Fried Crappie Fillets w/ Cornbread Cakes, Green Beans and Smashed Potatoes

Today's Menu: Fried Crappie Fillets w/ Cornbread Cakes, Green Beans and Smashed Potatoes



I just couldn't resist not breaking open another bag of the Crappie out! I seasoned them with Sea Salt and Ground Black Pepper. I then rolled each fillet in a Whole Wheat Flour and Italian Bread Crumb Mix. I lightly fried them in Extra Virgin Olive Oil about 3 minutes per side. They came out golden brown and delicious! I love all Fish and Seafood but Crappie is at the top of my list.

For sides I had Cornbread Cakes, Green Beans, and Smashed Potatoes. First time I've had Cornbread Cakes in a long, long time. Very easy to make. I used Martha White Corn Meal and added Buttermilk and Extra Virgin Olive Oil. I then fried them in extra Virgin Olive Oil until they were browned on both sides. If you like Cornbread you'll love it this way. I also Green Beans and Smashed Potatoes. To make the Smashed Potatoes I used Green Giant Klondike Petite Gourmet Potatoes. I cut each Potato in half. Then after putting them in a bowl I added a tablespoon of Extra Virgin Olive Oil and then McCormick Grinder Dill, Sea Salt, Black Peppercorn, and Parsley and mixed until all were coated. I then boiled them for 30 minutes. Then put them in a serving bowl and with a fork smashed them up. Added I Can’t Believe It’s Not Butter and 2 slices of crumbled Turkey Bacon  and continued to smash and mix. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.
