The Kitchen is Closed! – Izzy’s Tonight

Dinner Tonight: Izzy’s Lean Corned Beef Sandwich w/ Pringle Fat-Free Chips

Another night of heavy rain but it was a beautiful day. Got a few things done around the house and then I hopped in the car and got out and enjoyed the day! Stopped by a friend's house for a bit and then drove to a local park. Very relaxing day. For dinner, that was a tough choice. It was one of those days where nothing sounded good. So when in doubt why not Izzy’s! Dinner tonight, Izzy’s Lean Corned Beef Sandwich w/ Pringle Fat-Free Chips.

There's not a close second to Izzy’s Corned Beef. Plus with their “Lean” version of the Corned Beef it makes it healthier also. The sandwich contains 170 calories and 16 carbs per serving (1/2 Sandwich) and 340 calories and 32 carbs for a Full Sandwich. I had the Full Sandwich along with a serving of Pringle Fat-Free Chips and their 70 calories and 14 net carbs per serving. Then to go along with it all I had an Ice-Cold Diet Dr. Pepper, 0 calories and 0 carbs. For dessert later a bowl of Breyer's Carb Smart Chocolate Ice Cream.

Grilled Bison Sirloin & Sauteed Mushrooms w/ Baked Potato, Boiled Carrots and...

Dinner Tonight: Grilled Bison Sirloin & Sauteed Mushrooms w/ Baked Potato, Boiled Mini Carrots, and Whole Grain Bread

Beautiful outside today so I fired the grill up! I grilled a Bison Sirloin. As I've said in past posts when preparing Bison you have to keep a close eye on it as it gets done really quick. I grilled each side 4 minutes and it came out a perfect medium rare, tender and juicy! I topped it with some Sauteed Baby Bella Mushrooms that I seasoned with Sea Salt, Ground Smoked Cumin, and Parsley. For side dishes I had a Baked Potato, Boiled Mini Carrots, and Healthy Life Whole Grain Bread. Later for dessert a bowl of Breyer's carb Smart Vanilla Ice Cream topped with some warmed Cinnamon Apple Slices.

Top Sirloin and Sauteed Mushrooms w/ Green Beans and...

Dinner Tonight: Top Sirloin and Sauteed Mushrooms w/ Green Beans and Boiled New Potatoes

I had a Top Sirloin Steak that I seasoned with JB's Fat Boy Premium Steak Rub. I would've liked to grill it but the heat index outside is 110 and the humidity is smothering so I pan fried it in Extra Virgin Olive Oil about 4 1/2 minutes a side, it was a thick cut. Turned out a beautiful medium rare and topped it with sauteed Mushrooms that I seasoned with Smoked Cumin, Sea Salt, Pepper, Parsley, and Thyme. As sides I used some leftover Boiled New Potatoes and leftover Green Beans. Dessert later Breyer's Carb Smart Vanilla Ice Cream topped with some fresh Blueberries.

As sides I had two leftovers from last night, Boiled Sliced New Potatoes and Kroger Bakery Harvest Grain Bread. Dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte Sugarless Sliced Peaches. Happy 4th all!

Copper River Salmon w/ Green Beans and Three Cheese Tortellini

Dinner Tonight: Baked Copper River Salmon w/ Green Beans and Three Cheese Torteillini

Had a fillet of the Copper River Salmon. Not much seasoning neede with this Salmon, I seasoned with Sea Salt, Grinder Black Pepper, and Parsley. Then Baked at 375 degrees for 11 minutes. As sides had Green Beans and Barilla Three Cheese Tortellini. Wish the Tortellini was lower in in calories and carbs but every now and then I think it's okay. It was a very low carb and low calorie day for breakfast and lunch so the Tortellini will fit in the plans. I added Kraft Shredded Parm Cheese and chopped up some fresh Chives to top the Tortellini with. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream and some fresh Blueberries to top it off.
