For Breakfast I toasted a Healthy Life Whole Grain English Muffin that I lightly Buttered with I Can't Believe It's Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Outside it was cloudy to start the day and a high of 64 degrees, sun finally came out later in the day. After Breakfast I
headed out to the stores, needed quite a few things and also picked up some things for Mom. On my way to Meijer I stopped by Walmart and picked up some boxes of Bigelow Decaf Tea and a couple of other items. Then on to Meijer to do my shopping and then to Kroger for Mom. Stopped and got gas and went to Wendy's and picked up a Tossed Salad and Baked Potato for Lunch. Did a load of laundry after Lunch and then got out the leaf blower out and cleaned off the deck and driveway areas. For Dinner tonight I prepared Cajun Catfish Nuggets w/ Potato Pancakes and Whole Kernel Roasted Corn.
Picked up the Catfish Nuggets at Meijer earlier today. To prepare them I rinsed the Catfish Nuggets
off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Cajun Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. First time trying the Zatarain’s Crispy Cajun Fish Fri Breading Mix. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. The Zatarain’s Crispy Cajun Fish Fri Breading Mix worked great on the Catfish. The Mix had nice Cajun Heat to it but nothing over powering.
So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I
didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).
For a 2nd side I prepared a can of Del Monte Whole Kernel Fire Roasted Corn Blend. Just emptied the can into a small sauce pan and heated it on medium heat, stirring often until heated through. First time trying this also. The Corn was mixed with Onion, Garlic, and Sea Salt. I'll have to pick up a couple of cans of this, excellent Corn. I also baked a slice of New York Bakery Lite Texas Toast. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
