Diabetic Dish of the Week - Vegetable Curry


For this week's Diabetic Dish of the Week - Vegetable Curry. Potatoes, Onions, Tomatoes, Peppers, Peas, and Spices make up this week's dish!


 Vegetable Curry

Ingredients
4 Baking Potatoes  (Chopped)
1 Large Yellow Onion (Chopped)
1 Red Bell Pepper  (Chopped)
2 Carrots  (Chopped)
2 Tomatoes  (Chopped)
3 Cups Cauliflower Florets
1 Can (6 ounces) Tomato Paste
1/4 Cup water
2 Teaspoons Whole Cumin Seed
1/2 Teaspoon Sea Salt
1/2 Teaspoon Garlic Powder
1 Package (10 ounces) Frozen Peas (Thawed)

Directions

1 - Combine Potatoes, Onion, Bell Pepper, Carrots, and Tomatoes in the Crock Pot. Stir in Cauliflower, Tomato Paste,Water, Cumin, Sea Salt, and Garlic Powder.

2 - Cover; cook on low 8-9 hours. Stir in Peas before serving.
