Open-Faced Roast Beef Sandwich w/ Mashed Potatoes, Mushroom Gravy, and Green Beans

Dinner Tonight: Open-Faced Roast Beef Sandwich w/ Mashed Potatoes, Mushroom Gravy, and Green Beans





This morning for Breakfast I had a Poached egg, 2 Jimmy Dean Turkey Sausage Links, toasted
Healthy Life Whole Grain English Muffin, and a cup of Bigelow Decaf Green Tea. A bit warmer out today and less windy, high of 57 degrees. Did a few things around the house then after Lunch went outside and got a few things out of storage from the shed. Pulled out some of the outdoor chairs and table and cleaned them up and also repaired a couple of the chairs. Back inside finished some laundry up for Mom. For Dinner tonight I prepared a  Open-Faced Roast Beef Sandwich w/ Mashed Potatoes, Mushroom Gravy, and Green Beans.




It's very seldom that I have Beef but when I was at Walmart the other day this just looked good and I
had not had this in quite some time, a package of Hormel Slow Simmered Beef Roast Au Jus. And made into an Open Face Roast Beef sounded real good! It comes packaged in a sealed microwave container and easy to prepare. Start by removing it from the outer sleeve and place the tray in microwave, do not pierce or vent film.  Heat on high for 4 minutes or until hot. the self-venting film expands as it heats, forming a bubble to lock in flavor and juiciness.  Let it stand for 2 minutes. Peel back and serve. Can't get much easier and it's really delicious. Plenty of Beef with excellent flavor. All I added was a bit Sea Salt to it. I lightly toasted a slice of Healthy Life Whole Grain Bread and served the Beef on top of the Toast. I also heated up a jar of Heinz Mushroom Gravy that I topped it with.



For a side I prepared my favorite Mashed Potatoes, Bob Evan's Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. Topped them with some of the Mushroom Gravy.












I also heated up a can of Del Monte Cut Green Beans. I could have Beans every meal, love them! For Dessert later tonight I’ll be having a Weight Watcher's Cookies and Cream Ice Cream Bar.
