Panko Crusted Cod Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin, heated up a al fresco Chicken Sausage Patty, added a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese, and a
cup of Bigelow Decaf Green Tea. Cloudy and 66 degrees out today. I got all my work around the house done early because today is Opening Day of Baseball, and around here in the Cincinnati area its a Holiday. It should be a local Holiday because everyone is going to the game or watching the game through out the area! For Dinner Tonight  a Panko Crusted Cod Fish Sandwich w/ Baked Fries. Play Ball, Go Reds!

I purchased a Pacific Cod Loin at Kroger yesterday. I had washed it off in cold water and I cut in in
half. Put it in a plastic storage bag and into the fridge until ready to prepare.

I seasoned the fillets with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s,
allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.

For my Fries I’m using my favorite, Alexia Organic Yukon Select Fries. Seasoned them with
McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling Sandwich. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Panko Crusted Cod Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries

No Breakfast this morning . I had to be at my Family Doctor for my 4 month checks of Sugar, Cholesterol, and such. I'll get the results next week, hopefully all good! Afterward I needed a few things from the West Chester Meijer and then I took Mom to Kroger to let her shop. Back home did a few chores around the house. For Dinner tonight I prepared Panko-Crusted Fish Sandwich and Baked Fries.

I had a Cod Fillet in the freezer that I had purchased from Kroger. I laid it in the fridge overnight to thaw. I had washed them off in cold water and sliced them into Sandwich size Fillets before I froze them.

To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Then stopped at McDonald's and picked up Breakfast for Mom. After Lunch cleaned the house, dusted and ran the vacuum. For Dinner tonight I prepared Panko-Crusted Fish Sandwich and Baked Fries.

When I went to Kroger earlier and I picked up a couple North Atlantic Cod Fillets that were on sale.
Washed them off in cold water and sliced them into Sandwich size Fillets. I kept one out for my Sandwich and froze the other.

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries

For Breakfast this morning I prepared a Chicken Sausage Patty Breakfast Sandwich. I toasted a
Healthy Life Multi Grain English Muffin, heated up a al fresco Country Style Chicken Sausage Patty, and topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Love these Breakfast Sandwiches! Also I had my morning cup of Bigelow Decaf Green Tea. It's a hot one out there today! Humid and a high of 97 degrees. Had a few things to do outside around the house and I got those done right after Breakfast. I don't mind the heat but I can't take the humidity! Mom went to a Church Picnic about 2:00 this afternoon. She didn't last long though, just too hot out. Me, I just did a few things around the house. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

Shrimp enchiladas offer a taste of coastal Mexican cuisine but some versions contain so much cheese, butter and sour cream that they can pack a whopping 50 grams of fat per serving. Our version has vibrant flavor and only half the calories and 6 grams of fat per serving, plus we use precooked peeled shrimp so you can get the dish on your table fast enough for a weeknight supper. The addition of refried beans helps makes these enchiladas an excellent source of fiber as well.........

Baked Cod Casserole
Dry white wine and Gruyère cheese give this fish casserole a rich flavor that hides its virtue. Before baking, we top the dish with seasoned whole-wheat breadcrumbs, which add a wholesome, nutty flavor and dietary fiber. For variety, you can substitute almost any mild white fish...........

Skillet Tuna Noodle Casserole
Known as Tuna-Pea Wiggle to some, this family-friendly tuna noodle casserole tends to be made with canned soup and whole milk, which means high fat and sodium. We remedy this by making our own creamy mushroom sauce with nonfat milk thickened with a bit of flour. Look for whole-wheat egg noodles—they have more fiber than regular egg noodles (but this dish will work well and taste great with either)...........

Panko Crusted Cod Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries

For Breakfast this morning I fried 2 Johnsonville Turkey Breakfast Sausage Links, fried up some Simply Potatoes Shredded Hash Browns, toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, and made a cup of Bigelow Decaf Green Tea. Mostly sunny and a high of 56 degrees, not a bad day. I was out of a few things so I went to Kroger, Mom needed a couple of things also. We are starting therapy here at home for Dad. We're trying one last time to help Dad get some strength back in he's legs and arms. Not sure it will help but have to try. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

Purchased the Cod Loin Fillets at Kroger and had them in the freezer. So I laid a fillet in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both
Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off.

It’s an easy prepared but hot and filling meal. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Izzy's Boneless Cod Sandwich

Dinner Tonight: Izzy's Boneless Cod Sandwich

To start my morning off I toasted a Healthy Life Whole Grain English Muffin that I topped with some
Smucker’s Sugar Free Blackberry Jam. I also fried up a couple of Jennie - O Turkey Breakfast Sausage Links and made my morning cup of Bigelow Decaf Green Tea. The hot and humid weather is still with us, maybe a tad less humid. Gave Mom a hand with laundry. Changed the bed sheets and did some bedroom cleaning. Dad was released from the hospital last night and was moved to a local rehab center. He was at this one the last time and we really liked over there. Not sure how long he'll be there this time, hopefully not long! After lunch I went to the local Kroger and picked up a up a few items we needed.Back home not a lot going on so I got the cart out and trimmed some bushes at the side and back of the house. Then took a spin around the neighborhood and down by the lake. For Dinner tonight it's Izzy's, Boneless Cod Sandwich.

We I had my Dinner planned out but I received an email from Izzy's Deli that a coupon for 2$ off for their Boneless Cod Sandwich, my Dinner plans just changed! So tonight's Dinner I had planned will be tomorrow night's Dinner and tonight I'm having the Izzy's Boneless Cod Sandwich. I had this once before but it's been years. I do remember how good it was so I took advantage of the coupon.

The Sandwich was huge and as good as I remembered it being! Nice size Battered Cod Fillet, seasoned just right. It comes on Rye Bread with Tarter Sauce. One delicious Sandwich. I could only eat 1/2 of it, I'll have the other half for Lunch tomorrow. It came with a Potato Pancake which I gave to Mom. Mom had the Izzy's Reuben. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn along with a Diet Peach Snapple to drink.

Boneless Cod

Cod battered with Izzy’s special blend of seasonings on rye bread with tartar sauce. “Too good to be called fish!”
