Dinner Tonight: Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Seasoned Pinto Beans
A day of errands today. The Bank, Post Office, Meijer, and Walmart. Got a couple of Gift Cards for the family, buying some early Christmas Gifts. The storm they were warning everyone about for 2 days barely affected our area, and it didn't come in till about 10 pm last night. For dinner tonight; Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Seasoned Pinto Beans.
Still running low on the Wild Idea Buffalo Steaks so I used a Great Range Bison Sirloin. I seasoned it with McCormick Grinder Sea salt and Black Peppercorn. No new grill yet so I pan fried it in Canola Oil, about 4 minutes per side. Medium rare with a nice char on the outside and a little pink and moist inside, love Bison or Buffalo! Topped it with some Sauteed Baby Bella Mushrooms. Steak and Mushrooms are always the perfect pairing.
For a side I had a Baked Potato that I seasoned with Sea Salt and Ground Black Pepper, topped with some I Can't Believe It's Not Butter. Then I also heated up a can of Margaret Holmes Seasoned Pinto Beans. First time I tried these, I picked a can up while at Walmart earlier. And as all Margaret Holmes Products they were delicious! Nicely seasoned and full of flavor. For dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Dinner Tonight: Buffalo Sirloin and Sauteed Mushrooms w/ Baked Potato, Green Beans and Whole Grain
Bread
As I went to the bank and running a couple of errands I noticed how good the Corn crops are looking this year. This time last year they looked terrible from lack of any rain. This year we've had plenty of rain and the Corn has really flourished, good news for our farmers. For dinner I prepared a Buffalo Sirloin and Sauteed Mushrooms w/ Baked Potato, Green Beans and Whole Grain Bread.
I had a Great Range Bison Sirloin Steak froze that I wanted to use. The grill is still on the outs so I pan fried the Bison. I fried it in Canola Oil on medium heat about 4 minutes per side, seasoning it with McCormick Grinder Sea Salt and Black Peppercorn. I used Great Range Bison Sirloin, my second favorite Bison next to Wild Idea Buffalo. It came out medium rare and delicious! A little char on the outside and moist and pink in the center, Love that Bison! Topped it with Sauteed Baby Bella Mushrooms.
Along with Buffalo Sirloin and Mushrooms I prepared a Baked Potato that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn and topped with I Can't Believe It's Not Butter. I also had a side of some leftover Green Beans my Mom I prepared yesterday along with a couple of slices of Healthy Life Whole Grain Bread. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Bison Sirloin w/ Pan Fried Fingerling Potatoes with Wild Mushroom Sauce,....
Dinner Tonight: Bison Sirloin w/ Pan Fried Fingerling Potatoes with Wild Mushroom Sauce, Green Beans, and Whole Grain Bread
Steak and Potatoes for a Sunday Dinner! For dinner I prepared a Bison Sirloin w/ Pan Fried Fingerling Potatoes with Wild Mushroom Sauce, Green Beans, and Whole Grain Bread. First time for the Pan Fried Fingerling Potatoes with Wild Mushroom Sauce. I came across it at the best potato recipe site, http://www.potatogoodness.com
For the Bison Steak I used Great Range Brand Bison. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. Pan fried it Canola Oil about 4 minutes per side, medium rare. I just don't think you can beat the flavor of Bison! Plus it's healthier than other types of meat also.
Now my side dishes! I had the new recipe Pan Fried Fingerling Potatoes with Wild Mushroom Sauce, Del Monte Cut Green Beans, along with Healthy Life Whole Grain Bread. The Pan Fried Fingerling Potatoes with Wild Mushroom Sauce as I said earlier was recipe on the potato Goodness web site. It's a little time consuming but worth the effort and wait! Just a lip smacking Potato recipe! It has Fingerling Potatoes, Mixed Wild Mushrooms, Garlic, Heavy Cream, Dijion Mustard, Garlic, and Herbs. With all that you know how good this turned out! It's another keeper Potato recipe from the Potato Goodness web site. I left the recipe along with the web link at the bottom of the post. For dessert later a Jello Sugar Free Dark Chocolate Pudding.
Pan Fried Fingerling Potatoes with Wild Mushroom Sauce
Ingredients
2 tablespoons butter
1 1/2 pounds fingerling potatoes (any shape, size and color), halved lengthwise
2 cups sliced mixed wild mushrooms (such as small portabella, crimini or shitake)*
2 cloves garlic, minced
1 large shallot, thinly sliced
1 cup chicken broth*
1/4 cup chopped dried mixed wild mushrooms (1/2 of a 1-oz. package)
2 teaspoons Dijon mustard
3/4 teaspoon herbs de Provence
1/2 cup crème fraiche or heavy cream
Freshly ground pepper to taste
Chopped fresh thyme
Directions
Melt butter in a large skillet over medium heat. Add potatoes; cook, stirring occasionally, for 30 minutes or until potatoes are tender. (Tenting with foil will speed up cooking.) Stir in fresh mushrooms, garlic and shallot; cook for 10 minutes more. Add broth, dried mushrooms, mustard and herbs; cook over high heat for 5 minutes or until most of the broth has cooked off. Stir in crème fraiche and cook for 5 minutes more. Season with pepper and fresh thyme.

Bison Sirloin & Sauteed Mushrooms w/ Applewood Smoked Bacon Homestyle Casserole ,...
Dinner Tonight: Bison Sirloin & Sauteed Mushrooms w/ Applewood Smoked Bacon Homestyle Casserole, Shellie Beans, and Whole Grain Bread
Cold and windy day out today and a high of 38 degrees! Ran some errands for my Mom as most of her time is spent at the rehab center with my Dad. While out I purchased a Prime Rib Roast for Christmas day Dinner. It seems prime Rib just keeps going up and up in price. I also picked up a couple of Bison Sirloin Steaks for dinner to night.
I've been trying to have my Mom a good hot meal for her at night. She's 85 but still goes like she's 40 but the daily stay at the rehab center is really tiring her out. So the least I can do is make sure she eats good! So for dinner I prepared a Bison Sirloin & Sauteed Mushrooms w/ Applewood Smoked Bacon Homestyle Casserole, Shellie Beans, and Whole Grain Bread. For the Bison Sirloins I seasoned them with McCormick Grinder Steakhouse Seasoning and a couple of shakes of Sea Salt. I pan fried them in Canola Oil about 4 minutes per side, medium rare. I kept my Mom's Steak on an extra minute, she likes hers about medium well. I've finally got my Mom eating Bison! She had a couple of Bison Burgers here lately, another convert to Bison! I topped the Steaks with Sauteed Baby Bella Mushrooms.
For sides I prepared Idahoan Applewood Smoked Bacon Homestyle Casserole, Libby's Shellie Beans and Healthy Life Whole Grain Bread. First time I tried the Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like he others this turned out fantastic! Very well seasoned, and you can actually taste that Applewood bacon flavor. For dessert a Skinny Cow Cookies and Cream Truffle Ice Cream Bar, 110 calories and 20 carbs.
Idahoan Applewood Smoked Bacon Homestyle Casserole
The saying is “everything is better with bacon” and we couldn’t agree more. That’s why we incorporated Applewood Smoked Bacon in with our rich cheesy sauce for this homestyle casserole that is sure to become a family favorite.
Oven Preparation
Preheat oven to 450°F. Combine potatoes and sauce mix in 1 1⁄2-quart baking dish.
Stir in 1 1/2 cups boiling water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling). Remove from oven and let stand a few minutes before serving.
Baking Notes: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min.
Stove Top Preparation
Heat potatoes and sauce mix, 1 1/2 cups hot water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boilover.
Reduce heat, then cover and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
Remove from heat and let stand a few minutes before serving.

Bison Sirloin Steak & Sauteed Mushrooms w/ Baked Potato and Green Beans
Dinner Tonight: Bison Sirloin Steak & Sauteed Mushrooms w/ Baked Potato and Green Beans
For dinner tonight my favorite steak, Bison Sirloin Steak. I was going to grill it outside but the heat and humidity is just too bad out, so I pan fried it. I seasoned it with McCormick Grinder Steakhouse Seasoning and fried it on medium in Extra Virgin Olive Oil about 4 minutes per side, medium rare. I topped it with some sauteed Baby Bella Mushrooms. I just love the taste of Bison Sirloin!
For sides tonight I had a Baked Potato that I seasoned with Sea Salt and Ground Black Pepper and topped with I Can't Believe It's Not Butter. I also warmed up a single serving of Del Monte Cut Green Beans. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Lunch - Chipotle Bison Wrap
I had a Chipotle Bison Wrap for lunch today. I used the other Bison Sirloin I had grilled the other day for the Wrap. After warming I sliced thin and layered it on the Wrap. For the Wrap I used Flatout Light Original Flat bread. Love these they are 100% Whole Wheat , High Fiber, and only 90 calories and 16 carbs! I topped the Bison with JB's Fat Boy Chipotle Sauce, sliced Deli Jalapenos, sliced Black Olives and fresh grated Smoked Dutch Gouda. Unfortunately I was out of lettuce which would have went great with this. After assembling the wrap and folding it I put it in the microwave for 35 seconds. The lean and delicious Bison along with heat of the Jalapenos, Chipotle Sauce, and the fresh and creaminess of the Smoked Gouda Cheese just makes an unbelievable Wrap! Gotta Love That Bison!

I grilled each side 4 minutes and it came out a perfect medium rare, tender and juicy! I topped it with some Sauteed Baby Bella Mushrooms that I seasoned with Sea Salt, Ground Smoked Cumin, and Parsley. For side dishes I had a Baked Potato, Boiled Mini Carrots, and Healthy Life Whole Grain Bread. Today's Menu: Bison Sirloin Steak w/ Smashed Potatoes, Grilled Asparagus, Whole Grain Bread
I had purchased some beautiful looking Bison Sirloin Steaks at Kroger this past weekend and had one of them for dinner to night! I seasoned it with a shake of Sea Salt and McCormick Grinder Steakhouse Seasoning.I then pan fried it in Extra Virgin Olive Oil about 4 minutes per side, medium rare. I love Bison! For sides I had Smashed Potatoes, Grilled Asparagus, and Healthy Life Whole Grain Bread. To make the Smashed Potatoes I used Green Giant Klondike Petite Gourmet Potatoes. They are a small Potato so I cut each in half. Then after putting them in a bowl I added a tablespoon of Extra Virgin Olive Oil and then McCormick Grinder Sea Salt, Black Peppercorn, and Parsley and mixed until all were coated. I then boiled them for 30 minutes. Then put them in a serving bowl and with a fork smashed them up. Bison Sirloin Steak, Eggs, and Hash Browns - Oh My!
Today's Menu: Bison Sirloin Steak, Eggs, and Hash Browns
It just felt like the thing to do for dinner tonight, Breakfast! And what a Breakfast, or dinner, it was. I had a Bison Sirloin Steak that I seasoned with McCormick Grinder Steakhouse Seasoning and pan fried in Extra Virgin Olive Oil about 4 minutes per side. I also had a side of J B's Fat Boy Chipotle Barbecue Sauce to kick it up a bit. I love this sauce it gives you some nice heat but it doesn't over power or take away from your food's flavor.
Along with the Steak I had Simply Potatoes Hash Browns that I seasoned with Sea Salt and Ground Black Pepper. I topped them with some freshly grated Smoked Dutch Gouda Cheese, which in my opinion goes well with anything! I also had an Egg that was seasoned with the Sea Salt and Pepper, served Sunny Side Up. To top everything off I had 2 slices of toasted Healthy Life Whole Grain Bread topped with I Can't Believe It's Not Butter and a glass of Tropicana Heavy Pulp Orange Juice. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream. I had previously made the Quick Bread in a mini loaf pan and had it in the freezer. The Breyer's Carb Smart Ice Cream is only 90 calories and 13 carbs per serving!

Dinner Tonight: Bison Sirloin Steak & Sauteed Mushrooms w/ Smashed Golden Potatoes, Roasted Asparagus, and Harvest Grain Bread.

1/2 teaspoon kosher salt
Freshly ground black pepper
Grated or shaved Parmesan, optional
Directions
Preheat the oven to 450 degrees F.
Trim the woody ends from the asparagus, usually about 1 1/2 inches. Lightly peel the remaining stalks (not always necessary, but more of a personal preference). Spread the spears in a single layer on a baking sheet, drizzle with olive oil, sprinkle with the salt and pepper, and roll to coat thoroughly.
Roast the asparagus until lightly browned and tender, about 8 to 10 minutes, giving the pan a good shake about halfway through to turn the asparagus. Arrange the roasted asparagus on a serving platter and top with some Parmesan. Serve warm or at room temperature.
While shopping at Kroger this morning I ran across some beautiful looking Bison Sirloin Steaks. So it was from Kroger's to the table! I seasoned the Sirloin with McCormick Grinder Steakhouse Seasoning. I pan fried it in Extra Virgin Olive Oil about 4 minutes per side, Medium Rare. As usual it comes out mouth watering and tender! I topped it with my favorite Steak topping Baby Bella Sauteed Mushrooms.
For sides I had Smashed Golden Potatoes with Crumbled Turkey Bacon, I Can't Believe It's Not Butter, and a bit of Fresh Grated Smoked Goda Cheese. I quartered the Potatoes and seasoned them with Sea Salt, Ground Black Pepper, Parsley, and a 1/2 tablespoon of Extra Virgin Olive Oil, then boiled them. I also had fresh Asparagus that I roasted at 450 degrees for about 10 minutes. I seasoned them with Sea Salt, Ground Black Pepper, and topped them with Kraft Shredded Parmesan Cheese. I left the recipe for this at the end of the post. We also had Kroger Bakery Harvest Grain Loaf Bread. If you've never tried this give it a try when you get a chance. Always fresh and delicious! For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Bison Sirloin Steak w/ Grilled Asparagus, Scalloped Potatoes, and...
Dinner Tonight: Bison Sirloin Steak & Sauteed Mushrooms w/ Grilled Asparagus, Scalloped Potatoes, and Whole Grain Bread.
It was Bison tonight! I had a Bison Sirloin Steak that I seasoned with McCormick Grinder Steakhouse Seasoning and pan fried in Extra Virgin Olive Oil about 4 minutes per side, medium rare. Bison has become my favorite meat. Delicious anyway you fix it and one of the healthier meats you can have. Bison has a slightly sweeter flavor than beef. Bison, like beef is full of flavor and just as tender as most cuts of good select beef. At the end of the post I left some information tips on preparing Bison. Topped the Bison with sauteed Baby Bella Mushrooms.
For sides I had Grilled Asparagus, Idahoan Scalloped Potatoes, and Whole Grain Bread. I used Meijer brand Grilled Asparagus and seasoned them with Sea Salt. Lately I've been using the Idahoan Brand for my Potato selections. Easier to fix and lower in carbs and calories than fixing the dish from scratch with Potatoes. The Bread was Healthy Life Whole Grain Bread. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.
Preparing Bison
Bison is very lean and lacks fat marbling, so care should be taken to not overcook it.
* In general, bison should be cooked using low heat (325 °F) and longer cooking times.
* Braising or other moist cooking methods are recommended for bison roasts and steaks.
* For thin-sliced bison, use quick cooking methods such as broiling and pan frying.
* Cook raw ground bison to an internal temperature of 160 °F as measured with a food thermometer.
* Cook all raw bison steaks and roasts to a minimum internal temperature of 145 °F as measured with a food thermometer before removing meat from the heat source. For safety and quality, allow meat to rest for at least three minutes before carving or consuming. For reasons of personal preference, consumers may choose to cook meat to higher temperatures.
* Less tender cuts should be braised (roasted or simmered with a small amount of liquid in a tightly covered pan) or stewed.

Surf and Turf Bison Style!
Dinner Tonight: Surf & Turf - Bison Sirloin & Sauteed Mushrooms w/ Shrimp, Baked Potato, and Whole Wheat Bread
There are meals and then there is this. I had a Bison Sirloin Steak (Turf), Gorton's Homestyle Shrimp (Surf), Baked Potato, and Healthy Life Whole Grain Bread. I seasoned the Bison with McCormick Grinder Steakhouse Seasoning and pan fried it in Extra Virgin Olive Oil about 4 minutes per side, to medium rare. Topped it with Sauteed Baby Bella Mushrooms that I seasoned with Ground Smoked Cumin, Parsley, and Sea Salt. Sauteed in Extra Virgin Olive Oil and a pat of I Can't Believe It's Not Butter.
The Turf part of the dinner I used Gorton's Home Style Shrimp, a 1/2 serving. Easily made baked at 425 degrees for 16 minutes. I had posted before this is the best boxed Shrimp around. I also had a baked Potato that I topped with I Can't Believe It's Not Butter, a dab of Reduced Fat Sour Cream, McCormick Grinder Sea Salt and Black Peppercorn. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Dinner Tonight: Bison Sirloin & Sauteed Mushrooms w/ Cheesy Hash Browns, Green Beans, and Whole Grain Bread
I had a petite Bison Sirloin Steak & Sauteed Mushrooms for dinner tonight. I love Bison I personally think that it's the best tasting and most tender meat there is. I seasoned it with McCormick Grinder Steak House Seasoning and lightly pan fried it on medium low heat until medium rare. I topped it with some Baby Bella Sauteed Mushrooms that I seasoned with Sea Salt, Ground Smoked Cumin, Ground Thyme, and Parsley.
For sides I had baked Idahoan Farm House Fix'ns Cheesy Hash Browns, Green Beans, and Healthy Life Whole Grain Bread. The Hash Browns are easy to fix, just mix the box ingredients and add 2% Milk, water, and Butter then bake. Easy and delicious. For dessert/snack later some Tostio's Artisan Corn Chips along with some Kroger Orgnic Black Bean & Corn Salsa.

Bison Sirloin Steak w/ Sliced Portabella Mushrooms, Grilled Potato Slices, and...
Today's Menu: Bison Sirloin Steak w/ Sliced Portabella Mushrooms, Grilled Potato Slices, and Whole Grain Bread
Had a beautiful Bison Sirloin Steak for dinner. Cooked about 4 1/2 minutes per side and seasoned with McCormick Grinder Steakhouse Seasoning. Came out juicy and delicious! For sides I had Meijer Grilled Potato Slices w/ Cheese and Herb Seasoning and Portabella Mushroom Slices. The slices were of an extra large Portabella Mushroom that I seasoned with Ground Smoked Cumin, Parsley, Sea Salt, and Ground Pepper. I lightly sauteed them in Extra Virgin Olive Oil. If you like Potatoes the Meijer Grilled Potatoes are a great alternative to fresh Potatoes. They come frozen and are already Seasoned. You can Stir Fry them for 5 minutes, which is how I always prepare them, or you can warm them up by microwave. Plus the thing I like, along with the taste, is they are only 80 calories and 11 carbs! For dessert something new, Pillsbury Nut Quick Bread. I had a slice of that topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream, too good!
