Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole

Dinner Tonight: Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole





To start the morning off I had a cup of Bigelow Decaf Green Tea. No appetite this morning. After my Tea and morning workout I went to McDonald's to pick up Breakfast for Mom. I headed back out and went to Menard's. I'm looking for a battery operated weed trimmer. Stopped off at the Post Office and mailed a few letters for Mom. Partly sunny and humid out today, high of 84 degrees. For Dinner tonight I prepared a Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole.




While at Meijer a while back I bought a few fillets of Walleye. I had used a couple of them and had
the last one in the freezer. So I grabbed that bag and sit in the fridge overnight to thaw. To prepare it I first rinsed the fillet in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!





For a side I cooked up the last bag of the fresh Green Beans. Mom’s Cousin dropped some more of them off to us that they had grown. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans!












Then I also prepared a box of Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the
other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. I love my Potatoes! I also had a slice of Aunt Millie's Light Whole Grain Bread that I lightly Buttered with I Can't Believe It's Not Butter. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Oven Preparation
Best for Golden Browning

1 – Preheat oven* to 450°F. Combine potatoes and sauce mix in 1 1/2-quart baking dish.
2 – Stir in 2 cups boiling water, 3/4 cup milk, and 2 Tbsp. butter or margarine with whisk.
3 – Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender. Remove from oven and let stand a few minutes before serving (sauce will thicken slightly when cooling).
* At 400 degrees, bake 30 – 35 min. or until tender
