Dinner Tonight: Fried Walleye Fillet w/ Potato Pancakes and Green Beans







I just had a cup of Bigelow Decaf Green Tea for Breakfast this morning. It was one of those long sleepless nights again while dealing with Phantom Pains up until early this afternoon. It was a rough night as these were very painful. So after my Tea I did a couple of chores around the house and then it was back to bed to catch up on some much needed sleep. For Dinner tonight its a Fried Walleye Fillet w/ Potato Pancakes and Green Beans.







While at Costco yesterday I bought a package of fresh Canadian Walleye Fillets! There was 7 Fillets I gave Mom a couple of them that she froze. I also picked up a package of 5 fresh Tilapia Fillets, and a package of the Tuscan Seasoned Pork Tenderloin Medallions. I love Costco!











Okay back to those Walleye Fillets. I'm preparing 2 Fillets. I purchased a package of the smaller Fillets. To prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor! Costco has excellent Fish and Seafood selections!




So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and
makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). The whole family love’s these Potato Pancakes! They turn out so good and easy to reheat the leftovers.







For a second side I heated up a can of Del Monte Cut Green Beans. I also reheated a couple of slices
of leftover Multi Grain Bread. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn along with a Coke Zero to drink.

Manischewitz Potato Pancake Mix

Directions
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil,
large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Plenty of sunshine all day today, but had a light cool breeze and in the 40's. They say it will hit close to 70 degrees tomorrow and sunny! Hope they're right for tomorrow is Holiday here in the Cincinnati area, it's Opening Day! The Red's first game of the year and a positive sign Spring is here. Pulled my 4 wheel mobility cart out of the shed and charged it up and cleaned it up a bit. Went to Kroger for Mom and picked up a few things for her and home. For dinner tonight it's a Baked Pork Chops w/ Mashed Potatoes and Cut Green Beans







Had this Chop froze so i laid it out overnight in the fridge to thaw. It's one of Pork Chops I had bought at Costco a while back. Costco has some of the finest meats around and the Pork Chops are right there with some of the best! I started by marinating them in J B’s Fat Boy’s Haugwash Barbecue Sauce. Just the name Fat Boy’s Haugwash makes my mouth water! If you’ve never tried any of their Rubs or Sauces you got to give them a try! The best I’ve ever had, bar none. Wish it was a little lower in calories and carbs but it’s worth cutting back on other things to fit this in the dinner. Anyway I marinated the Chops in the Sauce and refrigerated it for 4 hours. I removed the chops from the fridge and shook off any excess of the sauce and then seasoned it with McCormick Grinder Sea Salt and Grinder Black Peppercorn. I then pan fried the Chops in a Cast Iron Skillet, browning both sides then baked the Chops at 400 degrees for 20 minutes flipping the Chops over after 10 minutes, internal temperature was at 150 degrees. They came out moist, tender, and delicious!









For one side dish I heated up some Bob Evan's Mashed Potatoes, just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then I heated up a small can of Del Monte Cut Green Beans. Also had a slice of Klosterman Wheat Bread and an ice-cold Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Dinner Tonight: Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread



Another rainy and dreary day around here today. Spent the biggest part of the day cleaning the house and baking cookies. As for dinner I prepared Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread.


I used another of Costco Top Sirloin Steaks. I prefer Bison but with the cost of Bison going up I use Beef from to time, and you can't beat Costco's Steak for flavor! if I have to eat Beef I prefer Costco's. I've yet to have a bad cut of Steak from them. As I said earlier the taste of these Steaks is heaven! The only seasoning you need for these is a little Sea Salt and Black Pepper. I pan fried it in Canola Oil about 5 minutes per side. Medium Rare and Delicious just like I like them! I topped it with Sauteed Baby Bella Mushrooms.

For side dishes I had a Baked Potato that I topped with I Can't Believe It's Not Butter, Sea Salt and Ground Black Pepper. Along with the Potato I had a single serving can of Del Monte Cut Green Beans and Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Dinner Tonight: Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread




A chilly morning around here today, 26 degrees with a wind chill of 19 degrees. I believe winter is very close. I'm just cooking for 2 tonight, my Mom and myself. My Dad is in the hospital. He fell the other day and he's having severe pain in the rib and back areas. Scans and x-rays show no breaks but there is something causing the pain.

I spent some of the day at the hospital but Mom was up there all day so I wanted to make sure I prepared her a good and hearty meal. So I prepare a couple of Top Sirloin Steaks & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread. I used a couple of the Costco Top Sirloin Steaks. Which reminds me I have to go to Costco next week, they have their Holiday Prime Rib in stores now and I want to put one away for Christmas. I Really like Costco Meats, for price and freshness. These Steaks have such good flavor the only seasoning needed is a little Sea Salt and Ground Black Pepper. I pan fried them in Canola Oil. I had to fry them a little longer than normal because of the thickness of them. I had to fry the larger of the 2 about 10 minutes total, 5 minutes per side. This one's for Mom, she likes her Steak Well Done. The other Steak was on for about 9 minutes, 4 1/2 minutes per side. They came out perfect! One tender Well done and the other a moist and juicy Medium Rare. I just love the flavor of these Costco Steaks!

For sides I had a couple of Baked Potatoes, Cut Green Beans, and Healthy Life Whole Grain Bread. I always just microwave my Baked Potatoes anymore, Easier, quicker, and just as good as baking them. Just scrub your Potatoes with water removing any dirt and with a sharp knife puncture the Potato about 3 times on each side. This helps the Potato to cook completely inside. For the Green Beans I used my favorite , besides home canned Green Beans, Del Monte Cut Green Beans and we had Healthy Life Whole Grain Bread. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Dinner Tonight: Top Sirloin & Sauteed Mushrooms w/ Sliced New Potatoes, Sugar Snap Peas, and Whole Grain Bread




It was 70 degrees and sunny yesterday and it started out at 55 this morning and it's been falling temperatures all day. Parents are both down with the flu so I've been busy all day. For dinner I couldn't wait to break out those Top Sirloin Steaks from Costco I purchased yesterday. I believe Costco has some of the most tender and flavorful Steaks and Chops around! The first Steak I got out was huge! I cut into thirds and each Steak was more than enough for one person.

I seasoned it with Sea Salt and Ground Black Pepper and then pan fried it it in Extra Virgin Olive Oil. I would have loved to grill these but the weather prevented that, blowing rain and even a little bit of sleet. The Steaks were so thick I had to fry them longer than normal to get these at medium rare. I flipped them over a couple of times and then even had to lay them on their sides for 2 or 3 minutes. They came out great! Tender, moist and just flat out delicious. It would be hard to find a better steak than Costco's.




For side dishes I had Walmart Marketside Sugar Snap Peas, a can of Del Monte Sliced New Potatoes, and Healthy Life Whole Grain Bread. For dessert later a Jello Sugarless Chocolate Pudding topped with Cool Whip Free.

Today's Menu: Grilled Top Sirloin Steak w/  Baked Crouton Coated Mushroom Crisps and Baked Potato




Beautiful day outside about 70 degrees and Sunny! Which means it's a beautiful day to fire the grill up. I grilled a Top Sirloin Steak, my last one I had in the freezer from Costco. I have a feeling I'll be making a trip to Costco shortly! I put a light rub of Extra Virgin Olive Oil on it and then seasoned it with McCormick Grinder Sea salt and Black Peppercorn. The Olive Oil not only helps brown the Steak but keeps it from sticking to the grill also. I grilled it 4 minutes per side to medium rare.  If you haven't tried Costco's Meats you have to give them a try. We've had their Pork Chops and Top Sirloin Steak and they've been unbelievable. This one was pink and moist in the center with a nice char and grill marks on the outside!

For side dishes I had Baked Crouton Coated Mushroom Crisps and a Baked Potato. The Mushrooms were a new one I tried, Crunchtables  Crouton Coated Mushroom Crisps. They are easily prepared; they come frozen, just bake at 450 degrees for 11 minutes turning them over once after about 6 minutes.. The only thing wrong with these are they are too good! The Crouton Coating is a great pairing with Portabella Mushrooms. Their 140 calories and 19 carbs. I left the product description and web site link at the bottom of the post. I also had a Baked Potato that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn and topped with I Can't Believe It's Not Butter. Nothing like a Steak and Potato Dinner! For dessert later a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.

Grilled Pork Chop w/ Cinnamon Apples, Yellow Carrots & Sugar Snow Peas,...


Today's Menu: Grilled Pork Chop w/ Cinnamon Apples, Yellow Carrots & Sugar Snow Peas, and Mashed Potatoes




Tried one of the Pork Loin Chops I purchased at Costco the other day. So now I know along with the tender Top Sirloin Steak they have they also have some mighty tender and delicious Pork Loin Chops! The Chops grilled up beautifully. I rubbed a light coating of Extra Virgin Olive Oil and seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. I grilled them 4 1/2 minutes per side. As I said earlier they came out moist and tender and love those grill marks! I topped the Chops with a tablespoon of the Counry Crock Cinnamon Apples leftover from the other night.

For sides it was leftover Heaven! I warmed up all the leftovers from the past day or so; Country Crock Cinnamon Apples Sugar Snow Peas, Yellow Carrots, and Bob Evans Mashed Potatoes. Great variety and all were just as good as the first time around. For dessert later a Jello Sugar Free Chocolate Pudding topped with Coll Whip Free.
