Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Cheese Toast

Dinner Tonight: Whole Wheat Spaghetti and Turkey Meatballs w/ Baked Cheese Toast

Our run of beautiful days goes on but I hear rain is on it's way. Locked myself out of the house today, so
that's always fun! Finally was able to get a neighbor go through a side door that I can't get to and unlock the back door. Hopefully one day I'll be able to build a deck and ramps so I can get in and out of all the doors, life in a wheelchair! For dinner always a classic comfort food, Spaghetti and Turkey Meatballs w/ Cheese Toast

It had been a while since I had Spaghetti and Turkey Meatballs and it sounded good. I used Ronzoni Healthy Harvest Whole Wheat Spaghetti  along with Honeysuckle White Turkey Meatballs. The Honeysuckle White Turkey Meatballs are the best I've found, fantastic taste and their 190 calories and 6 carbs for 3 Meatballs. Topped everything with Kraft 2% Shredded Mozzarella Cheese and Bella Vita Low Carb Pasta Sauce (Meat Flavored). I added a few sliced Baby Bella Mushrooms to the Sauce. Along with the great taste the Sauce is only 70 Calories and 6 Carbs! At the end of the post I left the product description for the Ronzoni Spaghetti, Honeysuckle White Turkey Meatballs, and the Bella Vita Pasta Sauce.

I also had healthy Life Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter and then sprinkled with Kraft 2% Shredded Mozzarella Cheese . Then I baked it at 350 degrees for 7 minutes. Makes an quick and easy way for a side of Bread for Pasta Dishes. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Ronzoni Healthy Harvest Nutrition

Here’s something to absorb: One serving of RONZONI HEALTHY HARVEST pasta has over 20% of your daily recommended fiber intake – but did you know that fiber is good for you in more ways than just digestion?

People with diets high in fiber have a lower risk for weight gain, obesity, development of insulin resistance and diabetes. Fiber also prevents constipation, hemorrhoids and diverticulosis, but it also helps reduce the risk of certain chronic diseases like colon and breast cancer. Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.

Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.

Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.

Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

The 2005 Dietary Guidelines for Americans recommends everyone consume 14 g of fiber for every 1000 calories. Ronzoni Healthy Harvest is an excellent source of fiber, with 5-6 grams of fiber in every 2 oz. serving. Fiber is an integral part of your everyday diet, and RONZONI HEALTHY HARVEST pasta, as an excellent source, is a perfect solution to get more of it onto your family’s plate!

Grilled Blackened Tilapia w/ Grilled Corn on the Cob and Grilled Potatoes

Dinner Tonight: Grilled Blackened Tilapia w/ Grilled Corn on the Cob and Grilled Potatoes

It was a little taste of Summer around here as it was 89 degrees today! After a couple of mornings in the low 30's, wild weather! Speaking of taste in about 2 weeks it will be time for the areas largest food festival, The Taste of Cincinnati, more updates on that as it gets closer. For dinner it was a grill fest; Grilled Blackened Tilapia w/ Grilled Corn on the Cob and Grilled Potatoes. As good as this sounds, it tasted even better!

Yesterday I received my new Fish Basket I had ordered off Amazon and couldn't wait to try it!Went to Tilapia Fillets, Red Potatoes, and Corn on the Cob and Grill Fest was on! Along with the Tilapia I'll need a tablespoon or so of Blue Bonnet Light Stick Butter and Zatarain's Blackened Seasoning. After firing the grill up on high I rinsed the Tilapia of and patted dry. Melted the 1 T butter in a microwave. About 15 seconds and brushed both sides of Tilapia with the melted butter. I coated both sides of the Tilapia with a generous amount of the rub. Then I got my Fish Basket out and sprayed it with Pam Grill Spray. Loaded the Tilapia in the grill basket. If your using a griddle then add a tablespoon or so of vegetable oil to grill. Do not use olive oil since it smokes at high temperatures. Placed my Tilapia on preheated grill and closed the lid. Grilled for only 2 minutes and then  flipped it and grilled another 2 minutes. Use a watch with a second hand and do not over cook! The result some beautifully delicious Blackened Tilapia! You had the heat of the Blackened Seasoning and grilling it with the lid shut gave it a nice smoked taste also. It's soooo good, you can have it with just the fillet or have a Blackened Tilapia Sandwich, either way your going to love it! This Blackened Tilapia would go great with some Black Beans and Rice or Cajun Rice.
Kroger early this morning and bought some

To go with the Tilapia I grilled up some Grilled Potatoes and Grilled Corn on the Cob. For the Potatoes all I need are the Red Potatoes, Extra Virgin Olive Oil, and McCormick Grinder Sea Salt and Black Peppercorn. Quarter the Potatoes and toss the potatoes with Olive Oil and add the Sea Salt, and pepper to your taste. I used a wire grilling basket for the Potatoes, I sprayed it with Pam with Olive Oil to prevent them from sticking. Then just roast them until golden brown, about 7 to 10 minutes. Then you have some fine tatters.

For the Corn on the Cob, I roasted a couple of ears of it. To prep I needed 2 ears of Corn, 2 tablespoons of softened Butter ( Blue Bonnet Light Butter), and Sea Salt and Black Peppercorn. Peel back the corn husks and remove the silk. Place 1 tablespoon butter, salt and pepper on each piece of corn. Close husks. Wrap each ear of corn tightly in aluminum foil. Place on the prepared grill. Cook approximately 30 minutes, turning occasionally, until corn is tender. 2 delicious grilled side dishes along with Grilled Blackened Tilapia, love that grill! For dessert later a Jello Sugarless Double Chocolate Pudding.

Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes,...

Dinner Tonight: Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf

They confirmed today my Dad is coming home Saturday from the rehab center! He's been gone for a while now it's going to be nice to have him home. So for dinner tonight while at Kroger yesterday I purchased some Bay Scallops, which I haven't had in years! For Dinner; Cajun Spiced Seared Scallops w/ Brown Rice, Parmesan and Herb Red Potatoes, and Baked Artisan Multi Grain Loaf.

To prepare it I'll need; 1 pound of Bay Sea Scallops, 2 teaspoons Cajun Seasoning, 2 teaspoons Extra Zatarain's Cajun Seasoning, 2 teaspoons olive oil, salt, and pepper. Refrigerate for about 1 hour. Heat the 1 tablespoon olive oil and 2 teaspoons of butter in a large skillet over high heat. With tongs, arrange the scallops in the hot fat and cook for about 2 to 3 minutes on each side, or until nicely browned and your done! The Zatarain's Cajun Seasoning is fantastic on the Scallops, nice heat and seasoning but not overpowering where you can't enjoy the flavor of the Bay Scallops.
Virgin Olive Oil, 1/2 teaspoon Sea Salt, Dash freshly Ground Peppercorn, 1 tablespoon Extra Virgin Olive Oil, and 2 teaspoons unsalted Butter. To prepare them is quick and easy first in a food storage bag, toss the scallops gently with the

For side dishes I prepared some Uncle Ben's Natural Whole Grain Brown Rice, not much to prepare it was the microwave single serving of Rice. The quick but still delicious way for Rice. I also prepared some more of the Idahoan Parmesan and Herb Red Potatoes. Second time I've had these and love them! I also baked up some more of the La Brea Bakery Take and Bake Artisan Multi Grain Loaf. I'll have to have the Bay Scallops more often! The Scallops paired with the Parm Red Potatoes and Brown Rice is perfect! For dessert later a Jello Sugar Free Double Chocolate Pudding.

Fried Crappie w/ Hash Browns, Green Beans, and Baked Garlic Knot Rolls

Dinner Tonight: Fried Crappie w/ Hash Browns, Green Beans, and Baked Garlic Knot Rolls

One long night last night! I was dealing with some very bad and strong Phantom Pains. They were the worst I've had to deal with in quite some time. Phantom pains are exactly that, they are pains that amputees sometimes experience in the area of their missing limb. Mine being my left leg that was amputated back in 2001. There's no known cure or treatments that work to ease the pain so I just have to ride it out. This started sometime during the early morning hours and I've had it ever since, hopefully it will quit soon! Mom stayed and had dinner with my Dad at the rehab center so it's just me tonight. I prepared Fried Crappie w/ Hash Browns, Green Beans, and Baked Garlic Knot Rolls. it had been a while since I broke out one of the frozen Crappie bags and prepared them and it time tonight!

I normally just season the Crappie with Sea Salt and Ground Pepper and rolled in Bread Crumbs but tonight I rolled the fillets in  Zatarain’s Fish Fri Lemon Pepper Seafood Breading Mix. After washing the Crappie and patting them dry on a paper towel I then poured some of the breading mix into a Hefty Zipper Bag and added the Fish shaking it in the bag until it was well covered. I skillet fried it in Canola Oil until it was golden brown. With this breading the Fish comes out perfect. The crust and the seasoning is meant for Fish! Crappie is delicious anyway you fix it but this breading makes it even more mouth watering!

To go with the Crappie I prepared some Hash Browns, Simply Potatoes has Browns. You can't beat Simply Potatoes brand Has Browns. Just season and fry to how done and brown you want them. Quick, easy, and delicious. Makes a great side for any meal. I also heated up a single serve can of Del Monte Cut Green Beans and I baked some Walmart Bakery Savory Garlic Knot Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Lemon Pepper Fish-Fri

The secret of authentic Southern Style fried fish is the crispy combination of corn flour, spices and lemon juice captured in this special Zatarain’s Frying Mix.

Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and...

Dinner Tonight: Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread

Another rainy and dreary day around here today. Spent the biggest part of the day cleaning the house and baking cookies. As for dinner I prepared Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread.

I used another of Costco Top Sirloin Steaks. I prefer Bison but with the cost of Bison going up I use Beef from to time, and you can't beat Costco's Steak for flavor! if I have to eat Beef I prefer Costco's. I've yet to have a bad cut of Steak from them. As I said earlier the taste of these Steaks is heaven! The only seasoning you need for these is a little Sea Salt and Black Pepper. I pan fried it in Canola Oil about 5 minutes per side. Medium Rare and Delicious just like I like them! I topped it with Sauteed Baby Bella Mushrooms.

For side dishes I had a Baked Potato that I topped with I Can't Believe It's Not Butter, Sea Salt and Ground Black Pepper. Along with the Potato I had a single serving can of Del Monte Cut Green Beans and Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

A light dinner tonight, I had Chunky Baked Potato Soup along with a  Ham & Chicken Breast  Sandwich. I used Campbell's Chunky Baked Potato with Cheddar and Bacon Bits Soup. Thick and hearty Soup with chunks of Baked Potato along with Bacon Bits and Cheddar Cheese. It's one of best canned soups out there.

Along with the Soup I made a Ham & Chicken Sandwich. I used Kroger Brand Private Selection Hickory Ham and Slow Roasted Chicken Breast. The Ham is only 60 calories and 2 carbs while the sliced Chicken Breast is 50 calories and 1 carb per serving. I topped it with a slice of one of my new favorite sliced Cheese Private Selection Buffalo Monterey/Jack Cheese, Lettuce, and Kraft Reduced Fat Mayo w/ Olive Oil. Served it on a Healthy Life Whole Grain Bread. The meal was light but filling and delicious! For dessert a Jello Sugar Free Chocolate Pudding. I have to be at the Hospital at 7:00 am for some blood work, I have an over protective family doctor. He is very thorough though.

Marinated Baked Turkey Tenderloin and Crushed Pineapple w/ Asparagus,...

Dinner Tonight: Marinated Baked Turkey Tenderloin and Crushed Pineapple w/ Grilled Asparagus, Grilled Potatoes, and Whole Grain Bread

I had Jennie - O Baked Turkey Tenderloin that I had marinated for three hours in JB’s Fat Boy Sticky Stuff BBQ. After seasoning it with Sea Salt, Ground Black Pepper, and Smoked Cumin I then baked it for 30 minutes covered and thirty minutes uncovered at 350 degrees. After uncovering it I added the Crushed Pineapple and 2 tablespoons of the Pineapple Juice from the can for the final 30 minutes of baking. The Turkey turned out moist and delicious. The JB’s Fat Boy Sticy Stuff BBQ. Sauce along with the Crushed Pioneapple make for a perfect combo that gives the Turkey a fantastic taste! I've yet to have anything bad from Jennie -O products. Meijer is the only one in my area that sells all of the Jenni - O products but I hear Kroger is now considering switching to them.

As sides I had Grilled Asparagus Spears, Grilled Sliced Potatoes with Cheese &Herb Seasoning, and Healthy Life Whole Grain Bread. The Asparagus and Potatoes are Meijer Brands, which may I add has in my opinion some of the best selection and tasting frozen Veggies. For dessert a Jello Sugar free Chocolate Pudding topped with Cool Whip Free.
