it! So it's good-bye Fall and hello Winter I guess. For dinner I prepared Panko Crusted Veal Cutlet w/ Peppered White Gravy, Sugar Snap Peas, and Mashed Potatoes.
While at Jungle Jim’s Market a while back I purchased some Veal Cutlets, I used one the day I purchased them and froze the other. I laid that one out in the fridge to thaw overnight. I got the big three out to bread these beautiful Veal Cutlet; Flour, Egg Beaters, and Panko Bread Crumbs. I seasoned the flour with Sea Salt and Ground Pepper and added some Hungarian Paprika to the Egg Beater’s. These were thick cutlets so I had to fry them a little bit longer than you would normally fry Veal. I fried them in Canola Oil about 5 minutes per side. The coatings gave it a fantastic golden brown coating and the cutlet was tender and moist, and seasoned just right. You could cut by using a fork! Topped it with some Pioneer Peppered White Gravy that I prepared. And as you can tell by the picture its big enough to cut in half and have the other half for lunch tomorrow.
Then for one side I had Bob Evan's Mashed Potatoes, leftover from the other night, that I reheated in the microwave. Topped them with some of the Pioneer Peppered White Gravy that I prepared. I also heated a bag of Walmart's Marketside Sugar Snap Peas. It comes in a microwavable bag, just heat 2 minutes and done. I also had a slice of Klosterman Wheat Bread. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
Veal
From Wikipedia, the free encyclopedia
Veal is the meat of young cattle (calves), as opposed to meat from older cattle. Though veal can be produced from a calf of either sex and any breed, most veal comes from male calves (bull calves) of dairy cattle breeds.

Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Poatoes
Dinner Tonight: Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Poatoes
A really perfect day out today! It's about 77 degrees and sunny. Beautiful day but a it was very, very, long
night. My parents had made some friends for dinner at a Ponderosa Steak House. they didn't order from the menu instead chose the Buffet, BIG MISTAKE!! After coming home about an 1 hour or so they both became very sick, Mom worse than my Dad. Upset stomach, nausia and everything that goes with food poisoning. My Mom was so bad I called her family doctor on call service. He said the best cure is to let it run it's course, which it eventually did. I won't go in to detail but I was still doing laundry at 1:00 am. But both are fine now with no after effects. I'm not big on Buffets and that's the main reason! For dinner tonight I prepared a Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Poatoes.
I had prepared Turkey Meatloaf before but not wrapped with Bacon, Low Sodium Turkey Bacon. I had the idea off a cooking show. They said by adding the Bacon it gave your Meatloaf an even better taste. They had used Pork Bacon but I'm using Oscar Mayer Low Sodium Turkey Bacon instead. To make the Meatloaf I'll need the following; 2 Tablespoons Blue Bonnet Light Stick Butter, 3 Cloves Garlic, Minced, 1 1/4 lbs Jennie O Extra Lean Ground Turkey, 3-4 Slices of uncooked Oscar Mayer Low Sodium Turkey Bacon, 1/2 Cup Progesso Italian Style Breadcrumbs, 1/4 Cup Egg Substitute (Egg Beaters), 1 1/4 Cups Hunt's Catsup, 4 Tablespoons Worcestershire Sauce, 3 Tablespoons Heinz 57 Sauce, 2 Teaspoons Smoked Cumin, 2 Teaspoons Onion Powder, 2 Teaspoons Ground Thyme, 2 Teaspoons Parsley, 3/4 Teaspoon Sea Salt, and 1/2 Teaspoon Black Pepper. To prepare it start by preheating your oven to 350 degrees. Then melt the butter in a skillet and add the Garlic in melted butter for 5 minutes, stirring occasionally. Place the mixture in a large bowl to cool for 5 minutes. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture. Press meatloaf into an 8×4-inch loaf pan. Wrap 4 slices of Turkey Bacon over the top and down on to the sides of the meatloaf. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and 3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Bake in a 350 degree oven for 50-55 minutes or until Internal temperature should reaches 165 degrees. Remove from oven and let stand 5 minutes before serving. The Turkey Meatloaf was delicious before but with the added Bacon it gave it that much more flavor! I'll add Turkey Bacon to it from now on!
To go with the Meatloaf I prepared some more of the boiled Mini Corn Ears. I used Green Giant Mini Ears of Sweet Corn. They come frozen and all you do is boil them in water for about 12 minutes. Their 50 calories and 9 calories per mini ear. These are actually better than a lot of the fresh Corn on the cob I've had, nice job Green Giant! I also prepared Bob Evan's Mashed Potatoes. You have to have Mashed Potatoes when you have Meatloaf, I think it's an unwritten rule! One good comfort food dinner! For dessert later, just sticking with some fruit. A Banana and maybe a few slices of an Honey Crisp Apple.

PHILADELPHIA Marble Brownies
I made a couple of pans of the classic PHILADELPHIA Marble Brownies, one for the house here and another I took over to my Dad in the rehab center. Which he shared with the nurses and everyone was happy! I reduced the fat, calories and carbs by using a Betty Crocker Low Fat Brownie Mix, 1/3 Less Fat Philly Cream Cheese, Splenda Sugar, and Egg Beater's. You couldn't tell the difference, they came out moist and tasty!
