Ground Pork Pesto Burger w/ Baked Crinkle Fries

Dinner Tonight: Ground Pork Pesto Burger w/  Baked Crinkle Fries
Ground

I had a Ground Pork & Pesto Burger along with some Baked Crinkle Fries. The pesto mixed in with the Ground Pork is a perfect match!  I had made up 4 of these and froze 3 of them and kept 1 out for dinner. I used Kroger Brand Ground Pork, 180 calories and 0 carbs. I combined the Ground Pork with Buitoni Pesto w/ Basil and Italian Style Bread Crumbs and mixed by hand until everything was well combined and made it into patties. I fried the Burger in Extra Virgin Olive Oil and seasoned it with Morton Salt Substitute and Ground Black Pepper. Itopped it with Sauteed Mushrooms and a slice of Sargento Muenster Cheese and served on a Healthy Life Whole Grain Bun. The Pesto and Pork are a fantastic pairing! You have to give these a try. I left the recipe at the end of the post. I also had a side of Ore Ida Baked Crinkle Fries. For dessert later a Jello Sugar Free Chocolate Pudding.

Grilled Bison Burger w/ Baked Crinkle Fries

Dinner Tonight: Grilled Bison Burgers w/ Baked Crinkle Fries

Fired up the grill up and made some Bison patties. I seasoned them with Sea Salt and Ground Black Pepper. I grilled them on medium high about 3 minutes per side. You have to keep a close eye on them because they cook so quickly. The taste of Bison on a open flame is a perfect pairing! I topped the Burgers with Lettuce, Baby Bella Sauteed Mushrooms, and a slice of Sargento's Reduced Fat Colby/Jack Cheese and served on a Healthy Life Whole Grain Bun. I was asked the other day what brand of Bison do I use. Well I use Great Range Bison Products. One reason is the quality and freshness of their products. This is the only fresh Bison that is sold around here. There are a few others but they are of the frozen variety. I left the web site link below for Great Range.

For a side I had baked Ore Ida Extra Crispy Crinkle Fries. For dessert later a Pillsbury Hot Apple Turnover topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

About Great Range Brand Bison
and Rocky Mountain Natural Meats

Great Range Brand Bison is produced and distributed by Rocky Mountain Natural Meats. Rocky Mountain Natural Meats started in 1986 as a small meat distributor devoted solely to bison. From the beginning, our focus was to provide high quality bison meat and great service to grocers, distributors and restaurants nationwide. An in-house grading system was developed to guarantee premium quality and consistency to the end user - this became the Great Range Bison brand. Carcass characteristics such as fat color, fat cover, muscle color, ossification and weight are the major factors in determining if the product receives the Great Range Bison brand. By working closely with our producers and assisting them with ration formulation, our quality control begins at the source. Today, Rocky Mountain Natural Meats processes over 400 head of bison per week.

In July of 1998, we built our first USDA facility to increase our ability to service customers across the nation. In March of 2004 we completed an addition that increased our processing and cooler storage areas to over 10,000 sq. ft. Utilizing Rinse & Chill™ technology at slaughter along with daily testing for E. coli we can ensure that our customers receive the industry's highest quality products. In December of 2007 we moved into our current facility. With increased sales came the need to build again – this time a 50,000 sq.ft. state-of-the-art fabrication and further processing facility that allows us to control all aspects of production post-slaughter. Our portion control and grinding lines allow us to meet the demands of any national restaurant or grocery chain. This attention to detail from Prairie to Plate™ has made Rocky Mountain Natural Meats the leading purveyor of premium quality bison nationwide. Article End Star

Tilapia Sandwich w/ Baked Seasoned Crinkle Fries

Dinner Tonight: Tilapia Sandwich w/ Baked Crinkle Fries

If you want a flat out delicious Fish recipe look no further! I made the recipe with Tilapia but it would go great with Mahi Mahi, Sea Bass, or about any Fish. It made one of the most delicious Fish Sandwiches I ever had. I seen this recipe earlier this morning from the Neely's on the Food Network and it looked too good not have asap! So I laid out two Tilapia Fillets and I was set. I preheated the oven to 450 degrees F. Then placed a heavy-duty baking pan sprayed with nonstick spray in the oven to heat.

First you dredge the fillets in a Melted Butter, Dijon Mustard, and Chopped Dill. Then you combine some Panko Bread Crumbs, Cayenne and some Sea Salt and Pepper and dredge the fillets through this making sure the fillets are completely coated. Place on the hot sheet trays in the oven and bake until cooked through and lightly golden, 12 to 15 minutes. Assemble the sandwich by slathering the Bread with Tartar Sauce, topping with the breaded fish fillet and adding you toppings. I left my version of the recipe below with a web link to the original one on the Food Network. As a side I had Baked Ore Ida Seasoned Crinkle Fries. For a dessert/snack later a serving of Ruffle's Reduced Potato Chips and Simply Kraft Sour Cream Ranch Dip.

Tilapia Sandwich

Ingredients

    Nonstick spray
2 tablespoons melted butter (I Can't Believe It's Not Butter)
    2 tablespoons Dijon mustard
    1 tablespoon chopped fresh dill
    1 cup panko breadcrumbs
1 to 2 teaspoons cayenne pepper
Kosher salt and freshly cracked black pepper
    Two 6-ounce tilapia fillets
Two Healthy Life Whole Grain Buns or Healthy Life Whole Grain Bread
    Iceberg lettuce, Sliced Tomatoes (Optional)
    Heinz Premium Tarter Sauce

Directions

Preheat the oven to 450 degrees F. Place a heavy-duty baking pan sprayed with nonstick spray in the oven to heat.

Mix together the melted butter, Dijon and dill in a pie plate. In another pie plate, combine the panko, cayenne and some salt and pepper. Dredge the fish through the melted butter mixture and then through the panko. Place on the hot sheet trays in the oven and bake until cooked through and lightly golden, 12 to 15 minutes.

Assemble the sandwich by slathering the toasted split roll with Tartar Sauce, topping with the breaded fish fillet and adding the tomato slices and shredded lettuce.

* Recipe was based on a recipe fron The Neely's on the Food Network *

Dinner Tonight: Bleu & 'Shroom Bison Burger w/ Baked Crinkle Fries

I had a Ground Bison Sirloin Burger that I seasoned with McCormick Grinder Steakhouse Seasoning. It was fried in Extra Virgin Olive Oil about 4 minutes per side. Maytag Bleu Cheese and served on a Healthy Life Whole Grain Bun. I also had a side of Ore - Ida Baked Crinkle Fries. For dessert later a slice of the Pillsbury Sugarless Devil's Food Cake that I baked yesterday with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

Turkey Joes and Pressed Potatoes with a Apple Brown Betty for Dessert

Dinner Tonight: Turkey Joes and Pressed Potatoes with a Apple Brown Betty for Dessert

It was a Diabetic Friendly Comfort Food Dinner tonight! Thank you Food Network for the Pressed Potatoes and the Apple Brown Betty recipes. I'll leave the recipes for all three at the end of the post. The family had some friends over to celebrate my Dad's 90th Birthday so I made enough for all.

I usually make the Chicken Joes but went with the Extra Lean Ground Turkey, even less calories and carbs than Ground Chicken. I topped some of the Joes with crumbled Bleu Cheese, some with a slice of Smoked Gouda and others no topping.  The Pressed Potatoes called for Red Potatoes but I used Golden Potatoes instead. It also called for fresh Basil, which I was out of so I used some dry Basil I had. The Brown Betty was a recipe from Ellie Krieger of the Food Network. The only thing I did different from the recipe is I used Splenda Brown Sugar and for the Butter I used I Can't Believe It's Not Butter (Stick). Serve the Brown Betty warm with a side of Breyer's Vanilla Carb Smart Ice cream. Everything turned out great and everyone loved it!

Turkey Burger w/ Sauteed Mushrooms and Harwood Smoked Gouda Cheese

Dinner Tonight: Turkey Burger w/ Sauteed Mushrooms and Hardwood Smoked Gouda Cheese

Light but filling dinner tonight. I had a Jennie - O Turkey Burger that I topped with Sauteed Mushrooms and a slice of Hardwood Smoked Gouda Cheese. Gouda is bit higher in calories than my 2% Cheese I normally have but it's worth it from time to time. Gouda is a great Cheese for any type of burger or sandwich. Rich and creamy and melts just right on the burgers. I had the burger on a Healthy Life Whole Grain Bun. I had a side of Pringle's Multi-Grain Chips. For dessert later a bowl of Blue Bunny reduced Fat Butter Pecan Ice Cream

Ground Chicken Burger w/ Kicked Up Chili Beans

Today’s Menu: Ground Chicken Burger w/ Kicked Up Chili Beans

I had a Ground Chicken Burger with a side of Kicked Up Chili Beans for dinner tonight. The lighter the better in this heat wave your having. I used Tyson Extra Lean Ground Chicken. I added a tablespoon of Italian Style Bread Crumbs to the burger. With lean Chicken it’s tough sometimes keeping it together to form a burger so the bread crumbs really help. I seasoned it with Sea Salt, Ground Black Pepper, and Ground Smoked Cumin. Fried it in Extra Virgin Olive Oil about 4 minutes per side. Served on an Healthy Life Whole Grain Bun and topped with Lettuce, a slice of Monterrey/Jack Cheese and a dab of Jack Daniel’s Smoked Honey BBQ Sauce. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, and a few dashes of Frank’s Red Hot Sauce. Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with fresh Red Raspberries.
