Kitchen Hints of the Day!

Slow Cooker hints.........

* Buy cheaper meat. Tougher cheaper meats are better for slow cooking. For best results when cooking meat/chicken, always brown the ingredients in a frying pan first. This locks in the flavor and produces a true slow simmered look and flavor. Be sure to remove all the sauce, juices and bits from the bottom of the frying pan to the slow cooker.
 * For even cooking, cut food into uniform-size pieces. Place firm, slow-cooking root vegetables like potatoes and carrots at the bottom of the crock and pile the meat on top.
* Keep the lid on! It is important to retain the heat when making a slow cooker meal, so avoid taking off the lid. Only remove the lid to stir or check for doneness.

Kitchen Hint of the Day!

Keep the lid on......

When using the Slow Cooker - Every time you take the lid off it will release some of the heat, so if you keep doing this you'll have to increase the cooking time. So keep that lid on!

Kitchen Hint of the Day!

Keep a lid on it.........

When using your slow cooker keep the lid on at all times. Otherwise the heat the cooker builds up for cooking, escapes and it will add the best part of an hour onto the cooking time, every time you lift the lid.

Love these Liners.......

Using Crock Pot Liners make for a super easy clean up and it doesn’t effect the cooking of your crock pot. You can find these liners at most grocery stores. They are worth every penny of the cost!

Kitchen Hint of the Day!

When using the Crock Pot.....

Do not under or overfill the crock pot. The appliance should only be filled one half to two thirds full in order for food to cook properly.

Slow-Cooker Vegetarian Lasagna
Sure, the slow cooker's great for stews and soups, but it also happens to make a mean lasagna! In this ingenious slow-cooker recipe, all you have to do is chop your veggies, then layer the ingredients (raw) into the crockpot. Serve with: Garlic bread and a green salad......

Wine and Tomato Braised Chicken
Here chicken thighs cook in a simple herb-infused tomato-and-wine sauce. The bone-in thighs give it plenty of hearty flavor, and since you cook them without the skin, it keeps the dish healthy. There's plenty of sauce, so serve it over pappardelle or brown rice. Steamed broccoli or sautéed broccoli rabe tossed with olive oil and a splash of lemon juice complete the meal.....

Flemish Beef Stew
For this slow-cooker interpretation of Carbonnades Flamandes, a Flemish stew made with beer, if you can't find a brown ale, use a strong, dark beer (but not a stout)......

3 Bean Turkey Chili w/ Johnny Cakes

Dinner Tonight: 3 Bean Turkey Chili w/ Johnny Cakes

For Breakfast this morning I Scrambled some Egg Beater’s Egg Whites seasoning it with Lite Salt, Ground Black Pepper, and a dash of Ortega Smoky Chipotle Taco Sauce. I like using the Smoky Chipotle whenever I can, nice heat and a lot of flavor. Then I heated up a few slices of Boar’s Head Sweet Sliced Ham and toasted a Healthy Life Whole Grain English Muffin. Loaded the Egg Whites, Ham, and a slice of Sargento Reduced Calorie Swiss Cheese on to the English Muffin and I had a delicious Breakfast Sandwich to start this day! Also had the morning cup of Bigelow Decaf Green Tea. It was house cleaning day today, vacuumed and dusted. After Lunch went over to the rehab center to spend some time with Dad. He seems to be getting stronger and he's working hard in therapy. Just don't know if he'll be strong enough to return home, sure hope so. Tonight’s Dinner, 3 Bean Turkey Chili w/ Johnny Cakes.

It's been a long time since I've felt a wind as cold as yesterday's was, stayed in the teens all day! It was windy all day and the wind was so cold it would take your breath away! Not as windy today and
a high in the 40's. But these cold days make me want to have Chili, nothing better than Chili! And I’m ready for some Chili! You can use Jennie – O Extra Lean Ground Turkey Breast or Wild Idea Ground Buffalo. Either version turns out great! I had 2 containers left in the freezer that I sat in the fridge overnight to thaw. So its my 3 Bean Turkey Chili and I made some Johnny Cakes. For Dessert later a bowl of Dole Sliced Peaches. Below I've left a post that has the ingredients and full recipe for both the 3 Bean Turkey Chili and Johnny Cakes. Enjoy!

To make this I’m using Jennie -O Lean Ground Turkey. The 3 Beans I use are 1 Can (16 oz.) Bush’s
Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible,
just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

I started by opening all 3 cans of Bush Beans into a large bowl and stirred until mixed. I then added
the Beans to the Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the seasonings and Tomato Paste, stirring often. When the Turkey has browned I add from the skillet to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours. The full recipe and list of ingredients is at the end of the post.

Then sit back and enjoy the aroma that usually starts after an hour or so of simmering! I love a thick
Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.

To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray,
1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. The Cornbread works perfect with Chili! I had a Diet Dr. Pepper to go with my Dinner.I forgot, did I tell you how much I love this Chili!

Kitchen Hint of the Day!

Some Slow Cooker hints.....

* If you're short on time in the morning, prepare everything you need for your slow-cooked meal the night before, put it into the slow-cooker dish, cover and store in the fridge overnight. Ideally the dish should be as close to room temperature as possible, so get it out of the fridge when you wake up and leave it for 20 minutes before turning the cooker on. If you need to heat your dish beforehand, then put the ingredients in a different container and transfer them in the morning.

* Preheat your slow cooker - A lot of people will throw in their ingredients and then turn on the slow cooker, but a slow cooker is like a small oven and getting it going for that extra 20 minutes makes a big difference.

* Make your Soup a day ahead of time and refrigerate it. Soups are always better on the second day when the flavors have had more time to develop. Also, any meat dish like chili or a brisket with all that sinewy tissue will be even better the day after you've made it.

Kitchen Hint of the Day!

A slow cooker hint........

Don't add raw meat to the slow cooker. There's no doubt that slow cookers are wonderfully convenient and can truly transform a piece of meat. To get the most delicious flavor out of your meal, it's best not to add raw meat straight in the bowl of the slow cooker. Brown meat on the stovetop before adding it to the slow cooker. It adds a wonderful caramelized flavor you just can't get from the slow cooker.

Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Cut Italian Green Beans

Dinner Tonight: Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Cut Italian Green Beans

For Breakfast on this Sunday Morning I toasted a Healthy Life English Muffin and topped it  with a
Poached Egg. Also had my morning cup of Bigelow Decaf Green Tea. Went out to get the morning papers and it wasn't quite as cold, mid 20's, It reached the low 40's today but rain showers moved in also. I'm feeling better to day than I have the last few days. Mom and Dad went to Church so it gave me a chance to give the house a good cleaning. Had everything done by lunch so I could settle in and watch some NFL Football the rest of the afternoon! For Dinner tonight Mom’s Favorite, Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Cut Italian Green Beans.

Mom’s favorite meal is my Crock Pot Pork Back Ribs and she’s been wanting some Ribs. So “what
Mom wants Mom gets”. So Ribs it is for dinner tonight. She I picked up a package at Kroger yesterday, they always have top quality Pork. And these were some Pork Back Ribs, 4 1/2 lbs. worth! Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then seasoned them with JB's Fat Boy All Purpose Rub and then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge.

Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and
sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, Rib intoxicating! After 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time. I would like to thank who ever invented the Crock Pot Liners! I always use them when using the Crock Pot.

For side dishes I prepared some Idahoan Au Gratin Homestyle Casserole. I left the Idahoan Product
info and instructions at the end of the post. Then I heated up a large can of Allens Cut Italian Green Beans. For dessert/snack later I had a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Crock Pot 3 Bean Buffalo Chili w/ Cornbread

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Cornbread

For breakfast I reheated some leftover Pioneer Peppered White Gravy and toasted a couple of slices of Healthy Life Whole Grain Bread, love gravy on everything! It was another night of heavy rain that continued through the day. One of those rainy days to stay in and kick back. Which is what I did for most of the day, I'm in a huge Slug Mode. For dinner tonight I wanted a major comfort food so tonight it's Crock Pot 3 Bean Buffalo Chili w/ Cornbread.

I got my last container of my Crock Pot 3 Bean Buffalo Chili out of the freezer and let it thaw overnight in the fridge. Which also means I'll be making another batch before too long! I'll leave full details on how to make it.

It’s loaded with nothing but good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is
the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Red Beans), 1 Can (16 oz.) Bush’s chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!).

To prepare it I start by browning both packages of the Wild Idea Ground Buffalo. Using a large skillet
sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Buffalo and all the seasonings and Tomato Paste, stirring often. When the Buffalo has browned I add from the skillet to the liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.

Then the serious eats begin, comfort food with Chili! With the sweetness of the Buffalo combined

with all those spices and beans, it’s just hard to beat! This may have been my best batch of Chili yet, You can serve it many ways; in a bowl or mug and
top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made a Mini Cast Iron Skillet of Cornbread. I used Martha White Corn Meal Mix. For me Chili and Cornbread are the perfect pairing! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Cut Italian Green Beans

Dinner Tonight: Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Cut Italian Green Beans

Had a light Breakfast to start the day. I had a toasted Healthy Life Whole Grain English Muffin
topped with Smucker's Sugar Free Blackberry Jam. Along with the morning cup of Bigelow Decaf Green Tea. After Breakfast I ran Mom to Kroger and on the way home had to stop by the bank and update our credit cards and change the passwords. Back home gave Mom a hand with a couple of loads of laundry. Then did some cleaning of the house. This morning I put our dinner in the Crock Pot. Tonight it's Mom's favorite Crock Pot Pork Back Ribs w/ Potatoes Au Gratin and Cut Italian Green Beans.

Mom's favorite meal is my Crock Pot Pork Back Ribs and she's been wanting some Ribs. So what Mom wants Mom gets! So Ribs it is for dinner tonight. I would like to thank who ever invented the Crock Pot Liners! I always use them when using the Croick Pot.

For side dishes I prepared some Idahoan Au Gratin Homestyle Casserole. I left the Idahoan Product
info and instructions at the end of the post. Then I heated up a can of Allens Cut Italian Green Beans. For dessert a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Tender Spareribs Recipe w/ Mashed Potatoes and Cut Italian Beans

Dinner Tonight: Tender Spareribs Recipe w/ Mashed Potatoes and Cut Italian Beans

Snow Flurries outside this morning. Cleared up by late afternoon, still a cold day out though. Had a Simple Truth Breakfast Sandwich for Breakfast. I had to go back to Kroger, I had forgot a couple of items for Mom. Back home not a lot going on, just did a couple things around the house and then kicked back and did some reading. For dinner tonight I prepared a Tender Spareribs Recipe w/ Mashed Potatoes and Cut Italian Beans.

Tried a new recipe for dinner tonight, Tender Spareribs Recipe. I came across this recipe on a Taste Of Home recipe email. I love the recipes on the Taste of Home website, ( http://www.tasteofhome.com/). I can always find any recipe I need. Anyway back to the recipe, I'll
need the following to prepare the dish;  4 pounds pork spareribs (cut into serving-size pieces), 1/4 cup Low sodium soy sauce, 1/4 cup prepared mustard, 1/4 cup molasses, 3 tablespoons cider vinegar, 2 tablespoons Worcestershire sauce, and 1 to 2 teaspoons hot pepper sauce. That's a fantastic combination of ingredients for the sauce! As I try to do with all recipes I used reduced calorie or low sodium ingredients when I can; La Choy Low Sodium Soy Sauce. I used the Kikkoman Low Sodium Soy Sauce, French's Yellow Mustard, GrandMa's Molasses, Heinz Cider Vinegar, Worcestershire Sauce, and Frank's Hot sauce. The original recipe and web link are at the end of the post.

To prepare the dish I started by cutting the Spare Ribs into serving size pieces. I purchased the Spare Ribs at Meijer yesterday. I then lined my Crock Pot with a liner. I always use a liner anytime I use my Crock Pot. I then placed ribs into the Crock Pot . I combined the remaining ingredients; poured over ribs. Cover and cooked on low for 6 hours. By 1:00 this afternoon the aroma of the Spare Ribs was incredible!

At the end of 6 hours I pulled the Ribs out of the Crock Pot and they were so tender they were falling apart. The Sauce gave the Ribs incredible flavor, this combination of ingredients would go great with any of your Pork Dishes! * Near the end of the cooking time the Crock Pot passed away. I had to finish cooking the Ribs in an oven at 425 degrees.

For one side dish I prepared some Bob Evan’s Mashed Potatoes, which I just microwaved and serve. Just can't beat these Mashed Potatoes. Then I also opened up a can of Allens Cut Italian Beans. I guess this our new favorite Bean. I love Green Beans but these Beans are hard to beat! I also reheated some leftover Pillsbury Italian loaf Bread . One fantastic dinner tonight! For dessert later a small cup of Del Monte No Sugar Peach Chunks.

Tender Spareribs Recipe

Crock Pot 3 Bean Buffalo Chili w/ Cornbread

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Cornbread

I had a Simple Truth Breakfast Sandwich to start the day, Egg White and Canadian Bacon. After

Breakfast I went out and started the car and let it warm up a bit. Another cold one out there at 9 degrees! Had to get out for a while today, I had a bad case of Cabin Fever! Felt great to get out. Stopped for gas, then the bank, and on to Kroger. I picked up a Birthday Cake for my Mom, her Birthday is tomorrow. Mom will be 88 Friday! Moms my best friend, cherish every day she's around. Tonight I prepared my Crock Pot 3 Bean Buffalo Chili w/ Mini Skillet of Cornbread.

What better than a big bowl of Chili on a cold Winter's Day! I’ve been out of Chili for a while now,
so it's high time to solve that problem! Plus I’ve been wanting some for a while now so it's time. It’s loaded with nothing but good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (16 oz.) Bush's Chili Beans (Red Beans), 1 Can (16 oz.) Bush's chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush's Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic.

Using a large
skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil.

You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers.

Kitchen Hint of the Day!

Slow Cooking.....

For the best results, fill a slow cooker between one-half and two-thirds full. Go ahead and cook big roasts and whole chickens; just make sure you use a large crock and that the lid fits snugly on top. As they say "Set it and forget it".

Kitchen Hint of the Day!

Using Crock Pot Liners make for a super easy clean up and it doesn’t effect the cooking of your crock pot. You can find these liners at most grocery stores. If you don’t have any liners, cooking spray will also make clean up easier.

* I always use the Crock Pot Liners.

Kitchen Hint of the Day!

A Chili Hint.....

Either cook your chili the day before or early in the morning of the day you're going to eat it.  By cooking the day before, letting it cool, then refrigerating overnight, you give all the flavors in your chili time to blend.  If short on time, preparing the chili in the morning and letting it simmer all day in the Crock Pot is a good method of cooking.
