Jennie - O Turkey Recipe of the Week - Easy Turkey Enchiladas

This week's Jennie - O Turkey Recipe of the Week is Easy Turkey Enchiladas. Made with JENNIE-O® Bone-in Turkey Pot Roast. If you've never tried this it's time! It makes great Enchiladas but also makes one delicious dinner over Mashed Potatoes! You can find this recipe on the Jennie - O website.

Easy Turkey Enchiladas

1 pound 8 ounces shredded JENNIE-O® Bone-in Turkey Pot Roast
1 tablespoon ground cumin
1 teaspoon onion powder
5 ounces shredded Cheddar cheese, divided
3 cups enchilada sauce, divided
10 whole grain tortillas
Heat oven to 350°F.

1 - Mix shredded turkey, cumin, onion powder, 2.5 ounces cheese and ½ cup enchilada sauce together.

2 - Spread ½ cup turkey mixture down middle of each tortilla. Roll up. Spread 1 cup enchilada sauce in bottom of 2-inch deep pan. Lay enchiladas seam side down in pan. Cover enchiladas with remaining 1½ cups sauce. Sprinkle remaining 2.5 ounces cheese over enchiladas.

Bake 30 minutes or until sauce is bubbling and cheese is melted.
