Baked Battered Cod Sandwich w/ Baked Crinkle Fries

Dinner Tonight: Baked Battered Cod Sandwich w/ Baked Crinkle Fries

Had a Canadian Bacon, Egg White, Cheese, Breakfast Sandwich to start my day. it's a Kroger Brand Simple Truth sandwich, comes frozen just microwave for 2 minutes and ready! After that I mad an early morning run to Meijer for Mom. She wanted  3 Hickory Farms Summer Sausage and Cheese Gift Sets. I had picked a couple up last week for our neighbors for Christmas and she wanted a few for friends. In fact there was only 4 of them left at Meijer, good timing! Back home did some house cleaning and that was about it for the day. Sunny day out but cool with a cold breeze. For dinner tonight it's a Baked Battered Cod Sandwich w/ Baked Crinkle Fries.

I used Trident PubHouse Battered Cod. I always buy a couple of boxes of this when I’m at Jungle
Jim’s International Market and now Kroger carries them also. They have all different types and breading of Fish fillets. I like the Battered Cod because it’s a little lower in calories and carbs than the others. I baked the Cod at 425 degrees for 16 minutes, turning once. This is the best tasting frozen fish I’ve found, nice size Fillets with an excellent Beer Batter Breading! Served it on a Aunt Millie’s Reduced Calorie Hamburger Bun.

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Mousse.
