One of America's Favorites - Mission Burrito

Mission burrito

A Mission burrito (also known as a San Francisco burrito or a Mission-style burrito) is a type of burrito that first became popular during the 1960s in the Mission District of San Francisco, California. It is distinguished from other burritos by its large size and inclusion of extra rice and other ingredients. A key method to the burritos' construction is to steam the wheat flour tortilla to increase its flexibility prior to adding the other ingredients, although that is not a requirement and burritos may be grilled instead. It has been referred to as one of three major styles of burritos in the United States, following the earlier, simple burrito consisting of beans, rice, and meat. It precedes the California burrito, which developed in the 1980s and contains cheese and potatoes.

Many taquerĆas in the Mission and greater San Francisco Bay Area specialize in Mission burritos. It is typically a large flour tortilla that is wrapped and folded around a variety of ingredients, served in a piece of aluminum foil. A food critic for the San Francisco Chronicle counted hundreds of taquerias in the Bay Area, and noted that the question of which taqueria makes the best burrito can "encourage fierce loyalty and ferocious debate". New York-based writer Calvin Trillin said that the burrito in San Francisco "has been refined and embellished in much the same way that the pizza has been refined and embellished in Chicago." Since its commercial availability began in the 1960s, the style has spread widely throughout the United States and Canada.

Though an authentic mission burrito is made in San Francisco's Mission District at family owned Mexican restaurants called "taquerias", Chipotle Mexican Grill, Qdoba Mexican Grill, Panchero's Mexican Grill, Freebirds World Burrito, Barberitos, and Taco del Mar are large national chains in North America that arguably offer versions of a San Francisco style burrito. Chipotle was started by a chef who directly acknowledges the inspiration of Mission taquerias. The New York City–based restaurant chain BurritoVille, which existed from 1992 to 2008, specialized in San Francisco–style burritos. Atlanta was home to one of the first San Francisco–style burrito restaurants on the East Coast, called Tortillas, from the mid-1980s until the early 2000s.

Some New York establishments advertise "Cal-Mex" or "San Francisco style" burritos. Two chains of Boston taquerias (Anna's Taqueria and Boca Grande Taqueria) are directly modeled after a local Bay Area chain, and other burrito businesses also cite the influence of San Francisco burritos.

Burritos made in the San Francisco style can be found in other cities across the United States.

A small chain of establishments have been appearing in the UK under the name "Mission Burrito" selling Mission-style burritos in Oxford, Reading, and Bristol. M4 Burritos, with two Montreal locations, also claims to serve Mission-inspired fare.

The aluminum foil wrapping, which is present whether the customer is eating in the restaurant or
Mission burrito as served wrapped in foil
taking out, acts as a structural support to ensure that the tortilla does not rupture.

Diners eating Mission burritos customarily forgo utensils entirely and eat the burrito with their hands, tearing the foil gradually down as they eat from above, but keeping the foil on the bottom to continue to support the structure of the uneaten portion. Adding salsa to the burrito before each subsequent bite is a popular practice.

One of America's Favorites - Breakfast Burrito

A breakfast burrito prepared with cheese, bacon, kale and other ingredients

The breakfast burrito, sometimes referred to as a breakfast wrap, is a variety of American breakfast composed of breakfast items wrapped inside a flour tortilla burrito. This style was invented and popularized in several regional American cuisines, most notably New Mexican cuisine, Southwestern cuisine, and Tex-Mex. Southwestern breakfast burritos may include scrambled eggs, potatoes, onions, chorizo, or bacon.

Some fast food restaurants such as Burger King, Dunkin' Donuts, McDonald's and Taco Bell sell breakfast burritos. The breakfast burrito is also a street food.

The breakfast burrito was invented in Santa Fe, New Mexico,  Little William Harm's Burrito Shack, claims to have invented the original breakfast burrito in 1975, filling a rolled tortilla with bacon and potatoes, served wet with chile and cheese. Fast food giant McDonald's introduced their version in the late 1980s, and by the 1990s, more fast food restaurants caught on to the style, with Sonic Drive-In, Hardee's, and Carl's Jr. offering breakfast burritos on their menus. In 2014, Taco Bell launched their breakfast menu, which included breakfast burritos.

The breakfast burrito can be prepared with myriad filling ingredients, such as eggs, ham, cheese, onion, peppers, bacon, Canadian bacon, potatoes, sausage, avocado, tomato, spinach, beans, olives and other ingredients.

One of America's Favorites - Chimichanga

Chimichanga (/tʃɪmiˈtŹƒĆ¦Å‹É”É™/; Spanish: [tʃimiˈtʃaŋɔa]) is a deep-fried burrito that is popular in Tex-
A chimichanga with rice
Mex, Southwestern U.S. cuisine, and also found in the Mexican states of Sinaloa and Sonora. The dish is typically prepared by filling a flour tortilla with a wide range of ingredients, most commonly rice, cheese, machaca (dried meat), carne adobada (marinated meat), carne seca, or shredded chicken, and folding it into a rectangular package. It is then deep-fried and can be accompanied with salsa, guacamole, sour cream, and/or cheese.

Debate over the origins of the chimichanga is ongoing:

The words chimi and changa come from two Mexican Spanish terms: chamuscado, (past participle of the verb chamuscar which means seared or singed, and changa, related to chinga, (third-person present tense form of the vulgar verb chingar, a rude expression for the unexpected or a small insult.

According to one source, the founder of the Tucson, Arizona, restaurant El Charro, Monica Flin, accidentally dropped a burrito into the deep-fat fryer in 1922. She immediately began to utter a Spanish profanity beginning "chi..." (chingada), but quickly stopped herself and instead exclaimed chimichanga, a Spanish equivalent of "thingamajig".

Woody Johnson, founder of Macayo's Mexican Kitchen, claims he invented the chimichanga in 1946 when he put some burritos into a deep fryer as an experiment at his original restaurant Woody's El Nido. These "fried burritos" became so popular that by 1952, when Woody's El Nido became Macayo's, the chimichanga was one of the restaurant's main menu items. Johnson opened Macayo's in 1952.

Although no official records indicate when the dish first appeared, retired University of Arizona
A chimichanga with refried beans and rice
folklorist Jim Griffith recalls seeing chimichangas at the Yaqui Old Pascua Village in Tucson in the mid-1950s.

Given the variant chivichanga, mainly employed in Mexico, another derivation would have it that immigrants to the United States brought the dish with them, mainly through Nogales into Arizona. A third, and perhaps most likely possibility, is that the chimichanga, or chivichanga, has long been a part of local cuisine of the PimerĆa Alta of Arizona and Sonora, with its early range extending southward into Sinaloa. In Sinaloa, the chimichangas are small.

Knowledge and appreciation of the dish spread slowly outward from the Tucson area, with popularity elsewhere accelerating in recent decades. Though the chimichanga is now found as part of the Tex-Mex repertoire, its roots within the U.S. seem to be in Pima County, Arizona.

According to data presented by the United States Department of Agriculture, a typical 183-gram (6.5-ounce) serving of a beef and cheese chimichanga contains 443 calories, 20 grams protein, 39 grams carbohydrates, 23 grams total fat, 11 grams saturated fat, 51 milligrams cholesterol, and 957 milligrams of sodium.

Bacon and Cheese Buffalo Burger w/ Baked Fries

Dinner Tonight: Bacon and Cheese Buffalo Burger w/ Baked Fries

I wanted something a little different for Breakfast this morning  so I went with a Breakfast Burrito for Breakfast this morning. You can prepare them so many different ingredients. For this one I used 2 medium size Eggs (Scrambled), Jennie – O Turkey Bacon (Crumbled), sliced Black and Green Olives, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Ortega Smoked Chipotle Taco Sauce, and Old El Paso 6 – Inch Flour Tortillas. Eggs and Bacon are just a natural pairing and the Ortega Smoked Chipotle Taco Sauce can’t be beat. It just gives everything an unbelievable flavor, nice heat but not over powering.

Another hot and humid day out there! Did some cleaning outside early to avoid the heat and

humidity. Not a whole lot to do today, all caught up on everything. Did some work on the computer, ran the scans, deleted some old files and such. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

I hadn't had a Wild Idea Buffalo Burger in a while now! I just love these Bad Boys of Buffalo
Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O  Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined
plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you'll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you're preparing it! For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side, after flipping the Burger I added my slice of Cheese, Kraft Deluxe Sharp Cheddar with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon it just adds to the goodness!

To go with my Burger I baked some Alexia Organic Yukon Select Fries leftover so I prepared them to
go with my Burger.Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn and a Diet Peach Snapple to drink.
