Skillet Potatoes and Ham with a Sunny Side Up Egg

Dinner Tonight: Skillet Potatoes and Ham with a Sunny Side Up Egg




For Breakfast this morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain
English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, And had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Menard's to pick up a small can of Black Paint and then to Kroger and picked up a couple of Donuts for Mom, she wanted Coffee and Donuts for her Breakfast. I needed the paint to touch up the trim of the shed and to touch up a couple of the shutters around the house. A bit hotter and more humid today, 88 degrees and sunny. For Dinner tonight I prepared a Skillet Potatoes and Ham with a Sunny Side Up Egg.




The 2nd day of Breakfast for Dinner tonight. Skillet Potatoes and Ham for Breakfast, I mean Dinner! I'll need; 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes, a package of Meijer Diced Ham, 1 Egg, Morton's Lite Salt, Ground Black Pepper,  Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Pam Non Stick Cooking Spray, and Extra Light Olive Oil.








To start I got a large skillet and sprayed it with Pam and added 2 tablespoons of Extra Light Olive
Oil, heated it on medium heat. When the skillet was ready I added the package of the Simply Potatoes Steakhouse Seasoned Diced Potatoes. I lightly seasoned them with the Salt and stirred. Put the lid on the skillet and let them cook. Using a spatula, I turned them several times so they would cook evenly. Cooked a total of 15 minutes. With about 3 minutes of cooking time left I added the package of Meijer Diced Ham. Stirred and finished the cooking of the Potatoes. When done put them in a large bowl and set it aside.



As the Potatoes and Ham were finishing I got a small skillet sprayed it with Pam and added a 1/2 tablespoon of Extra Light Olive Oil, heated it on medium heat. When the skillet was heated I added the Egg. Seasoned it with Salt and Pepper. I grabbed a teaspoon and scooped up some of the Olive Oil and poured it on top of the Yolk. Then put a lid over the skillet and cooked my Egg. Sunny Side Eggs always cook better with a lid over the skillet and a bit of the Oil over them when cooking them. It gives the Yolk a good finish.











To put the dish together I used a bowl and made a bed of the Potatoes and Ham, seasoned them with a little of the Salt. Sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese on top and then added the Sunny Side Egg. Time to Eat! I love the combo of Potatoes and Ham! Then with Egg topping it off it gave great flavor and tied the dish together. Excellent Dinner tonight. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Diet Tropa - Rock - A Snapple to drink.

Eggs.......

No Dinner Plan Tonight

I had a Dinner planned out but due to a Family Emergency I had to go with something quick and
easy. My Dad fell last night around 8:30 and we were at the Hospital until 2:00 this morning. He's doing fine and they sent him back home with us. The time I finally got to bed was around 4:00 this morning. So something quick and easy was Dinner tonight. I prepared a can of Hormel Turkey Chili w/Beans. Topped it with some Sargento Reduced Calorie Shredded Sharp Cheddar and a side of Oyster Crackers. See everyone tomorrow, take care!

Cheddar Chili Dogs

Dinner Tonight: Cheddar Chili Dogs




Wow, It's the last day of June already. This month flew by! For Breakfast this morning I fried 2 Jennie - O Turkey Breakfast Sausage Links, prepared an Egg Sunnyside Up, toasted 2 slices of Aunt Millie's Whole Bread, and my every morning cup of Bigelow Decaf Green Tea. The Summer like weather has kicked in! 86 degrees and HUMID. After Breakfast I headed to Meijer for a few items and had to stop by the bank. Back home I cleaned the Kitchen, swept, mopped, cleaned the fridge, and cleaned the stove. Then kicked back for a bit and watched some shows I had recorded. For Dinner tonight I prepared CHEDDAR CHILI DOGS.




I have Chili and Cheese Dogs quite often but this recipe is a bit of a twist of what I normally have. I found this recipe in a recipe email from Bush's Beans, BUSH’S® CHEDDAR CHILI DOGS. I made some changes from the original recipe, I left the original recipe and web link at the end of the post. To make the Dogs I'll need; 1 can (16 oz) BUSH'S® Chili Beans - Red Beans in a Medium Chili Sauce (drained), 1 tsp chili powder, 4 Ball Park Smoked Turkey Franks, 4 Aunt Millie's Reduced Calorie Whole Grain Hot Dog Buns, French's Yellow Mustard, 3 slices Simple Truth Hickory Smoked Bacon (crisped and coarsely chopped), and 1/4 cup Sargento Reduced Fat Shredded Sharp Cheddar Cheese.



To prepare them; Heat the Beans in a medium saucepan until just heated through; stir in chili powder. Next I cooked Hot Dogs. I used a medium size sauce pan, filled 3/4 full of water and heated to a boil. When water was boiling I added the Franks, boiled for 5 minutes. Removed the pan from the heat, drained the water, and prepared the Cheddar Chili Dogs. Spread each Bun with Mustard. Place a Hot Dog in each Bun and top with Beans. Sprinkle each with Bacon, Onion 9optional), Tomato (optional),  and Cheese. These turned out fantastic, love the Beans and Cheddar toppings. Nice switch from my normal Chili and Cheese Coney's.





Served it with some Ruffles Reduced Fat Potato Chips  and some Lay's Ranch Dip. Also had a
Caffeine Free Diet Coke. For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.












BUSH’S® CHEDDAR CHILI DOGS

Chili Beans with a touch of chili powder add some heat to these Cheddar chili dogs with bacon, onion and tomato.

RECIPE DETAILS
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
Servings: 4
INGREDIENTS
1 can (16 oz) BUSH'S® Chili Beans, drained
1 tsp chili powder (optional)
4 all-beef hot dogs
4 soft hot dog buns
2 Tbsp mustard
3 slices bacon, crisped and coarsely chopped
2 Tbsp white onion, chopped
1 small tomato, cored and chopped
1/4 cup shredded mild Cheddar cheese
DIRECTIONS
1 - Heat beans in a medium saucepan until just heated through; stir in chili powder, if desired.
2 - Cook hot dogs according to package directions.
3 - Spread each bun with mustard. Place a hot dog in each bun and top with beans. Sprinkle each with bacon, onion, tomato and cheese. Serve hot.

3 Bean Turkey Chili

Dinner Tonight: 3 Bean Turkey Chili






For Breakfast this morning I made some Egg White Scrambled Eggs (with Egg Beater's Egg Whites), fried up 2 Bob Evan's Turkey Sausage Patties, 2 toasted slices of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. After Breakfast I went to the local Kroger for Mom, she just needed a few items. Rain showers on and off and mid 80's with high humidity. I'll be glad when this high humidity streak ends! Finally got the front flower bed in good shape, it turned out good. For dinner tonight it's one of my favorites, 3 Bean Turkey Chili.
 


I was ready for some Chili, 3 Bean Turkey Chili! I had a container left in the freezer so I sit it in the fridge overnight to thaw. To heat it up I took a small sauce pan, sprayed it Pam cooking spray and
added the Chili. I reheated it on medium heat, stirring often. Reheated and ready for Dinner! I love this Chili! I made this batch using Jennie - O Extra Lean Ground Turkey Breast. I also make it using my favorite Buffalo, Wild Idea Ground Buffalo. Either version turns out great! I served this with Sargento Reduced Fat Shredded Sharp Cheddar Cheese, some added Frank's Hot Sauce, and Skyline Chili Oyster Crackers. Chili, Cheese, Frank's Hot Sauce,  and Crackers - Dinner is served! I've left the original post and recipe below. Enjoy, I am!




To make this I’m using Jennie -O Lean Ground Turkey. The 3 Beans I use are 1 Can (16 oz.) Bush’s
Chili 3 Bean Beans (Red Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What's good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious!


To prepare it I start by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the seasonings and Tomato Paste, stirring often. When
the Turkey has browned I add from the skillet to the plastic liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then sit back and enjoy the aroma that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and spices is a perfect match. (Recipe Below)









3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

3 Bean Buffalo Chili and Cheese Fries

Dinner tonight: 3 Bean Buffalo Chili and Cheese Fries



Happy New Year everyone! Hope everyone had a safe New Years. Mine was a quiet one, a bowl of Pop Corn and watching the old 30's and 40's Thin Man Movies on TCM. Love them old movies!


My first Breakfast of the year was French Toast and Turkey Sausage. For the French Toast I used
Healthy Life Whole Grain Bread. Then for coating I used Egg Beater's seasoned with McCormick Ground Cinnamon and Ground Nutmeg. Mixed the Spices with the egg Beater's and dipped the Bread into it and grilled the slices on a stove griddle pan. For the Sausage I used Eckrich Smoky Turkey Breakfast Sausage. I topped the French Bread with Maple Grove Farms Sugar Free Maple Low Calorie Syrup and I Can't Believe I's Not Butter. Great start to 2016! Nothing going on today, just relaxed and watched a lot of Football! For dinner tonight a Supreme Comfort Food, 3 Bean Buffalo Chili and Cheese Fries.






For the Chili I used my favorite Chili, Crock Pot 3 Bean Buffalo Chili. I had 1 container of it left in the freezer so I sit it in the fridge to thaw overnight. To reheat it I took a sauce pan, sprayed with Pam, and put half of the Chili container in it. Added a few shakes of Frank's Red Hot Sauce to it. Heated it on medium, stirring often until it was heated through. The Chili reheats perfectly and tastes just as good as it did when it was first made! The recipe for the Chili is at the end of the post.




As the Chili was reheating I preheated the oven to 425 degrees. I used a small baking sheet that I
lined with foil and sprayed the foil with Pam Cooking Spray. I'm using Ore Ida Waffle Fries, which I haven't used in quite a while. The Waffle Fries are a little higher in calories than the Crinkle Fries I normally prepare. But the waffle Fries are perfect Fries to use when using a topping like Chili. So I lined the Fries on the baking sheet, seasoned them with Sea Salt and Ground Black Pepper, and baked them for about 17 minutes (until a light golden brown). These are so good just plain, but add the Chili and Cheese and you have something special!







To serve; I made a bed of the Fries in a bowl and topped them with the 3 Bean Buffalo Chili and
Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I was in Comfort Food Heaven! The Fries are just flat out delicious and then you add the Chili and Cheese and it's kicked up another 5 notches! Really a good hardy dish, especially on cold day and evening. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.








Crock Pot 3 Bean Buffalo Chili
Ingredients:

2 lb. Ground Wild Idea Ground Buffalo,99% Lean
2 Cans (6 oz.) Hunt’s Tomato Paste
* All Bush's Beans
1 Can (15 oz.) Chili Beans
1 Can (15 oz.) Kidney Beans, rinsed
1 Can (15 oz.) Great Northern Beans, rinsed
1/2 Cup of Water
1 Packet McCormick Chili Mix
1 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
3 Cloves Minced Garlic
1 Tbs Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
1 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
Shredded Cheese, I used Grated Dutch Gouda (Topping) or Shredded Sharp Cheddar Cheese
Oyster Crackers (optional)

Directions:
*Brown Buffalo in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and the oyster crackers, A Tablespoon of fat-free sour cream, or serve with some home made cornbread.

Sausage Crescent Cheese Balls

Cold day outside here so i heated up the Kitchen and tried a new recipe, Sausage Crescent Cheese
Balls from Pillsbury. Found this recipe in a cooking magazine, sounded good so I thought I would give it a try. I had actually tried this recipe last year about this time but I used Jennie - O Ground Turkey Breakfast Sausage. So this time I'm going with original recipe and using Spicy Sausage, I used Bob Evan's Zesty Hot Pork Sausage. For my other ingredients I used Pillsbury Reduced Calorie Crescent Rolls and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Both which cut back on calories, fat, and carbs.






To prepare them, heat oven to 375°F. Then line 15x10x1-inch pan with foil; spray with cooking
spray. In large bowl, mix sausage, cheese and rosemary; mix well using your hands or spoon. Unroll crescent dough on work surface; coat each side of dough with 1 tablespoon flour. Using pizza cutter or knife, cut dough into about 1/4-inch pieces. Mix crescent dough pieces into bowl of sausage mixture in small amounts until well blended. Shape the mixture into 42 (1 1/4-inch) balls. Place in pan. Bake 15 to 17 minutes or until golden brown.






You can eat these just as they are or serve them with some French's Spicy Brown Mustard, which
worked well with it. The Sausage Crescent Cheese Balls turned out delicious! They had a really good Spicy flavor, not over powering just right. This will make a perfect Christmas or New Year's appetizer for your family and friends gatherings! The original recipe and the Pillsbury web link is at the end of the post.  










Sausage Crescent Cheese Balls

Ingredients

1 lb bulk spicy sausage
2 cups shredded sharp Cheddar cheese (8 oz)
1/2 teaspoon dried rosemary leaves, crushed
1 can (8 oz) Pillsbury™ refrigerated crescent dinner rolls
2 tablespoons all-purpose flour
Directions

* Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray with cooking spray.
* In large bowl, mix sausage, cheese and rosemary; mix well using hands or spoon.
* Unroll crescent dough on work surface; coat each side of dough with 1 tablespoon flour. Using pizza cutter or knife, cut dough into about 1/4-inch pieces. Mix crescent dough pieces into bowl of sausage mixture in small amounts until well blended.
