It's been very humid out all day. I went out to fetch the morning paper and when I opened the door it was like opening an oven door. Not too nice today but better weather by Thursday, highs in the low 70's! A bowl of Honey Nut Cheerios Medley Crunch Cereal to start the day. Went to Walmart and Kroger early today and back home. For dinner tonight, Panko Crusted Orange Roughy Fillet w/ Sharp Cheddar and Bacon Mac & Cheese.
I used the other half of the Orange Roughy for my dinner tonight, preparing it the same way as last night. To prepare the Orange Roughy Fillets rinse fillets and pat dry fillets and season with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillets into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heat a tablespoon of Extra Virgin Olive Oil in skillet and place the fillets in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside!
Then to go with my fillet I made some Kraft Homestyle Sharp Cheddar and Bacon Mac & Cheese. Love Mac and Cheese but just don't eat too often anymore due to a higher calorie and carb count than most sides I eat anymore. But every now and then is ok, and today is one of those days. That and I've been wanting some for a while now! So I picked up a package of the Kraft Homestyle Sharp Cheddar and Bacon Mac & Cheese, first time I've tried this one from Kraft. It comes in a plastic microwavable bowl. Just add water and microwave for 4 1/2 minutes. Once heated stir in the Sharp Cheddar Cheese and Bacon Bits. You have a nice tasting bowl of Kraft Mac and Cheese! Plenty of Bacon Bits with that Kraft Cheesy flavor. If they could lower the calories and carbs I would have this a lot more often, very good! For dessert later a Jello Sugar Free Double Chocolate Pudding.
