Another cold morning and afternoon around here, 26 degrees with a slight wind chill. Ran a couple of errands for Mom and then stopped by a couple of friends house, Wishing them a Merry Christmas. Back home and did a few odds and ends jobs around the house. For dinner tonight nothing but comfort food, Salmon Patties w/ Mac & Cheese and Sour Dough Mini Boule.
I had made some Salmon Patties a couple weeks of ago, and they were so good I'm having them again. I'm using a can of Kroger Brand Pink Salmon, Egg Beater’s, a couple of shakes of Frank’s Hot Sauce, Dried Parsley, and Kroger Low Fat Saltine Crackers. In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. I'm going to have to have these more often, they came out golden brown and delicious!
To make the Salmon Patties I used Kroger Low Fat Saltine Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved a toatal of 20 calories and 2 full grams of fat. Make cuts where you can, it all adds up.
For one side I heated up a Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. Then I baked the rest of the Sour Dough Bread Mini Boule leftover from last night's dinner. For dessert later a Jello Sugar Free Dark Chocolate Pudding.
