BLACK BEAN, CORN AND QUINOA SALAD
1 cup organic quinoa, cooked
1 cup sweet corn, cooked (fresh, frozen or canned)
1/2 cup finely chopped onion
1/2 cup chopped green pepper
1/2 tbsp sugar
1 tsp sea salt
1/2 cup chopped cilantro
1/2 tsp oregano
2 tbsp lime or lemon juice
1 tbsp vinegar
6 ounce hot & spicy vegetable or tomato juice
1. In a large bowl combine all ingredients and stir. Chill for a half hour and serve. Makes 6 servings
