Dinner Tonight: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip





For Breakfast this morning I prepared a Breakfast sandwich. I heated up a al fresco Chicken Sausage Patty. As that was heating I toasted a Thomas Light 100% Multi Grain English Muffin. I took the Patty put it between the Muffin halves and topped the Patty with a 1/2 slice of Kraft Deli Style Sharp
Cheddar Cheese. These are so good! After Breakfast I went to Kroger for Mom, she wanted some Lunch Meat. I stopped by McDonald's to pick up her usual Breakfast of a Sausage, Egg, and Cheese on Bagel along with a medium Decaf Coffee. Got the cart out of the shed after Lunch along with a rake and the leaf blower. I went around the house and cleaned the flower beds and around the house. Not bad out today, mostly sunny and 50 degrees. For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.




I had fully intended to prepare a Pork Roast for Dinner tonight, until I went to Kroger. I had went to the Deli to purchase some Kahn's Bologna and Boar's Head Sweet Slice Ham, which I did. But I seen them slicing some Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef and it looked
way to good to pass up! It was a beautiful Rare and it was on sale. So the menu changed tonight to a Roast Beef and Vermont Cheddar Sandwich! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango Snapple to drink.

I had a Jimmy Dean Simple Scrambler Cup – Turkey Sausage Crumbles, Egg Whites, and Cheddar Cheese for Breakfast. I also had my morning cup of Bigelow Decaf Green Tea. 43 degrees and partly sunny outside today. After Breakfast did a load of laundry and cleaned the house this afternoon. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.







So I wanted something light and a Sandwich seemed right for Dinner! I had picked up some Boar's Head Rare London Broil at Jungle Jim's yesterday. For my Sandwich I’ll be using the always delicious Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

I made a Breakfast sandwich to start my Sunday Morning off. I toasted a Thomas Light 100% Multi Grain English Muffin. Then I lightly fried 4 slices of (thin sliced) Boar's Head Sweet Slice Ham. As the Ham was cooking I scrambled some Egg Beater's Egg Whites and topped the Egg Whites with Sargento Off the Block Shredded Mozzarella. Piled all that on to the toasted English Muffin and I had one delicious Breakfast Sandwich! Outside today it was partly sunny and 28 degrees. After I ate I went to McDonald's and picked up Breakfast for Mom. After ward she went to Church. I did a few things around the house and then I laid back down for the afternoon. I had a very bad Sinus Headache. So not much going on. For dinner tonight its a Breakfast Menu! I prepared Eggs, Hash Browns, Turkey Sausage, and Whole Grain Toast.




Nothing like a hearty, healthy, and delicious Breakfast for Dinner too! I’ll need one Egg, Simply Potatoes Shredded Hash Browns, a couple of Jennie – O Turkey Breakfast Sausage Links, and 2 slices of Aunt Millie’s Light Whole Grain Bread. First time I had found the Jennie - O Turkey Breakfast Sausage Links at Meijer in a while.








So I got out a couple of small skillets and got the toaster fired up. Heated up both skillets, sprayed
with Pam Cooking Spray in both and added Extra Light Olive Oil to one of them. In the skillet with no oil I started to fry the Jennie – O Turkey Sausage Links. The skillet with Oil, I prepared the Simply Potatoes Hash Browns. When both were cooked I put each one into separate bowls and set aside.







Then I started toasting the Bread. Next in the
skillet that had the Hashbrowns I fried my Egg. Seasoning the Egg with Morton’s Lite Salt and Ground Black Pepper. When the Toast was done I buttered both slices with I Can’t Believe It’s Not Butter. As the Egg was ready I grabbed a plate and plated everything! And what a Breakfast Dinner! Eggs, Hash Browns, Turkey Sausage, and Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

For Breakfast this morning it was Ham and Eggs. I had purchased a small Meijer Sliced Pepper Ham. So I sliced several pieces up and fried them in a small skillet until heated through. Then in another
skillet I fried a Sunny Side Up Egg. Then I toasted 2 slices of Aunt Millie's Light Whole Grain Bread
that I lightly Buttered with I Can't Believe It's Not Butter. Also had a cup of Bigelow Decaf Green Tea. Good Breakfast to start an Icy and Cold morning. We got freezing rain overnight and snow on top of it, about 1/2 an itch. It all made for some slick roads out there, a lot of wrecks. It got to 40 degrees later and cloudy for the afternoon. I'm usually up by 6:00 am. or so but I slept in till 8:00 this morning! It felt good to get that extra sleep. Not much going on outside today so I did things around the house today. Cleaned the house and then some repairs. I replaced some of the lower wall trim around the house. I run into it sometimes in my Hoveround Mobility Chair and damage it. So a while back I bought a long strip of the wood trim at Home Depot. That way I have it on hand to replace it from time to time. So I stayed busy inside all day. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.


Just seemed like a good day for a Sandwich for Dinner! For my Sandwich I’ll be using the Boar’s
Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Dean’s Ranch Dressing Dip. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Egg Sandwich and Hash Browns

Dinner Tonight: Egg Sandwich and Hash Brown





To start my morning off I had a cup of Bigelow Decaf Green Tea, just hungry this morning. Had just a trace of frost this morning. I wish we would get a freeze so it would kill off some of ragweed, it
would be a lot better for my allergies! Sunny and 53 degrees out today. After Breakfast I went up the road to the nearby Kroger for a few items and my regular stop at McDonald's to pick up Breakfast for Mom. Spent most of the day in the Kitchen. Baked some Pillsbury Halloween Cookies for all my cousins little ones. I also got their Halloween Bags ready for them. Then both Mom and me had been wanting some Pig in the Blankets so I picked up the ingredients for them. They are great to snack on!. I used Turkey Sausages and a can of Pillsbury Reduced Calorie Crescent Rolls to make them. So for Dinner tonight it’s an Egg Sandwich and Hash Browns.



I love Egg Sandwiches! hadn’t made for quite a while. And made a couple a while back and been
having them more often. To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.










Heat a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Cheese on top of it. Cook until dome, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.








To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns, which I love having anytime. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Smoked Turkey, Sweet Slice Ham, and Swiss Cheese Grilled Sandwich w/ Baked Fries

Dinner Tonight: Smoked Turkey, Sweet Slice Ham, and Swiss Cheese Grilled Sandwich w/ Baked Fries




To start my Sunday morning off I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to
prepare it. Just cook the  Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. Mom had Breakfast here and then on to Church. Partly cloudy and 73 degrees outside today. I went Walmart Lawn and Garden Center. I was looking for some medium size plant pots. I also picked up a couple of hanging Mum Baskets. After Lunch, spent the day watching NFL Football. For Dinner tonight I prepared a Smoked Turkey, Sweet Slice Ham, and Swiss Cheese Grilled Sandwich w/ Baked Fries.


A Grilled Sandwich for Dinner tonight sounded perfect for Dinner tonight. I used Boar’s Head Meat and Cheese along with Baked fries! To make my Sandwich I’ll need; Aunt Millie’s Light Whole Grain Bread, Boar’s Head Hickory Smoked Black Forest Turkey, Boar’s Head Sweet Slice Boneless Smoked Ham, Boar’s Head Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and French’s Spicy Brown Mustard.







I used a flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries










While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Aunt Millie’s
Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, Boar’s Head Smoked Turkey slices, the Boar’s Head Swiss Cheese, French’s Spicy Mustard, and added the top slice of the Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! I love Grilled Sandwiches!




I had already preheated the oven, so as the Sandwich was finishing cooking I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

I had a good night's sleep last night, no Phantom Pains! For Breakfast this morning I made a
Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, and had a cup of Bigelow Decaf Green Tea. Outside more much needed Rain. A lot cooler than normal this time of year, 77 degrees and still humid though. After Breakfast I started a couple of loads of laundry up. Mom went on to Church. Then I started house cleaning, dusted and vacuumed. Had everything done and caught up on some shows I had recorded. For Dinner Tonight I prepared a Smoked Turkey, Sweet Slice Ham, and Smoked Gouda Grilled Sandwich w/ Baked Fries.



I wanted a Grilled Sandwich for Dinner tonight so what better than a Grilled Sandwich using Boar's Head Meat and Cheese along with Baked fries! To make my Sandwich I'll need; Aunt Millie's Light Whole Grain Bread, Boar's Head Hickory Smoked Black Forest Turkey, Boar's Head Sweet Slice Boneless Smoked Ham, Boar's Head Smoked Gouda, Pasteurized Process Gouda and Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and French's Spicy Brown Mustard.

Dinner Tonight: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip



For Breakfast this morning I prepared 2 Eggs Scrambled, toasted 2 slices of Aunt Millie's Light
Whole Grain Bread, heated up some Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. I sprinkled some Sargento Reduced Fat Colby-Jack Shredded Cheese and Ortega Chipotle Taco Sauce on my Scrambled Eggs. I buttered the Toast with I Can't Believe It's Not Butter. Great Breakfast to start the day off with! Outside its Hot and Humid! A high of 98 degrees and the Heat Index had it over 100 degrees! They say we 4-5 days of this with each day getting hotter before cooling down a bit. But after last Winter I'm not complaining! Did some housework and cleaned up a bit outside. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.


For my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar's Head Vermont Cheddar
Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie's Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle's Reduced Fat Potato Chips with some Dean's Ranch Dressing Dip. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Bison Steak, Eggs, Hash Browns, and Toast Breakfast is served - For Dinner!

Dinner Tonight: Bison Steak, Eggs, Hash Browns, and Toast Breakfast




To start my Sunday off I just had a cup of Bigelow Decaf Green Tea. After my Tea I went and picked up Breakfast for Mom at McDonald's. Finished up some light cleaning around the house. Then after
Lunch went and got gas and went to the ATM. On the way home I stopped by a friend of mine I hadn't seen in a while, good catching up! Lot of rain on and off throughout the day. Felt like having a Big Breakfast for Dinner tonight. I prepared a Bison Fillet, an Egg Sunny Side Up, Hash Browns, and Toast!




For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some
McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. I it came out a perfect medium rare! It was so tender and juicy.






Next I used the same skillet and I prepared a Sunny Side Up Egg. Fried it on medium low, seasoned with Morton’s Lite Salt and Ground Black Pepper.












As the the Steak and Egg were cooking, in another skillet I prepared some Simply Potatoes Shredded Hash Browns. I love these, I could have them every day! Again I used a small skillet, sprayed it with Pam Cooking Spray, added 1 tablespoon of Extra Light Olive Oil, and heated it on medium heat. I fried these for 14 minutes. When done I sprinkled some Sargento Reduced Fat Shredded Sharp Cheddar Cheese.








Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. Topped them with
some I Can’t Believe It’s Not Butter. Had a glass of 2% White Milk to drink. I had one hearty Comfort Food Dinner tonight! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

It was a very long evening and morning for me. As I battled Phantom Pains throughout that time. I didn't get much sleep if any overnight as the pains were very intense. Why can't they come up with something to control them. But for now all I can do is grit my teeth and hope they pass. When they finally slowed and stopped I didn't do a whole lot of anything today but try to catch up on some sleep and relaxation. For Dinner I wanted something that didn't take a lot of effort to prepare so I went with a Roast Beef and Vermont Cheddar on Whole Grain with a Tossed Salad.




On our visit to Jungle Jim's International Market I picked up a few Boar's Head items from the Deli, Boar's Head, Deluxe Roast Beef, Honey Smoked Turkey, Sweet Sliced Ham, and Vermont Cheddar Cheese (Yellow). I'm using the Roast Beef and Vermont Cheddar. I served it on Aunt Millie's Light Whole Grain Bread, topped it with some French's Yellow Mustard. I also had a small side of Ruffle's Reduced Fat Potato Chips.










I also had a Tossed Salad. I had a bag of Dole Greener Selection Salad. For the Salad Dressing I used Kraft Fat Free Classic Catalina Dressing along with a sprinkle of Oscar Mayer Real Bacon Pieces. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Diet Peach Snapple to drink.
