Seasoned Haddock w/ Creamy Cheddar Pasta

Dinner Tonight: Seasoned Haddock w/  Creamy Cheddar Pasta

To start this snowy morning off I toasted a couple of slices of Healthy Life Whole Grain Bread,
Scrambled a couple of Eggs, fried 2 Jennie - O Turkey Breakfast Sausage Links, and made the daily morning cup of Bigelow Decaf Green Tea. It started snowing late yesterday but the ground was to warm and it didn't stick, at first. Eventually though it started sticking. We've had snow flurries on and off most of the day. It was 16 degrees this morning and we had a high of only 31. What happened to our early Spring! The cold looks as though it's killed all the early flowers that had come out. The cold is here for a few days they say. Sure be glad for warmer weather! Dad is doing better. They thought he had shingles but it turned out to be a rash from an anti biotic they had given him. Not sure when he's coming home. So for Dinner tonight I prepared a Seasoned Haddock w/  Creamy Cheddar Pasta.

I had purchased 2 Haddock fillets from Kroger a while back. I had rinsed both fillets and cut into

smaller pieces. I ended up with 3 bags, I had one the day I purchased them and froze the other 2. So I
grabbed one of the plastic bags and laid it in the fridge overnight to thaw. So to prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

To go with my Seasoned Haddock I prepared a new dish, Bear Creek Creamy Cheddar Pasta Mix. I had tried the Bear Creek Potato Soup Mix and Creamy Chicken Pasta, which both were  excellent! To prepare it; Grabbed a 2 quart sauce pan, added 4 cups of water. Heated to a rolling boil. Whisked in the Pasta and Sauce Mix. Brought the mixture back to a rolling boil. Reduced the heat to a medium boil and cooked for 15 minutes, stirring occasionally.

Removed from the heat and let it sit for 8 minutes. The Sauce thickened up beautifully as it cooled. Another excellent product from Bear Creek. Really enjoy these all these Products! I seasoned the Pasta with just a little sea Salt and Ground Black Pepper. The Pasta and Haddock make a perfect pairing! For Dessert later a Weight Watcher's Divine Triple Chocolate Ice Cream Bar.

Seasoned Haddock w/ Creamy Parmesan Risotto and Sliced Carrots

Dinner Tonight: Seasoned Haddock w/ Creamy Parmesan Risotto and Sliced Carrots

For Breakfast this morning I prepared a packet of Pioneer Peppered White Gravy, toasted 2 slices of
Healthy Life Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After a night of heavy rain and thunder storms, the morning was quiet but a lot cooler. We had a record high of 76 degrees yesterday and a high of 41 degrees today! There goes my Sinuses again!Just as soon as they get adjusted to warm weather, here comes the cool weather back. Cloudy and breezy out. After Lunch I went up to see Dad for a while at the rehab center. Back home took a quick nap and watched some College Basketball. For Dinner tonight its a Seasoned Haddock w/ Creamy Parmesan Risotto and Sliced Carrots.

I had purchased 2 Haddock fillets from Kroger the day before. I rinsed both fillets and cut into
smaller pieces. I froze one bag and kept the other one out for my Dinner tonight. These make a great Fish Sandwich also!

For one side dish I made some Creamy Parmesan Risotto. As always I used Lundberg Creamy Parmesan Risotto. Quick, easy, and delicious Risotto dish. Ready in about 25 – 30 minutes.

Then I also heated up a can of Del Monte Sliced carrots. These are so much easier to prepare than
boiling fresh Carrots, and they taste just as fresh and good. I also baked a 1/2 loaf of LaBrea Whole Grain Loaf Bread. For dessert later a Weight Watcher's Divine Triple Chocolate  Ice Cream Bar.

Seasoned Haddock w/ Baked Fingerling Potatoes and Golden Hominy

Dinner Tonight: Seasoned Haddock w/ Baked Fingerling Potatoes and Golden Hominy

Oh this Ohio weather! In a span of 4 days we had Sunny and 72 degrees, Thunder Storm and Heavy Rain in the 40's, Local Flooding, High Wind Alert, and this morning with Snow Flurries and 30 degrees. As they say "If you don't like weather in Ohio just wait 5 minutes it will change", and it will! But Spring isn't that far away, thankfully. For Breakfast I reheated a piece of the leftover Cubed Pork Steak (Panko Breaded) and served it on a toasted Healthy Life English Muffin.

I go to a couple of local Kroger here in the area, although I buy most of my groceries at Meijer. But Meijer doesn't carry fresh Haddock in their Seafood Dept. and Kroger does. One of the Kroger stopped carrying it, you have to special order it. But now the Kroger up the road from us carries it on a regular basis, finally! So the other day I purchased 3 Fillets of Haddock, cleaned them and cut them into smaller pieces and froze them. So I grabbed a bag and let it thaw in the fridge overnight.

To prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix.

Then I also Baked some Fingerling Potatoes. I actually found some other than Jungle Jim’s Market,
found them finally at the Kroger up the road from us! They come in a small bag, Melissa’s Fingerling Potato Medley. It’s a variety of 4-5 different Potatoes including Fingerling Potatoes, which I love using! To prepare them I started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Love those Potatoes! Perfect side dish for any dinner.

For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden
Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! Fish, Potatoes, and Hominy makes one hearty meal! For dessert later a bowl of Breyer's Carb Smart Chocolate Ice Cream.

 Zatarain’s Lemon Pepper Fish-Fri

Big easy lemon squeezy. That’s the secret to an authentic Southern-style fish fry: a crispy combination of corn flour, spices and lemon juice. Just add your favorite fresh fish like trout, redfish, catfish or flounder.

Seasoned Haddock w/ Golden Hominy and Cut Green Beans and Potatoes

Dinner Tonight: Seasoned Haddock w/ Golden Hominy and Cut Green Beans and Potatoes

For Breakfast I had a Chili and Cheese Omelet. I used Egg Beater's Egg Whites, 3 Bean Buffalo Chili, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and a slice of Toasted Healthy Life Whole Grain Bread. I could put this Chili on everything! After Breakfast I headed to Meijer and stopped by Kroger for a couple of items. There was one heavy frost out there this morning. Sunny day out but cold with a cold wind blowing all day. We might be headed to our normal Winter days. Back home did some light cleaning around the house. For dinner tonight I prepared a Seasoned Haddock w/ Golden Hominy and Cut Green Beans and Potatoes.

I had this trio of Haddock, Golden Hominy, and Cut Green Beans and Potatoes back in November
and really enjoyed it, so I made it again for dinner tonight. I used my last bag of Haddock in the freezer, so I grabbed the bag and let it thaw in the fridge overnight. I had already cleaned and cut the fillet into smaller pieces. To prepare them I seasoned them with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Seasoned Haddock w/ Golden Hominy and Cut Green Beans and Potatoes

Dinner Tonight: Seasoned Haddock w/ Golden Hominy and Cut Green Beans and Potatoes

Another cold morning out there again, in the mid 20's but little to no breeze. After breakfast I headed
out to Meijer for a few items and then on to Kroger to finish up. Picked up a few Gift Cards and Christmas Cards for the upcoming Christmas. All the stores have their Christmas items out all ready, and Kroger had Christmas Trees out already, way to early for me! Back home did some laundry and light cleaning around the house. I have to at the Hospital by 9:30  in the morning for the minor finger surgery tomorrow. For dinner it was Haddock and Leftovers, I prepared Seasoned Haddock w/ Golden Hominy and Cut Green Beans and Potatoes.

I had a few bags of the Haddock in the freezer so I grabbed 1 bag and let it thaw in the fridge overnight. I had already cleaned and cut the fillet into smaller pieces. To prepare them I seasoned

The side dishes were easy to prepare, it's the leftover Golden Hominy and Cut Green Beans and
Potatoes from last night's dinner. Put both in bowls and reheated them in the microwave. Both came out as good as they were last night! Golden Hominy has quickly become one of my favorite sides. Just love the taste of it. I also had a slice of Aunt Millie's Whole Grain Bread topped with I Can't Believe It's Not Butter. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar, another favorite!

Seasoned Haddock w/ Multi - Grain Medley and 3 Bean Salad

Dinner Tonight: Seasoned Haddock w/ Multi - Grain Medley and 3 Bean Salad

Busy day around the house today. We are having a new roof put on the house and our shed today.
Which also means a whole lot of noise. Another beautiful Fall day out again, we are on a roll weather wise. Sunny and a high in the 70's. Did a load of laundry for Mom and cleaned up around the house. Didn't get to go see Dad today, I had to stick around the house while the repairs are going on. For dinner tonight I prepared a Seasoned Haddock w/ Multi - Grain Medley and 3 Bean Salad.

Well they finally had Haddock back in stock at the Kroger I go to. They told me a couple of weeks ago they were no longer going to carry it, they just weren't selling enough of it. But Monday when I was there they said they had brought it back due to so many complaints. Anyway I purchased 3 nice size fillets that I've already cleaned and cut into smaller fillets and put in the freezer. I did keep some out for my dinner tonight.  I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.

So to prepare it I had cut the fillet into smaller pieces. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Love Haddock!

For one side dish I prepared some Minute Multi Grain Medley. I love the Minute Multi Grain, It has Brown Rice, Thai Red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! Plus it’s only 160 calories and 31 net carbs per serving.

I also had some Read’s 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these chilled. For dessert later a Healthy Choice Vanilla Bean Frozen Greek Yogurt.

Minute Multi-Grain Medley

* Minute® Multi-Grain Medley is a blend of four popular gluten-free 100% whole grains and is
ready in only 10 minutes. The four grains include:
* Brown Rice – usually brown but can be black, purple, red or a variety of exotic hues.
* Thai Red Rice – also known as Khao Deng, is an ancient grain that has a pleasant and nutty flavor.
* Wild Rice – not technically rice at all but the seed of an aquatic grass. It has a strong, hearty flavor that goes well with other grains.
* Quinoa (pronounced “KEEN-wah”) – is a small, light-colored round grain, similar in appearance to sesame seeds. It cooks up light and fluffy. The protein in quinoa is a complete protein as it contains all nine essential amino acids.
This quick cooking whole grain medley is pre-portioned in 4 separate bags for ease of preparation and has a slightly chewy, nutty flavor. Perfect for any meal, even as a wholesome start to the day, this medley is great when eaten with a little olive oil and salt, cooked in meat/vegetable broths or fruit juices. Make Minute® Multi-Grain Medley a versatile recipe staple for your pantry.

Directions
1 -Do NOT use the bag for cooking. COMBINE water and contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water.
2 – BRING to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed.
3 – REMOVE from heat. Fluff with fork.

Seasoned Haddock w/ Whole New Potatoes and Asparagus Cuts and Tips

Dinner Tonight:Seasoned Haddock w/ Whole New Potatoes and Asparagus Cuts and Tips

Had one of those nights where I had to deal with those Phantom Pains all night. So needless to say I didn't get very much sleep at all last night. The Pains continued to about Noon today. I got a few things done around the house then I caught up on some much needed sleep! For dinner tonight I prepared a Seasoned Haddock w/ Whole New Potatoes and Asparagus Cuts and Tips.

I had a fillet of the Haddock in the freezer that I let thaw overnight in the fridge. To prepare it I cut
the fillet into smaller pieces. Then rinsed the fillet in cold water and patted dry with a paper towel. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix.

For one side I prepared a can of Del Monte Whole New Potatoes. Easy way to get a delicious Potato dish and just as good as fresh! Then I also heated up a cam of Del Monte Asparagus Cuts and Tips. Just heat and serve, again just as good as fresh and lot easier to prepare. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Seasoned Haddock w/ Smashed Red Potatoes and Roasted Asparagus

Dinner Tonight: Seasoned Haddock w/ Smashed Red Potatoes and Roasted Asparagus

Got to love this weather in Southwest Ohio! 60'S  a couple of days ago, snow flurries late yesterday and overnight, 60's tomorrow, and then the next few mornings in the mid to low 20's! We have it all here in the Buckeye State! Anyway went to Walmart around 7:15 this morning. Good thing I went early too, they had 2 working mobility shopping carts. Love the Walmart prices but they are a disgrace to the needs of those that are handicapped or disabled! Mom needed a few items and I picked up some Jennie - O Turkey Sweet Italian Sausages. As I got home FedEx was dropping off a Breakfast Package from Jennie - O Turkey for me, as a member of their "Switch" Club. Thank you for that Jennie -O! For dinner tonight it's a Seasoned Haddock w/ Smashed Red Potatoes and Roasted Asparagus.

I had a fillet of the Haddock in the freezer that I let thaw overnight in the fridge. To prepare it  I cut the fillet into smaller pieces. Then rinsed the fillets in cold water and patted dry with a paper towel. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. Just love Fish!

For one side I prepared some Smashed Red Potatoes. To prepare, I took 3 small to medium size Red Potatoes and boiled them until they were fork tender. When they were done I placed them on a cookie sheet and, using a drinking glass, I smashed them just enough that they opened up a bit. I then seasoned them with McCormick Grinder Sea Salt and Black Peppercorn, I Can’t Believe It’s Not Butter, Parsley, and Rosemary. Then baked them, in a preheated oven at 425 degrees, for about 10 minutes. Piping hot and delicious!

To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes at 400 degrees, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and Grated Parm Cheese before serving.

Roasted Asparagus

INGREDIENTS
1 lb asparagus spears (thick spears are best for roasting)
1-2 Tbsp Extra Virgin Olive Oil
2 Cloves Garlic, minced
Sea Salt
Freshly grated Black Pepper
Lemon Juice
Shredded Parmesan Cheese

Directions

1 Preheat oven to 400°F. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard.
2 Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Rub over the asparagus so that they are evenly distributed.
3 Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving.

Seasoned Haddock w/ Cut Green Beans and Potato Pancakes

Dinner Tonight: Seasoned Haddock w/ Cut Green Beans and Potato Pancakes

I was up and around about 6:10 this morning and it was 12 degrees and a wind chill of 0, and that was our high for the day. It started falling after that and remained below 0 with the wind chill and overnight and late morning we got an additional 4-5 inches of snow. A little more than what they thought we were going to get, then late afternoon it started again and we got another 1-2 inches. Winter is making up for our mild Winter we had so far! For dinner tonight it's a Seasoned Haddock w/ Cut Green Beans and Potato Pancakes.

I had a fillet of the Haddock in the freezer that I let thaw overnight in the fridge. To prepare it I cut the fillet into smaller pieces. Then rinsed the fillet in cold water and patted dry with a paper towel. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Extra Virgin Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. Just love Fish!

When I make Potato Pancakes I always use Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). Then I also heated up a small can of Del Monte Cut Green Beans. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Manischewitz Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

Seasoned Haddock w/ Multi Grain Medley and Potato Pancakes

Dinner Tonight: Seasoned Haddock w/ Multi Grain Medley and Potato Pancakes

One busy morning for me to start my day. My Dad was sick all night, so there was a ton of laundry to do. So I got that out of the way and while Mom made Breakfast for her and Dad I ran the vacuum and dusted. Had to get everything done, Dad had a nurse coming over  to check him out and then a physical therapist after that. Busy Morning. Then I ran to Kroger to pick up a couple of prescriptions for Mom. For dinner tonight it was leftovers at it's finest! I had Seasoned Haddock w/ Multi Grain Medley and Potato Pancakes.

I had a couple of pieces of Haddock leftover from the other night that I used for tonight. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. I then seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until all the pieces were well coated. Shook off the excess and pan fried them in Canola Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. I have I mentioned I love Fish!

Last night I had made some Potato Pancakes, so I heated what was left up for a side dish. I always use Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). Then i also heated up the leftover Minute Whole-Grain Medley, leftover from the other night when I had Haddock. It has Brown Rice, Thai Red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! The box contains 4 – 2 Serving Packets and easy to prepare. Combine water and the contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water. Bring to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed. Remove from heat. Fluff with fork and serve! Easy to prepare and makes one excellent side dish. Also this time I added some Chopped Pecans to it, made a nice addition to the dish! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Seasoned Haddock w/ Multi Grain Medley and Sliced Carrots

Dinner Tonight: Seasoned Haddock w/ Multi Grain Medley and Sliced Carrots

Cold morning to start with a breeze blowing for a wind chill with it. Had Breakfast and worked out afterwards. Went to Costco to stock up on some bulk items and a few Pharmacy items for Mom and Dad. When are Beef prices going to stop going up? Even at Costco it was way to high for roasts or steaks that I was going to pick up for Mom. i did pick up a big package of Tilapia Fillets, nice size fillets. Also picked up some Canned Vegetables and Cans of Starkist Tuna for the local Free Store and for our Church. Our Church have nights where they Dinners for the Homeless and Needy. For my Dinner tonight I prepared Seasoned Haddock w/ Multi Grain Medley and Sliced Carrots.

I had the Haddock in the freezer so I let it thaw overnight in the fridge. To prepare it I rinsed the fillet in cold water and patted dry with a paper towel. Then sliced the fillet into smaller pieces. It’s a meaty delicious and mild tasting fish. I think I could eat Seafood everyday! And good thing, as expensive as Beef and Pork are getting.

For one side I prepared a bag of the Minute Whole-Grain Medley. I used this for the first time a while back and it instantly became one of my favorites. I also heated up a small can of Del Monte Sliced Carrots along with a slice of Klosterman Wheat Bread. For dessert later a SO Delicious Dairy Free Minis Vanilla Sandwich.

Minute Multi-Grain Medley

* Minute® Multi-Grain Medley is a blend of four popular gluten-free 100% whole grains and is ready in only 10 minutes.
