Pulled Chicken BBQ Sandwich w/ Baked Fries

Dinner Tonight: Pulled Chicken BBQ Sandwich w/ Baked Fries




For Breakfast I had a Poached Egg and served it on a slice of toasted Aunt Millie's Light Whole Grain Bread. I also had my morning cup of Bigelow Decaf Green Tea. Cloudy, passing light shower,
and 44 degrees outside today. After Breakfast I did a load of laundry. Later after Lunch I went to Kroger to pick up a couple of things for tonight's Dinner. Back home cleaned the Kitchen and the fridge. For Dinner tonight, Pulled Chicken BBQ Sandwich w/ Baked Fries











I picked a Kroger small Rotisserie Chicken at Kroger earlier. I pulled all the Meat of the Chicken to make the Sandwiches. The Kroger Rotisserie Chicken is about 1/2 the size of the Simple Truth Rotisserie Chickens, but just as good!









To make the Sandwiches I'll need; 1 Kroger Rotisserie Chicken, Jack Daniel's Hickory Barbecue Sauce, Butter Lettuce, Kroger Bakery White Slider Rolls.











After Pulling the Chicken Meat I seasoned it with just a bit of Morton's Light Salt and Ground Black Pepper. I then heated it up in a skillet for about 4 minutes. Then to make the Sandwiches; I took a couple of the Slider Rolls and cut them in half. Next I took a leaf of the Lettuce and placed it on the bottom bun. Next a 1/2 slice of Swiss Cheese. Next the Pulled Chicken and topped all off the Jack Daniel's Hickory Barbecue Sauce. And this is one great tasting Sandwich! I love Rotisserie Chicken, you can use it in so many different ways. Then the Jack Daniel's Hickory Barbecue Sauce just adds that extra flavor. First time using the Kroger Bakery Slider Rolls. They are only 90 calories per roll, so not too bad. Excellent Sandwiches.


I also baked some Ore Ida Crinkle Fries, served with a side of Hunt's Ketchup. For Dessert/Snack
later a bowl of Skinny Pop - Pop Corn with a Diet Peach Snapple to drink.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin, Scrambled some egg Beater's Egg Whites, heated up 2 Johnsonville Turkey Breakfast Sausage links, and had my morning cup of Bigelow Decaf Green Tea. Rain and passing thunderstorms today with a high of 86 degrees. Did some house cleaning for part of the day. Then went out in the shed and replaced some shelf brackets, had a couple that were broke and the other ones were about to break. For Dinner Tonight; Baby Back Ribs w/ Mashed Potatoes and Mini Ears of Sweet Corn.



When having Ribs I usually make my Crock Pot Pork Back Ribs, I changed it up today. I've seen
Curly's Ribs advertised and in the stores forever but had never tried them before tonight's Dinner. I bought a package of the Curly's Baby Back Ribs from the local Kroger the other day. First thing I liked was that these are a lot easier and quicker to prepare.








To prepare them, it couldn't be easier; The package instructions - Heat the oven to 375 degrees F. Line a baking sheet with aluminum foil. Remove ribs from package and place on baking sheet; cover with foil. Bake 20-25 minutes.


I then I came across another way to bake them from the - Pass the Peas Please blog on blogspot, 
(http://passthegreenpeasplease.blogspot.com/2014/02/store-bought-favorite-curlys-hickory.html). Heat your oven to 300 degrees.  Line a rimmed cookie sheet with foil.  Place the ribs on the foil then cover the cookie sheet with foil.  Place in the oven and cook for 3 hours. I went with this way to preapre them. I always like the low and slow way to prepare food! For extra Sauce I used Jack Daniel's Honey Barbecue Sauce. For the last 1/2 hour of cooking time I pulled back the top foil and brushed on The Jack Daniel's BBQ Sauce across the top of the Ribs. Put the foil back on and finished cooking them.




The Ribs came out incredible! Tender, flavorful, and bursting with that BBQ flavor! So Curly's Baby Back Ribs is a very delicious and time saving way to have some Ribs! I had bought 2 packages of them, I have the other one in the freezer.












For one side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. I just think Ribs and Mashed Potatoes were meant to be together. But being a Potato Lover I think Potatoes are meant for every meal!












For another side dish I boiled some Green Giant Mini Ears of Sweet Corn. It’s frozen Mini Ears of
Sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

BBQ Pork Shoulder Sandwich w/ Baked Fries

Really tired and stressed today. Dad is at a local assisted living center for 5 days and he's taken a turn for the worse and now we are scrambling to find a permanent place for him to stay. There's just no way we can handle him here at the house. I'm in a wheelchair and Mom is 90 and we are not able to properly care for all his needs now. We are heart broken and just nothing we can do. I had a Roast in the fridge that I'll be fixing for me and Mom tonight.








Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast and I thought I should get one. I figured the Roast would come in handy for a quick Sandwich when you're on the run. I had picked up a Swift
Premium Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast at Kroger the day before. The Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast comes packaged already seasoned. You can roast this in the oven or use the Slow Cooker as like I am today. I got my Crock Pot out and put a plastic liner in it and sprayed that with Pam Cooking Spray.First remove the Shoulder Roast from the package and place in slow cooker with 1 inch of water in bottom. Put the lid on and cook on high for 4 hours or until fork tender. And as always a special “Thank You” goes out to whomever invented the Crock Pot Liners! You’ve made cooking so much easier! Cover and cook on high for 4 hours.



Removed the Roast from slow cooker and allow to cool slightly. Then shred meat with two forks for
my Sandwiches. The Roast came out mouth-watering delicious! Tender, moist, and well seasoned. So tender it broke apart while taking it out of the Slow Cooker. I’m serving it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped with some Jack Daniels Honey Smokehouse BBQ Sauce.I’ll use the leftovers for Sandwiches the next few days.







To go with our Sandwiches I baked some of my favorite Fries – Alexia Organic Yukon Select Fries.Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.










Swift Premium Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast
Cooking Directions:

Slow Cooker (preferred method):

1 - Remove meat from package.
2 - Place in slow cooker with 1 inch of water in bottom.
3 - Cover and cook on HIGH for 4 hours or until fork tender. Increase cooking time to 6 hours if cooking from frozen.
4 - Remove from slow cooker and allow to cool slightly.
5 - Shred meat with two forks.
Oven:

1 - Preheat oven to 350°F.
2 - Remove meat from package.
3 - Place pan on stovetop, add two tablespoons of oil and heat pot briefly on medium-high heat.
4 - When oil is hot, brown the roast on all sides.
5 - Place roast in oven safe dish with 1/2 cup of water. Cover and cook for 4 hours.
6 - Remove from oven and allow to rest for 15 minutes.
7 - Shred meat with two forks.
*Slow cooker and oven temperatures may vary, adjust cooking times accordingly.

Seasoning Ingredients: Sugar, salt, dehydrated onion & garlic, spices, yeast extract, lime juice powder (corn syrup solids, lime juice solids, natural flavor), natural flavors including smoke (contains modified food starch), maltodextrin and citric acid.

Bluegrass Lean Bratwurst w/ BBQ Baked Beans

Dinner Tonight: Bluegrass Lean Bratwurst w/ BBQ Baked Beans




Started my morning off with some Waffles. I used Bisquick Heart Healthy Mix to make them. I also had a couple of Eckrich Smoked Turkey Sausage Links and my morning cup of Bigelow Decaf Green Tea. Cleaning today, vacuum, dusting, and such. Out in our backyard we have 2 different Rabbit nests, 1 nest is already gone it had about 6 or 7 babies in it. Mostly cloudy out had a high of 78 degrees, a bit cooler. Had the cart out later in the day. For dinner tonight Bluegrass Lean Bratwurst w/ BBQ Baked Beans.



I used Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat. To prepare them; Just add the Brats to a large skillet and add water, until the Brats are half way covered. Bring them to a brisk boil but then immediately turn down the heat to a very low boil, more of a simmer than an active boil. Simmer for about 15 to 20 minutes, then finish off in a pan with just the Brats and a little Extra Virgin Olive Oil to get a nice crispy char and finish. Love this method, if you can’t grill them. Delicious, plump, and they cook up great!Served it on a Kroger Lite Wheat Bun topped with French's Spicy Brown Mustard. Also had a few slices of Jalapeno and a few Ruffle's Wavy Potato Chips.





For a side to go with my Brats I prepared some BBQ Baked Beans. I made a very small amount, I
used a 2 Serving can of Bush's Original Baked Beans Seasoned with Bacon and Brown Sugar. Just the right size if cooking for one. I emptied the can into a small sauce pan. I added 3 tablespoons of Jack Daniels Honey Smoked BBQ Sauce to it, stirred until well mixed. Simmered for about 8 minutes and it's done. The BBQ Sauce gives it a nice Smokey Flavor.  Makes a nice little side, easily made and easy clean-up. Brats and Beans on a Saturday! For dessert later a Jello Sugar Free Dark Chocolate Pudding. Love these Sugarless Pudding Cups, only 60 calories and 10 net carbs per cup.
