One of America's Favorites - Rotisserie Chicken MONDAY

Rotisserie chicken

Rotisserie chicken is a chicken dish that is cooked on a rotisserie, using direct heat in which the chicken is placed next to the heat source. Electric- or gas-powered heating elements may be used, which use adjustable infrared heat. These types of rotisseries have proven quite functional for cooking rotisserie-style chicken. Leftover rotisserie chicken may be used in a variety of dishes, such as soup, chicken salad, and sandwiches.

In the United States, ready-to-eat rotisserie chickens were available in supermarkets and some butcher shops during much of the twentieth century. However, they did not become a widely available option for consumers until the early 1990s, when Boston Market helped popularize the selling of packaged rotisserie chickens.

Rotisserie chickens are now highly popular. In 2010, 600 million rotisserie-cooked chickens were purchased by consumers "in U.S. supermarkets, club stores and similar retail outlets." In 2018, over 900 million rotisserie chickens were sold by foodservice outlets and retail stores.

Rotisserie chickens are often lower in price than raw whole chickens. Two explanations are often given to justify this phenomenon. First, some grocery stores may use rotisserie chickens as loss leaders to bring shoppers into the store. The logic behind this theory is that if customers come to a store for its rotisseries chickens, they will buy other products while they are there, too. Second, rotisserie chickens are often made with poultry that is about to reach its "best by" date. By cooking and selling the chickens, the grocery stores are able to recoup some of their expenditures.

In the U.S., chickens used for rotisserie cooking may be injected with brine to retain moisture. Additional ingredients may be used to add flavor and to brown the chicken, such as oleoresin, yeast extract, sodium tripolyphosphate, and natural flavorings.

Costco is one of the largest producers and vendors of rotisserie chickens in the United States, with one commentator describing it as "the undisputed king of rotisserie chickens." In 2017, Costco sold approximately 87 million rotisserie chickens in the United States. Costco's CFO, Richard Galanti, has repeatedly rebuffed suggestions that Costco might eventually increase the cost of its chickens above $4.99, which has been the price of a Costco rotisserie chicken since 2009.

In 2017, Costco broke ground on a new 414-acre facility in Fremont, Nebraska that would include a hatchery, feed mill, and processing plant. The facility – which is expected to produce around 100 million chickens per year, or roughly 40 percent of Costco's needs – has been reported as costing between $275 million and $400 million. The plant is scheduled to open in September 2019.

Easy Chicken, Spinach, and Wild Rice Soup
Ingredients
1 can (about 14 ounces) reduced-sodium chicken broth
1 3/4 cups chopped carrots
2 cans (10 3/4 ounces each) reduced-fat reduced-sodium condensed cream of chicken soup, undiluted
2 cups cooked wild rice
1 teaspoon dried thyme
1/4 teaspoon dried sage
1/4 teaspoon black pepper
2 cups coarsely chopped baby spinach
1 1/2 cups chopped cooked chicken*
1/2 cup fat-free half-and-half or fat-free (skim) milk

Directions
1 - Bring broth to a boil in large saucepan over medium-high heat. Add carrots; cook 10 minutes.

2 - Add soup, rice, thyme, sage, and pepper to saucepan; bring to a boil. Stir in spinach, chicken, and half-and-half; cook and stir 2 minutes or until heated through.

*Note. Half of a rotisserie chicken will yield about 1 1/2 cups of cooked meat.

Yield: 6 to 7 servings.

Serving size: 1 cup.

Pulled Chicken BBQ Sandwich w/ Baked Fries

Dinner Tonight: Pulled Chicken BBQ Sandwich w/ Baked Fries




For Breakfast I had a Poached Egg and served it on a slice of toasted Aunt Millie's Light Whole Grain Bread. I also had my morning cup of Bigelow Decaf Green Tea. Cloudy, passing light shower,
and 44 degrees outside today. After Breakfast I did a load of laundry. Later after Lunch I went to Kroger to pick up a couple of things for tonight's Dinner. Back home cleaned the Kitchen and the fridge. For Dinner tonight, Pulled Chicken BBQ Sandwich w/ Baked Fries











I picked a Kroger small Rotisserie Chicken at Kroger earlier. I pulled all the Meat of the Chicken to make the Sandwiches. The Kroger Rotisserie Chicken is about 1/2 the size of the Simple Truth Rotisserie Chickens, but just as good!









To make the Sandwiches I'll need; 1 Kroger Rotisserie Chicken, Jack Daniel's Hickory Barbecue Sauce, Butter Lettuce, Kroger Bakery White Slider Rolls.











After Pulling the Chicken Meat I seasoned it with just a bit of Morton's Light Salt and Ground Black Pepper. I then heated it up in a skillet for about 4 minutes. Then to make the Sandwiches; I took a couple of the Slider Rolls and cut them in half. Next I took a leaf of the Lettuce and placed it on the bottom bun. Next a 1/2 slice of Swiss Cheese. Next the Pulled Chicken and topped all off the Jack Daniel's Hickory Barbecue Sauce. And this is one great tasting Sandwich! I love Rotisserie Chicken, you can use it in so many different ways. Then the Jack Daniel's Hickory Barbecue Sauce just adds that extra flavor. First time using the Kroger Bakery Slider Rolls. They are only 90 calories per roll, so not too bad. Excellent Sandwiches.


I also baked some Ore Ida Crinkle Fries, served with a side of Hunt's Ketchup. For Dessert/Snack
later a bowl of Skinny Pop - Pop Corn with a Diet Peach Snapple to drink.

Pulled Chicken, Black Bean, and Corn Soft Tacos

Dinner Tonight: Pulled Chicken, Black Bean, and Corn Soft Tacos





For Breakfast this morning I had something a little different, Grilled Cheese and Egg Spam
Sandwich. Came across this recipe on Spam's Facebook page. The Sandwich turned out fantastic! Very good combination of ingredients and easily prepared. Your using; 2 slices Turkey SPAM® , 2 slices Healthy Life Whole Grain Bread, 1 slice Sargento Ultra Thin Sharp Cheddar Cheese, and 1 large Egg. Mom even had one and loved it, so its Parent Approved! I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I headed over to the rehab center to see Dad. I went with him for his morning therapy. He did real good today, proud of him! Still up in the air whether or not he can back home, hope so! Back home did a few things around the house. Outside its mostly cloudy, windy, and a high of 53 degrees. For Dinner tonight I prepared Pulled Chicken, Black Bean, and Corn Soft Tacos.



I wanted something light and delicious so what better than some Soft Tacos, haven't had any in a
while and it sounded good. To make these I’ll need the following; Old El Paso Flour Tortillas, 1 Rotisserie Chicken (Pulled Chicken), various Spices (to season the Chicken), 1 can Bush’s Chili Beans (Black Beans in Mild Chili Sauce), 1 can Green Giant Steam Crisp Nibblets (Whole Kernel Sweet Corn, sliced Black Olives, chopped Lettuce, Daisy Light Sour Cream, and Old El Paso Taco Sauce (Smoky Chipotle). The makings of something good!





I had purchased the Rotisserie Whole Chicken from Kroger yesterday afternoon. After getting it
home I pulled all the meat and stored it in a plastic container in the fridge until today when it was time to make the Tacos. I put the Chicken in a skillet and reheated it on medium heat. As the Chicken was heating I seasoned it with Ground Cumin, Dried Cilantro, Chili Seasoning, McCormick Grinder Sea Salt and McCormick Grinder Peppercorn Medley.









As the Chicken was heating I got my other ingredients ready. I opened up a can of Early California Whole Large Black Olives (Reduced Salt) and sliced them up. Then I got 2 small sauce pans; 1 for the Chili Beans and 1 for the Corn. Heated both until heated through.









With all the ingredients heated and ready I got the Soft Tortillas ready. I wrapped the Tortillas in
paper towels and microwaved them for 40 seconds. Now to make the Soft Tacos. I first layered in the Chicken, followed by the Taco Sauce, Chili Beans, Corn Kernels, Taco Sauce, Lettuce, and topped with a dab of Light Sour Cream. Loaded and ready to eat! Love these Soft Tacos. All the ingredients just come together to make one flavorful meal. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Simple Grilled Cheese and Egg SPAM® Sandwich

This SPAM® sandwich recipe calls for eggs. But we're not going to use all kinds of silly made-up egg words to describe it. Like, for example, we could say the taste is "eggscellent" or "eggstraordinary." And that it'll fill you with "eggscitement." But that just feels too "eggspected" and there's no "eggspletive" way we're going to go there.

Ingredients

2 slices SPAM® Single Classic
2 slices bread
1 slice cheese
1 large egg
Directions

1.In small skillet, fry SPAM® Singles over medium-high heat, turning once, about 15 minute's.
2.In separate small skillet, cook egg to desired doneness.
3.Spread 1 side of each slice bread with butter. Place in skillet, butter-side-down; top 1 slice with cheese. Cook until cheese starts to melt and bread is toasted. Top cheese with SPAM® and egg. Cover with top slice bread.

For Breakfast this morning I got the Egg Poacher out and made a Poached Egg. I served it on a
toasted Healthy Life Whole Grain English Muffin also had my morning cup of Bigelow Decaf Green Tea. It's another beautiful Fall Day out there, Sunny and 81 degrees. Finally got all the yard work done yesterday so today we gathered all the tables and chairs off the deck and driveway and stored them all in the shed. Our Fall Outside Cleaning is done! Took the cart out for a spin and picked up the mail. Tuckered out, rested up before Dinner. And for Dinner tonight I prepared Popcorn Shrimp w/ Mac and Cheese.

For Breakfast I made some hash Browns and a slice of Toast. I used Simply Potatoes Hash Browns and for the Toast I used Healthy Life Whole Grain Bread. Did a few things around the house and then I was off to the hospital. My best friend was going to have surgery this morning. I went up to be with his sister and we waited together. He's going to be fine as everything went well. It seems like I've been at this hospital way too much of late, 2 friends of mine and my dad all have been up here the last few weeks. So often that the Parking Valets know me by name. Back at home I laid down for a bit for a short nap and to relax a bit. For dinner tonight it's Pulled Chicken, Black Bean, and Corn Soft Tacos.

Soft Chicken Tacos

Dinner Tonight: Soft Chicken Tacos





For breakfast I made a Scrambled Egg, Shredded Cheddar, Turkey Breakfast Sausage (Crumbled), Pita Bread. I used 1 medium size Egg (Scrambled), Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Jennie - O Ground Turkey Breakfast Sausage, and Joseph's Flax Seed Whole Wheat Pita Breads. I was buying the Joseph's Pita Bread at Walmart and they said that Joseph's no longer made that type of pita Bread anymore. Which is usually the Walmart Code for we aren't carrying no longer. So I got online and as I suspected they do still make it, so now I'll order it online. At 50 calories and only 4 net carbs it's a great alternative to Bread.



Another cold day out, about 17 degrees this morning. Sunny and cold during the afternoon. Mom went to lunch with Seniors from Church this afternoon. So glad to see her get out for a while and enjoy herself. Taking care of Dad is really wearing her down. So while she was gone I cleaned and straightened the house up and did a load of laundry for her. For dinner tonight I had some Soft Chicken Tacos.






To make these I'll need 1 teaspoon McCormick Chili Powder, 1/2 teaspoon (each) McCormick Sea Salt and Peppercorn Medley, 1/2 teaspoon McCormick Roasted Ground Cumin, 1 pound Skinless, Boneless Rotisserie Chicken (pulled), Pam Cooking Spray, (6-inch) Old El Paso Flour Tortillas, Sliced Green and Black Olives, 1/4 cup (1 ounce) Sargento Shredded Reduced Fat Colby - Jack Cheese, Daisy Low-Fat Sour Cream (optional), and Wholly Guacamole (optional).




I purchased a Simple Truth Rotisserie Whole Roaster from the Kroger Deli earlier today. Love these Simple Truth Roasters, delicious and twice the size than most Deli Rotisserie Whole Roasters. The first thing I did was pull all the Chicken Meat; removing the skin and any bones. Put the Chicken in a bowl and set aside.




Then I prepared the skillet; Sprayed skillet with Pam Spray and 1 tablespoon of Extra Virgin Olive Oil. Heat on medium heat. Combined first 4 Ingredients in a small bowl; rubbed the spice mixture over Pulled Chicken. Placed the Chicken In the preheated skillet; cook about 7 minutes stirring frequently until heated through.










Next heated the Tortillas according to package directions. Divided the Chicken evenly among
Tortillas; topped each Tortilla with Sliced Olives and Cheese. Serve with or top with Sour Cream and Guacamole, if desired. One delicious easy to prepare meal! The Old El Paso Tortillas are 150 calories and 23 net carbs per serving (2 Tortillas per serving). Just love Tacos, so versatile and so many topping combinations. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.







Soft Chicken Tacos

Ingredients
1 teaspoon McCormick Chili Powder
1/2 teaspoon (each) McCormick Sea Salt and Peppercorn Medley
1/2 teaspoon McCormick Roasted Ground Cumin
1 pound Skinless, Boneless Rotisserie Chicken (pulled)
Pam Cooking Spray
(6-inch) Old El Paso Flour Tortillas
1/4 cup (1 ounce) Sargento Shredded Reduced Fat Colby - Jack Cheese
Daisy Low-Fat Sour Cream (optional)
Preparation
Prepare the skillet; Spray skillet with Pam Spray and 1 tablespoon of Extra Virgin Olive Oil. Heat on medium heat.

Combine first 4 Ingredients in a small bowl; rub spice mixture over Pulled Chicken.

Place the Chicken In THE PREHEATED SKILLET; cook 7 minutes stirring frequently until heated through.

Heat Tortillas according to package directions. Divide Chicken evenly among Tortillas; top each Tortilla with Cheese. Serve with Sour Cream, if desired.

Bush's One Pot Chicken, Rice & Beans

Dinner Tonight: Bush's One Pot Chicken, Rice & Beans





A sunny but cold morning starting off on the first day of 2015, about 15 degrees with a wind chill. But the sunshine is beautiful today. I guess about 5 years or so I had a total hip replacement on my right hip and haven't had much pain since. The last few days though I'm having pain again in the hip, hope it's nothing serious. May have to get it checked out if it continues to get worse. No Eating Out tonight, back in the Kitchen! I prepared a new recipe, Bush's One Pot Chicken, Rice & Beans.





Came across this recipe in the latest issue of EatingWell, it was ad page for Bush's Bean's.And it looked and sounded so good I had to give it a try! So at Kroger earlier I bought the Bush's Beans, Uncle Ben's White Ready Rice, some Fresh Cilantro, and a Kroger Simple Truth Rotisserie Chicken. Which are all the main ingredients for tonight's meal. Kroger has had Roasted Whole Chickens for quite a while now, but recently some Krogers have been using the Simple Truth Whole Chickens. It's like a night and day difference between the two, Simple Truth is the best Rotisserie Chicken I have ever had.







So to prepare this new dish I'll need the following; 3 cups cooked white rice, 1 can (16 ounce) BUSH’S® Reduced Sodium Vegetarian Baked Beans, 1 can (15 ounce) BUSH’S® Reduced Sodium Black Beans, drained and rinsed, 8 ounce rotisserie chicken, cut into ¾-inch pieces (1½ cups), and 1 cup frozen corn, thawed. I used a can of Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn instead of the Frozen Corn. Optional Topping include Frank's Hot Sauce, Sargento Shredded Reduced-Fat Sharp Cheddar Cheese, Salsa, diced Avocado, Daisy Reduced Sour Cream, or Cilantro. Heat over medium heat until warmed through, about 5 minutes. Stir frequently. Serve with optional toppings, and your done and you have one hearty and delicious Dish! We have another "Keeper Recipe"! All these ingredients combine so well, just fantastic flavor. Mom had prepared her and Dad something else for dinner, but they both started eating this Dish instead. For dessert later a Del Monte No Sugar Added Peach Chunk Bowl. Settling in for an evening of College Football Bowl Games.







BUSH’S® ONE POT CHICKEN, RICE & BEANS


A hearty meal doesn't have to be time-intensive. Case in point? This satisfying dinner, which is ready in just 15 minutes.

Ingredients

3 cups cooked white rice
1 can (16 ounce) BUSH’S® Reduced Sodium Vegetarian Baked Beans
1 can (15 ounce) BUSH’S® Reduced Sodium Black Beans, drained and rinsed
8 ounce rotisserie chicken, cut into ¾-inch pieces (1½ cups)
1 cup frozen corn, thawed


Directions

Place rice, beans, chicken and corn in large saucepan. Stir to combine.

A chill in the air this morning, about 38 degrees. Tried a new item for Breakfast this morning, Egg Beater's Egg Whites. Scrambled a serving of it up and served it on a Healthy Choice Whole Grain English Muffin with a couple of Johnsonville Turkey Breakfast Sausage Links.Love the Egg Whites! Ran a couple of errands for Mom and stopped by Kroger for her. For dinner tonight it's a Chicken Bacon Ranch Pasta w/ Baked Sourdough Mini Boule.







Found this recipe on a Pillsbury recipe email the other day. Another one of those can't wait to make it recipes! The original version is very high in calories and carbs so I had to reduce both. So I used Ronzoni Smart Taste Rotini, Kroger Deli Rotisserie Whole Chicken, Kraft Lite Classic Ranch Dressing, Jennie - O Turkey Bacon, and Sargento Shredded Reduced Fat 4 Cheese Italian. The original recipe and ingredients is at the end of the post.






To prepare it start by preheating the oven on 400 degrees. The recipe calls to microwave the dish but I prefer to bake it instead. Cook and drain the pasta as directed on package. Then in a large bowl, mix pasta and remaining ingredients. Put everything in a casserole dish and bake until heated throughout the mix. Then get ready to enjoy! I love my Pasta and I love my Chicken so this dish was perfect for me! Any dish with Bacon in it has to be good and the Cheese and ranch Dressing worked perfect with the other ingredients. Plus I saved a lot of the calories and carbs from the original recipe. I also baked a Mini Boule of Sourdough Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.








Make-Ahead Chicken Bacon Ranch Pasta
Need to cook from the pantry tonight? This pasta gets dinner on the table in less than 30 minutes and is packed with flavors your family will love.


Ingredients

1 lb uncooked rotini pasta
3 cups shredded or pulled deli rotisserie chicken
1 bottle (16 oz) ranch dressing
1 cup crisply cooked and crumbled bacon (9 to 11 slices)
2 cups shredded Italian cheese blend (8 oz)


Steps
1 - Cook and drain pasta as directed on package.
2 -In large microwavable bowl, mix pasta and remaining ingredients.
3 - Microwave uncovered on High 1 to 2 minutes or until cheese is melted and mixture is hot and steaming.
4 - To freeze: Spray 2 (8-inch) disposable foil cake pans with cooking spray. Cook and drain pasta as directed on package. In large bowl, mix pasta, chicken, dressing and bacon. Divide mixture between pans. Top with cheese. Spray pieces of foil large enough to cover pans with cooking spray. Cover pans with foil, sprayed side down. Place foil-covered pans in gallon-size resealable freezer plastic bags, or wrap in double layer of plastic wrap. Label and freeze. To bake: Thaw pan(s) overnight in refrigerator. Heat oven to 350°F. Remove from plastic, and place foil-covered pan(s) on cookie sheet. Bake 40 to 50 minutes or until instant-read thermometer inserted in center of mixture reads 165°F. If baking from frozen, bake 60 to 75 minutes.
Use whatever shape pasta you'd like for this recipe, from macaroni to rigatoni!

If you don't have cooked bacon hanging around, the packaged precooked variety makes a nice stand-in.

Thin Crust BBQ Chicken Pizza!

Today's Menu: Thin Crust BBQ Chicken Pizza



Pizza Night! Thin Crust Low Carb Pizza night! I used Flatout Light  Flatbread for my Pizza Pie. I used a Rotisserie Chicken I had purchased from Walmart and pulled all the Chicken and shredded it. In the oven after lightly oiling the Flatbread I heated it at 350 degrees for 7 minutes. Then removing it from the oven I added my ingredients: J B's Sticky Stuff BBQ Sauce, Chicken, Black Olives, Mushrooms, and Pizza Cheese. Back into the oven for another 7 minutes and then served! The Chicken with the J B's Fat Boy Sticky Stuff BBQ Sauce is a delicious combo and the Flatbread makes a fantastic thin crust pizza. For dessert/snack later some Townhouse Flip It Crackers topped with Sargento Ultra Thin Swiss Cheese and Hormel Turkey Pepperoni.



Thai Chicken Flatout Thin Crust Pizza

Ingredients:

1 Flatout Light Flatbread
2 Tbs J B's Sticky Stuff BBQ Sauce
3/4 cup Rotisserie Chicken, shredded
4 oz shredded Kraft Pizza Cheese or Kraft Low Fat Mozzarella
1 Tb's sliced Black Olives
1/4 cup sliced Baby Bella Mushrooms

Directions:

 Cook lightly oiled Flatout in 350°F oven directly on grate for 7 minutes. Remove, top with all ingredients. Return to oven and cook 7 more minutes. Cut into slices and enjoy! Serves 2.

Ready for the oven!

BBQ Chicken Pizza Night

Dinner Tonight: BBQ Chicken Pizza!

It was BBQ Chicken Pizza for dinner tonight! This is one delicious Pizza. The Chicken, Gouda Cheese, 2% Mozzarella Cheese, Pita Bread and J B‘s Fat Boy Sticky Stuff Sauce makes an incredible Pizza and then add in the Mushrooms, Pineapple Bits, and Black Olives, Too good! A note about the Gouda Cheese, I love this cheese! It melts perfectly. If you like ooey, gooey cheese you have to try this one. For the Chicken I used a Kroger Rotissiarie Chicken. I pulled all the meat and shredded it. I seasoned it with Sea Salt and Ground Black Pepper. I also used Wheat Pita Breads from Meijer Bakery.Easy to fix and done in minutes from the oven. A lot healthier than frozen or Delivery Pizza also. I left the recipe below.

BBQ Chicken Pizza

Makes 2 Pizzas
Ingredients

1 Tablespoons Extra Virgin Olive Oil
1 Rotissiaire Chicken or 2 baked Boneless Chicken Breasts
1 Cup Barbecue Sauce (recommended: J B’s Fat Boy Sticky Stuff BBQ Sauce)
2 Wheat or Whole Wheat Pita Bread
4 Medium Baby Bella Mushrooms, sliced thin
2 tablespoons of Pineapple Bits, I used Dole pineapple Bits
1 Can Sliced Black Olives, 1 Tablespoon on each Pizza
1 Cup Shredded Gouda, I used Murray’s Dutch Gouda
1/2 Cup Shredded 2% Mozzarella

Directions

Preheat oven to 375 degrees F.

Remove the skin and pull and shred all the meat from the Rotissiaire  Chicken and store in a bowl or plastic container. After pulling all the meat add 1/2 cup of the BBQ Sauce and mix until the Chicken is coated.

Build the Pizza. Brush Pita Bread with Extra Virgin Olive Oil. Add remaining 1/2 cup BBQ Sauce and brush it on the Pita Breads. Add layer of the shredded Chicken, Black Olives, Sliced Mushrooms, Pineapple Bits, Shredded 2% Mozzarella and Shredded Gouda Cheese.

Bake at 375 degrees until Cheese is melted and pizza is warmed. Enjoy!

Move over Turkey Sausage Pizza there's a new #1 homemade Pizza at my house, BBQ Chicken Pizza! This is a delicious Pizza. The Chicken, Gouda Cheese, 2% Mozzarella Cheese, Pita Bread and Fat Boy Sticky Stuff makes an incredible Pizza and then add in the Mushrooms and Black Olives, Too good! Dinner Tonight: Rotisserie Chicken Sandwich w/ Baked Steak Fries


I bought a nice plump Walmart Rotisserie Chicken earlier today. I pulled all the meat and will get several meals out of it. For dinner I had a Rotisserie Chicken Sandwich on toasted Healthy Life Whole Grain Bread. Topped it with Kraft Reduced Mayo w/ Olive Oil, a splash of Jack Daniel's Smoked Honey BBQ Sauce, and a slice of Smoked Gouda Cheese. I also had a serving of Ore Ida Baked Steak Fries. For dessert/ snack later a bag of Jolly Time 100 Calorie Mini Bag of Pop Corn.
