Hot water........
If you need to add more water to vegetables as they are cooking, make sure the added water is as hot as possible. Adding cold water to already cooking vegetables may affect their cell walls and cause them to toughen.

Kitchen Hint of the Day!
Boil that water...........
Always bring your water to a rapid boil before adding the noodles. Starches in the noodles absorb water instantly and you want the water temperature to be extremely hot to begin cooking the noodles properly. Noodles that are added too soon will leave you with gooey, overdone noodles. Also don’t boil noodles in a covered pot, as it will quickly overflow. You can always just leave your wooden spoon in the pot to prevent spillovers, this really works!

Kitchen Hint of the Day!
How healthy are Eggs.........
Eggs are a very good source of inexpensive, high quality protein. More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper.

Jennie - O Turkey Franks
Dinner Tonight: Jennie - O Turkey Franks
There was a chill in the air this morning! Went out to get the morning papers and it was a bit chilly, 39 degrees this morning. Started my day off with a toasted Healthy Life Whole Grain English Muffin topped with a scrambled Egg and a Jennie - O Sausage. I made the sausage pattie out of Jennie - O Ground Turkey Breakfast Sausage. For the day I got the leaf blower out and cleaned around the outside deck and driveway, the leaves are all turning and falling now. Then inside did some light house cleaning and it was back to my easy chair! NFL Football and the Baseball Play-Offs for the rest of the afternoon. For dinner tonight it's Jennie - O Turkey Franks.
I had picked up a couple of packages of Jennie - O Turkey Franks on my last visit to Walmart a while back. I froze one package and having a Turkey Frank for lunch a couple of times so I thought I would have a couple for dinner tonight.
To prepare them I used a medium size sauce pan that I filled half way with water. Heated on high for a full boil and added the Turkey Franks. Cooked for five minutes, and done! Love these Turkey Franks, when I can find them in stores. The Franks are nice and plump with that Jennie - O freshness and excellent taste. I served them on a Aunt Millie's Whole Grain Reduced Calorie Hot Dog Bun and topped with French's Yellow Mustard. Also had a few Ruffle's Reduced Fat Potato Chips. For dessert later a Jello Sugar Free Chocolate Mousse.

One of America's Favorites - Corn on the Cob
Corn on the cob (known regionally as "pole corn", "cornstick", "sweet pole", "butter-pop" or "long
maize") is a culinary term used for a cooked ear of freshly picked maize from a cultivar of sweet corn. Sweet corn is the most common variety of maize eaten directly off the cob. The ear is picked while the endosperm is in the "milk stage" so that the kernels are still tender. Ears of corn are steamed or boiled, usually without their green husks, or roasted with them. The husk leaves are in any case removed before serving.
Corn on the cob is normally eaten while still warm. It is boiled or grilled. It is then often seasoned with salt and buttered before serving. Some diners use specialized skewers, thrust into the ends of the cob, to hold the ear while eating without touching the hot and sticky kernels.
The most common methods for cooking corn on the cob are frying, boiling, roasting, and grilling.
Corn on the cob can be grilled directly in its husk, or it can be husked first and then wrapped in aluminum foil. When oven roasting, cooking the corn in the husk directly on the rack is recommended. When roasting or grilling corn on the cob, the cook can first peel the husk back to rub the corn with oil or melted butter, then re-secure the husk around the corn with a string.
Common condiments and seasonings for corn on the cob include butter, salt, and black pepper.
Lillian Eichler Watson, in a 1921 etiquette book, described corn on the cob as "without a doubt one of the most difficult foods to eat gracefully." She added that "it is entirely permissible to use the fingers in eating corn, holding it lightly at each end; sometimes a napkin is used in holding it." Sometimes, however, a short sharp knife would be provided that each diner could use to cut or scrape the kernels from the cob for later eating. She described this as "by far the most satisfactory method" of eating corn on the cob.
Some etiquette books recommend salting and buttering the corn a section at a time just before eating that section, which helps to minimize the mess on the diner's face and hands. Butter dripping down the diner's chin and kernels getting stuck in-between teeth may be a source of embarrassment for the diner.
Corn skewers (also called corncob holders) are eating utensils used to hold corn on the cob.
A number of inventive designs can be found through Google. Skewers have been used since ancient times, ranging from articles made of wood found in ethnographic museums to precious tableware made of silver.
Corn was eaten by Native American tribes before European settlers arrived in the Americas. The Maya ate corn as a staple food crop and ate it off the cob, either roasting or boiling it.

Kitchen Hint of the Day!
When buying Corn on the Cob....
* The most important thing to remember when buying fresh corn on the cob is that it starts converting sweet tasting sugars to starches immediately after it is picked. So ideally you want to buy it, cook it and consume it the same day it is picked or as close to then as possible.
* Look for tassels (those things sticking up out of the top) that are brown and sticky to the touch. If they're dry or black, then it's an old ear of corn.
* Check out the color of the husk. If it's a bright green and tightly wrapped against the cob, then the corn is fresh. (In some cases, it will even feel slightly damp.)

Turkey Frank Dogs w/ Baked Steak Fries
Today's Menu: Turkey Frank Dogs w/ Baked Steak Fries

Whew baby, we got one humid day out there today! You can just stand outside and have to go in and change shirts, it's bad. After Breakfast and a morning workout I went to Kroger for a few items and then to McDonald's to get Mom and Dad's Breakfast for them. I'm not a huge fan of McDonald's myself, Mom ans Dad love eating there. Back home cleaned up around the house also repaired a couple of shelves that were loosened up a bit. Wanted and easy made meal tonight so nothing easier than Hot Dogs and Fries, Tonight I prepared Turkey Frank Dogs w/ Baked Steak Fries.
I used Ball Park Smoked White Meat Turkey Franks. I usually use Jennie – O but that’s another Jennie O Turkey Product hard to come by at local stores around here. Anyway I prepared the Turkey Franks by boiling them in water, boiled about 5 minutes and done. Delicious and Plump Turkey Franks! Only 45 calories and 3 net carbs per Frank. Served them on a Kroger Lite Wheat Hot Dog Bun and topped with French’s Yellow Mustard.
For a side I baked some Ore Ida Steak Fries. Seasoned these with Sea Salt and Ground Black Pepper, with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
Ball Park Bun Size Smoked White Turkey Franks – Dial up the lean while you dial in the flavor.
Ball Park Turkey Franks are so packed full of classic Ball Park satisfaction, don’t be surprised if he thinks he’s eating an original Ball Park.

Kitchen Hints of the Day!
Pasta Hints......
* When the water starts boiling, lower the flame so that the bubbles are small. A big, rolling boil will break more delicate pasta such as ravioli or tortellini.
* Stirring pasta during cooking is crucial! Skip this step and you're left with a giant clump of noodles that are stuck together.
* Covering the pot of cold water with a lid will help bring the water to a boil faster.
* Pasta shouldn't stick when properly cooked. If it's cooked with olive oil, it will actually coat the noodles and prevent sauce from sticking

Broken Lasagna with Hardwood Smoked Turkey Sausage
Dinner Tonight: Broken Lasagna with Hardwood Smoked Turkey Sausage and Baked Bread
What a beautiful day out there today! A bit windy but sunny out and not a cloud in the sky. Had some Simply Potatoes Hash Browns and a couple of Eckrich Smoked Turkey Breakfast Sausage Links for Breakfast. Add my morning Bigelow Decaf Green Tea and the Sunday Paper and I was set. Cleaned up around the house and did a load of laundry for Mom. All done inside and got the cart out and enjoyed this beautiful day. Got the rod and reel out and did a little fishing down at the community lake. Caught a few little ones, just nice to be outside! For dinner it was sort of odds and ends put together. I prepared Broken Lasagna with Hardwood Smoked Turkey Sausage and Baked Bread.
To prepare tonight's dinner I'll need Ronzoni Healthy Harvest Whole Grain Lasagna, Black Olives, Kraft Reduced Fat Grated Parmesan Cheese, McCormick Grinder Italian Seasoning, Butterball Hardwood Smoked Turkey Sausage, and La Rosa's Sauce. Sort of played dinner by ear tonight. Started searching the pantry and came across an open box of Ronzoni Healthy Harvest Whole Grain Lasagna, and I sort put the dinner together from there.
I preheated the oven to 400 degrees and when ready baked the remaining loaf of the Multi-Grain Batard Bread. I always try to use Ronzoni Healthy Harvest Whole Grain Pastas but it's getting harder
and harder to find their products. Kroger and Walmart no longer carry the products, so Meijer is the only place here locally that I can find it. So anyway I grabbed the box of Lasagna and broke up a few of the Noodles into smaller pieces. To prepare it; I took a medium size sauce pan and filled half way with water and added 1/2 tablespoon of Sea Salt to it and brought it a boil. Added the Broken Lasagna Noodles and stirred. Cooked them uncovered, stirring occasionally, for 10 minutes. After 10 minutes drained them and set aside.
As the Pasta was cooking I grabbed a small sauce pan and added the La Rosa's Sauce to it, letting it simmer on medium low heat. And as the Pasta and Sauce were cooking I cooked the Sausage on another burner. Used a medium size skillet and sprayed it with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. I'm using the Butterball Hardwood Smoked Turkey Sausage; that I sliced into bite size pieces. When the skillet was heated I added the Sausage, cooked them for about 10 minutes flipping the pieces over twice.
The Pasta, Sauce, and Sausage all got done at the same time. I took the drained Pasta and put them
into a large bowl. Seasoned with Sea Salt, Dried Parsley, and McCormick Grinder Italian Seasoning and tossed making sure it was mixed well. Then added a cup of the La Rosa's Sauce mixing well until all the Pasta was covered. Finally added the Smoked Turkey Sausage and stirred. To serve it I topped it with some Sliced Black Olives and Kraft Reduced Fat Grated Parmesan Cheese. Ne fine meal for just throwing some items together! I'll have to keep this Broken Lasagna Meal in mind to use again sometime. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Kitchen Hint of the Day!
Hints for Pasta Cooking....
* To cook pasta properly, pasta needs a lot of water. A too-small pot and too little water encourages the pasta to clump and stick together, thus cooking unevenly.
* For a pound (16 ounces) of pasta, you will want a pot that holds at least 5 or 6 quarts of water.
* You may have heard that you can avoid sticky pasta by adding oil to the pasta water. This can prevent sticking, but at a great price. Pasta that's cooked in oily water will become oily itself and, as a result, the sauce slides off, doesn't get absorbed, and you have flavorless pasta.
Adding oil may keep the pasta water from bubbling up and boiling over the rim, but this can also be achieved by making sure you use a large pot and also by reducing the heat a little (but still maintaining a boil). This is a much better solution than greasing your pasta and sacrificing flavor.

Spaghetti and Meatballs
Dinner Tonight: Spaghetti and Meatballs
Well Mom and Dad are finally much better, Mom still has a cough but feels much better. I had bought some boxes of Christmas Candy last week and today delivered them. I took one box to the staff of Family Doctor, 1 box to the staff of my Oncologist, and a box to the Head Nurse at my Oncologist. She's a special person, she's helped me so much throughout the past 15 years that I have been going there. Have to go to Aldi sometime this week to get our Christmas Ham. If your looking for a good Ham you have to try the Appleton Farms Hams, it's the best Ham that our family has ever had! For dinner tonight I prepared Spaghetti and Meatballs.
I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. Cooks up great and an excellent tasting Pasta. Then for my Meatballs I used Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are good size, meaty, and have a fantastic taste and their 190 calories and 5 net carbs for 3 Meatballs. I almost always use Jennie -O when using Turkey but no store in this area sells Jennie – O Turkey Meatballs. I always prepare extra Meatballs so I can make a Meatball Sub with them. For my Pasta Sauce I used LaRosa’s Original Sauce. A local favorite and still one of the best Sauces I’ve had. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
Ronzoni Healthy Harvest Spaghetti
Here’s something to absorb: One serving of RONZONI HEALTHY HARVEST pasta has over 20% of your daily recommended fiber intake – but did you know that fiber is good for you in more ways than just digestion?
People with diets high in fiber have a lower risk for weight gain, obesity, development of insulin resistance and diabetes. Fiber also prevents constipation, hemorrhoids and diverticulitis, but it also helps reduce the risk of certain chronic diseases like colon and breast cancer. Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.
Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.
Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.
Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

Fried Walleye w/ Multi - Grain Medley and Boiled Baby Carrots
Dinner Tonight: Fried Walleye w/ Multi - Grain Medley and Boiled Baby Carrots
Got up early made a light Breakfast and took off for Walmart. Finished off some Christmas shopping and solved my vacuum cleaner problems! In a Wheel Chair little things you need to do can become a challenge, like vacuuming the floor. The cord is a pain when your moving and cleaning. So I finally invested in a Hoover Stand Up Cordless Vacuum. Just charge the battery pack and go! It only weighs about 10 lbs., very mobile, and like I said it's cordless. I'm letting it charge now and I'll give it a try tomorrow, Merry Christmas to me! Mom and Dad both still improving, slowly but improving! For dinner tonight I prepared a Fried Walleye w/ Multi - Grain Medley and Boiled Baby Carrots.
I had some Walleye that I had purchased from Kroger a couple of weeks ago in the freezer. I laid one fillet in the fridge to thaw overnight. Walleye is such a flavorful and meaty Fish so it doesn’t need much breading, just enough to give it a nice crust. I rinsed the fillets off in water and patted dry with a paper towel. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then dusted them with a light coat of Flour. I panned fried them in Extra Virgin Olive Oil about 3 1/2 minutes per side, to a nice golden brown. Walleye has that wild fresh taste about it, just a naturally delicious Fish.
For one side I prepared a bag of the Minute Whole-Grain Medley. I used this for the first time a while back and it instantly became one of my favorites. It has Brown Rice, Thai Red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! The box contains 4 – 2 Serving Packets and easy to prepare. Combine water and the contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water. Bring to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed. Remove from heat. Fluff with fork and serve! Easy to prepare and makes one excellent side dish. Also this time I added some Sliced Mushrooms too it that just added a perfect addition to the dish. I also had of side of boiled Baby Carrots and a baked Sour Dough Mini Boule. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
Minute Multi-Grain Medley
* Minute® Multi-Grain Medley is a blend of four popular gluten-free 100% whole grains and is ready in only 10 minutes. The four grains include:
* Brown Rice – usually brown but can be black, purple, red or a variety of exotic hues.
* Thai Red Rice – also known as Khao Deng, is an ancient grain that has a pleasant and nutty flavor.
* Wild Rice – not technically rice at all but the seed of an aquatic grass. It has a strong, hearty flavor that goes well with other grains.
* Quinoa (pronounced “KEEN-wah”) – is a small, light-colored round grain, similar in appearance to sesame seeds. It cooks up light and fluffy. The protein in quinoa is a complete protein as it contains all nine essential amino acids.
This quick cooking whole grain medley is pre-portioned in 4 separate bags for ease of preparation and has a slightly chewy, nutty flavor. Perfect for any meal, even as a wholesome start to the day, this medley is great when eaten with a little olive oil and salt, cooked in meat/vegetable broths or fruit juices. Make Minute® Multi-Grain Medley a versatile recipe staple for your pantry.
Directions
1 -Do NOT use the bag for cooking. COMBINE water and contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water.
2 – BRING to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed.
3 – REMOVE from heat. Fluff with fork.

Kitchen Hint of the Day!
Thank you to Connie R. for passing this one one along!
Put vegetables in water after the water boils — not before — to be sure to preserve the vegetables' vitamins.

Kitchen Hint of the Day!
Using those hard boiled eggs for egg salad? The fastest way to chop eggs is to peel them, place them in a bowl, and run a pizza cutter through them several times.

Kitchen Hint of the Day!
You can prevent boiled eggs from cracking by using lemon. Just cut a lemon in half, then rub the cut side on the shells before cooking them. You can also add a pinch of salt to the water before to prevent cracks.
