Panko Crusted Cod Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries





For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some
Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. I had to be at our Family Lawyer at 10:00. I made some changes to my Will. Then on the way back home stopped the ATM, got gas, and then got the car washed before heading back home. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.


Purchased the Cod Loin Fillets at Kroger and had them in the freezer. So I laid a fillet in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then
seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.



For my Fries I’m using my favorite, Alexia Organic Yukon Select Fries. Seasoned them with
McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert later some Honey Crisp Apple slices.

Ingredients:

(4) 4oz. Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. Onion Powder
1/2 tsp. Garlic Powder
1/2 tsp. Paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Light Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.

Dinner Tonight: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries




For Breakfast this morning I prepared a Breakfast Sandwich. I toasted a Thomas Light 100 Calorie Multi Grain English Muffin. Then I lightly fried some slices of Boar’s Head Sweet Slice Ham,
Scrambled some Egg Beater’s Egg Whites, and topped it all with a 1/2 slice of Boar’s Head Longhorn Colby Cheese. Also had my morning cup of Bigelow Decaf Green Tea. Sunny, 86 degrees, and not quite as humid out today. So good to see the sunshine again! After I had Breakfast I went to McDonald's and picked up Breakfast for her. She went on to Church afterward. I stayed home and did a load of laundry. Then got the cart out of the shed and did some yard work this afternoon. Feels great to get out. For Dinner tonight a Fish Sandwich! I prepared a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.


I had picked a New Zealand Orange Roughy Fillet at Jungle Jim's International Market earlier in the week. I sliced the Fillet in 1/2, rinsed them in cold water, and put them in Hefty Plastic Freezer Bags
and froze them. So I put 1 of them in the fridge overnight to thaw. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll also need An Aunt Millie's Reduced Calorie Whole Grain Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater's, and finally in the Panko Bread Crumbs.




I grabbed a skillet, sprayed it with Pam Non Stick Cooking Spray, added 1/2 tablespoon of Extra Light Olive Oil, and heated the skillet on medium heat. With the skillet heated I added my Fillet. I fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on the Aunt Millie's Bun. Orange Roughy has such a good taste to it, it's a very mild Fish. Makes the perfect Fish Sandwich!







As my Orange Roughy was cooking I turned the oven up to 425 degrees and baked my Fries. I used
Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

For Breakfast this morning I prepared a Chicken Sausage Patty Breakfast Sandwich. I toasted a
Healthy Life Multi Grain English Muffin, heated up a al fresco Country Style Chicken Sausage Patty, and topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Love these Breakfast Sandwiches! Also I had my morning cup of Bigelow Decaf Green Tea. It's a hot one out there today! Humid and a high of 97 degrees. Had a few things to do outside around the house and I got those done right after Breakfast. I don't mind the heat but I can't take the humidity! Mom went to a Church Picnic about 2:00 this afternoon. She didn't last long though, just too hot out. Me, I just did a few things around the house. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.



I had purchased the Cod Loin Fillets at Kroger and had it in the freezer. So I laid the fillet in the
fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into some Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated 1 tablespoon of Extra Light Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. The Panko gives the Sandwich a great crunch. The Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.



For my Fries I’m using my favorite, Alexia Organic Yukon Select Fries. Seasoned them with
McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s my 4th day of Fish and Seafood – Shrimp, Walleye, Fried Oysters, and Cod today. For Dessert later Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free. In case you haven't seen it yet there's a new Cool Whip w/ Oreo's, too good to be a topping! I plan using it to make a Cool Whip Pie!

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with
Smucker's Sugar Free Blackberry Jam. Also I had my morning cup of Bigelow Decaf Green Tea. Cloudy morning out and 52 degrees. Had a high of 84 degrees with rain moving in the late afternoon. After Breakfast I went to Meijer to pick up some Herb and Pepper Plants. I've got Sweet Basil and Sweet Peppers growing so far. I love planting stuff and watching it grow. I guess I learned to love that from Grandparents. I was always out on their farm during the Summer. Really miss them and those fun days! For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

For Breakfast this morning I fried 2 Johnsonville Turkey Breakfast Sausage Links, fried up some Simply Potatoes Shredded Hash Browns, toasted a couple of slices of Aunt Millie's Light Whole Grain Bread, and made a cup of Bigelow Decaf Green Tea. Mostly sunny and a high of 56 degrees, not a bad day. I was out of a few things so I went to Kroger, Mom needed a couple of things also. We are starting therapy here at home for Dad. We're trying one last time to help Dad get some strength back in he's legs and arms. Not sure it will help but have to try. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

out there again a bit more windy but sunny and 61 degrees!. After Breakfast did some light house cleaning and started Mom's laundry for her. After Lunch I had to back to the store, Meijer was out of all its Aunt Millie's Reduced Fat Buns and Bread. So I went back to pick some up. Back home not much else going on. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

For Breakfast on this beautiful Sunday Morning I reheated 3 of the Potato Pancakes leftover from last
night's Dinner, love these things! I also toasted 2 slices of Healthy Life Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Another gorgeous day out there again. Sunny and 75 degrees, and no humidity. It's unusual for this area to have weather like this at the end of June. Usually the high humidity has set in for the Summer and high temps. After Breakfast I headed to Meijer for a few items and picked up Breakfast for Mom and Dad at McDonald's for them. Did a load of laundry and some light house cleaning, not a lot going on after that. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

Then for a side dish I prepared I had some Alexia Potato Puffs, that I had leftover in the freezer. To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. Excellent Potato Product, browned up perfect with excellent seasoning. For dessert later a 100 Calorie Breyer’s Vanilla Ice Cream Cup that I topped with some Smucker's Sugar Free Hot Fudge Topping.

Ingredients:

(4) 4oz. Orange Roughy or Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Extra Virgin Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs





For Breakfast I had a toasted Healthy Life Whole Grain English Muffin that I topped with Smucker's Sugar Free Blackberry Jam and a cup of Bigelow Decaf Green Tea. Mostly cloudy and 82 degrees. More rain moving back in tonight. Along with that the pollen and spore count is high today, and I can tell it with my allergies! We had to have Dad at the optometrist at 9:00 this morning, he needs new glasses. Back home did a few things around the yard and shed and then took the cart out for a spin around the neighborhood. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.


Purchased the Cod Loin Fillets at Kroger and had them in the freezer. So I laid a fillet of it in the
fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love having Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.

Believe It’s Not Butter and a cup of Bigelow Decaf Green Tea. Did some light house cleaning and gave Mom a hand with a couple of loads of laundty. Then after Lunch headed over to see Dad. He's showing improvement, it's just wait and see now. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato Puffs.

It's another beautiful Spring morning here in West Chester! For Breakfast I toasted a Healthy Life Whole Grain English Muffin that I lightly buttered with I Can't Believe It's Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Cleaned the house this morning, dust and vacuum. Everything done got the cart out and enjoyed the day, sunny and 70 degrees! Glad the warm temps and sun are back. For dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries.





I had purchased the Cod from Kroger yesterday. To prepare the Cod I rinsed the fillet off with cold
water and patted dry. I then cut the fillet in half. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Panko Crusted Cod Fish Sandwich w/ Mac and Cheese

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Mac and Cheese





Had a light Breakfast, Eggo's, and then off to Meijer for a few items. Rainy and dreary out to start the day but the clouds cleared and the sun came out. Beautiful day out to be December 22, sunny and a high near 60 degrees! Christmas Day they said we could break a record high. They say we're getting this weather due to the El Nino Winds. Did some cleaning around the house and deck outside and even got the cart out of the shed for a while today. For dinner tonight it's a Panko Crusted Cod Fish Sandwich w/ Mac and Cheese.









I had purchased the Cod from Kroger a while back and had it in the freezer. I laid 2 small fillets in the fridge overnight to thaw. To prepare the Cod I'll need; Shake and Bake Seasoned Panko, Sea Salt and Ground Black Pepper (to taste), 1 tsp. Onion Powder, 1/2 tsp. Garlic Powder, 1/2 tsp. Paprika, 1/2 c. Egg Beater’s, 1/2 c. Flour, and 1 Tbs. Extra Virgin Olive Oil.

I also prepared a Stouffer's Classic Mac and Cheese Cup. Frozen individual Mac Cups, just
microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
