Fried Ocean Perch w/ Potato Pancakes

Dinner Tonight: Fried Ocean Perch w/ Potato Pancakes

For Breakfast this morning it was just a cup of Bigelow Green Decaf Green Tea and an Eggo
Waffle. After Breakfast started a load of laundry for Mom. Got that started and then me and Mom headed over to a Medical Store here in the area. We are going to buy Dad one of the chairs that lifts you up out of the chair. He has trouble getting up from a sitting position so this will really help him. We wanted to get one before he returns home. After that we went down and picked up my car at the mechanics, up and running again! So for Dinner tonight its Fried Ocean Perch w/ Potato Pancakes

I picked up the Ocean Perch at Meijer a couple of weeks ago. I had used half and had the other half in the freezer. I laid a bag of Perch in the fridge overnight to thaw. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Virgin Olive, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them for 6 minutes. 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

For a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I
didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). For dessert later a Healthy Life Dark Fudge Swirl Frozen Greek Yogurt.
