Crunchy Breaded Fish Sticks w/ Whole Grain Mac and Cheese

Dinner Tonight:  Crunchy Breaded Fish Sticks w/ Whole Grain Mac and Cheese

For Breakfast this morning I toasted a couple of Eggo Waffles, lightly topped with butter, and had my
morning cup of Bigelow Decaf Green Tea. Already 49 degrees this morning, warmest in a while. For the day it was mostly cloudy and a high of 70 degrees, about time! After Breakfast I went to Kroger to pick up some groceries for Mom. She was out of a lot things and dad will be home tomorrow after being gone 2 months in the hospital and rehab. Be great to have him back home. After Lunch I pulled out my mobility cart from the shed and cleaned it up. Then swept shed out. I also grabbed the leaf blower and cleaned of the deck and around the driveway. Kept it simple for Dinner tonight. I made some  Crunchy Breaded Fish Sticks w/ Whole Grain Mac and Cheese.

So it's Fish Sticks tonight! I'm using Gorton's Smart and Crunchy Breaded Fish Sticks. Growing up I
lived on Fish Sticks. When I was at Meijer the other day I seen these in the frozen foods and bought a package of them and the Gorton's Smart and Crunchy Fillets. These are coated with Panko Bread Crumbs and to prepare them I'll be baking them. I first preheated the oven at 375 degrees. I then took a small baking sheet and lined it with foil. Sprayed the foil with Pam Cooking Spray and lined the Fish Sticks up on the sheet. Then baked them for 22 minutes, flipping them over after 11 minutes.

They came out piping hot, nice crunch from the Panko Bread Crumb Coating and nicely Seasoned.I've got another great item for the freezer, a good one to have on hand. Served them with a side of McCormick Tarter Sauce.

For side to go with the Fish Sticks I prepared some Kraft 50% Whole Grain Mac and Cheese. I
normally have the regular Mac and Cheese but I seen the 50% Whole Grain at Meijer and picked up a 4 pack of them. It comes in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! Seafood and Mac and Cheese are just a natural pairing. For dessert later a Jello Sugarfree Dark Chocolate Pudding.

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries

Not quite as hot or humid out, bit of break. Went to the Kroger up the road and picked up a couple of items for myself and also a few items for Mom. Came home to find a gift box from Jennie - O Turkey as part of the  Jennie – O Switch Club that I am a member of. It contained 3 different of the Turkey Franks, Coupon, and a Meat Thermometer. You can read more on this in a previous post I posted earlier today. They came and measured for our new Kitchen Floor that will be installed later. So for dinner tonight it's Panko Crusted Cod Fish Sandwich w/ Baked Fries.

To prepare the Cod I rinsed the fillets off with cold water and patted dry. Then seasoned them with Sea Salt and Pepper. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip the floured fillet into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Place fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heat canola oil in a skillet and place the fillets in and saute 3 minutes each side, or until fillets are heated through and Panko Crust has browned. Served the fillet on a Healthy Choice Whole Grain Hamburger Bun. Panko and Fish are perfect together! Mom and dad both said it was one of the best Fish Sandwiches that they had ever had.

For a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Weight Watcher's Snack Size Dutch Chocolate Ice Cream Sandwich.

Panko Crusted Cubed Pork Steak w/ Mashed Potatoes and Boiled Mini Carrots

Dinner Tonight: Panko Crusted Cubed Pork Steak w/ Mashed Potatoes and Boiled Mini Carrots

It's been one laid back day today around the old homestead! A little humid out but sunny and it hit about 85 today. For lunch I had my favorite Spam, Turkey Spam with Ritz Whole Grain Crackers. Went and got Mom's car washed and cleaned on the inside for her and that was about it. Told you it was laid back. For dinner tonight I prepared Panko Crusted Cubed Pork Steak w/ Mashed Potatoes and Boiled Mini Carrots.

I bought a package of Cubed Pork Steak at Kroger the other day, they normally don't have the Cubed Pork. So I got the big three out to bread it with; Flour, Egg Beater's, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater's shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered.

I heated up a medium size skillet, that i drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes, till each side was golden brown. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika. As you can tell in the picture, the Steak was huge so I cut in half and I'll have the other half for Breakfast in the morning.

For side dishes I went with Bob Evan's Mashed Potatoes, my favorite Mashed Potatoes by far. Then I also boiled some Mini Carrots and had a slice of Klosterman Wheat Bread that I buttered with I Can't Believe It's Not Butter. For dessert later a bowl of Breyer's Carb Smart Chocolate Ice Cream.

Panko Crusted Cod Fish Sandwich w/ Baked Potato

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Potato

Not a bad day out today. Sunny and in the 50's, plus a streak of sunny and warmer days coming up! It's about time, it seems it's been an awful long and cold winter. I'm feeling better today than I have and my Dad is getting a little stronger in rehab. They started him with therapy twice a day. It was Fish tonight for dinner. I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Potato.

To prepare the Cod I rinsed the fillets off with cold water and patted dry. Then seasoned them with Sea Salt and Pepper. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Served the fillet on a Aunt Millie’s Reduced Calorie Whole Grain Bun.

To go with my Cod Sandwich I baked a Baked Potato. Seasoned it with McCormick Grinder Sea salt and Black Peppercorn and topped with I can't Believe It's Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Panko Crusted Cod Fish Sandwich w/ Baked Fries

Dinner Tonight: Panko Crusted Cod Fish Sandwich w/ Baked Fries

Back to old routine of Winter! It snowed just enough, early this morning, to make the roads and overpasses slick. As usual cleaned off the car windows of blowing snow and then salted the driveway. Thankfully we didn't get very much of the white stuff this time. Windy, cloudy, and cold out all day. All you can do is fix a good meal and eat those winter blues away! Tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

Panko Crusted Veal Cutlet w/ Peppered White Gravy, Sugar Snap Peas, and Mashed Potatoes

Dinner Tonight: Panko Crusted Veal Cutlet w/ Peppered White Gravy, Sugar Snap Peas, and Mashed Potatoes

Well my favorite time of the year, Autumn, has come and quickly gone. Winter has moved in and in a big way!. We had a little cover of snow and cold yesterday, then this morning it was our lowest temperature in a while. I went out and got the morning paper and it was only 13 degrees, and it felt like it! So it's good-bye Fall and hello Winter I guess. For dinner I prepared Panko Crusted Veal Cutlet w/ Peppered White Gravy, Sugar Snap Peas, and Mashed Potatoes.

While at Jungle Jim’s Market a while back I purchased some Veal Cutlets, I used one the day I purchased them and froze the other. I laid that one out in the fridge to thaw overnight. I got the big three out to bread these beautiful Veal Cutlet; Flour, Egg Beaters, and Panko Bread Crumbs. I seasoned the flour with Sea Salt and Ground Pepper and added some Hungarian Paprika to the Egg Beater’s. These were thick cutlets so I had to fry them a little bit longer than you would normally fry Veal. I fried them in Canola Oil about 5 minutes per side. The coatings gave it a fantastic golden brown coating and the cutlet was tender and moist, and seasoned just right. You could cut by using a fork! Topped it with some Pioneer Peppered White Gravy that I prepared. And as you can tell by the picture its big enough to cut in half and have the other half for lunch tomorrow.

Then for one side I had Bob Evan's Mashed Potatoes, leftover from the other night, that I reheated in the microwave. Topped them with some of the Pioneer Peppered White Gravy that I prepared. I also heated a bag of Walmart's Marketside Sugar Snap Peas. It comes in a microwavable bag, just heat 2 minutes and done. I also had a slice of Klosterman Wheat Bread. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Panko Crusted Veal Cutlet w/ Peppered White Gravy, Green Beans and Mashed Potatoes

Dinner Tonight: Panko Crusted Veal Cutlet w/ Peppered White Gravy, Green Beans and Mashed Potatoes

Just a drop dead gorgeous Autumn Day out today! We've been lucky with the weather this year. Cooler weather coming in though with highs around 60 or mid 50's. The trees around here are really starting to turn and a few have lost their leaves. For dinner tonight another comfort food classic; Panko Crusted Veal Cutlet w/ Pepper White Gravy, Green Beans and Mashed Potatoes.

While at Jungle Jim’s Market last week I  purchased some Veal Cutlets. I always have to pick up some Veal while at Jungle Jim's, they have the best around! I got the big three out to bread these beautiful Veal Cutlets; Flour, Egg Beaters, and Panko Bread Crumbs. I seasoned the flour with Sea Salt and Ground Pepper and added some Hungarian Paprika to the Egg Beater's. Topped it with some Pioneer Peppered White Gravy that I whipped up.

For sides I warmed up some leftover Green Beans that my Mom had made the night before. Nice size and full Green Beans. I also heated up an individual serving of Bob Evans Mashed Potatoes and topped them with a bit of Peppered White Gravy also.. I had a couple of slices of Klosterman Wheat Bread also. For dessert later a Skinny Cow Ice Cream Bar.

Pork Cube Steak w/ Mashed Potatoes, White Gravy, and Sugar Snap Peas

Dinner Tonight:  Pork Cube Steak w/ Mashed Potatoes, White Gravy, and Sugar Snap Peas

I spent the morning doing some price comparing at Walmart and Kroger, you can read about that in an earlier post from today. What a beautiful morning it was this morning. I went out, about 6:30 am,  and got the 2 Sunday Papers and it was a perfect morning out. Birds singing, Sunny and about 68 degrees. The sky in the east looked like a rainbow. I prepared something for dinner that I've never had a Pork Cube Steak, purchased at Walmart. I had a Beef Cube Steak before but never a Pork. For dinner I prepared a Pork Cube Steak w/ Mashed Potatoes, White Gravy, and Sugar Snap Peas.

To prepare the Pork Cube Steak I seasoned it with Sea Salt and Ground Black Pepper. I then rolled them Panko Bread Crumbs. A fantastic trio to bread most any meat. I seasoned the Flour with Sea Salt and Ground Black Pepper, added a few shakes or more of Frank's Hot Sauce to the Egg Beater's, and Garlic Powder to the Panko Bread Crumbs. After breading I pan fried them in Canola Oil to a Golden Brown, about 7 minutes per side. As I said it was the first time I tried them and really liked them better than the Beef Cube Steaks, a lot more tender. I'll be using them again!
through the classic seasoning and breading of Seasoned Flour, Egg Beater's, and

For sides to go with the Cube Steak I heated up some Pioneer White Peppered Gravy along with Bob Evan's Mashed Potatoes, microwave a total of 6 minutes and ready! Then I also microwaved a bag of Walmat Marketside Sugar Snap Peas . For dessert later I had bought a Bunch of Bananas while out so I'll just have a Banana tonight.

Dinner Tonight: Fried Panko Coated Sandwich w/ Baked Seasoned Potato Grillers

Another cold day around here again but it's predicted to be a little warmer over the weekend, but rain. Well for dinner I made another sandwich with sides for dinner,Fried Panko Coated Sandwich w/ Baked Seasoned Potato Grillers.

I had an Orange Roughy fillet left in the freezer so I laid it out overnight in the fridge to thaw. To prepare it I rinsed the fillet off and patted it dry then rolled it in Flour that I had seasoned with Garlic Powder, Lemon Pepper, and Onion Powder. I then dipped it into Egg Beater’s, shaking off the excess. Then rolling the fillet in a Panko Bread Crumbs that I seasoned with Sea Salt and Paprika. I rolled the fillets until they were covered on both sides. I then lightly fried them about 4 minutes per side in Canola Oil. It came out golden brown and delicious! I served it on a Aunt Millie's Light Whole Grain Bun along with a slice of Bordon’s Smoked Cheddar Cheese and also just a touch of Lemon Juice to top the fillet off. The full recipe is at the end of the post, recipe makes 4 sandwiches.

For a side to go with my Fish I baked up some Ore Ida Grillers Seasoned Thick Cut Potatoes. A real good product from Ore Ida, nice and thick cut that's seasoned just right. For dessert later a Healthy Choice Greek Frozen Yogurt Vanilla/Chocolate Swirl.

Panko Crusted Veal Cutlet w/ Green Beans and Mashed Potatoes

Today's Menu: Panko Crusted Veal Cutlet w/ Green Beans and Mashed Potatoes

While at Jungle Jim's Market earlier I came across some of the biggest Veal Cutlets I had ever seen, and of course I had to purchase a couple of packages of it! I froze 1 package and prepared the other for dinner. I got the big three out to bread these beautiful Veal Cutlets; Flour, Egg Beaters, and Panko Bread Crumbs. I seasoned the flour with about 3 shakes of Paprika and seasoned the cutlets with Sea Salt and Ground Black Pepper. These were very thick cutlets so I had to fry them a little bit longer than you would normally fry Veal. I fried them in Canola Oil about 5 minutes per side. And as you can tell by the picture it turned out incredible! The coatings gave it a fantastic golden brown coating and the cutlet was tender and moist, you could cut by using a fork!

For sides I warmed up some leftover Green Beans that my Mom had made the night before, from Green Beans she had purchased from a local Farmer's Vegetable Stand. Along with the Beans I made an individual cup of Idahoans Mashed Potatoes. Just add water and microwave for a 1 and 1/2. easy to fix and a great substitute for homemade mashed potatoes. For dessert later a Jello Sugarless Dark Cherry Jello, 910 calories!

Baked Tilapia Sandwich w/ Tofu Mac & Cheese

Dinner Tonight: Baked Tilapia Sandwich w/ Tofu Mac & Cheese

A comfort food classic, with a bit of a spin, for dinner tonight. It's a Fish sandwich with Mac and Cheese! I love Mac & Cheese but I don't like the calories and carbs that usually come with it. So to cut back on the calories and carbs I replaced the Pasta Macaroni with Tofu Shiratki (Yam Noodle with Tofu) Macaroni Shape Noodles.

First the Fish,If you want a flat-out delicious Fish recipe look no further! I prepared this with Tilapia but it would go great with Mahi Mahi, Sea Bass, or about any other Fish. This makes one of the most delicious Fish Sandwiches you'll ever have. I had seen this recipe originally on the Neely’s on the Food Network and I've been using it ever since! So I laid out two Tilapia Fillets and I was set. I preheated the oven to 450 degrees F. Then placed a heavy-duty baking pan sprayed with nonstick spray in the oven to heat.

First you dredge the fillets in a Melted Butter (I used I Can't Believe It's Not Butter), Dijon Mustard, and Chopped Dill. Then you combine Panko Bread Crumbs, Cayenne and Sea Salt and Pepper and dredge the fillets through this making sure the fillets are completely coated. Place on the hot sheet trays in the oven and bake until cooked through and lightly golden, 12 to 15 minutes. Assemble the sandwich by adding Tartar Sauce or any other of your favorite toppings. I left my version of the recipe at the bottom of the post.

Now for the Mac & Cheese, this is where it gets good! I used TOFU SHIRATAKI (Yam Noodle with Tofu) MACARONI SHAPE which is only 20 calories and 3 carbs! I added a half a serving of Velveeta 2% Cheese, 1 slice Sargento Ultra Thin Swiss Cheese, and 1/4 teaspoon Kraft Shredded Parmesan Cheese. Seasoned with Sea Salt and Ground Black Pepper. Mix it all together and microwave on high for 1 minute and 40 seconds. After the first minute stop it to stir and continue with 40 seconds, the time can vary according to your microwave. I'm starting to use Tofu more and more as a noodle substitute. Huge difference in calories and carbs between the two. A thank you to Hungry Girl for the idea. I left the recipe and the link to the Housefoods Tofu at the end of the post. For dessert later something a Yoplait Chocolate Banana Smoothie. on the post below.

Cheesy Tofu Shirataki Mac

Ingredients:
1 bag House Foods Tofu Shirataki Macaroni Shaped Noodle Substitute
1/2 Serving Velveeta 2% Cheese
1 slice Sargento Ultra Thin Swiss Cheese
Sea Salt and Black Pepper, to taste
Sprinkle of Oscar Mayer Real bacon Bits (Optional)

Directions:

Fried Panko Crusted Cod w/ Fresh Cut Baked Fingerling Potato Wedges...

Dinner Tonight: Fried Panko Crusted Cod w/  Fresh Cut Baked Fingerling Potato Wedges and Pasta Salad

If you love Fish as much as I do you have to try this recipe! This makes one of the best Fish Sandwiches you'll ever have. I layed out one of those great tasting Cod Fillets to thaw out. I rinsed the fillet off and rolled it in Flour then dipping it into Egg Beater’s, shaking off the excess. Then rolling the fillet in a Panko Bread Crumbs, Onion Powder, Lemon Pepper, Garlic Powder, and Paprika mix until covered on both sides of the fillets. I then lightly fried it about 4 minutes per side in Extra Virgin Olive Oil. Golden brown and delicious! Served on a Healthy Life Whole Grain Bun. You can add Cheese or Tarter Sauce but Why, this is just too good natural. There’s even going to be some tasty leftovers for lunch tomorrow! The recipe is at the end of the post.

For sides I sliced up Fingerling Potatoes into Fries. I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. Baked them at 400 degrees until they were done and golden brown, about   minutes. I also tried a new side Betty Crocker Suddenly Pasta Salad - Basil Pesto. It was real easy to prepare. Quick and easy and quite good the only thing I didn't like it was a tad high in salt. I left the instructions and nutrition info at the bottom of the post. For dessert later I tried a new dessert I found in the latest issue of Kraft Family Foods, Mango-Cheesecake Parfaits. I'll leave the recipe on a separate post. Mango, Philly Cheese, Vanilla Pudding, and Cool Whip what's not to like!

Panko Crusted Fish

Ingredients
(4) 4oz. Orange Roughy, Cod, or Tilapia Fillets
1c. Panko Italian Style Bread Crumbs
1tsp. onion powder
1/2 tsp. garlic powder
1/2 tsp. paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 1/2 Tbs. Extra Virgin Olive Oil

Directions
Rinse fillets and pat dry. Press both sides of fillet into flour for a light dusting , shaking off any excess flour. Mix bread crumbs, onion powder, garlic powder, and paprika in a separate bowl. Meanwhile, heat Olive Oil in skillet. Dip floured fillets into egg whites, allowing excess to drip off. Place fillets, one at a time, in Panko Bread Crumbs, and lightly toss until both sides are covered. Place in oil and saute 4 minutes each side, or until fillet flakes easily with a fork.

Suddenly Pasta Salad - Basil Pesto

To make the basil pesto salad, you simply need water to boil the pasta and one-third cup water mixed with two tablespoons of olive oil to make the seasoning that coats the pasta.  The instructions direct the cook to boil the pasta in a 3-quart or larger saucepan that is filled about two-thirds of the way with water.  Gently boil the penne pasta, uncovered for about thirteen minutes.

While the pasta is cooking, add two tablespoons of olive oil to one-third cup of water and stir in the packet of seasoning mix. The instructions warn to use cold water but I have used room temperature and have never seen a difference in taste or texture.  Set this mixture aside.  When the pasta is cooked, drain the water and pour into a bowl or container.  Stir in the seasoning mixture and toss to coat the pasta thoroughly.  The box instructions state that chopped tomato can be added in for additional flavor.I also added sliced Black Olives. It also suggests for moister salad to add in a couple more teaspoons of olive oil

Fried Panko Crusted Cod w/ Diced Rutabagas, Green Beans, and...

Today's Menu: Fried Panko Crusted Cod w/ Diced Rutabagas, Green Beans, and Whole Grain Bread

It had been a while since I had any Cod so while at Kroger the other day came across some nice looking fillets and I purchased 2 of them. I rinsed the fillets off and rolled them in Flour then dipping them into Egg Beater’s, shaking off the excess. Then rolling them in a Panko Bread Crumbs, Onion Powder, Lemon Pepper, Garlic Powder, and Paprika mix until covered on both sides of the fillets. I then lightly fried them about 4 minutes per side in Extra Virgin Olive Oil. Golden brown and delicious! There’s going to be some tasty leftovers for lunch tomorrow!

For sides another first time one for me, Rutabagas. I had never tried them and found a can of Margaret Holmes Diced Rutabagas. The taste of the Rutabaga is similar to a Potato and the color of a Sweet Potato. I boiled them and seasoned them with Sea Salt, Black Pepper, and added I Can't Believe It's Not Butter which I added after it was done. I left the link and description at the end of the post for the Rutabagas. I've been purchasing a lot of Margaret Holmes products at our local Walmart lately. I really enjoy all the products I've tried. Fresh and easy to fix and wide variety! I also had a side of Green Beans and Healthy Life Whole Grain Bread. For dessert/snack later a new item I'm trying Dean's Heat 'n Eat Chunky Bean Dip along with Tostito's Whole Grain Scoops.

Margaret Holmes Diced Rutabagas
Originally cultivated in Sweden where it grew wild, the Rutabaga was brought to the US in 1817. This flavorful root can be prepared in a variety of ways and is often an addition to greens and soups or by itself. Margaret Holmes Rutabagas are locally grown and cooked to perfection. Just heat-n-serve!
