Dinner Tonight: Bison Sirloin Steak w/ Sauteed Mushrooms, Roasted Asparagus, and Baked Potato
Another steamy day out again. Went over to a long time friends this afternoon and spent most of the day over there. For dinner tonight it's a Bison Sirloin Steak w/ Sauteed Mushrooms, Roasted Asparagus, and Baked Potato.
I used a Great Range Bison Sirloin. Great Range is a very good Bison Meat. It's sold here locally at Kroger. They're not quite the sweet and wild flavor as Wild Idea Buffalo but still an excellent Bison Sirloin, and Ground Bison Sirloin also. I seasoned it with McCormick Grinder Sea salt and Black Peppercorn and pan fried it in Canola Oil, about 4 minutes per side. Medium rare with a nice char on the outside and a little pink and moist and tender inside, love Bison or Buffalo!
For one side I prepared some Sauteed Mushrooms, seasoned with Roasted Cumin, Sea Salt, and Parsley. I also had a Baked Potato and Roasted Asparagus. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving. Quite a dinner! For dessert later a Healthy Choice Dark Fudge Frozen Greek Yogurt.

Roasted Asparagus
INGREDIENTS
1 lb asparagus spears (thick spears are best for roasting)
1-2 Tbsp Extra Virgin Olive Oil
2 Cloves Garlic, minced
Sea Salt
Freshly grated Black Pepper
Lemon Juice
Shredded Parmesan Cheese
Directions
1 Preheat oven to 400°F. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard.

Another Sunny Spring like day outside. Got the 4 wheel mobility cart out along with my fishing pole and
tackle box. Spent most of the day down by the community lake fishing. Nothing more relaxing and peaceful. Caught a few small Bass that I released back, Nice Day! For dinner; Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Sugar Snap Peas.
I used another of the Great Range Bison Sirloin Steaks. I have an order coming next week from Wild Idea Buffalo. ordered some Top Sirloin, Ground Buffalo, and premade Buffalo 1/4 lb. Burgers. So for tonight's dinner I pan fried my Steak in Canola Oil about 4 minutes per side. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I topped it with a side of Sauteed Mushrooms. Sauteed in Butter and Extra Virgin Olive Oil and seasoned with Roasted Cumin, Thyme, and Sea Salt and Ground Black Pepper.
For side dishes I had a Baked Potato that I seasoned with Sea Salt and Ground Black Pepper and topped with Newman's Own Pineapple Salsa. I also had Walmart Marketside Sugar Snap Peas. Love these, everybody that I've got to try these love them! They come in a microwavable bag. Just heat for 2 minutes and their done. Quick, easy, and delicious. For dessert later a slice of Pillsbury Nut Quick Bread topped with 2 scoops of Breyer's Carb Smart Vanilla Ice Cream.

Buffalo Sirloin and Buffalo Shrimp w/ Baked Potato
Dinner Tonight: Buffalo Sirloin and Buffalo Shrimp w/ Baked Potato
Heavy, heavy rains since early last night, they even have posted a flood alert for the area. This weather is amazing through the Ohio Valley here! Cold and snowy to 60 degrees and sunny to rain and flooding in a matter of days. I wasn't real sure on what to have for dinner so I dug into the freezer and found a Great Range Buffalo Sirloin Steak. So I had that and some unprepared Shrimp I had leftover from the other nights dinner to go with the Buffalo Sirloin.
So for my dinner tonight I prepared a Buffalo Sirloin along with Buffalo Shrimp and a Baked Potato. To prepare the Buffalo Sirloin I seasoned it with McCormick Grinder Steakhouse Seasoning. I pan fried it in Canola Oil about 4 minutes per side, to medium rare.
To prepare the Shrimp In a resealable plastic bag, I combined flour, Creole-style seasoning, garlic powder, ground cayenne pepper, onion powder, and ground black pepper. Seal the bag and shake a few times to combine the ingredients well. Rinse the Shrimp under cold water and place them in the plastic bag with the flour mixture. Seal the bag and shake to coat all of the shrimp well with the flour mixture. Then just fry the Shrimp on medium heat about 2 minutes per side. When done I put them in a large bowl that I had added Kroger Medium Wing Sauce to and shook until well covered with the Sauce. I love Shrimp any and all ways you can fix them! Love the heat on these. Served them with a side of Litehouse Bleu Cheese Dressing to dip them in. I also had a Baked Potato that I topped with Sea Salt and Ground Pepper along with I Can't Believe It's Not Butter. For dessert later tonight a Healthy Choice Chocolate Swirl Frozen Yogurt.

Today's Menu: Bison Sirloin & Sauteed Mushrooms w/ Green Beans, Skillet Fried Red Potato Wedges, and Baked Garlic Knot Bread
It's a beautiful and Sunny day out but really cold! But the days are getting longer so the change of season's is getting closer. For dinner i prepared Bison Sirloin & Sauteed Mushrooms w/ Green Beans, Skillet Fried Red Potato Wedges, and Baked Garlic Knot Bread. I was using my last Bison Sirloin that I had in the freezer and like clock work I received my order from Wild Idea Buffalo!
The Bison Sirloin was Great Range Brand Bison meat.I seasoned the Sirloin with McCormick Grinder Steakhouse Seasoning and pan fried it in Canola Oil, about 3 1/2 minutes per side to medium rare. It was a thinner Steak so it didn't take long to fry. I topped it with some Sauteed Baby Bella Mushrooms. I can eat saute Mushrooms with every meal, I love Mushrooms!
For sides with my Bison I prepared Green Beans, Red Potato Wedges, and garlic Knot Bread. The Green Beans were Del Monte Single Serving. First time I prepared the Red Potatoes, they were Simply Potatoes brand. They come packaged, cut, and seasoned. Just prepare them how you like, bake or fry, or in Potato Dishes. I'll have to get more of these they turned out delicious! I also baked some more of the Walmart Bakery Garlic Knot Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Dinner Tonight: Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread
Excellent dinner tonight! Bison Sirloin and Sauteed Mushrooms w/ Cauliflower & Cheese Sauce, Baked Potato, and Whole Grain Bread. I used Great Range Bison Sirloin. I seasoned it with McCormick Grinder Steakhouse Seasoning and pan fried it in a tablespoon of Extra Virgin Olive Oil about 4 minutes per side to a medium rare. Topped with Sauteed Baby Bella Mushrooms. As far as I'm concerned you can't beat the taste and tenderness of Bison. Just wish you could find it more in this area.
For my side dishes I prepared Green Giant Cauliflower & Cheese Sauce, a Baked Potato, and Healthy Life Whole Grain Bread. I'm not a huge Cauliflower fan but I love this Green Giant Cauliflower & Cheese Sauce! It comes frozen and in a microwavable bag. Just make a small slit in the bag and heat on high for 5 1/2 minutes. The Cauliflower comes out crisp and with the Cheese Sauce added delicious. I left the product description at the end of the post. I also had a Baked Potato topped with Salt and Pepper along with I Can't Believe It's Not Butter. Also 2 slices of Healthy Life Whole Grain Bread. For dessert later I'm fixing some Breyer's Carb Smart Vanilla Ice cream topped with Smucker's Sugarless Hot Fudge Topping.

Directions

A cold and rainy day around here today so I warmed it up in the kitchen! I prepared a Bison Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Sugar Snap Peas, and Whole Grain Bread. I used Great Range Brand Bison Sirloin, sold by Kroger.Seasoned it with McCormick Grinder Steakhouse Seasoning and a couple of dashes of Sea Salt. Pan fried in Extra Virgin Olive Oil about 4 minutes per side. Came out just like I like them, medium rare (pink in the center) with a nice char on the outside. Served it with a side of Sauteed Baby Bella Mushrooms.
For sides I had a Baked Potato that I seasoned with Sea Salt and Black Pepper and topped with I Can't Believe It's Not Butter. I also had some leftover Sugar Snap Peas that I reheated in the microwave and a couple of slices of Healthy Life Whole Grain Bread. For dessert a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.

Staying with the Bison tonight for dinner. I had a Bison Burger last night and tonight Bison Sirloin & Sauteed Mushrooms w/ Baked Potato, Steamed Asparagus, and Whole Grain Bread. I used a Grand Range Bison Sirloin. I seasoned the Sirloin with McCormick Grinder Steakhouse Seasoning and skillet fried it in Extra Virgin Olive Oil about 3 1/2 minutes per side to medium rare. I'm hooked on Bison! Beef is good but it just doesn't have the flavor Bison does. Now if more places would just start carrying it!
As side dishes I had a Baked Potato topped with I Can't Believe It's Not Butter, Steamed Asparagus, and Healthy Life Whole Grain Bread. The Asparagus came in a microwavable Bag that you pierced and microwaved for 3 minutes. It came out perfect! Crisp and very fresh tasting. I purchased it from Kroger. For dessert, that's a good question. No clue. Later!

Dinner Tonight: Grilled Bison Sirloin & Sauteed Mushrooms w/ Potato Grillers, Grilled Asparagus, and Whole Grain Bread
Had the grill fired up for dinner. I grilled a Bison Sirloin Steak. I put a very light rub Extra Virgin Olive Oil on the Steak and then seasoned it with McCormick Grinder Steakhouse Seasoning. Grilled on high for 4 minutes per side. Came out a perfect medium rare! Love that Bison, moist and tender bursting with flavor. I topped the Steak with a trio of sauteed mushrooms; Baby Portobello, Shiitake, and Oyster Mushrooms.
For sides I had Ore Ida Steakhouse Seasoned Griller Potatoes, Meijer Grilled Asparagus, and Aunt Millie's Whole Grain Bread. If you haven't tried the Ore Ida Grillers yet you have to give them a try. Easy to fix and nice thick cuts of Potatoes that are seasoned just right. For dessert later a slice of Pillsbury Pecan Swirl Quick Bread.

Dinner Tonight: Grilled Bison Sirloin & Sauteed Mushrooms w/ Boiled Potatoes, Green Beans, and Whole Grain Bread
Another Summer grilling day! Grilled one of my favorites, Bison Sirloin. Seasoned the fillet with McCormick Grinder Steakhouse Seasoning and grilled it on about medium high for 4 minutes per side, medium rare. Nothing better than a flame cooked Bison Sirloin! "Save the Cows, Eat More Bison!" Topped it with Sauteed Baby Portabella Mushrooms. I sauteed the Mushrooms in a 1/4 cup of Low Sodium Swanson Beef Broth and seasoned them with Morton's Salt Substitute, Ground Black Pepper, and Parsley.
For sides I boiled 3 whole Golden Gourmet Potatoes. I boiled them for 20 minutes and with the bottom of a coffee cup i smashed them open and seasoned them with Morton's Salt Substitute, Ground Black Pepper and I Can't Believe It's Not Butter. Along with the Potatoes I had Green Beans and Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.
