This looks and sounds like one delicious Chicken Dish! Moroccan Lemon Chicken with Olives
Preparation time: 20 minutes. Cooking time: 1 hour.

Ingredients
1 tablespoon olive oil
6 skinless, boneless chicken breasts (approximately 4 ounces per breast)
1 large onion, chopped
2 cloves garlic, minced
2 sticks whole cinnamon
2 teaspoons ground cumin
2 teaspoons ground turmeric
1/2 teaspoon freshly ground black pepper
2 lemons
2 small plum tomatoes, chopped
1 cup water
18 large green olives

Directions
Heat olive oil in a large pan. Place chicken breasts in hot oil and cook on all sides until slightly browned on surface. Remove from pan and set aside. To pan add onion, garlic, cinnamon sticks, cumin, turmeric, and black pepper. Cook about 5 minutes, stirring, until onion is cooked. Return chicken to pan and cover. Squeeze the juice of two lemons, reserving lemon peels. Add lemon juice to pan. Slice lemon peels into strips and add to pan with chopped tomatoes, water, and olives. Cover the pan and bring contents to a boil, then reduce heat to low and allow the mixture to simmer for about 45 minutes, until chicken is tender, occasionally lifting the lid to stir mixture and check that liquid available in pot is adequate to avoid burning. When chicken is done, arrange contents on a platter, discarding cinnamon sticks. Serve immediately. (This dish is excellent served with couscous.)

Yield: 6 servings.

Serving size: 1 chicken breast with 3 green olives.

Kitchen Closed – It’s Pizza Tonight from Domino’s

Dinner Tonight: Kitchen Closed – It’s Pizza Tonight from Domino’s

Toasted a couple of Eggo Nutri Grain Waffles and had a cup Bigelow Decaf Tea for Breakfast this morning. Lot of rain overnight into the morning. Then partly sunny and 60 degrees out. Rested most of the day, dealing with a painful sinus headache. They say our pollen count outside is extremely high and my head can feel it! Like most plans, they are made to be broken. I was going to prepare Dinner tonight Mom wanted Pizza so…….

........Pizza it is! I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! I had a Diet Coke to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Caffeine Free Diet Mango Tea Snapple to drink. The Kitchen reopens tomorrow! Take care all.

Ancient Grain Mini Naan Bread Pizza

Dinner Tonight: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin and topped it with Smucker's Sugarless Blackberry Jam. Alo had the morning cup of Bigelow Decaf Green Tea. Cloudy, raining, and 43 degrees out today. Very sad day, my Aunt passed away. She was Dad's Sister. They lived in Florida and she was 91 years old. We'll miss her deeply.

For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

I had this last week and it was so ggod I wanted it again. So I picked up another package of Stonefire
Mini Naan Ancient Grain Bread and Jennie – O Turkey Lean Turkey Sausage at Meijer my last visit there. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. I love this Stonefire Mini Naan Ancient Grain Bread, it tastes so fresh and bakes up perfect!

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No
Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices
of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite I knew the Naan Bread was a perfect Pizza Crust! The Crust had excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I’ll have to get a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Dinner Tonight: Grilled Pastrami and Swiss Sandwich w/ Italian Pasta Salad

I just had a cup of Bigelow Decaf Green Tea for Breakfast. I didn't want anything too heavy I had to be at the Hospital for a EMG/Nerve test at 8:30 this morning. They want to make sure my Diabetes 2 isn't creating any nerve damage. I also had blood work done. Beautiful day out today, mostly sunny and 65 degrees. Got the cart out and did some yard work and later took a spin in the cart around the neighborhood. So good to be able to get out again without having to bundle up! For Dinner tonight its a Grilled Pastrami and Swiss Sandwich w/ Italian Pasta Salad.

To make my Grilled Pastrami and Swiss Sandwich I’ll be using; French’s Spicy Brown Mustard, Boar’s Head Top Round Pastrami, Boar's Head Swiss Cheese, Blue Bonnet Light Butter, and Klosterman Rye Bread to make my Sandwich.

To prepare it I started by buttering the outside half of a slice of the Rye Bread. Next spread the Mayo on the bottom slice of Bread, next layered the Pastrami, spread the Brown Mustard, and added a slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a large skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Swiss Cheese melted. Love these Grilled Sandwiches!

To go with my Grilled Sandwich I had prepared some Italian Pasta Salad, made about noon today. A Light and tasty dish that includes Ronzoni Smart Taste Rotini Pasta, Black Olives, Green Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovy Paste, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning, and topped with Kraft Reduced Fat Grated Parmesan Cheese. Boiled the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use. Really enjoyed the Dinner tonight of a Grilled Pastrami and Swiss Sandwich along with some Italian Pasta Salad. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Boar's Head Cap-Off Top Round Pastrami

This hand-trimmed top round is rich and smokey and is generously coated with spices, including black pepper, ginger, cloves and coriander, then patiently smoked.  Boar's Head Top Round Pastrami is bursting with classic New York.

Dinner Tonight: Turkey Tacos and Refried Beans

To start my day off I had a Jimmy Dean Simple Scramble Cup - Crumbled Turkey Sausage, Egg
White, Cheddar Cheese. Another cold day out there, 13 this morning and a high of 25 degrees. After Breakfast I went to McDonald's to pick up Breakfast for Mom. I was sort of slow today my Sinuses are really bothering me today, very bad headaches. Lot of rest and that was about it. I have to fast tonight until I go to the Family Doctor in the morning for my Blood Sugar, Cholesterol, etc. For Dinner tonight I prepared Turkey Tacos and Refried Beans.

We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Ancient Grain Mini Naan Bread Turkey Pepperoni and Turkey Sausage Pizza

Dinner Tonight: Ancient Grain Mini Naan Bread Turkey Pepperoni and Turkey Sausage Pizza

Tried a new recipe for Breakfast this morning, Baked Diced Potato Breakfast Skillet. I prepare Diced Potatoes and Ham Skillet  but never this way. I preheat the oven on 400 degrees. I used the Cast Iron
Skillet and prepared a package of Simply Potatoes Steak House Seasoned Diced Potatoes. Cooked them for 16 minutes, flipping them over several times. Removed the Skillet from the heat. Then with the back of a spoon, made 2 indention in the potatoes and cracked an egg into each well. Baked at 400 degrees for 11 minutes until egg whites were completely set and yolks begin to thicken but are not hard. Took it out of the oven and sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Put it back in the oven and baked it 1 minute longer until the cheese was melted. It came out delicious! Mom even had it instead of her usual McDonald's.

It's 51 degrees and partly cloudy out today. Great weather to be late December! I seen the long range forecast and most days are in the 40's and 50's. Hopefully they are right. The Naan Bread is 150 calories and 21 net carbs per serving which is 1 Naan Bread. Mom really enjoyed them, so its Parent Approved! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
