Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Shoepeg White Corn..

Dinner Tonight: Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Shoepeg White Corn in Butter Sauce, and Baked Crescent Rolls

A bit nippy out this morning, frost on the roof tops and about 17 degrees! Then their saying we could get up to 2" of by in the morning, hopefully it will miss us! It's been one tough and long winter. Dropped by Kroger to pick up a couple of items for dinner tonight and then stopped by the bank for Mom. Then home to dust, vacuum, and clean the freezer. I don't mind dusting but running the vacuum from a wheel chair is a pain. Cleared the freezer of a few outdated items, had to make some room for some of the Lake Okeechobee Crappie my Aunt is bringing me when they get home from Florida! Love that Crappie. For dinner tonight I prepared a Baked Bone-In Whole Chicken Breast w/ Mashed Potatoes, Shoepeg White Corn in Butter Sauce, and Baked Crescent Rolls.

For the Chicken I used the PERDUE® OVEN READY Whole Seasoned Roaster Bone-In Breast. As it says “Oven Ready’, already seasoned, and little clean-up needed plus their always delicious. To prepare it just preheat the oven to 400ºF. Cut open outer bag and remove Oven Ready Roaster Bone-In Breast, sealed in a cooking bag. Place in a shallow roasting pan, seasoned side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. If cooking from Fresh: Place pan with breast (still in cooking bag) on lower shelf of oven and roast for approximately 80-90 minutes, until internal temperature of the breast reaches 180ºF. Comes out piping hot, well seasoned, and delicious! Plenty leftovers for some Chicken Sandwiches for lunch tomorrow.

For one side I prepared some Bob Evans Mashed Potatoes, microwave a total of 6 minutes and their done and just as good as anyone’s homemade Mashed Potatoes. Then I heated up a box of Green Giant Shoepeg White Corn and Butter Sauce. It comes in a microwavable plastic pouch. Just heat 6 minutes and serve. Fantastic Corn side dish and it's only 110 calories and 19 net carbs per serving (2 servings per box). I also baked up a can of one of my Mom's favorites for her, Pillsbury Reduced Fat Crescent Rolls. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and....

Dinner Tonight: Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Steam Crisp Sweet Corn Kernels

Another beautiful day out again, clouding up as the day went on though. Possible snow in the morning but with our recent run of sun and higher temps, it shouldn't stick or cause problems. Don't forget to move your clocks up an hour tonight before you go to bed, "Spring Forward". I don't like moving the clocks up, I'm an early riser so that means it will still be dark out when I get up. I received my order from Wild Idea Buffalo late yesterday afternoon and wasted no time on using one of the items right away! Tonight I prepared Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Steam Crisp Sweet Corn Kernels.

First time using the Wild Idea Buffalo - Buffalo Back Ribs. These were Monster size Ribs with plenty of meat! I used the recipe that I use when I make the Pork Back Ribs. Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge and the bags, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours.

Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After the 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. Ribs are incredible anytime, but the Wild Idea Buffalo Back Ribs take it to another level! Very meaty with that delicious Sweet and Wild Buffalo taste! I'll have to get some more and grill them later this Spring. As usual I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.

For one side I prepared Idahoan Applewood Smoked Bacon Homestyle Casserole. Second time I tried the Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. Then I also heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn. To me it's one of the best canned Corn there is. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Wild Idea Buffalo 2.5 lbs. BBQ Back Ribs

Buffalo back ribs are simple, delicious and great for the grill. 2 BBQ Racks / 2.5 lbs.

Idahoan Applewood Smoked Bacon Homestyle Casserole

The saying is “everything is better with bacon” and we couldn’t agree more. That’s why we incorporated Applewood Smoked Bacon in with our rich cheesy sauce for this homestyle casserole that is sure to become a family favorite.

Oven Preparation
Preheat oven to 450°F. Combine potatoes and sauce mix in 1 1⁄2-quart baking dish.
Stir in 1 1/2 cups boiling water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling). Remove from oven and let stand a few minutes before serving.
Baking Notes: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min.
Stove Top Preparation
Heat potatoes and sauce mix, 1 1/2 cups hot water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boilover.
Reduce heat, then cover and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
Remove from heat and let stand a few minutes before serving.

Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes,...

Dinner Tonight: Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes, and Baked French Bread

Another sunny but frigid day out again, minus 3 with the wind chill. Got out this afternoon and finished clearing the driveway again. From that to, I went to the bank, post office, and stopped by Walmart to pick up a few items and a prescription. For dinner prepared the Jennie - O Seasoned Turkey Breast Steak. Tonight I prepared a Seasoned Turkey Breast Steak w/ Steam Crisp Sweet Corn Kernels, Mashed Potatoes, and Baked French Bread.

I came across the Jennie – O Turkey Breast Steak at Walmart a while back, and been using regular ever since! It comes Seasoned and it’s only 130 calories and 3 carbs per serving. You can prepare it several ways, I pan fried mine. To prepare it just preheat a large skillet over medium heat, spray it with nonstick spray. Cook the steaks, turning 2-3 times until meat thermometer inserted into thickest portion of meat reached 165°F, approximately 19-21 minutes. Covered with lid for the last 5 minutes of cooking. Remove from stove top, cover, and let rest for 5-10 minutes before slicing. Then you have a fine and tasty Turkey Breast Steak! As usual it's another winner from Jennie – O! It was well seasoned, I did add a couple of shakes of Sea Salt while it was cooking.

For one side dish I heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Kernel Corn, my favorite canned Corn. Then I tried a new Mashed Potato, Betty Crocker Creamy Buttery Mashed Potatoes. Comes in a microwavable container, just add water and heat. It came out very good. I normally buy the Idahoan Mashed Potatoes but Walmart had the Betty Crocker ones on sale so I went with that. Then I baked a loaf of Pillsbury Rustic French Bread. Lightly brushed the top of the loaf with Extra Virgin Olive Oil and sprinkled Sesame Seeds on top before baking. For dessert tonight a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

8oz. Buffalo Terres Major Filet w/ Sauteed Mushrooms, Roasted Fingerling Potatoes,...

Dinner Tonight: 8oz. Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Roasted Fingerling Potatoes, and Cauliflower with Cheese Sauce

Finally a break in the frigid temps! It's been below zero for a few days and today the high was in the 20's, beats minus 30! Helped getting the drive-way snow and ice free and then ran a couple of errands for Mom. For dinner I prepared an 8oz. Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Roasted Fingerling Potatoes, and Cauliflower with Cheese Sauce.

This is always the tenderest cut of Buffalo Steak I can find, and one of the most delicious cuts also! I pan fried it in Canola Oil about 4 minutes per side, which gives you a perfect medium rare! The steak is so tender with just an incredible flavor. As with all the Wild Idea Buffalo cuts it has a slight sweet taste and so tender a knife isn’t really needed! I topped it with some Sauteed Mushrooms. I’ve been using Green Giant Sliced Mushrooms. Really like these, nice taste and keeps so good in a jar. I sautéed them in Extra Virgin olive Oil and a pat of I Can’t Believe It’s not Butter and seasoned with Sea Salt, Ground Roasted Cumin, Parsley Flakes, and Dried Thyme.

For one side dish I sliced up some Fingerling Potatoes. Seasoned them with a pinch of Dill, Parsley Flakes, Sea Salt, and Pepper. I first washed them up, then sliced them, a light rub of Extra Virgin Olive Oil, and then seasoned them. Preheated the oven on 425 degrees and put them on a small cookie sheet pan and baked for about 25 minutes. I also heated up a box of  Green Giant Cauliflower & Cheese Sauce, I love this Green Giant Cauliflower & Cheese Sauce! It comes frozen and in a microwavable bag. Just make a small slit in the bag and heat on high for 5 1/2 minutes. The Cauliflower comes out crisp and with the Cheese Sauce added delicious. I left the product description at the end of the post. I also had a slice of Klosterman Wheat Bread and a Diet Caffeine Free Diet Coke to drink. For dessert later a Del Monte No Sugar Peach Chunk Cup.

The second most tender cut on the animal. This treasured cut is found in the chuck shoulder.

Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Green Beans, and Baked Potato

Dinner Tonight: Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Green Beans, and Baked Potato

About 33 degrees this morning but it's been dropping ever since. Went to the store early to pick up a few items and then had to take my Dad to the Doctor, he has a lot of heavy congestion. Not good for a person that's 92. They took some x-rays and waiting for the results tomorrow to see exactly what it is. For dinner tonight I prepared a Wild Idea Buffalo Terres Major Fillet w/ Sauteed Mushrooms, Green Beans, and Baked Potato.

This is always the tenderest cut of Buffalo Steak I can find, and one of the most delicious cuts also! I pan fried it in Canola Oil about 4 minutes per side, which gives you a perfect medium rare! Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and.....

Dinner Tonight: Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread

Well we've really been blessed with a lot of beautiful days out this Autumn and today was no exception! Sunny and in the low 50's. Went out early to pick up a few things at the store and then home to do some yard work, that I was able to do. I also took apart the old gas grill. We had since about 2002 so it served it's purpose. It was lot easier taking apart than it was putting it together! For dinner tonight, Lemon-Baked Cod w/ Cauliflower with Cheese, Green Beans, and Baked French Bread.

Picked up some beautiful Cod Fillets at Kroger this morning. So I pulled out a favorite Cod recipe of mine; Lemon-Baked Cod . Cod is such a mild Fish and meant for baking. If you like Cod you’ll love this recipe. You’ll need; 1 lb Cod Fish Fillets, 1/4 cup Blue Bonnet Light Butter, melted, 2 tablespoons Lemon Juice, 1/4 cup all-purpose Flour, 1/2 teaspoon Morton’s Light Salt, 1/8 teaspoon White Pepper, and Paprika. To prepare it mix butter and lemon juice in a bowl. Then in another bowl, mix flour, salt and white pepper. Dip the fish into butter mixture; coat fish with flour mixture and place fish in ungreased square baking dish, 8x8x2 inches. Pour remaining butter mixture over fish; sprinkle with paprika ( You can also sprinkle a bit of Bread Crumbs on it also to give it a bit of a crust topping). Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired. The Cod has such a great flavor to it from the Lemon, Butter, and spices! Had some leftover so I'll make a sandwich with it for lunch tomorrow.

For a side dish I heated up some Green Giant Cauliflower and Cheese Sauce. I'm not a huge fan of Cauliflower but I love it in this Cheese Sauce from Green Giant. It comes frozen in a box with about 3 servings per container. To prepare it just make a small slit in the plastic bag and microwave it for 4-5 minutes. The Cheese Sauce is fantastic on the Cauliflower and it's only 50 calories and 5 net carbs per serving! i also heated up a small can of Walmart Brand of Cut Green Beans and Baked a loaf of Pillsbury Simply Rustic French Bread. For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Lemon-Baked Cod

Ingredients:
1 lb Cod Fish Fillets
1/4 cup I Can’t Believe It’s Not Butter, melted
2 tablespoons Lemon Juice

Paprika

*If fish fillets are large, cut into serving pieces.
*Mix butter and lemon juice.
*In another bowl, mix flour, salt and white pepper.
*Dip fish into butter mixture; coat fish with flour mixture.
*Place fish in ungreased square baking dish, 8x8x2 inches.
*Pour remaining butter mixture over fish; sprinkle with paprika.

Grilled Chicken Thighs w/ Cut Green Beans, Mini Ears of Corn on the Cob,...

Dinner Tonight: Grilled Chicken Thighs w/ Cut Green Beans, Mini Ears of Corn on the Cob, and Whole
Grain Bread

Spent the morning working on and cleaning the grill again. Finally got it working again! It's the 4th day of August and it was 60 degrees this morning and a high of 77 degrees, Incredible Weather! For dinner with the grill up and working I decided to grill some Chicken Thighs. I prepared Grilled Chicken Thighs w/ Cut Green Beans, Mini Ears of Corn on the Cob, and Sliced Whole Grain Bread.

I put the Thighs in a Hefty Zip Bag and seasoned the Chicken Thighs with Sea Salt and Ground Black Pepper and Marinated them in JB's Fat Boy Sticky Stuff BBQ Sauce in the fridge for a couple of hours. At grill time took them out of the bag and shook off the excess marinade. Grilled them for about 16 minutes, turning them frequently. I checked their temperature and it was at 165 and done. I had extra BBQ Sauce on the side for dipping. Chicken came out bursting with flavor and moist. Love that JB's Fat Boy BBQ Sauce!

To go with the Chicken I heated up a can of Del Monte Reduced Sodium Cut Green Beans along with some boiled Green Giant Mini Ears of Sweet Corn. If you've never tried the Green Giant Corn you need to! It's frozen Mini Ears of sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! I also had a couple of slices of Healthy Life Whole Grain Bread. For dessert later a Weight Watchers Ice Cream Sandwich.

Fried Crappie w/ Red Beans and Rice, Boiled Mini Ears of Corn...

Dinner Tonight: Fried Crappie w/ Red Beans and Rice, Boiled Mini Ears of Corn, and Corn Bread

Spent the better part of the day cleaning the kitchen. Pulled the stove out and cleaned behind it, straightened shelves, and gave the fridge and freezer a good cleaning. While cleaning the freezer I came across tonight's dinner! I thought I had used all the Okeechobee Crappie that was given to me but I found 4 bags of it in the back of the freezer. So for dinner tonight I prepared Fried Crappie w/ Red Beans and Rice, Boiled Mini Ears of Corn, and Corn Bread. I prepared the Cornbread for Mom and Dad, I had Whole Grain Bread.

After the bags of Crappie thawed out I rinsed them with water and patted dry with paper towel. I seasoned them with just a bit of Sea Salt and put them into a gallon size Hefty Freezer Bag and added Zatarain's Lemon Pepper Breading Mix to the bag. Zipped shut the bag and shook it until the fillets were well covered. Pan fried them in Canola Oil, about 2-3 minutes per side, until they were golden brown. And what a taste, the best tasting Crappie there is! Crappie are Crappie but the ones from Lake Okeechobee have no rivals!

For sides for this delicious Crappie I prepared  some of Grandma Maud's Red Bean and Rice. I had prepared the Black Beans and Rice several times, and love it, so I thought I would try the Red Beans and Rice. Just follow the easy instructions on the package and you have some great Red Beans and Rice! It had a good Cajun Seasoning to it and was only 100 calories and 16 net carbs. This would go great with a Blackened Chicken or Shrimp. I also boiled some Green Giant Mini Ears of Sweet Corn and I baked a Cat Iron Skillet of Martha White Cornbread. The Cornbread was for Mom and Dad, I had a slice of Healthy Life Whole Grain Bread. For dessert later a bowl Breyer's Carb Smart Vanilla Ice Cream topped with Dole Chef Cuts Mango Pineapple.

Gramdma Maud's Bean Meals Red Beans and Rice

Authentic southern Cajun flavors combined with a rich, smoky essence make Grandma Maud’s Red Beans & Rice an easy side dish or complete meal with no added meat or fat.

Low Country Seafood Boil w/ Baked Sour Dough Bread

Dinner Tonight: Low Country Seafood Boil w/ Baked Sour Dough Bread
Dinner is served!

Well I always wanted to make a Low Country Seafood Boil and today was that day! I hit the Kroger Seafood Department early this morning and purchased my ingredients which included Jumbo Shrimp, Alaskan Crab Legs, Little Neck Clams, and a loaf of Sour Dough Bread. I already had the Potatoes, Seasoning, and Corn on the Cob. I had purchased a Big kettle a few weeks back at Meijer. Dinner tonight, Low Country Seafood Boil w/ Baked Sour Dough Bread.

I love trying new recipes and really excited to prepare this! I started by soaking my Littleneck Clams in water and scrubbing them down to remove any excess grit. Then I filled a large pot with enough water to cover all of the ingredients. Added the crab boil and old Bay Seasoning and bring to a boil. Adjust the Old Bay Seasoning to suit your taste. When the water boils, add the potatoes and sausage. Cook on medium heat for 30 minutes. Add corn, lemon slices, crab legs, and clams and cook for an additional 10 minutes. Add shrimp and cook for no more than 3 minutes. Drain and serve with the Bread of your choice. I baked a Loaf of Sour Dough Bread. I left the full recipe at the end of the post. And what a meal it turned out to be! The Clams were incredible and the Crab Legs sweet as can be. The Potatoes, Shrimp, Corn on the Cob, and Turkey Smoked Sausage just a perfect mix! I'll have to purchase some more of the Ekrich Smoked Turkey Sausage, best I ever had. Then the Sour Dough Bread to mop everything up with. For dessert later a Dole Mini Banana.

Simmering Away!

Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Poatoes

Dinner Tonight: Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Poatoes

A really perfect day out today! It's about 77 degrees and sunny. Beautiful day but a it was very, very, long
night. My parents had made some friends for dinner at a Ponderosa Steak House. they didn't order from the menu instead chose the Buffet, BIG MISTAKE!! After coming home about an 1 hour or so they both became very sick, Mom worse than my Dad. Upset stomach, nausia and everything that goes with food poisoning. My Mom was so bad I called her family doctor on call service. He said the best cure is to let it run it's course, which it eventually did. I won't go in to detail but I was still doing laundry at 1:00 am. But both are fine now with no after effects. I'm not big on Buffets and that's the main reason! For dinner tonight I prepared a Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Poatoes.

I had prepared Turkey Meatloaf before but not wrapped with Bacon, Low Sodium Turkey Bacon. I had the idea off a cooking show. They said by adding the Bacon it gave your Meatloaf an even better taste. They had used Pork Bacon but I'm using Oscar Mayer Low Sodium Turkey Bacon instead. To make the Meatloaf I'll need the following; 2 Tablespoons Blue Bonnet Light Stick Butter, 3 Cloves Garlic, Minced, 1 1/4 lbs Jennie O Extra Lean Ground Turkey, 3-4 Slices of uncooked Oscar Mayer Low Sodium Turkey Bacon, 1/2 Cup Progesso Italian Style Breadcrumbs, 1/4 Cup Egg Substitute (Egg Beaters), 1 1/4  Cups Hunt's Catsup, 4 Tablespoons Worcestershire Sauce, 3 Tablespoons Heinz 57 Sauce, 2 Teaspoons Smoked Cumin, 2 Teaspoons Onion Powder, 2 Teaspoons Ground Thyme, 2 Teaspoons Parsley, 3/4 Teaspoon Sea Salt, and 1/2 Teaspoon Black Pepper. To prepare it start by preheating your oven to 350 degrees. Then melt the butter in a skillet and add the Garlic in melted butter for 5 minutes, stirring occasionally. Place the mixture in a large bowl to cool for 5 minutes. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture. Press meatloaf into an 8×4-inch loaf pan. Wrap 4 slices of Turkey Bacon over the top and down on to the sides of the meatloaf. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and 3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Bake in a 350 degree oven for 50-55 minutes or until Internal temperature should reaches 165 degrees. Remove from oven and let stand 5 minutes before serving. The Turkey Meatloaf was delicious before but with the added Bacon it gave it that much more flavor! I'll add Turkey Bacon to it from now on!

To go with the Meatloaf I prepared some more of the boiled Mini Corn Ears. I used Green Giant Mini Ears of Sweet Corn. They come frozen and all you do is boil them in water for about 12 minutes. Their 50 calories and 9 calories per mini ear. These are actually better than a lot of the fresh Corn on the cob I've had, nice job Green Giant! I also prepared Bob Evan's Mashed Potatoes. You have to have Mashed Potatoes when you have Meatloaf, I think it's an unwritten rule! One good comfort food dinner! For dessert later, just sticking with some fruit. A Banana and maybe a few slices of an Honey Crisp Apple.

Baked Atlantic Salmon w/ Glazed Carrots, Green Beans, and Whole Grain Bread

Dinner Tonight: Baked Atlantic Salmon w/ Glazed Carrots, Green Beans, and Whole Grain Bread

Another sunny and beautiful Winter's day out again today. From what they say it's one of our last for a while. Rain and snow starting tomorrow afternoon for at least 5 - 6 days, BLAH! While at Kroger yesterday they had all their Salmon on sale and ended up with a beautiful North Atlantic Salmon fillet that I had them slice into 3 pieces. For dinner I prepared Baked Atlantic Salmon w/ Glazed Carrots, Green Beans, and Whole Grain Bread.

To prepare the Salmon I preheated the oven on 400 degrees. I first brushed a bit of Extra Virgin Olive Oil on the fillet and then seasoned it with Dill and McCormick Grinder Sea Salt and Black Peppercorn. I then baked it for 12 minutes, fork tender. The Salmon was delicious and full of flavor. Salmon is so filling because it's so meaty. At the end of the post I left some info about Salmon.

For side dishes I had Green Giant Honey Glazed Carrots, Green Beans, and Aunt Millie's Light Whole Grain Bread. Green Giant Carrots are prepared by microwaving for 7 minutes. The Honey Glaze on the Carrots is fantastic, and it's only 90 calories per serving and there is 2 servings per package. Along with the Carrots I had a single serving can of Del Monte Cut Green Beans and Aunt Millie's Light Whole Grain Bread. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato,...

Dinner Tonight: Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread

Excellent dinner tonight! Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread. I used Great Range Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning and pan fried it in a tablespoon of Extra Virgin Olive Oil about 4 minutes per side to a medium rare. Topped with Sauteed Baby Bella Mushrooms. As far as I'm concerned you can't beat the taste and tenderness of Bison. Just wish you could find it more in this area.

For my side dishes I prepared Green Giant Cauliflower & Cheese Sauce, a Baked Potato, and Healthy Life Whole Grain Bread. I'm not a huge Cauliflower fan but I love this Green Giant Cauliflower & Cheese Sauce! It comes frozen and in a microwavable bag. Just make a small slit in the bag and heat on high for 5 1/2 minutes. The Cauliflower comes out crisp and with the Cheese Sauce added delicious. I left the product description at the end of the post. I also had a Baked Potato topped with Salt and Pepper along with I Can't Believe It's Not Butter. Also 2 slices of Healthy Life Whole Grain Bread. For dessert later I'm fixing some Breyer's Carb Smart Vanilla Ice cream topped with Smucker's Sugarless Hot Fudge Topping.

Today’s Menu: Bison Smoked Cheddar Burger w/ Green Giant Green Beans w/ Almonds and Mozzarella Cheese Sticks

It was freezer cleaning floater day around here to day as we cleaned out the refrigerator's freezer and my Mom's stand up freezer today. So for dinner it was a Potluck Dinner of the odds and ends we found floating in the freezers. You know how easy it is to let leftovers and half packages of different items gradually get pushed back to the back of your freezer and then wonder how come you don't have any room in your freezer! My Mom prepared her and my Dad Potluck Dinner and I prepared mine. I had Bison Smoked Cheddar Burger w/ Green Giant Green Beans w/ Almonds with a apptiezer of baked Mozzarella Cheese Sticks.

I had a Wild Idea Buffalo 1/4 lb. Bison Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried it in Extra Virgin Olive Oil about 3 minutes per side. It fried up perfectly! I topped it with a slice of Bordon’s Smoked Cheddar Cheese and served it on a Healthy Life Whole Grain Bun. I love Bison meat over Beef and Wild Idea is even tastier than normal Bison. It's got that slight taste of Wild game and a little hint of sweet. Wild Idea Buffalo is one of the best I've had. Looking forward to trying their other cuts of Buffalo.

For sides I had an appetizer of baked Alexia Mozzarella Sticks and a single serving of Green Giant Green Beans w/ Almonds. I had enough of the Alexia Mozzarella Sticks leftover for everyone to have an appetizer. The Green Giant Green Beans come frozen in a microwavable pouch. Just heat for 3 minutes and it's ready. Sometimes a freezer Potluck meal is the best! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Prepare for a whole new level of burger. Conveniently pre-made into one-quarter pound patties that are ever so grillable. Dinner ready. Each pack is 1 pound with 4 – 1/4 Lb patties.
