Shrimp, Noodles with Mushrooms and Baked Garlic Loaf Bread

Dinner Tonight: Shrimp, Noodles with Mushrooms and Baked Garlic Loaf Bread

For Breakfast this morning I made a Breakfast Sandwich. I toasted a Thomas 100 Calorie Light Whole Grain English Muffin, heated up an al fresco Chicken Sausage Patty, 1/2 slice of Kraft Deli Deluxe Sharp Cheddar, and I had my Breakfast Sandwich! Also had my morning cup of Bigelow Decaf Green Tea. Passing thunderstorms, humid, and 88 degrees out today. Another day of being down and out with my allergies. Not feeling good today. So it was a day of rest and relaxation, and College Football. For Dinner tonight I prepared Shrimp, Noodles with Mushrooms and Baked Garlic Loaf Bread.

For the Shrimp part of the dish I used Meijer Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. I started by rinsing the Shrimp off
in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. I've been using the Meijer Frozen Shrimp for a while now. I think it's best Frozen Shrimp I've ever found by far.  And as the Shrimp was cooking I started to prepare the Pasta.

I'm preparing Egg Noodles with Mushrooms. I'll be using Ronzoni Smart Taste Extra Wide Noodles, Mini Bella Mushrooms, Minced Garlic, Blue Bonnet Light Butter, Sea Salt, and Fresh Basil. To prepare it; Cook noodles until just tender in boiling salted water. Cook 8 minutes, stirring often.

As the Noodles are cooking I Sauteed the sliced Mushrooms and Garlic in 2 tablespoons of Butter, Ground Roasted Cumin, and Sea Salt over moderate heat until Mushrooms are tender, about 3 or 4 minutes. Keep an eye on the Garlic so not to burn it.Drain the Noodles and toss in with cooked Mushrooms. Add the Basil and season with a little Sea Salt, to taste. Dig in! The Noodles, Mushrooms, and Garlic all come together to make one delicious Pasta Dish! Then top it all off with the Shrimp, Shrimp makes everything better!

As everything was cooking I also Baked a Loaf of Garlic Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Egg Noodles with Mushrooms

Ingredients
1/2 pound Ronzoni Smart Taste Extra Wide Noodles
2 tablespoons Blue Bonnet Light Butter
8 Mushrooms, sliced
3 Cloves Garlic, minced
A handful fresh Basil, chopped
Sea Salt
Directions
1 - Cook noodles until just tender in boiling salted water, according to package.
2 - Saute sliced mushrooms and garlic in 2 tablespoons butter over moderate heat until mushrooms are tender, about 3 or 4 minutes.
3 - Drain noodles and toss in with cooked mushrooms. Add the basil and season with a little sea salt, to taste.

Bison Top Sirloin & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Pea 7 Carrot Medley,...

Today's Menu: Bison Top Sirloin & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Pea 7 Carrot Medley, and Whole Grain Bread.

It's 4 days before the first day of Winter and we have Heavy Rain and a Thunder Storm going on outside. I was going to grill a Bison Top Sirloin but due to the weather it was indoor cooking! For dinner I prepared a Bison Top Sirloin & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Pea 7 Carrot Melody, and Whole grain Bread.

The Top Sirloin was the Top Sirloin I had ordered from Buffalo Gal at http://www.buffalogal.com/Bison-Top-Sirloin-Steaks-P42.aspx. We had already tried the Bison Hot Dogs, which were good, that was part of the order. T o prepare the Steaks I seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. I pan fried them in Canola Oil on medium heat, about 5 1/2 - 6 minutes per side, medium rare! The Steaks came out delicious with great flavor. Comparing these, Buffalo Gal, to Wild Idea Sirloins I would have to give the edge to Wild Idea though. The Wild Idea had a slightly better taste and also the Buffalo Gal Sirloins were a bit tougher meat than Wild Idea. With that being said the Buffalo Gal Sirloins were very good though. I topped them with Sauteed Baby Bella Mushrooms.

For side dishes I prepared a Baked Potato, that was seasoned with McCormick Grinder Sea Salt and Black Peppercorn along with I Can't Believe It's Not Butter, and I combined the leftover Sugar Snap Peas and sliced Carrots from dinner the other day and warmed them up in a Medley of the two. We also had a side of sliced Healthy Life Whole Grain Bread. For dessert later a couple of Honey Crisp Apple slices and a Jello Sugar Free Dark Cherry Jello.

Bison Sirloin & Sauteed Mushrooms w/ Applewood Smoked Bacon Homestyle Casserole ,...

Dinner Tonight: Bison Sirloin & Sauteed Mushrooms w/ Applewood Smoked Bacon Homestyle Casserole, Shellie Beans, and Whole Grain Bread

Cold and windy day out today and a high of 38 degrees! Ran some errands for my Mom as most of her time is spent at the rehab center with my Dad. While out I purchased a Prime Rib Roast for Christmas day Dinner. It seems prime Rib just keeps going up and up in price. I also picked up a couple of Bison Sirloin Steaks for dinner to night.

I've been trying to have my Mom a good hot meal for her at night. She's 85 but still goes like she's 40 but the daily stay at the rehab center is really tiring her out. So the least I can do is make sure she eats good! So for dinner I prepared a Bison Sirloin & Sauteed Mushrooms w/ Applewood Smoked Bacon Homestyle Casserole, Shellie Beans, and Whole Grain Bread. For the Bison Sirloins I seasoned them with McCormick Grinder Steakhouse Seasoning and a couple of shakes of Sea Salt. I pan fried them in Canola Oil about 4 minutes per side, medium rare. I kept my Mom's Steak on an extra minute, she likes hers about medium well. I've finally got my Mom eating Bison! She had a couple of Bison Burgers here lately, another convert to Bison! I topped the Steaks with Sauteed Baby Bella Mushrooms.

For sides I prepared Idahoan Applewood Smoked Bacon Homestyle Casserole, Libby's Shellie Beans and Healthy Life Whole Grain Bread. First time I tried the Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like he others this turned out fantastic! Very well seasoned, and you can actually taste that Applewood bacon flavor. For dessert a Skinny Cow Cookies and Cream Truffle Ice Cream Bar, 110 calories and 20 carbs.

Idahoan Applewood Smoked Bacon Homestyle Casserole

The saying is “everything is better with bacon” and we couldn’t agree more. That’s why we incorporated Applewood Smoked Bacon in with our rich cheesy sauce for this homestyle casserole that is sure to become a family favorite.

Oven Preparation
Preheat oven to 450°F. Combine potatoes and sauce mix in 1 1⁄2-quart baking dish.
Stir in 1 1/2 cups boiling water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling). Remove from oven and let stand a few minutes before serving.
Baking Notes: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min.
Stove Top Preparation
Heat potatoes and sauce mix, 1 1/2 cups hot water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boilover.
Reduce heat, then cover and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
Remove from heat and let stand a few minutes before serving.

Smoked Cheddar & Mushroom Bison Burger w/ Crinkle Fries

Today's Menu: Smoked Cheddar & Mushroom Bison Burger w/ Crinkle Fries

Another rainy and gloomy day outside around here again. From what the news says we have about 3 or 4 more days of this, Blah! Oh well just hunker down and make the best of it. So there's nothing better to beat the blahs than a good meal!

So for dinner I prepared a Smoked Cheddar & Mushroom Bison Burger w/ Crinkle Fries! I used Great Range Ground Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning, then pan fried it in Canola Oil about 4 minutes per side to medium rare. Served it on a Healthy Life Whole Grain Bun topped with Sauteed Baby Bella Mushrooms and a slice of Bordon Smoked Cheddar. LOVE BISON and Bison Burgers!

For a side I baked some Alexia Crinkle Fries. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with some fresh sliced Peaches!

Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and...

Dinner Tonight: Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread

Another rainy and dreary day around here today. Spent the biggest part of the day cleaning the house and baking cookies. As for dinner I prepared Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread.

I used another of Costco Top Sirloin Steaks. I prefer Bison but with the cost of Bison going up I use Beef from to time, and you can't beat Costco's Steak for flavor! if I have to eat Beef I prefer Costco's. I've yet to have a bad cut of Steak from them. As I said earlier the taste of these Steaks is heaven! The only seasoning you need for these is a little Sea Salt and Black Pepper. I pan fried it in Canola Oil about 5 minutes per side. Medium Rare and Delicious just like I like them! I topped it with Sauteed Baby Bella Mushrooms.

For side dishes I had a Baked Potato that I topped with I Can't Believe It's Not Butter, Sea Salt and Ground Black Pepper. Along with the Potato I had a single serving can of Del Monte Cut Green Beans and Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today's Menu: Bison Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Peas, and Whole Grain Bread

A cold and rainy day around here today so I warmed it up in the kitchen! I prepared a Bison Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Peas, and Whole Grain Bread. I used Great Range Brand Bison Sirloin, sold by Kroger.Seasoned it with McCormick Grinder Steakhouse Seasoning and a couple of dashes of Sea Salt. Pan fried in Extra Virgin Olive Oil about 4 minutes per side. Came out just like I like them, medium rare (pink in the center) with a nice char on the outside. Served it with a side of Sauteed Baby Bella Mushrooms.

For sides I had a Baked Potato that I seasoned with Sea Salt and Black Pepper and topped with I Can't Believe It's Not Butter. I also had some leftover Sugar Snap Peas that I reheated in the microwave and a couple of slices of Healthy Life Whole Grain Bread. For dessert a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.

Blackened, Smoked Cheddar, Mushroom Bison Burger!

Today's Menu: Blackened, Smoked Cheddar, Mushroom Bison Burger!

Not much of an appetite tonight. Went with a Bison Burger. Seasoned with Blackening Season and fried in Extra Virgin Olive Oil about 4 minutes per side. I served it on a Healthy Life Whole Grain Bun and topped it with sauteed Baby Bella Mushrooms and a slice of Bordon Smoked Cheddar Cheese. I just love the taste of Bison! I always use Great Range Fresh Ground Bison. I purchase it from Kroger. Kroger, at least around here, is the only store that sells fresh Bison. They carry the Ground Bison and Bison Sirloin. If you've never tried Bison you should give it a try, you'll never use Beef unless you have to again. For dessert later a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.

Buitoni All Natural Whole Wheat Four Cheese Ravioli w/ Bella Vita Pasta Sauce,...

Dinner Tonight: Buitoni All Natural Whole Wheat Four Cheese Ravioli w/ Bella Vita Pasta Sauce, Chicken Breast, and Baby Bella Mushrooms.

Went Italian for dinner tonight. I used Buitoni All Natural Whole Wheat Four Cheese Ravioli. It had been a while since I had the Buitoni Ravioli and it was on sale and I had a $1 off coupon to make it an even bigger bargain. The pasta is very easy to fix, just boil 7 - 9 minutes and drain and it's done! Along with the pasta I added a Chicken breast that I had also boiled and seasoned with McCormick Grinder Italian Seasoning. I sliced the breast up into several pieces and tossed it with the pasta and sauteed Baby Bella Mushrooms. I then topped everything with Bella Vita Low Carb Pasta Sauce (Roasted Garlic Flavor). The sauce is only 70 calories and 6 carbs! Plus it's loaded with flavor. The Buitoni Pasta is a tender and delicious pasta but be sure to follow the cooking instructions so you don't over cook it. For dessert later a bowl of Blue Bunny All Natural Frozen Yogurt Chocolate Vanilla Swirl. Another product you have to try if you already haven't!

I just love the taste of Bison Sirloin!

For sides tonight I had a Baked Potato that I seasoned with Sea Salt and Ground Black Pepper and topped with I Can't Believe It's Not Butter. I also warmed up a single serving of Del Monte Cut Green Beans. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Turkey Pot Roast & Sauteed Mushrooms w/ Orange - Glazed Carrots and Sugar Snap Peas

Dinner Tonight: Turkey Pot roast & Sauteed Mushrooms w/ Orange - Glazed Carrots and Sugar Snap Peas and Corn Bread.

It's been a very rough 24 hours for me. Any amputee will tell you Phantom Pains are the worst! I've suffered from them ever since I lost my leg. More on that later. Anyway I prepared a very good and hearty meal for dinner. I prepared a Jennie - O Turkey Pot Roast. It's the second time I've had this it's delicious and very easy to prepare. You can microwave or bake it which is the way I prepared it. I baked it at 375 degrees for 1 hour. It came out moist and juicy with great flavor. I made mine into a Pot Roast Sandwich that I topped with Sauteed Baby Bella Mushrooms and French's Spicy Brown Mustard, served on a Healthy Life Whole Grain Bun.

For a side I tried a new recipe from the Pillsbury web site, Orange-Glazed Carrots and Sugar Snap Peas. Sounds good, tastes better! Really a great side dish that would go with anything. The Orange Marmalade makes the perfect glaze and the Carrots and Sugar Snap Peas are the perfect combo. I used Smuckers Sugar Free Orange Marmalade for the glaze. Give this one a try if you want a great side dish. I left the recipe below along with the web link to the recipe at the Pillsbury web site. For dessert later I baked 3 mini loaves of Pillsbury Nut Quick Bread, I'll have a slice of that topped with Breyer's Carb Smart Vanilla Ice Cream. Time to settle back, enjoy dessert, and watch the new season of The Glades and the new series Longmire on A&E.

Orange-Glazed Carrots and Sugar Snap Peas

INGREDIENTS
2  cups ready-to-eat baby-cut carrots
1  cup Green Giant Select® frozen sugar snap peas (from 1-lb bag)
2  tablespoons orange marmalade
1/4  teaspoon salt
 Dash pepper

DIRECTIONS
1 In 2-quart saucepan, heat 1 cup water to boiling. Add carrots; return to boiling. Reduce heat to low; cover and simmer 8 to 10 minutes or until carrots are tender, adding sugar snap peas during last 5 minutes of cook time. Drain; return to saucepan. 2 Stir in marmalade, salt and pepper. Cook and stir over medium heat until marmalade is melted and vegetables are glazed.
Carrots are well known as a source of vitamin A. Did you know that they are also a good source of fiber?
In lieu of baby carrots, regular carrots can be washed, peeled and cut into coins to measure 2 cups. Check doneness with a fork as they cook.

Bison Sirloin & Sauteed Mushrooms w/ Glazed Carrots, Green Beans, and...

Today's Menu: Bison Sirloin & Sauteed Mushrooms w/ Glazed Carrots, Green Beans, and Whole Grain Bread

Spent the day cleaning, defragmenting, deleting files on the computer most of the day and was ready to get back doing what I enjoy most, Cooking! So for dinner I had a 6 oz. Bison Sirloin that I seasoned with McCormick Grinder Steakhouse Seasoning and pan fried in Extra Virgin Olive Oil about 4 minutes per side, medium rare. i just love the taste of Bison Meat! Whether your grilling it, frying it, or any other way of preparation it just can't be beat and healthier than other cuts of meat. Anyway I topped the Sirloin with Sauteed Baby Bella Mushrooms that was sauteed in I Can't Believe It's Not Butter and Extra Virgin Olive Oil and seasoned with Sea Salt, Ground Black Pepper, Parsley, Ground Smoked Cumin, and Mince Garlic.

Tried a new side tonight from the Pillsbury web site, Honey-Mustard Glazed Carrots. Another keeper recipe here! The Honey and Dijon Mustard are a great combo that makes the Carrots just explode with flavor. It's only 80 calories and 13 carbs. I left the recipe and a link to the Pillsbury web site at the end of the post. Along with the Carrots I had Green Beans and a slice of Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Grilled Bison Burger w/ Baked Crinkle Fries

Dinner Tonight: Grilled Bison Burgers w/ Baked Crinkle Fries

Fired up the grill up and made some Bison patties. I seasoned them with Sea Salt and Ground Black Pepper. I grilled them on medium high about 3 minutes per side. You have to keep a close eye on them because they cook so quickly. The taste of Bison on a open flame is a perfect pairing! I topped the Burgers with Lettuce, Baby Bella Sauteed Mushrooms, and a slice of Sargento's Reduced Fat Colby/Jack Cheese and served on a Healthy Life Whole Grain Bun. I was asked the other day what brand of Bison do I use. Well I use Great Range Bison Products. One reason is the quality and freshness of their products. This is the only fresh Bison that is sold around here. There are a few others but they are of the frozen variety. I left the web site link below for Great Range.

For a side I had baked Ore Ida Extra Crispy Crinkle Fries. For dessert later a Pillsbury Hot Apple Turnover topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

About Great Range Brand Bison
and Rocky Mountain Natural Meats

Great Range Brand Bison is produced and distributed by Rocky Mountain Natural Meats. Rocky Mountain Natural Meats started in 1986 as a small meat distributor devoted solely to bison. From the beginning, our focus was to provide high quality bison meat and great service to grocers, distributors and restaurants nationwide. An in-house grading system was developed to guarantee premium quality and consistency to the end user - this became the Great Range Bison brand. Carcass characteristics such as fat color, fat cover, muscle color, ossification and weight are the major factors in determining if the product receives the Great Range Bison brand. By working closely with our producers and assisting them with ration formulation, our quality control begins at the source. Today, Rocky Mountain Natural Meats processes over 400 head of bison per week.

In July of 1998, we built our first USDA facility to increase our ability to service customers across the nation. In March of 2004 we completed an addition that increased our processing and cooler storage areas to over 10,000 sq. ft. Utilizing Rinse & Chill™ technology at slaughter along with daily testing for E. coli we can ensure that our customers receive the industry's highest quality products. In December of 2007 we moved into our current facility. With increased sales came the need to build again – this time a 50,000 sq.ft. state-of-the-art fabrication and further processing facility that allows us to control all aspects of production post-slaughter. Our portion control and grinding lines allow us to meet the demands of any national restaurant or grocery chain. This attention to detail from Prairie to Plate™ has made Rocky Mountain Natural Meats the leading purveyor of premium quality bison nationwide. Article End Star

Whole Grain Penne Pasta and Turkey Sausage

Dinner Tonight:  Whole Grain Penne Pasta and Turkey Sausage w/ Mushrooms, Low Carb Pasta Sauce, and Whole Grain Bread

Whole Grain Penne Pasta and Turkey Sausage tonight, healthy and a true comfort food! I used Ronzoni Healthy Harvest Whole Grain Penne Rigate Pasta, a healthy pasta choice at 180 calories and 41 carbs. For the sauce I used Bella Vita Low Carb Pasta Sauce and that being only 70 calories and 6 carbs! I love this sauce it has great flavor and good on any pasta. So you get the full flavor of pasta sauce but not the calories or carbs. Then for the Turkey Sausage I used   Johnsonville Turkey Sausage. The sausage is 110 calories and 0 carbs.

I had precooked and sliced the Turkey Sausage earlier. I then boiled the pasta and while it was boiling I heated the pasta sauce and added the sliced Turkey Sausage and sliced Baby Bella Mushrooms. Cajun Buttermilk Chicken w/ Mashed Potatoes & White Peppered Gravy...

Dinner Tonight: Cajun Buttermilk Chicken w/ Mashed Potatoes & White Peppered Gravy and Green Beans

Well as they say on the Food Network "Winner, winner chicken dinner". There's a whole lot going on with this Chicken Breast! I marinated my Chicken For 4 hours in a Buttermilk, Egg Beater, Cajun Seasoning, and Frank's Red Hot Sauce. I mixed all the ingredients together in a Hefty Zip Lock Bag and added the Chicken making sure it well coated and let it marinate in the fridg. I removed the Chicken from the bag while shaking off the excess mixture. Then I dredged the marinated breast in a mixture of flour, sea salt and coarse black pepper. I pan fried my Chicken in Extra Virgin Olive Oil making sure it done through out. While my Chicken was frying I Sauteed my Baby Bella Mushrooms, fried the Turkey Bacon, and toasted my Bread. To assemble this piece of work take the toast and top it with the Chicken Breast then top the Chicken with a slice of Sargento Ultra Thin Swiss Cheese, Turkey Bacon, and the Sauteed Mushrooms. Everything blends to make one delicious Chicken Breast! I left the recipe at the bottom of the post.

For sides, like you need any with that chicken breast, I had Idahoan Mashed Potatoes that I topped with Pioneer White Peppered Gravy. The gravy was a last second idea, it was leftover from breakfast this morning. I also had some leftover Green Beans. I've been on a Green Bean binge lately. Seems that I can eat them with every meal! Everything together makes a fantastic Chicken Dinner! For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn and sit back and enjoy the Final Four tonight, Go Buckeyes!

Ground Pork Pesto Burger w/ Baked Crinkle Fries

Today's Menu: Ground Pork Pesto Burger w/  Baked Crinkle Fries

I love these Ground Pork Burgers the taste is fantastic, the pesto mixed in with the Pork is a perfect match! I had made up several of these and froze them. So after thawing I fried the Burger in Extra Virgin Olive Oil about 4 minutes per side. It came out moist and juicy bursting with flavor. I topped it with Sauteed Mushrooms, reduced Kraft Mayo, a teaspoon of Basil Pesto Sauce, and a slice of Smoked Gouda Cheese and served it on a Healthy Life Whole Grain Bun. I left the recipe at the end of the post.  As a side I had Baked Ore Ida Crinkle Fries. I also had a bottle of the new Snapple Drink, Half and Half Iced Tea & Lemonade Diet Snapple. Plus it’s only 10 calories and 0 carbs! For dessert later a slice of Pillsbury Nut Quick Bread.

Bison Sirloin Steak & Sauteed Mushrooms w/ Smashed Golden Potatoes, Roasted Asparagus,

Dinner Tonight: Bison Sirloin Steak & Sauteed Mushrooms w/ Smashed Golden Potatoes, Roasted Asparagus, and Harvest Grain Bread.

While shopping at Kroger this morning I ran across some beautiful looking Bison Sirloin Steaks. So it was from Kroger's to the table! I seasoned the Sirloin with McCormick Grinder Steakhouse Seasoning. I pan fried it in Extra Virgin Olive Oil about 4 minutes per side, Medium Rare. As usual it comes out mouth watering and tender! I topped it with my favorite Steak topping Baby Bella Sauteed Mushrooms.

For sides I had Smashed Golden Potatoes with Crumbled Turkey Bacon, I Can't Believe It's Not Butter, and a bit of Fresh Grated Smoked Goda Cheese. I quartered the Potatoes and seasoned them with Sea Salt, Ground Black Pepper, Parsley, and a 1/2 tablespoon of Extra Virgin Olive Oil, then boiled them. I also had fresh Asparagus that I roasted at 450 degrees for about 10 minutes. I seasoned them with Sea Salt, Ground Black Pepper, and topped them with Kraft Shredded Parmesan Cheese. I left the recipe for this at the end of the post. We also had Kroger Bakery Harvest Grain Loaf Bread. If you've never tried this give it a try when you get a chance. Always fresh and delicious! For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Roasted Asparagus

Ingredients

    2 bunches medium asparagus
    2 tablespoons extra-virgin olive oil
    1/2 teaspoon kosher salt
    Freshly ground black pepper
    Grated or shaved Parmesan, optional

Directions

Preheat the oven to 450 degrees F.

Trim the woody ends from the asparagus, usually about 1 1/2 inches. Lightly peel the remaining stalks (not always necessary, but more of a personal preference). Spread the spears in a single layer on a baking sheet, drizzle with olive oil, sprinkle with the salt and pepper, and roll to coat thoroughly.

Roast the asparagus until lightly browned and tender, about 8 to 10 minutes, giving the pan a good shake about halfway through to turn the asparagus. Arrange the roasted asparagus on a serving platter and top with some Parmesan. Serve warm or at room temperature.

Outside most of the day, Sunny and 70 degrees! I wanted something easy to fix but also tasty and filling. I went with a Jennie - O Savory Turkey Burger. Fried on medium in Extra Virgin Olive Oil and seasoned with Sea Salt and Ground Black Pepper. I topped it with some Sauteed  Baby Bella Mushrooms that were also sauteed in Extra Virgin Olive Oil and I Can't Believe It's Not Butter. I seasoned them with Ground Smoked Cumin, Sea Salt, Minced Garlic, and Parsley. I also topped it with a slice of Hardwood Smoked Gouda and served on a Healthy Life Whole Grain Bun.

For a side I had Ore Ida Baked Crinkle Fries. Later for dessert a slice of Pillsbury Nut Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.
