Salmon Patties w/ Mac and Cheese

Dinner Tonight: Salmon Patties w/ Mac and Cheese

For Breakfast this morning I Poached an Egg, heated up a couple of Johnsonville Turkey Breakfast
Sausage Links, toasted a Thomas Light English Muffin, and a cup of Bigelow Decaf Green Tea. It may be Spring but it feels like Winter out there! It was 24 degrees and a wind chill in the teens! Had a high of 48 degrees and mostly sunny. Went to Lowe's and checked out some new outdoor chairs for Mom. She's been wanting some new ones so Lowe's had some on sale. They were okay but I'm going to look around some more. Got the leaf blower out and cleaned off the deck and drive way areas. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using
these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture
into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups,
just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. So no waste if you’re just cooking for 1. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

Salmon Patties w/ Mac and Cheese

Dinner Tonight: Salmon Patties w/ Mac and Cheese

For Breakfast this morning it was Ham and Eggs. I had purchased a small Kentucky Artisan Smoked Ham at Meijer the other day. So I sliced several pieces up and fried them in a small skillet until heated through. Then in another skillet I fried a Sunny Side Up Egg. Then I toasted 2 slices of Aunt
Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. Good Breakfast to start to a cold morning. Around 12 degrees this morning then into low 30's with freezing rain and snow moving in later in the day. I got the snow shovel and a bag of Salt out of the shed to use for later. Not much else going on today. Did a few chores around the house then got caught up on some shows I had recorded. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat,

Salmon Patties w/ Mac and Cheese

Dinner Tonight: Salmon Patties w/ Mac and Cheese

For Breakfast this morning  I made some Simply Potatoes Shredded Hash Browns, heated up some
Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served. And had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and a high of 85 degrees. Got the cart out and took a spin around the neighborhood before it got too hot out this morning. After Lunch I cleaned and straightened the pantry and then straightened up both freezers. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using

Salmon Patties w/ Mac and Cheese

Dinner Tonight: Salmon Patties w/ Mac and Cheese

For Breakfast I had my morning cup of Bigelow Decaf Green Tea. It's a beautiful day out there today,
78 degrees and mostly sunny! After Breakfast I went to Meijer for a few items and then on the way back home I picked up Breakfast for Mom at McDonald's. After she ate we headed out to go see Dad. His health is really declining and not a thing we can do about it. Back home I got the cart out and did some yard work and then repotted a couple of plants for Mom.

Started my morning off with a light Breakfast of a toasted Healthy Life Whole Grain English Muffin and heated a couple of slices of Smithfield Anytime Favorites Hickory Smoked Ham. I love this
Ham. Nice thick slices with excellent flavor. I made a Breakfast Sandwich and I topped the Ham with 1/2 a slice of Kroger Swiss Cheese. I also had my morning cup of Bigelow Decaf Green Tea. And the hot cup of Tea sure hit the spot on a frigid morning. Outside its a minus 5 degrees, with colder weather on its way! Had a of 23 degrees but the wind chill kept in the single digits. So I stayed in all day. Helped Mom with laundry and did a few things around the house.

Started my morning off with a light Breakfast of a toasted Healthy Life Whole Grain English Muffin and a cup of Bigelow Decaf Green Tea. Well the rain has finally passed but it's real windy out, in the 50's again. Finished up cleaning the house. After Lunch headed over to spend the afternoon with Dad. He looked better than he did the other day. Still up in the air weather he'll make it home or not. Just hope for the best. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I also had a slice of Healthy Life Whole Grain Bread, lightly buttered. For dessert later a bowl of Dole Sliced Peaches.

Salmon Patties w/ Mac and Cheese

Dinner Tonight: Salmon Patties w/ Mac and Cheese

I had a light Breakfast of a toasted Healthy Life Whole Grain English Muffin and a cup of Bigelow
Decaf Green Tea. It's a beautiful morning out there today, sunny and 55 degrees! Another gorgeous day out there, plenty of sunshine and a high around 81 degrees with no humidity. After Breakfast I started a load of laundry for Mom. Then headed outdoors to do some work. I got the leaf blower out and cleaned the deck and driveway areas. Then got the cart out and pulled some weeds out of the flower beds. Then got the trusty hammer, nails, and saw out and did some repairs to the side of the shed. Things sure would be a lot easier to do if I wasn't in a wheel chair, or cart, but thankful I can get around in either to get things done. Nice day to be out! For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using

Skipped Breakfast this morning, just had a cup of Bigelow Decaf Green Tea. Headed out early to Meijer for some sale items. Beautiful morning out there today, sunny and about 40 degrees or so. Sunny all day and around 50 degrees. Took Mom's car up to the local car wash and had it washed and vacuumed. Had to take Dad back to the Dentist, they are still working on his new false teeth. Back home cleaned up outside around the house. For dinner tonight I prepared Salmon Patties w/ Mac and Cheese and Wheat Bread.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using

Dinner Tonight: Salmon Patties w/ Velveeta Whole Grain Rotini and Cheese

For Breakfast I had a bowl Kashi Grain Puffs Cereal. really enjoy those, even as a snack. Went out to get the paper this morning and it was around 34 degrees about a 1/2 hour later it had dropped to 31 degrees and it started snowing. It came down hard fora short time and it covered the grass areas but that was about it. They say in the 50's and 60's this weekend, hope they are right! In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. I need to start having these more often, they came out golden brown and delicious!

For the Pasta I used Velveeta Whole Grain Rotini and Cheese. I don’t use a lot of Mac and Cheese due to the calories and carbs but the Velveeta Whole Grain Rotini and Cheese isn’t too bad, plus every now and then doesn’t hurt. To prepare it; Boil 6 cups water. Stir in shell pasta. Cook 8-10 min., Stirring occasionally. Drain pasta, don’t rinse. Return it to pan. Add cheese sauce; stir. And you have some creamy and cheesy Mac and Cheese! It’s just a flat out Pasta and Cheese Comfort Food Heaven! Excellent tasting Rotini Pasta and with the Cheese, perfect.

Another cold morning but no wind this morning so not quite as bad out. Still amazed with all the Robins around here. More this year than ever before and earlier.
