BBQ Marinated Pork Chop w/ Cut Green Beans, Mashed Potatoes, and Wheat Bread

Dinner Tonight: BBQ Marinated Pork Chop w/ Cut Green Beans, Mashed Potatoes, and Wheat Bread

Another very cold day outside again. It's in the low 20's but feels a lot colder with the wind chill, buts of sunshine to brighten it up a bit. I can't believe another year has gone by! I just want to thank each and everyone of you for all your views and comments throughout the year! So for dinner tonight i prepared a BBQ Marinated Pork Chop w/ Cut Green Beans, Mashed Potatoes, and Wheat Bread.

I had the Pork Chop in the freezer so I let it thaw overnight in the fridge. About noon I added some JB's Fat Boy Haug Waush BBQ Sauce to a Hefty Zip Bag and added the Chop and let it marinate the rest of the day. When ready to prepare it I took it out of the bag, shaking off the excess. I then seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. i heated up a Cast Iron Skillet, sprayed with a little Pam Cooking Spray and added Canola Oil. When the Skillet and Oil was heated up I added my Chop to it. I fried it about 4 minutes or so per side, till the internal temperature reached 155 degrees. Nice size Chop and it came out moist with a fantastic flavor, love the JB's Fat Boy Sauce!

For one side dish I heated up a can of Del Monte Cut Green Beans, my favorite canned Green Bean. Then I also heated up some Idahoan Mashed Potatoes. They come in a microwavable container; just add water and microwave for 1 1/2 minutes. They come out perfect every time! I also had a slice of Klosterman Wheat Bread. For dessert later a Jello Double Chocolate Pudding topped with Cool Whip Free.

Thank you again for a lot of fun throughout the year, have a fun and safe New Years Eve!

Oven Roasted Turkey Breast w/ Mashed Potatoes, Sugar Snap Peas, and...

Today's Menu: Oven Roasted Turkey Breast w/ Mashed Potatoes, Sugar Snap Peas, and Baked Artisan Harvest Grain Bread

It was a bit of pre Thanksgiving Dinner tonight, Oven Roasted Turkey Breast w/ Mashed Potatoes, Sugar Snap Peas, and Baked Artisan Harvest grain Bread. I prepared a Jennie - O Oven Ready Turkey Breast. This is the easiest Turkey Breast there is to prepare! Preheat your oven to 375 degrees and remove the frozen Turkey from the outer package. Keep the Turkey in it's cooking bag and place it in a roasting pan. Roast it for 2 1/2 to 3 hours making sure the Turkey reads at least 170 degrees. You have Turkey! Simple, easy, and delicious.

For sides we had individual servings of Idahoan Mashed potatoes,  Sugar Snap Peas, and Meijer Bakery Artisan Harvest grain Bread. All these are easily prepared items also. For the Idahoan Mashed Potatoes just add a bit of water and microwave for 1 1/2 minutes, done. The Sugar Snap Peas is a new one I've tried now a couple of times, Walmart Marketside brand. You can microwave these or boil them in water which is what I did. Just boil for 3 - 4 minutes and their ready. These are some of the best tasting Sugar Snap Peas I've ever had. Their big and bursting with flavor.  I also baked a Meijer Bakery Artisan Harvest Grain Loaf Bread. For dessert later a bowl of Blue Bunny Frozen Chocolate/Vanilla Swirl Yogurt.

**Added some leftover sliced carrots**

Chicken Fried Chicken w/ White Peppered Gravy, Blackeye Peas, Mashed Potatoes

Today's Menu: Chicken Fried Chicken w/ White Peppered Gravy, Blackeye Peas, Mashed Potatoes

Down home comfort food dinner tonight! Chicken Fried Chicken w/ White Peppered Gravy, Blackeye Peas, Mashed Potatoes for dinner. I used Simple Truth Natural Chicken Breast Cutlets/Thinly Sliced, Skinless, and Boneless for the Chicken. The Breasts were already cut thin so I didn't have to pound them out to make them thinner. I seasoned them with Sea Salt and Ground Black Pepper. For the coating of the Breast I used Whole Wheat Flour, Italian Style Bread Crumbs, Egg Beaters, and Paparika. First rolling the Breasts in Flour, then Egg Beaters/Paparika dip, then in a Flour and Bread Crumb mix. then heat the Extra Virgin Olive Oil in large skillet on medium high. Add the Breasts and cook and turn until golden brown and juices run clear, (about 8 - 10 minutes). Love this Chicken! Comes out moist and juicy with a great crust. The full recipe and directions are at the bottom of the post.

I topped the Chicken with Pioneer White Peppered Gravy. You can make gravy from scratch but Pioneer Gravy is just as good and a whole lot easier to make. They are several types of Pioneer Gravy including a Brown Gravy which is awesome also. For sides I had Idahoan Homestyle Mashed Potatoes, also topped with the gravy, and Blackeye Peas that I had leftover from dinner the other night. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with some fresh sliced Peaches.

Chicken Fried Chicken

2 Boneless Skinless Thin Cut Chicken Breast halves
Sea Salt and Pepper, to taste
1/4 Teaspoon Paparika
1/4 Cup Whole Wheat Flour
1/4 Cup Italian Style Bread Crumbs

2 Tablespoons Extra Virgin Olive Oil

Directions:

 1) Pound breasts a little to flatten, if you purchase the Thin Cut Breasts you won't have to pound them.
2) Add Paparika to Egg Beaters and stir until well mixed.
3) Roll Breasts in Flour, then Egg Beaters/Paparika, and back in Flour/Bread Crumb mix.
4) Heat Extra Virgin Olive Oil in large skillet on med high.
5) Add breasts and cook and turn until golden brown and juices run clear, (about 8 minutes).

Slow Roasted Turkey Pot Roast & Brown Mushroom Gravy w/ Green Beans and...

Today’s Menu: Slow Roasted Turkey Pot Roast & Brown Mushroom Gravy w/ Green Beans,  Mashed Potatoes, and Cinnamon Apples

Tonight I prepared a Jennie – O Slow Roasted Turkey Pot Roast. Easy to fix, you can microwave it in its own container or bake it at 375 degrees for 1 hour which was the way I prepared it. After I hour I removed it from the oven and the aroma was fantastic! I pulled the bone out of the meat and then using two forks shredded the meat. I then, in a bowl, added Heinz Mushroom Brown Gravy to the Turkey and we have Pot Roast! This is going to make some killer Pot Roast sandwiches. I served the Pot Roast on a Healthy Life Whole Grain Bun and topped it with a splash of Woeber's Horseradish Mustard. A really easy and delicious way for Turkey Pot Roast. It's all dark meat and more than enough for 4 people.

For sides we had Green Beans, Idahoan Mashed Potatoes, Country Crock Cinnamon Apples (1/2 Serving). Later for dessert a bowl of Blue Bunny Naturally Frozen Chocolate/Vanilla Swirl Yogurt.

Pork Chop w/ Seasoned Corn, Mashed Potatoes, and French Bread

Dinner Tonight: Pork Chop w/ Seasoned Corn, Mashed Potatoes, and French Bread

It looks as though our hot and humid weather has returned to the Ohio Valley, and it's going to last through out the week. For dinner I had a Pork Chop w/ Seasoned Corn, Mashed Potatoes, and fresh baked French Bread. I seasoned the Chop with McCormick Grinder Sea salt and Black Peppercorn along with a light coat of flour. I then pan fried it in Extra virgin Olive Oil about 4 minutes per side on medium heat. As a rule they always say to get your Pork at thermometer reading of 165 degrees. After frying the Chop I topped it with JB's Fat Boy Haug Waush Bar b cue Sauce. Love Pork Chops!

For sides I heated up a can of Margaret Holme's Seasoned Corn, I've been using Margaret Holmes products for a while now. I also had Idahoan 4 Cheese Mashed Potatoes. Another very easy side to fix. Just add water and microwave and you have some tasty Mashed Potatoes. Then I baked some more of the delicious French Bread I had purchased from Walmart yesterday. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Veal Cubed Steak & Brown Mushroom Gravy w/ Green Beans....

Dinner Tonight: Veal Cubed Steak & Brown Mushroom Gravy w/ Green Beans, Mashed Potatoes, Cinnamon Apples, and Whole Grain Bread

After slacking yesterday I was ready to hit the kitchen and make a full healthy dinner! I prepared a beautiful lean Cubed Veal Steak. I seasoned them with Morton's Salt Substitute and Ground Black Pepper and then rolled them in italian Style Bread Crumbs. I then fried them in Canola Oil about 4 minutes per side. They came out a beautiful crusted brown and very tender. I need to get Veal more often tender, great tasting and only 120 calories and 0 carbs per Cubed Steak. I topped it with a Heinz Mushroom Gravy that I added extra Mushrooms to and also used the Gravy for my Mashed Potatoes also.

For sides I had Idahoan Mashed Potatoes that as I said before were topped with Brown Mushroom Gravy. I also had Green Beans and a half serving of Cinnamon Apples. The meal was very low in calories and carbs that's why I was able to add on the Cinnamon Apples, which really made the meal giving everything that added flavor boost! For dessert/snack  later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Cajun Buttermilk Chicken w/ Mashed Potatoes & White Peppered Gravy...

Dinner Tonight: Cajun Buttermilk Chicken w/ Mashed Potatoes & White Peppered Gravy and Green Beans

Well as they say on the Food Network "Winner, winner chicken dinner". There's a whole lot going on with this Chicken Breast! I marinated my Chicken For 4 hours in a Buttermilk, Egg Beater, Cajun Seasoning, and Frank's Red Hot Sauce. I mixed all the ingredients together in a Hefty Zip Lock Bag and added the Chicken making sure it well coated and let it marinate in the fridg. I removed the Chicken from the bag while shaking off the excess mixture. Then I dredged the marinated breast in a mixture of flour, sea salt and coarse black pepper. I pan fried my Chicken in Extra Virgin Olive Oil making sure it done through out. While my Chicken was frying I Sauteed my Baby Bella Mushrooms, fried the Turkey Bacon, and toasted my Bread. To assemble this piece of work take the toast and top it with the Chicken Breast then top the Chicken with a slice of Sargento Ultra Thin Swiss Cheese, Turkey Bacon, and the Sauteed Mushrooms. Everything blends to make one delicious Chicken Breast! I left the recipe at the bottom of the post.

For sides, like you need any with that chicken breast, I had Idahoan Mashed Potatoes that I topped with Pioneer White Peppered Gravy. The gravy was a last second idea, it was leftover from breakfast this morning. I also had some leftover Green Beans. I've been on a Green Bean binge lately. Seems that I can eat them with every meal! Everything together makes a fantastic Chicken Dinner! For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn and sit back and enjoy the Final Four tonight, Go Buckeyes!

Jennie -O Roasted Turkey Breast Roast and Gravy w/ Mashed Potatoes and Glazed Carrots

Today's Menu: Jennie -O  Turkey Breast Roast and Gravy w/ Mashed Potatoes and Glazed Carrots

Came across this yesterday at Meijer while grocery shopping and decided to give it a try, Jennie - O So Easy Turkey Breast Roast With Gravy. Easy to fix just bake at 350 degrees for 25 minutes and it's done. You can also microwave it but I went with baking option. It really turned out great, very moist, tender and the gravy was very good. Plus it's only 110 calories and 7 carbs per serving! The sodium (760 mg ) is higher than I normally like but it's one of those that you can live with from time to time. I left the Nutrition of Turkey Breast at the end of the post. Anyway I served it with Idahoan Mashed Potatoes and Green Giant Glazed Carrots. It was more less a mini Thanksgiving Dinner and it was only 310 calories and 42 carbs! Not bad at all for all that. For a snack later a mini bag Of Jolly Time Pop Corn.
