Panko Crusted Cod Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries





For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin, heated up a al fresco Chicken Sausage Patty, added a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese, and a
cup of Bigelow Decaf Green Tea. Cloudy and 66 degrees out today. I got all my work around the house done early because today is Opening Day of Baseball, and around here in the Cincinnati area its a Holiday. It should be a local Holiday because everyone is going to the game or watching the game through out the area! For Dinner Tonight  a Panko Crusted Cod Fish Sandwich w/ Baked Fries. Play Ball, Go Reds!


I purchased a Pacific Cod Loin at Kroger yesterday. I had washed it off in cold water and I cut in in
half. Put it in a plastic storage bag and into the fridge until ready to prepare.











I seasoned the fillets with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s,
allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.




For my Fries I’m using my favorite, Alexia Organic Yukon Select Fries. Seasoned them with
McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling Sandwich. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

(4) 4oz. Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. Onion Powder

1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Light Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries










No Breakfast this morning . I had to be at my Family Doctor for my 4 month checks of Sugar, Cholesterol, and such. I'll get the results next week, hopefully all good! Afterward I needed a few things from the West Chester Meijer and then I took Mom to Kroger to let her shop. Back home did a few chores around the house. For Dinner tonight I prepared Panko-Crusted Fish Sandwich and Baked Fries.




I had a Cod Fillet in the freezer that I had purchased from Kroger. I laid it in the fridge overnight to thaw. I had washed them off in cold water and sliced them into Sandwich size Fillets before I froze them.












To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. I just had a cup of Bigelow Decaf Green Tea. I wanted to get an early start to go to Menard's and stop by Kroger for Mom but the roads in some areas werereal slick. We had some fog in some areas and
the fog was freezing on the roads. So after that cleared up I headed out. I went to Menard's to pick up some new blinds and then on to Kroger to grab a couple of items for Mom. Then stopped at McDonald's and picked up Breakfast for Mom. After Lunch cleaned the house, dusted and ran the vacuum. For Dinner tonight I prepared Panko-Crusted Fish Sandwich and Baked Fries.



When I went to Kroger earlier and I picked up a couple North Atlantic Cod Fillets that were on sale.
Washed them off in cold water and sliced them into Sandwich size Fillets. I kept one out for my Sandwich and froze the other.










To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess
flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Bean Ice Cream.

Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries






For Breakfast this morning it was Gravy, Toast, and Sausage. I made the gravy using a packet of Pioneer Peppered White Gravy. As that cooking I toasted a couple of slices of Aunt Millie's Light
Whole Grain Bread. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links. One Comfort Food Breakfast to start morning off. After Breakfast I went to Kroger for a couple of items and then to McDonald's to pick up Breakfast for Mom. Finished a couple of things around the house then I had to go to Walgreens to pick up a prescription and some stamps. Caught up on some shows I had recorded the rest of the afternoon. For Dinner tonight its a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.





I had picked up a couple of Orange Roughy Fillet at Jungle Jim’s International Market earlier in the week. I sliced the Fillet in 1/2, rinsed them in cold water, and put them in Hefty Plastic Freezer Bags
and froze them. So I put 1 of them in the fridge overnight to thaw. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll also need An Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater’s, and finally in the Panko Bread Crumbs.




I grabbed a skillet, sprayed it with Pam Non Stick Cooking Spray, added 1/2 tablespoon of Extra Light Olive Oil, and heated the skillet on medium heat. With the skillet heated I added my Fillet. I
fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on the Aunt Millie’s Bun. Orange Roughy has such a good taste to it, it’s a very mild Fish. Makes the perfect Fish Sandwich!











As my Orange Roughy was cooking I turned the oven up to 425 degrees and baked my Fries. I used
Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some
Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. I had to be at our Family Lawyer at 10:00. I made some changes to my Will. Then on the way back home stopped the ATM, got gas, and then got the car washed before heading back home. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

For Breakfast this morning I prepared a Breakfast Sandwich. I toasted a Thomas Light 100 Calorie Multi Grain English Muffin. Then I lightly fried some slices of Boar’s Head Sweet Slice Ham,
Scrambled some Egg Beater’s Egg Whites, and topped it all with a 1/2 slice of Boar’s Head Longhorn Colby Cheese. Also had my morning cup of Bigelow Decaf Green Tea. Sunny, 86 degrees, and not quite as humid out today. So good to see the sunshine again! After I had Breakfast I went to McDonald's and picked up Breakfast for her. She went on to Church afterward. I stayed home and did a load of laundry. Then got the cart out of the shed and did some yard work this afternoon. Feels great to get out. For Dinner tonight a Fish Sandwich! I prepared a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.


I had picked a New Zealand Orange Roughy Fillet at Jungle Jim's International Market earlier in the week. I sliced the Fillet in 1/2, rinsed them in cold water, and put them in Hefty Plastic Freezer Bags
and froze them. So I put 1 of them in the fridge overnight to thaw. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll also need An Aunt Millie's Reduced Calorie Whole Grain Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater's, and finally in the Panko Bread Crumbs.

Healthy Life Multi Grain English Muffin, heated up a al fresco Country Style Chicken Sausage Patty, and topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Love these Breakfast Sandwiches! Also I had my morning cup of Bigelow Decaf Green Tea. It's a hot one out there today! Humid and a high of 97 degrees. Had a few things to do outside around the house and I got those done right after Breakfast. I don't mind the heat but I can't take the humidity! Mom went to a Church Picnic about 2:00 this afternoon. She didn't last long though, just too hot out. Me, I just did a few things around the house. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with
Smucker's Sugar Free Blackberry Jam. Also I had my morning cup of Bigelow Decaf Green Tea. Cloudy morning out and 52 degrees. Had a high of 84 degrees with rain moving in the late afternoon. After Breakfast I went to Meijer to pick up some Herb and Pepper Plants. I've got Sweet Basil and Sweet Peppers growing so far. I love planting stuff and watching it grow. I guess I learned to love that from Grandparents. I was always out on their farm during the Summer. Really miss them and those fun days! For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated 1 tablespoon of Extra Light Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. The Panko gives the Sandwich a great crunch. The Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.



For my Fries I’m using my favorite, Alexia Organic Yukon Select Fries. Seasoned them with
McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It's my 4th day of Fish and Seafood - Shrimp, Walleye, Fried Oysters, and Cod today. For Dessert later something new, a Skinny Cow Frozen Greek Yogurt Fudgetastic Swirl Bar.








Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. Onion Powder
1/2 tsp. Garlic Powder
1/2 tsp. Paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Light Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Dinner Tonight: Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes and Green Beans




For Breakfast this Tuesday Morning I prepared some Simply Potatoes Shredded Hash Browns,
Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. After Breakfast I took Mom up to spend some time with Dad. He seems to be doing good but he's just so confused anymore. The Dementia has really advanced the past few months. So sad. For dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Green Beans.




I bought a of packages of 2 Cubed Pork Steak at Kroger yesterday. So I got the big three out to bread
it with; Flour,Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered.






I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. Topped it with some Pioneer Peppered White Gravy. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. I prepared both Cubed Steaks, Mom had the other one.






For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. To top my
Mashed Potatoes and Cubed Pork Steak I made some Pioneer Peppered White Gravy. Another quick and easy prep and comes out piping hot and delicious. I topped both my Mashed Potatoes and Cubed Steak with it. Then I also heated up a small can of Del Monte Cut Green Beans. Comfort Food Dinner Heaven tonight! For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Coke Zero to drink.






Pioneer Brand Peppered White Gravy

Ingredients
Vegetable Shortening (Partially Hydrogenated Soybean and/or Cottonseed Oil), Bleached and
Enriched Wheat Flour (Bleached Wheat Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Food Starch-modified, Corn Syrup Solids, Salt, Maltodextrin, Sodium Caseinate (A Milk Derivative), Mono and Diglycerides, Black Pepper, Sodium Citrate, Dipotassium Phosphate, Carrageenan, Artificial Flavor, Artificial Color.

Directions
1. Blend Peppered Gravy Mix with 1/2 cup cool water. Mix or whisk until lump free. Set Gravy Mix blend aside. 2. Bring 1-1/2 cups water to a full rolling boil. 3. Pour the Gravy Mix Blend into the boiling water. Stir vigorously with a fork or whisk until thickened. Remove from heat.

To start my Saturday morning off I Scrambled a couple of Eggs, fried 2 Johnsonville Turkey Breakfast Sausage Links, toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. I was hungry! Sunny and 47 degrees out but not windy as it has been. It was house cleaning today, dusted and ran the sweeper. Later on cleaned and straightened up the pantry. So for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Green Beans.

Panko Crusted Cod Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries






For Breakfast this morning I fried 2 Johnsonville Turkey Breakfast Sausage Links, fried up some Simply Potatoes Shredded Hash Browns, toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, and made a cup of Bigelow Decaf Green Tea. Mostly sunny and a high of 56 degrees, not a bad day. I was out of a few things so I went to Kroger, Mom needed a couple of things also. We are starting therapy here at home for Dad. We're trying one last time to help Dad get some strength back in he's legs and arms. Not sure it will help but have to try. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.



Purchased the Cod Loin Fillets at Kroger and had them in the freezer. So I laid a fillet in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both
