Cheese of the Week - Canadian Cheddar

Canadian Cheddar

Canadian Cheddar is made from cow's milk and sold at different degrees of maturation - mild, medium and strong. The fat content is usually restricted to a maximum of 48%. It is a semi-hard cheese, straw colored with a cylinder shape or in a block.

Canadian Cheddar

Cheddar cheese was first made in Canada in the 19th century. Canadian Cheddar cheese is produced mostly by a number of large companies in Ontario, though other provinces produce some and there are some smaller artisanal producers. The annual production is 120,000 tons  It is aged a minimum of three months, but much of it is held for much longer, up to 10 years.

Canadian Cheddar cheese soup is a featured dish at the Epcot Canada pavilion, in Disneyworld.
