When cooking your baked potato in your microwave oven, if you put it in a brown bag, it will come out very moist instead of dry. I've never tried this one, yet!

Tempura Shrimp and Baked Potato
Dinner Tonight: Tempura Shrimp and Baked Potato
For Breakfast this morning I had a cup of Bigelow Decaf Green Tea, not much of an appetite this morning. After Breakfast I headed out to Meijer, just needed a few items. Stopped by McDonald's and picked up Breakfast for Mom and Dad. I've had a nagging Sinus Headache since yesterday so I took it easy this afternoon. For Dinner tonight I prepared Tempura Shrimp and Baked Potato.
I came across the SeaPak Tempura Shrimp at Meijer in the Frozen Food Aisle. I love using the
SeaPak Seafood Products, first time trying the Tempura Shrimp. As all their products its easy to prepare. First I preheat oven to 400°f. Arranged the frozen shrimp in single layer on a small baking sheet covered with foil and sprayed with Pam Non Stick Cooking Spray. I baked the Shrimp for 18 minutes, turned the shrimp over after 6 minutes.
The Shrimp came out with a great Tempura Crust and the Shrimp was delicious! Love the crunchiness and the Shrimp was so tasty. I'll have to keep a box of these in the freezer. Served it with a side of Heinz Shrimp Cocktail Sauce.
To go with the Shrimp I prepared a Baked Potato. I took a medium - sized Russet Potato and grabbed
a knife and made small punctures all around the Potato. Put the Potato in a Microwavable Bowl and cooked for 7 minutes and 20 seconds on high heat. Served the Potato Seasoned with McCormick Grinders of Sea Salt and Peppercorn Medley and I Can't Believe It's Not Butter. Love a good Potato! For Dessert later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

Kitchen Hint of the Day!
Baked Potato...........
Wrapping a potato in foil won't actually make it bake faster. Rubbing it lightly with vegetable oil, however, will. Also pierce the skin of the potato with a fork to allow the steam to escape. Doing this will give it a fluffy texture.

Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato
Dinner Tonight: Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato
To start my morning off I had Steak and Eggs. I love these SayersBrook 4 oz. Bison Filet Mignon! I had used my last one a couple of weeks ago and had ordered more of them that came in yesterday. So to prepare it I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. It came out a perfect medium rare! It was so tender and juicy. Then I also fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also as usual, had my morning cup of Bigelow Decaf Green Tea.
Another cool morning out there, 32 degrees and a few snow flakes. We only had a high in the low
40's. Mom went to Church and I stayed home to keep an eye on Dad. His Dementia is getting worse everyday. I feel so sorry for him. So for Dinner it was a Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato.
For Dinner tonight it’s the always delicious SayersBrook Ranch Bison Chopped Sirloin Steak. I love this Chopped Steak. To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves (all seasoning to taste). I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes. Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them. Another very good item from SayersBrook Ranch!
I topped the Chopped Steak with some A-1 Sauce Thick/Hardy. Also cooked up some Sauteed Mushrooms.
For a side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and
Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.
SayersBrook Ranch Bison Chopped Sirloin Steak
If you like the flavor of the sirloin, love the Bison Burger but want to take it up a notch, then the Chopped Sirloin Steak is for you! 4 lbs (4 packages each with 2-8oz chopped sirloin steaks).
Great flavor of the sirloin but also extremely tender and juicy.

Sea Salt Herb Rubbed Tri-Tip Buffalo Steak and Marsala and Mushroom Sauce w/ Roasted Asparagus and Baked Potato
Dinner Tonight: Sea Salt Herb Rubbed Tri-Tip Buffalo Steak and Marsala and Mushroom Sauce w/ Roasted Asparagus and Baked Potato
To start the morning off I prepared some Simply Potatoes Shredded Hash Browns, fried 2 Jennie - O Turkey Breakfast Sausage Links, toasted a Healthy Life Whole Grain English Muffin, and a cup of
Bigelow Decaf Green Tea. The rain has moved on and its sunny and 80 degrees! Did a little house cleaning and the laundry. After Lunch I got the cart out of the shed and enjoyed the day. Mom called later in the day and wanted me to go pick up a few things for her at Kroger. For Dinner tonight I prepared a Sea Salt Herb Rubbed Tri-Tip Buffalo Steak and Marsala and Mushroom Sauce w/ Roasted Asparagus and Baked Potato.
For Dinner tonight I tried the Wild Idea Buffalo - Sea Salt Herb Rubbed Tri-Tip Buffalo Steak. it comes packaged as 2 - 4 oz. steaks per packaged. It's already Seasoned with Organic: Olive Oil, Sea Salt, Lemon Juice, Black Pepper, Sage, Thyme, Rosemary, Garlic, and Onion Powder.
To prepare it I preheated the oven to 425°. In a Cast Iron Skillet that I sprayed with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil to, I heated it over medium high heat. When
ready I added my Steaks to it. I cooked the Steaks 1 minute each side. I just wanted a light sear on both sides. Then I moved the Skillet on to the preheated Oven and Roasted it for about 4 minutes. Removed the Skillet from the Oven and placed the Steaks on a plate and let them rest for 5 minutes before cutting. The Tri -Tip Steak was super tender and juicy. I had cooked to a medium rare and it came perfect! First time I tried the Sea Salt Herb Rubbed Tri-Tip Buffalo Steak and like all the other Wild Idea products it was delicious!
I topped the steak with a new product I came across at Kroger the other day, Fortun's Marsala and Mushroom Sauce. First time trying this item also. Its easily prepared, just heat in a sauce pan or microwave it. I prepared it in a small sauce pan. Good amount of Mushrooms and one tasting Sauce! Here's another Item I'll have to keep in stock! They have different varieties and looking forward to trying those also.
For one side I prepared some Roasted Asparagus. To prepare the Asparagus I needed Extra Virgin Olive Oil, Garlic (minced), Sea Salt, Freshly grated Black Peppercorn, Lemon Juice, and Shredded
Parmesan Cheese. To prepare it; Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in the preheated 400 degree oven and roast for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving.
Then for another side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. Really enjoyed this Dinner tonight! For Dessert/Snack later tonight a bowl of Skinny Pop - Pop Corn with a Diet Trop A Rocka Snapple to drink.

5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Potato and Cut Italian Green Beans
Dinner Tonight: 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Potato and Cut Italian Green Beans
For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin (lightly buttered), fried 2 Jennie - O Turkey Breakfast Sausage Patties, and the morning cup of Bigelow Decaf Green Tea. After Lunch I headed up to the hospital to see Dad. He's looking a lot better and feels a whole lot better. They still have him on heavy duty water pills, and they seem to be working as most of the water has now drained. Another hot and humid day out! Back home did a load of laundry and some house cleaning. For Dinner tonight I prepared a 5 oz. Petite Buffalo Top Sirloin Steak w/ Baked Potato and Cut Italian Green Beans.
I’ll be using Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with Dried Rosemary, McCormick’s Grinder Sea Salt and Peppercorn Medley. As the Steak rested I preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 1/2 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo I’ve ever had. As always when cooking Buffalo, keep an eye on it will get done quickly. They cook faster than marbled meat and when overcooked will be tough and dry. Buffalo is best cooked medium-rare or rare. I topped it with some Sauteed Mushrooms.
For one side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter.
For another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I also baked a slice of the New York Bakery Light Texas Toast Bread, love this Bread!. For Dessert later a Weight Watcher’s Divine Triple Chocolate Ice Cream Bar.
Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak
Famous for their flavor, these juicy steaks are perfect for the grill. The small size makes for a great meal for one. 5 oz.

Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato
Dinner Tonight: Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato
To start the morning off I toasted a Healthy Life Whole Grain English Muffin and I reheated a 1/2
piece of a Cubed Steak (Beef). And I had a Breakfast Sandwich. Mom had prepared the Cubed Steak the night before and had one leftover. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I started a load of laundry for Mom and then it was on to house cleaning, vacuumed and dusted. Later on repotted a couple more of plants for Mom. Got the cart out and took a spin around the neighborhood. It's 77 degrees and sunny, beautiful out today! For Dinner it was a Bison Chopped Sirloin Steak w/ Sauteed Mushrooms and Baked Potato.
For Dinner tonight it's the always delicious SayersBrook Ranch Bison Chopped Sirloin Steak. I love
this Chopped Steak. I cooked each side 4 minutes. Then finished it in the oven, at 400 degrees for 5 minutes.

Chopped Sirloin Steak is for you! 4 lbs (4 packages each with 2-8oz chopped sirloin steaks).

If you like the flavor of the sirloin, love the Bison Burger but want to take it up a notch, then the
Chopped Sirloin Steak is for you! 4 lbs (4 packages each with 2-8oz chopped sirloin steaks).
Great flavor of the sirloin but also extremely tender and juicy.

Orange Roughy Fish Hoagie w/ Baked Potato
Dinner Tonight: Orange Roughy Fish Hoagie w/ Baked Potato

I picked up the Orange Roughy while at Kroger yesterday and decided to have it as a Fish Sandwich . I normally don't purchase Orang Roughy due to it's sustainability classification. But it was in the case already packaged and I grabbed it. So to make it I'll need; the Orange Roughy Fillet, Morton's Lite salt and Black Ground Pepper, and Progresso Italian Style Bread Crumbs. I'll also need McCormick Tarter Sauce, Bib Lettuce, and Kroger 100% Whole Wheat Hoagie Roll.

To prepare it I first rinsed the fillet off in cold water and patted dry with a paper towel. I then grabbed a skillet and sprayed it with Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Then preheated the skillet on medium heat. Back to the fillet, I seasoned both sides of the fillet with salt and pepper. Next I took a pie pan and added some of the Progresso Italian Style Bread crumbs to it and put the fillet in, making sure all sides were well covered.
With the skillet heated I added my fillet. I then fried it for 3 minutes per side. It fried up perfect!
Golden Brown on the outside and a moist center. I then got one of the Hoagie Rolls and laid a couple of the Bib Lettuce Leaves on the bottom bun, then the Orange Roughy Fillet, then got the Tarter sauce and spread it on the bottom of the top bun and it was ready! Orange Roughy makes a perfect Fish Sandwich. Fries up great and an excellent taste to it.

For a side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and
Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. For Dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar. See everyone tomorrow!

BBQ Pork Loin Boneless Backribs w/ Baked Potato and Mini Ears of Corn on the Cob
Dinner Tonight: BBQ Pork Loin Boneless Backribs w/ Baked Potato and Mini Ears of Corn on the Cob

For Breakfast this morning i toasted a Healthy Life Whole Grain English Muffin that I topped with I Can't Believe It's Not Butter. Also, as usual my morning cup of Bigelow Decaf Green Tea. Mom needed a few items for Dad so after Breakfast I went to the Kroger up the road. While there I picked up a package of the Swift Premium Dry Rubbed Kansas City Style BBQ Pork Loin Boneless Backribs. The Pork Loin Boneless Backribs are just over 1 lb. and already Rubbed and Seasoned. Second time we've had these, really enjoyed them the first time!

I chose the Baking Method to prepare it. I preheated the oven on 350°F. Removed the meat from package and placed cut side up in an uncovered roasting pan. The instructions said to cook approximately 40 to 45 minutes or until internal the temperature on a meat thermometer reaches 145°F in the thickest part of the meat. After 20 minutes I put a light glaze of Jack Daniel's Honey Smokehouse BBQ Sauce. It took about the full 45 minutes to reach the 145°F. Removed from oven and let rest 3 minutes. Then carve and serve. Lean, moist, and seasoned perfectly! Just an excellent flavor and very tender. A very good item to have handy in the freezer!
For a side I prepared a Baked Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley, topped it with I Can’t Believe It’s Not Butter.
I also boiled some Green Giant Mini Ears of Sweet Corn. If you’ve never tried the Green Giant Corn you need to! It’s frozen Mini Ears of sweet Corn and you just boil for 10 minutes and you have some of the Sweetest Corn you can find! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

One Potato, Two Potato.......
When baking potatoes, pierce the skin with a fork to allow the steam to escape. This will give your potatoes a fluffy texture.

Fried Walleye Sandwich w/ Baked Potato
Dinner Tonight: Fried Walleye Sandwich w/ Baked Potato
For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, 2 Jennie - O
Turkey Breakfast sausage Links, toasted a slice of Healthy Life Whole Grain Bread (lightly buttered), and a cup of Bigelow Decaf Green Tea. A couple of showers this morning and throughout the day, had a high in the 40's. After Breakfast and my morning workout I started a couple of loads of laundry for Mom. After I started the Laundry I went to McDonald's to pick up Breakfast for Mom and Dad. Back home cleaned the house today, ran the vacuum and dusted. Dinner tonight its a Fried Walleye Sandwich w/ Baked Potato.
I had purchased a couple of Walleye Fillets at Kroger and had prepared 1 of them and had the other in
the freezer, I laid the fillet in the fridge overnight to thaw. I love Walleye we had not so couldn’t wait to have some again. I rinsed the fillet off in cold water and patted it dry with a paper towel and cut the fillet in half. Seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Light Olive Oil on medium heat, about 3 to 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor. I served it on a Healthy Life Whole Grain Bun.
For a side I prepared a Baked Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley, topped it with I Can’t Believe It’s Not Butter. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Blackened Mahi Mahi Sandwich w/ Baked Potato
Dinner Tonight: Blackened Mahi Mahi Sandwich w/ Baked Potato
I had a toasted Healthy Life Whole Grain English Muffin topped with Smucker's Sugar Free Blackberry Jam and a cup of Bigelow Decaf Green Tea for Breakfast. After Breakfast I headed out to Meijer and stopped at Kroger to pick up a few items for Mom. I wanted to get things done early before the heat and humidity set in for the day. I don't mind the high temperatures but can't stand the high humidity. Back home did some cleaning, vacuum and dusting. For Dinner tonight I prepared a Blackened Mahi Mahi Sandwich w/ Baked Potato.
Some good friends of mine called yesterday and said to come over and pick up some fish they had
caught at the Florida Gulf. They gave me some beautiful fillets of Grouper and Mahi Mahi. So I couldn't wait to try one, and went with the Mahi Mahi. To prepare it I rinsed the fillet off in cold water and patted it dry with paper towel. I then seasoned them it with a bit of Sea Salt. Then I melted 1 tablespoon of Blue Bonnet Lite Butter and rolled the fillet in the Butter. I then added the Zatarain’s Blackening Seasoning, coating both sides of the fillet.
I prepared it in a preheated Cast Iron Skillet that I sprayed with Pam Cooking Spray. When the pan
was fully heated, on medium heat, I added the Mahi Mahi. At this point turn on your Stove Overhead Exhaust Fan on, because it will start smoking from the seasoning. Cooked it about 4 minutes per side, and it was ready! Cast Iron Skillets are perfect to use for any cooking but especially when you Blacken something. The Skillet heats up and holds it heat and the heat evenly distributes across the Skillet, perfect for Blackening Meats. This is one delicious Mahi Mahi fillet! The fresh taste of the Mahi Mahi, so meaty, along with the Blackening Season are a perfect combo. Love Fish, Love Seafood! I served it on an Aunt Millie's Reduced Calorie Whole Grain Hamburger Bun. I topped it with some Louisiana Remoulade Sauce.
For a side I prepared a Baked Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn
Medley, topped it with I Can’t Believe It’s Not Butter. For dessert later a Jello Sugar Free Dark Chocolate Pudding.
Zatarain’s Blackened Seasoning
This spicy seasoning blend is rubbed on the outside of fish (or chicken, steak or other meats) for
blackening. Also great as a seasoning rub for the grill or broiler.
Ingredients:
SALT, PAPRIKA, CAYENNE PEPPER, BLACK PEPPER, WHITE PEPPER, CHILI POWDER, MONOSODIUM GLUTAMATE, ONION, GARLIC, SPICES.
