Healthy Harvest Turkey Lasagna w/ Baked French Bread

Dinner Tonight: Healthy Harvest Turkey Lasagna w/ Baked French Bread








Fairly nice day out today, a high in the 50's.  This sinus infection has really kicked my butt! Still not feeling up to par but managed to get out and pick up a few items at the store I needed and then back to bed. Dinner tonight; Healthy Harvest Turkey Lasagna w/ Baked French Bread.








I wanted a hot dinner but I wanted something easy to prepare so I went to the freezer and pulled out some of the frozen Healthy Harvest Turkey Lasagna. I had made a batch of this a while back and froze some of it. It freezes up and reheats real good. I let it thaw in the fridge and then microwaved it. Came out as good as the day it was made! I'll leave the recipe for this from a previous post. Along with the Lasagna I baked a loaf of Pillsbury Rustic French Bread. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.








I used the recipe that was on back of the Ronzoni Healthy Harvest Lasagna Box, Healthy Harvest Easy Lasagna. I made using the following; 1lb Jennie – O Extra Lean Ground Turkey Breast, 3 cups (26 oz jar) Ragu Light Tomato and Basil Spaghetti Sauce, 1 small container of Baby Bella Mushrooms (sliced), 1 1/2 cups Water, 1 3/4 cups (15 oz container) Miceli’s Lite Ricotta Cheese, 2 cups (8 oz) Sargento Shredded Mozzarella/Provolone Cheese, divided, 1/2 cup grated Kraft Parmesan Cheese, 2 Eggs, 1/4 cup chopped fresh Parsley, 1/2 tsp Sea Salt, 1/4 tsp ground Black Pepper, and 9 pieces Ronzoni Healthy Harvest Lasagna, uncooked. Cutting calories and carbs by using Ground Turkey Breast and the Miceli’s Lite Ricotta Cheese.






Then to prepare it I just went by the instructions on the box which are: Heat oven to 350°F. In 3-quart saucepan over medium-high heat, brown meat; drain. Add spaghetti sauce, mushrooms, and water; simmer about 10 minutes. Meanwhile, in medium bowl, stir together ricotta cheese, one-half mozzarella cheese, Parmesan cheese, eggs, parsley, salt and pepper. 5. Pour about 1 cup sauce on bottom of 13×9-inch baking dish. Arrange 3 UNCOOKED pasta pieces lengthwise over sauce; cover with 1 cup sauce. Spread one-half cheese filling over sauce. Repeat layers of RONZONI HEALTHY HARVEST LASAGNA, sauce and cheese filling. Top with layer of RONZONI HEALTHY HARVEST LASAGNA and remaining sauce; sprinkle with mozzarella cheese. Cover with foil. Bake 45 minutes. Remove foil; bake additional 10 minutes or until hot and bubbly. Let stand 10 minutes before cutting. The Lasagna came out perfect! You should come out with one delicious dish of Homemade Lasagna!








Ronzoni Healthy Harvest Easy Turkey Lasagna

Ingredients

1lb ground beef
3 cups (26 oz jar) spaghetti sauce
1 small container of baby bella mushrooms, sliced
1 1/2 cups water
1 3/4 cups (15 oz container) ricotta or small curd cottage cheese
2 cups (8 oz) shredded mozzarella or Monterey Jack cheese, divided
1/2 cup grated Parmesan cheese
2 eggs
1/4 cup chopped fresh parsley
1/2 tsp salt
1/4 tsp ground black pepper
9 pieces RONZONI HEALTHY HARVEST LASAGNA, uncooked



Directions

Turkey Meatloaf w/ Mashed Potatoes, Whole Kernel Corn, and Wheat Bread

Another day and another day of arguing with my prescription insurance. I'm beginning to wonder if it's worth the hassle of switching insurances to save a little money. Live and learn. Warmed up to 40 degrees today, big improvement there! For dinner tonight, nothing but comfort food! I prepared Turkey Meatloaf w/ Mashed Potatoes, Whole Kernel Corn, and Wheat Bread.








For the Turkey I used Jennie - O Extra Lean Ground Turkey Breast. To make your Sauce topping you’ll need Ketchup, Worcestershire Sauce, and Heinz 57 Sauce. For the Meatloaf you just combine your spices, (Roasted Ground Cumin, Onion Powder, Parsley, Ground Thyme, Sea Salt, Pepper) melted Butter, and Minced Garlic with the Ground Turkey, Ketchup, and Bread Crumbs. Put equal amounts in your pans or pan and bake at 350 degrees for 50 – 55 minutes. It comes out one delicious Turkey Meatloaf! And as all recipes you can add your own Choice of ingredients. I left the full recipe at the end of the post. Almost forgot, lots leftover so this will make some incredible Meatloaf Sandwiches!








For one side I prepared a must when having Meatloaf, Mashed Potatoes. I used Bob Evan's Mashed Potatoes, as usual. Easy to prepare and comes out perfect every time. Then I also heated up a small can of Del Monte Whole Kernel Sweet Corn along with a slice of Klosterman Wheat Bread that I buttered with I Can't Believe It's Not Butter. For dessert later  a Healthy Choice Chocolate Swirl Frozen Yogurt.







Turkey Meatloaf


Ingredients

2 Tablespoons Blue Bonnet Light Stick Butter
3 Cloves Garlic, Minced
1 lb Jennie O Extra Lean Ground Turkey Breast
1 Slice of uncooked Oscar Mayer Low Sodium Turkey Bacon
1/2 Cup Progesso Italian Style Breadcrumbs
1/4 Cup Egg Substitute (Egg Beaters)
1 1/4 Cups Hunt’s Catsup
4 Tablespoons Worcestershire Sauce
3 Tablespoons Heinz 57 Sauce
2 Teaspoons Smoked Cumin
2 Teaspoons Onion Powder
2 Teaspoons Ground Thyme
2 Teaspoons Parsley
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper

Directions

1. Melt butter in a skillet.
2. Add the Garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture.
5. Press meatloaf into a loaf pan. Place the one slice of Turkey Bacon across the top of the meatloaf.
6. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and
3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Baste the meatloaf with half of mixture and baste it again after 30 minutes of baking.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

Another cold start to the day , 11 degrees. Then another sunny afternoon and it actually got up to about 34 degrees! Still forecasting doom and gloom snow and Artic Air coming though. Took Mom's car in for a tune-up and new tires for her and then to Kroger had to pick up a bag of Shredded Lettuce for part of tonight's dinner and Mom wanted some Pork Chops for dinner tomorrow. For dinner tonight I prepared Black Bean and Turkey Tacos w/ Refried Beans.








I used Jennie - O Extra Lean Ground Turkey Breast. Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos, added flavor and protein. Mixed well until everything was coated and then simmered another 5 minutes until heated through.








For my other toppings I used 1 small can of Mario Sliced Black Olives, 1 can of Hunt's Stewed Tomatoes, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Ortega Whole Grain Corn Taco Shells. Got to have the Ortega Whole Grain Corn Taco Shells, lower in carbs and calories than most other brands and seem to stay fresher than others also. I love Taco Nights! You can have so many different types of Tacos with so many different toppings, just endless options for dinner. For dessert tonight a bowl of Breyer Carb Smart Vanilla Ice Cream topped with some Smucker's Sugar Free Hot Fudge Topping!

It's been one rough 24 hour period for me as the Phantom Pains kicked in last night around 8:00 and have continued through out today. I had a bout with these earlier in the week, so it's unusual for them to start again so close together. Just hoping they ease up before I go to bed, if not it makes for one long and uneasy night! On to dinner, I had Tacos the other night with a lot of the ingredients leftover. So tonight I gathered up all the leftovers and prepared Black Bean and Turkey Flatbread Wraps.





I used the remainder Jennie – O Extra Lean Ground Turkey Breast, I had this leftover from the other night. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added a 1/2 can of the Bush’s Low Sodium Black Beans that were leftover, I drained and rinsed them before I added them. As usual Black Beans with Ground Turkey make the perfect pairing. Mixed well until everything was coated and then simmered another 5 minutes until heated through.





For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and a teaspoon of Daisy Reduced Fat Sour Cream to top everything off. Served everything on a Joseph’s Flax, Oat Bran, and Whole Wheat Pita Bread. This my favorite Pita Bread, this stuff is great! It stays fresh, you can freeze it, and it's only 50 calories and 4 net carbs for one kind and only 60 calories and 4 net carbs for a bit bigger size. After adding all my toppings I just folded them half, like a soft taco. Really enjoyed these! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Rainy day around here today. We needed some rain though it was getting a little dry around here. Not much going on, just bummed around doing odds and ends till football started up in the afternoon. For dinner I prepared Black Bean and Turkey Tacos.





I used Jennie - O Extra Lean Ground Turkey Breast, I had this leftover from the other night when I made Stuffed Peppers. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos. Mixed well until everything was coated and then simmered another 5 minutes until heated through.





For my other toppings I used 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Old El Paso Taco Sauce, and all in a Ortega Whole Grain Corn Taco Shells. I love these Tacos! The crunch of the shells and all the different flavors and spices make a perfect Taco. For dessert later a Jello Sugarless Double Chocolate Pudding.

Dinner Tonight: Baked Stuffed Poblano Peppers w/ Mini Ears of Corn with Chili Lime Butter







Spent the morning at a local park, just enjoying the beautiful weather. Then the family started our outdoor sprucing up for the rest of the day. For dinner finally got around to the Poblano Peppers, after being distracted by the Rainbow Trout yesterday. For dinner; Baked Stuffed Poblano Peppers w/ Mini Ears of Corn with Chili Lime Butter.





I had made Stuffed Jalapeno Peppers but it's the first time I've stuffed the Pablano Peppers. They're a lot easier to work with than the Jalapenos because their bigger and easier to handle. I started by splitting the Poblano Pepper in half and removed the seeds and ribs. Set them aside and gathered my stuffings for them. To stuff it with I used 1 packet Old El Paso Taco Seasoning, Jennie - O Extra Lean Ground Turkey Breast (120 calories 0 carbs), Uncle Ben's Whole Grain Medley Brown Rice and Quinoa with Garlic, and fresh grated Dutch Gouda Cheese. I cooked the Ground Turkey ahead of time that way when I stuffed it in the Pepper it wouldn't take as long when baking. As I fried the Ground Turkey I seasoned with Sea Salt, Ground Black Pepper, Roasted Ground Cumin, along with the Old El Paso Taco Seasoning Packet. After it was done I sit aside until I was ready to use for the Stuffing. The Uncle Ben's Whole Grain Medley Brown Rice and Quinoa with Garlic was leftover from the other night's dinner so I just had to reheat it a tad before adding into the Pepper.

I also made  a Tomato Sauce to top or baste the Pepper in as it was baking. For the Sauce I used 1 8 oz. can of Tomato Sauce and 2 Green Onions that I diced up. In a small sauce pan I added the can of Tomato Sauce and the diced Green Onions and heated on medium heat for about 10 minutes and turned it on low until I was ready to use it. Having everything ready I Stuffed the peppers with the Ground Turkey and the Rice and Quinoa mixture. Ladled about half of the tomato sauce into a 13- by 9-inch casserole dish. Place the peppers on top and ladle over the remaining sauce. Sprinkle the Peppers with the Gouda Cheese, cover the casserole dish with foil and baked for 30 minutes. Removed the foil from the top and cooked until the peppers were very soft, about another 5 minutes. These came out incredible! Half of the Pepper was enough for me. The combination of the Peppers and all the ingredients worked well together to give some fantastic flavor! Have to keep this recipe.





I also boiled a couple of Green Giant Mini Ears of Corn that I buttered with a  Chili Lime Butter. The Butter is easy to make. Just took I Can't Believe It's Not Butter, 1 teaspoon Chili Powder, and zested 1/2 a Lime. Mixed it all together and done. The Stuffed Pepper and Corn makes one fine meal. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.









POBLANO PEPPERS


The poblano pepper is a mild chili pepper normally grown in Mexico. Fresh poblano peppers are wide and usually served stuffed. Poblanos have a mild taste like bell peppers. The Scoville Heat Unit is used to determine the level of heat in peppers. The measurement for a poblano pepper is 2,500 to 3,000 units, as compared to cayenne pepper, for instance, which has a heat unit of 35,000. Generally, poblano peppers have the same nutritional components as other chili peppers.



Poblano peppers, cooked or raw, are very low in calories and fat. The calorie and fat content does not change when cooked unless cooking oils or butter are added. One cooked poblano pepper has 13 calories. A poblano pepper has well under a half gram of fat, and only a small fraction of that is saturated fat. Poblano peppers do not have cholesterol. Extremely low-calorie foods, such as poblano peppers, make healthy snacks to maintain a low-calorie diet.




Cooked poblano peppers are low in carbohydrates. One poblano pepper contains 2.7 grams of carbohydrates, which is only 1 percent of the total daily value. Out of the 2.7 grams of carbohydrates, 1.1 gram is dietary fiber. This represents 4 percent of the recommended daily allowance of fiber. According to the Mayo Clinic, fiber has a number of health benefits, including regulating bowel movements, controlling blood sugar levels, reducing cholesterol and possibly aiding in weight loss.

We got some much needed rain all last night into the early morning. The most rain we've had in a while, it was getting kind of dry around here. As the rain moved it out it took all the humidity with it. The day was a beautiful sunny and fall like day. Tomorrow they said it would struggle to reach 70 degrees, smells like Fall! For dinner tonight, Progresso Kitchen Favorites Classic Lasagna w/ Whole Grain Bread.





This is my favorite Lasagna recipe, the Progresso Kitchen Favorites Classic Lasagna! It’s very easy to make as the dinner kit contains the Lasagna Pasta, Tomato Herb sauce, Ricotta Sauce Mix, and Grated Parmesan Cheese. I added 1 lb. Jennie – O Extra Lean Ground Turkey Breast, 1 Cup water, Sliced Baby Bella Mushrooms, 2/3 Cup 2% Milk, 1 (8 oz.), Sargento Reduced Fat Shredded Mozzarella Cheese (2 Cups), 1/2 cup Shredded Dutch Gouda, and I also added a bit more seasoning (McCormick Grinder Italian Herb). I combined the Mozzarella and Goda Cheese. Gouda is such a great tasting Cheese and is a perfect melting Cheese. Basically you just layer your ingredients in a 8″ square baking dish and cover and bake at 425 degrees for 30 minutes and bake an additional 10 minutes uncovered. Prepared by the instructions it was 390 calories but I cut that and the carb count down by using Jennie O Extra Lean Ground Turkey Breast instead of Beef and Sargento Reduced Fat Mozzarella Cheese. The Lasagna comes out delicious every time! Everyone really loves this. The flavor as always is excellent. The Sauce was thick and well seasoned and the same for the pasta, perfect, plus plenty leftovers to freeze for later. I also had a slice of Healthy Life Whole Grain Bread. For dessert later a new one,  Jello Chocolate Mousse. Easy to prepare, very tasty, and 160 calories per serving. I served it topped with Coll Whip Free.











Progresso Kitchen Favorites Classic Lasagna


Directions
Ready to bake in about 20 minutes. You Will Need: 1 lb lean ground beef; 1 cup water; 2/3 cup 2% milk; 1 bag (8 oz) reduced fat or fat free shredded mozzarella  (2 cups); nonstick cooking spray and foil.


Sauce:Heat oven to 425 degrees F. Brown beef in 10-inch skillet, breaking up beef into small pieces; drain. Stir Tomato Herb Sauce and water into beef; heat to boiling. Reduce heat; simmer 3 to 5 minutes, stirring occasionally. Meanwhile, mix Ricotta Sauce Mix and milk in liquid measuring cup or small bowl, using whisk or fork.



Layer: Spray 8-inch square glass baking dish with cooking spray. Layer lasagna: Spread about 2/3 cup beef sauce in dish. Layer with 2 uncooked Pasta sheets (side by side), 2/3 cup beef sauce (cover Pasta with sauce), 1/4 cup ricotta sauce and 1/2 cup mozzarella. Repeat layers twice, starting with Pasta. Add remaining Pasta, beef sauce and mozzarella. Sprinkle with Parmesan Cheese. Kitchen Tip: Substitute 1/4 cup dry red wine for 1/4 cup of the water.



Bake: Cover and bake for 30 minutes, uncover and bake for another 10 minutes.

Directions:

Black Bean and Turkey Tacos

Another perfect day outside, hope our streak continues! Moving sort of slow earlier today, stayed up late watching the Cincinnati Reds and Cardinals play a 16 inning ball game last night. Managed to go to the store and picked up a few items to make a Cheesecake for dessert tonight. For dinner it's one of my favorites, Black Bean and Turkey Tacos.





I used the leftover Jennie - O Extra Lean Ground Turkey Breast from last night when I made a Turkey Burger. I fried it in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I drained and rinsed them before I added them. I love pairing the Black Beans with Ground Turkey. Mixed well until everything was coated and then simmered another 5 minutes until heated through.





For my other toppings I used 1 can Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn, 1 small can of Mario Sliced Black Olives, 1 small diced Tomato, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, a bag of Dole Shredded Lettuce, and all in a Ortega Whole Grain Corn Taco Shells. I love these Tacos! The crunch of the shells and all the different flavors and spices make a perfect Taco. For dessert later Cheesecake. I was up around 6:00 this morning and went out to get the paper and what a beautiful morning! I sat out side for a while, enjoying the peace and quiet of the early morning and read part of the morning paper. I don't know if it's a sign of an early Fall approaching or not but there sure are signs of it. As I sat outside I watched 3 different flocks of Geese in their V - Formation flying South, and I've been seeing a lot them here the past few days. For dinner I prepared the Velveeta/Kraft Cheesy Skillets Dinner Chili Cheese Mac, using Jennie – O Extra Lean Ground Turkey and added 1 can of Joan of Arc Light Red Kidney Beans. This is has become one of my favorite comfort foods. 1 pan so easy clean up, has, cheese, pasta, and for a meat it has ground turkey, and you can add a can of kidney beans to make it that much heartier!





The Cheesy Skillet Dinners kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey, and 1 can of Joan of Arc Light Red Kidney Beans. I used Jennie – O Extra Lean Ground Turkey. Using the Extra Lean Ground Turkey instead of the Ground Beef you can lower the calorie count by anywhere from 60 – 80 calories! As I browned the Turkey I added Sea Salt, Pepper, and Ground Smoked Cumin for seasoning. It’s ready in about 10 minutes. I then add 1can of Light Red Kidney Beans, 2 cups of water, the seasoning and the pasta. Simmered for 10 – 12 minutes and added the Velveeta Cheese and your ready for dinner. I’ll leave the instructions at the end of the post. It’s 380 calories and 28 carbs but you can lower the calorie count by using the Ground Turkey as stated above.Another one pan quick, easy, and delicious dinner! I also had a couple of slices of Aunt Millie’s Light Whole Grain Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Chili Cheese Mac

Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

Another Spring like day in August, we'll take it! I rarely play the lottery but had to take a chance on it today, Powerball topping out at $400 Million! Odds are against you winning it but as they say someone has to win it, so it might as well be me! For dinner tonight a family favorite, Progresso Kitchen Favorites Classic Lasagna w/ Baked Artisan Multi Grain Bread.





This has become one of our favorite Lasagna recipes, Progresso Kitchen Favorites Classic Lasagna! It’s very easy to make as the dinner kit contains the Lasagna Pasta, Tomato Herb sauce, Ricotta Sauce Mix, and Grated Parmesan Cheese. I added 1 lb. Jennie – O Lean Ground Turkey, 1 Cup water, Sliced Baby Bella Mushrooms, 2/3 Cup 2% Milk, 1 (8 oz.) Shredded Mozzarella Cheese (2 Cups), 1/2 cup Shredded dutch Gouda, and I also added a bit more seasoning (McCormick Grinder Italian Herb). I combined the Mozzarella and Goda Cheese. Gouda is such a great tasting Cheese and is a perfect melting Cheese. Basically you just layer your ingredients in a 8″ square baking dish and cover and bake at 425 degrees for 30 minutes and bake an additional 10 minutes uncovered. Prepared by the instructions it was 390 calories but I cut that and the carb count down by using Honeysuckle White Extra Lean Ground Turkey instead of Beef and Sargento Reduced Fat 2% Mozzarella Cheese. The Lasagna came out delicious every time! Everyone really loves this. The flavor as always is excellent. The Sauce was thick and well seasoned and the same for the pasta, perfect, plus plenty leftovers to freeze for later. I also baked a loaf of the La Brea Bakery Take and Bake Artisan Multi Grain Loaf for Mom and Dad and I had Healthy Life Whole Grain Bread. For dessert later a Jello Sugarless Double Chocolate Pudding.

Directions
Ready to bake in about 20 minutes. You Will Need: 1 lb lean ground beef; 1 cup water; 2/3 cup milk; 1 bag (8 oz) shredded mozzarella (2 cups); nonstick cooking spray and foil.

Black Bean and Turkey Tacos

Another beautiful cool morning here. Got out early and hit the stores. Started at Walmart for some of the Meat, Bakery, and basic staples for the pantry. Then off to Kroger for the rest of the Meats, Produce, Cheese, and Deli. I'm still amazed at the big difference in prices between Walmart and Kroger. Anymore I only buy what I can't find at Walmart. You can save hundreds by purchasing center aisle products from Walmart, Pasta, Can Goods, Paper Products, and such. Stay out of Kroger center aisles! For dinner one of my favorites, Black Bean and Turkey Tacos.





I used Jennie - O Ground Turkey, 99% Fat Free (120/0). I pan fried it in Canola Oil and I seasoned it a bit with Cilantro, Sea Salt, and Smoked Ground Cumin and I used 1 packet of Old El Paso Taco Seasoning. As the Turkey was finishing up I added a can of Bush’s Low Sodium Black Beans, before adding them I rinsed them off with cold water in a strainer. I mixed the Turkey and Black Beans in the pan until well mixed and continued cooking until the Turkey was done and the Beans were heated.





I used Ortega Whole Grain Corn Taco Shells. Their a good size Taco Shell with 110 calories and 12 Net carbs per serving (2 Shells). Fewer calories and carbs than the Old El Paso Taco Shells. For the Taco fillers I had Green Giant Summer Crisp White and Yellow Kernel Corn, sliced Black Olives, shredded Lettuce, Sargento Reduced Fat Mexican 4 Cheese, and Old El Paso Medium Taco Sauce. To assemble my Taco I first layered the bottom with shredded Lettuce, the Lettuce helps soak up any moisture so the bottom of your Taco doesn’t get soggy. After the Lettuce I layered in my ground Turkey/Black Beans, then Black Olives, Corn, Taco Sauce topped with the Shredded Cheese! Love these Tacos! I also heated up a can of Old El Paso Fat Free Refried Beans for Mom and Dad. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt Cup.

A really perfect day out today! It's about 77 degrees and sunny. Beautiful day but a it was very, very, long
night. My parents had made some friends for dinner at a Ponderosa Steak House. they didn't order from the menu instead chose the Buffet, BIG MISTAKE!! After coming home about an 1 hour or so they both became very sick, Mom worse than my Dad. Upset stomach, nausia and everything that goes with food poisoning. My Mom was so bad I called her family doctor on call service. He said the best cure is to let it run it's course, which it eventually did. I won't go in to detail but I was still doing laundry at 1:00 am. But both are fine now with no after effects. I'm not big on Buffets and that's the main reason! For dinner tonight I prepared a Bacon Wrapped Turkey Meatloaf w/ Corn on the Cob and Mashed Poatoes.




I had prepared Turkey Meatloaf before but not wrapped with Bacon, Low Sodium Turkey Bacon. I had the idea off a cooking show. They said by adding the Bacon it gave your Meatloaf an even better taste. They had used Pork Bacon but I'm using Oscar Mayer Low Sodium Turkey Bacon instead. To make the Meatloaf I'll need the following; 2 Tablespoons Blue Bonnet Light Stick Butter, 3 Cloves Garlic, Minced, 1 1/4 lbs Jennie O Extra Lean Ground Turkey, 3-4 Slices of uncooked Oscar Mayer Low Sodium Turkey Bacon, 1/2 Cup Progesso Italian Style Breadcrumbs, 1/4 Cup Egg Substitute (Egg Beaters), 1 1/4  Cups Hunt's Catsup, 4 Tablespoons Worcestershire Sauce, 3 Tablespoons Heinz 57 Sauce, 2 Teaspoons Smoked Cumin, 2 Teaspoons Onion Powder, 2 Teaspoons Ground Thyme, 2 Teaspoons Parsley, 3/4 Teaspoon Sea Salt, and 1/2 Teaspoon Black Pepper. To prepare it start by preheating your oven to 350 degrees. Then melt the butter in a skillet and add the Garlic in melted butter for 5 minutes, stirring occasionally. Place the mixture in a large bowl to cool for 5 minutes. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture. Press meatloaf into an 8×4-inch loaf pan. Wrap 4 slices of Turkey Bacon over the top and down on to the sides of the meatloaf. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and 3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Bake in a 350 degree oven for 50-55 minutes or until Internal temperature should reaches 165 degrees. Remove from oven and let stand 5 minutes before serving. The Turkey Meatloaf was delicious before but with the added Bacon it gave it that much more flavor! I'll add Turkey Bacon to it from now on!




To go with the Meatloaf I prepared some more of the boiled Mini Corn Ears. I used Green Giant Mini Ears of Sweet Corn. They come frozen and all you do is boil them in water for about 12 minutes. Their 50 calories and 9 calories per mini ear. These are actually better than a lot of the fresh Corn on the cob I've had, nice job Green Giant! I also prepared Bob Evan's Mashed Potatoes. You have to have Mashed Potatoes when you have Meatloaf, I think it's an unwritten rule! One good comfort food dinner! For dessert later, just sticking with some fruit. A Banana and maybe a few slices of an Honey Crisp Apple.





Turkey Meatloaf


Ingredients

2 Tablespoons Blue Bonnet Light Stick Butter
3 Cloves Garlic, Minced
1 1/4 lbs Jennie O Extra Lean Ground Turkey
3-4 Slices of uncooked Oscar Mayer Low Sodium Turkey Bacon
1/2 Cup Progesso Italian Style Breadcrumbs
1/4 Cup Egg Substitute (Egg Beaters)
1 1/4 Cups Hunt's Catsup
4 Tablespoons Worcestershire Sauce
3 Tablespoons Heinz 57 Sauce
2 Teaspoons Smoked Cumin
2 Teaspoons Onion Powder
2 Teaspoons Ground Thyme
2 Teaspoons Parsley
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper

Directions

1. Melt butter in a skillet.
2. Add the Garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture.
5. Press meatloaf into an 8×4-inch loaf pan. Wrap 4 slices of Turkey Bacon over the top and down on to the sides of the meatloaf.
6. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and
3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

Want an easy, filling, comfort dinner tonight, I have one for you and it's one those pot meals! Easy to make and easy to clean up. It's the Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac, But mine is Turkey Mac. Using Ground turkey its a little be healthier and less calories and carbs. So for dinner tonight I prepared Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Turkey and Cheese Mac with  Harvest Grain Bread.



I used Kraft/Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac. The dinner kit includes: Pasta, Velveeta Cheese Sauce, and Seasoning pack. All I had to do was add the 2 cups of water and 1 lb. of Ground Turkey. I used Jennie – O Extra Lean Ground Turkey. They have different varieties of the Velveeta Skillets, I've tried 3 different ones and they are all delicious! For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time pop Corn.




Velveeta Cheesy Skillets Ultimate Cheeseburger Mac

Ingredients:
* 1 LB. Ground Beef or Ground Turkey (Extra Lean)
* Sea Salt, Pepper, Cilantro, Ground Smoked Cumin to taste; Optional
* 2 Cups Water
* 1 Velveeta Cheesy Skillets Dinner Kit/Ultimate Cheeseburger Mac

Instructions:
* Brown and season 1 LB. Ground Turkey in large skillet. Drain
* Add 2 cups water, seasoning and pasta. Bring to a boil. Reduce Heat.
* Cover, Simmer and stir often until most of water is gone about 11-13 minutes. Remove from heat.
* Add Cheese from Velveeta Cheese Pouch. Stir in Cheese Sauce and serve

Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins


Today’s Menu: Old El Paso Stand ‘n Stuff Soft Flour Tortillas w/ Ground Turkey and all the Fix’ins


For dinner tonight I prepared, for the second time now, Old El Paso Stand ‘n Stuff Soft Flour Tortillas. I have found a new favorite with these Taco Shells, these are great! There a Flour Soft Stand Up Tortilla. Only 160 calories and 24 carbs per serving which is 2 Tortillas. Their formed into a soft bowl and keep their shape after warming them up and loading them up! Because of their shape you can really load them up with your fillers. If you come across these grab a box, you'll love them!

I filled mine with Jennie – O Extra Lean Ground Turkey – 99/1. I pan fried it in Canola Oil and seasoned it with Ground Cumin, Sea Salt, Cilantro Flakes, Diced Green Onions, and a 1/2 packet of Old El Paso Taco Seasoning. I also added Green Giant Sweet White Corn, Sliced Black Olives, Bush’s Low Sodium Black Beans, Lettuce,Kroger Hot Pepper Blend Shredded Cheese, and Taco Bell Creamy Chipotle Sauce. If you’ve never tried the Taco Bell Creamy Chipotle Sauce it’s another you have to try. It’s got a nice creamy thick sauce with just the right amount of Chipotle heat! A little high in calories and fat but it’s one of those that’s so good it’s worth it every now and then. I also tried a new Cheese, actually by accident Kroger Hot Pepper Blend Shredded Cheese. It's a Natural Pepper Jack Cheese with Jalapeno Peppers and you can taste the heat in this Cheese! Another give it a try.  For dessert later a bowl of Blue Bunny Chocolate/Vanilla Frozen Yogurt.

It was something new again for dinner tonight as I tried Old El Paso Stand 'n Stuff Soft Flour Tortillas. I have found a new favorite Taco Shell, these are great! There a Flour Soft Stand Up Tortlla. Turkey Pumpkin Chili


Well if it's Turkey Pumpkin Chili it must be Fall! This one's just packed with goodness.

Turkey Pumpkin Chili

Ingredients

3 pounds Jennie - O Extra Lean Ground Turkey
1 small Onion, chopped
2 cans (16 ounces each) Hot Chili Beans or Spicy Chili Beans, undrained
1 can (16 ounces) Red Pinto Beans
2 bottles (12 ounces each) Chili Sauce
2 cans (10-3/4 ounces each) Amy's  Organic Cream of Tomato Soup
1 cup canned Pumpkin
2 teaspoons pumpkin pie spice
1 teaspoon Sea Salt
1 teaspoon Sugar
1 teaspoon Pepper
1 teaspoon Roasted Ground Cumin
1 teaspoon Ground Cinnamon
1 teaspoon Chili Powder


Directions

In a large Dutch oven, cook Turkey and Onion over medium heat until no longer pink; drain. Stir in the remaining ingredients. Add water if desired to reduce thickness. Bring to a boil. Reduce heat; cover and simmer for 1 hour. Yield: 11 servings.

Turkey Burger on English Muffin w/ Griller Potatoes


Dinner Tonight: Turkey Burger on English Muffin w/ Griller Potatoes



Busy day today, cleaning all day. I wanted something light and easy to prepare for dinner. i went with a Turkey Burger on English Muffin w/ Griller Potatoes. I used Jennie O extra Lean Ground Turkey. Seasoned it with Parsley, Sea Salt, and Ground Black Pepper. Pan fried on medium heat using Extra Virgin Olive Oil about 4 minutes per side. I served it on a Healthy Life Whole Grain English Muffin and topped with a slice of Sargento Muenster Cheese. For a side I had Ore Ida Seasoned Griller Potatoes. For dessert later a bowl of Blue Bunny Frozen Naturally Chocolate/Vanilla Yogurt.
